I’m pretty obsessed with these low-carb bowls, which use shredded sautéed brussels sprouts as the base. The smoky ground pork is the perfect complement, and the runny egg on top makes it saucy and delicious. If you don’t eat pork, use any ground meat in its place. Each summer, I plant every variety of tomatoes, including grape tomatoes. Grape tomatoes are always the first to grow and ripen. Since I usually wind up with more than I can eat in salads, I like to create new recipes with them. Adding them to pasta is one of my favorite ways to cook them. Some other recipes with grape tomatoes you make like are Spiralized Zucchini and Grape Tomatoes, Angel Hair Pasta with Zucchini and Tomatoes, and Sheet Pan Shrimp with Broccolini and Tomatoes.

Frittatas are a very versatile egg dish. Not only are they great for breakfast, but they also can be eaten for lunch or dinner if paired with a salad. Frittatas are a great way to clean out the refrigerator because you can fill them with your favorite ingredients. Anything goes! These Grilled Chicken Kabobs are marinated in lemon juice, olive oil, za’atar, and garlic and served with a cucumber yogurt sauce on the side. You can use either chicken breasts or thighs. I use both depending on what I have on hand. Of course, breast is leaner so that means they’ll be a little drier than thighs, but both taste wonderful. Some other great grilled kabob options are these Grilled Shrimp Scampi Skewers, Grilled Salmon Kabobs, and Grilled Lemon Dijon Chicken Skewers.
