What is Tortellini Salad?

Tortellini is a type of pasta stuffed with meat, vegetables, or cheese, then shaped into a small ring. To make the salad, the cooked and cooled tortellini is mixed with summer vegetables, herbs, greens, and a vinaigrette. Sometimes chopped cured meats or pickled peppers are added. For me, the pure joy of it is that it comes together in three steps, it’s super filling, and it’s a perfect choice for when you have an army to feed but don’t want to spend a lot of time in the kitchen.

Ingredients for Tortellini Salad

The pasta is the star here, and though you can use any kind of tortellini, we chose cheese tortellini to keep the flavor profile simple. Here’s what you need to make Tortellini Salad:

  • Tortellini– any kind will do. If you can’t access this ingredient, substitute it with rotini, farfalle, penne, orecchiette, or gnocchi. (And call it Pasta Salad!)
  • Cherry tomatoes – these bring a pop of color and a touch of sweetness and acidity to the party. If you’re not a fan of tomatoes, try using red bell peppers instead.
  • Red onion– sharp, assertive, and spicy, this ingredient is a great way to break up the fattiness of the tortellini. You can substitute with green onion, white onion, or yellow onion.
  • Summer vegetables like squash and zucchini– these fresh veggies add more texture than flavor and also help bulk up your salad. Substitute with cucumber or carrots.
  • Black olives– add a touch of brininess. Substitute with green olives or capers.
  • Baby spinach and Italian Pasley– add herbaceous peppery notes. Substitute the spinach with kale or arugula. If you’re not a fan of parsley, use basil.
  • Parmesan cheese – helps round out the flavors and adds a touch of nuttiness.
  • Italian Dressing– pulls everything together and adds zing. Substitute with any lightly flavored vinaigrette.

Tips For Making The Best Tortellini Salad

  • You can use store-bought Italian dressing for convenience, but for a more flavorful salad, use our recipe for Italian Dressing.
  • Bulk up the salad with more low-cost, in-season veg to transform a pound of tortellini into 16 servings instead of 12. Use any fresh veg, greens, and fresh summer herbs you have on hand. Just cut everything in similar sizes.
  • Add a little acidity and heat with pickled cherry peppers or banana peppers.
  • For a heartier salad, add chopped grilled chicken or shrimp. Or try adding chopped salami.

What To Serve with Tortellini Salad

Though it makes a wonderful meal on its own, you can also serve Tortellini Salad as part of a larger meal, like a backyard barbecue or picnic. It’s a perfect side for Greek Marinated Chicken or Quick Garlic Butter Shrimp. I love serving it with No-Knead Homemade Focaccia and Balsamic Roasted Vegetables.

How To Store Tortellini Salad

Tortellini salad keeps up to 3 days in the fridge. Just make sure to store leftovers in an airtight container. If you want to make the salad ahead of time, I recommend making the tortellini, chopping and salting the squash and zucchini, and prepping the rest of the ingredients. Add the tortellini to a large container and top with the veg and then the greens. Mix with Parmesan and dressing when you’re ready to serve.

Instructions

  • First, cook the tortellini according to the package directions. Then drain well and cool in a very large bowl in the fridge.
  • While the tortellini is cooking, slice the summer squash and the zucchini into 1/4-inch rounds and then quarter the rounds. Add them to a large bowl and sprinkle with salt and mix.
  • Slice the cherry tomatoes in half. Slice the red onion in 1/4 inch half moons and soak it in cold water to dull its sharp flavor. Chop the parsley, and if the baby spinach leaves are large, chop them as well.
  • Once the tortellini has cooled, top it with the cherry tomatoes, red onion, baby spinach, and sliced black olives. Then drizzle with 1/2 cup of Italian dressing.
  • Next, top the salad with chopped Italian parsley and Parmesan cheese. Then drizzle with the final 1/4 cup of Italian dressing. Finally, mix, and serve! Wasn't that easy?

HELLO, NEW FAVORITE! Sorry about the caps, but I’m really excited about this Mediterranean Coleslaw. It’s so freaking delicious. This coleslaw is actually very similar to my Marinated Cauliflower Salad, but with a coleslaw (shredded cabbage and carrot) base instead of cauliflower, and a more lemon-y dressing. It’s fresh, crisp, colorful, and the perfect side dish for dinners or potlucks!

What is Colesaw Mix?

This recipe uses bagged “coleslaw mix” that you can purchase in most grocery stores in the U.S. It’s simply a mix of shredded green cabbage and carrots. While I don’t use convenience products like this often, I find that coleslaw mix is extremely convenient, usually very inexpensive, and doesn’t leave me with ½ head of leftover cabbage.

If you do want to use fresh cabbage, you’ll need about six cups of shredded cabbage (loosely packed) and one shredded carrot.

What to Serve with Mediterranean Coleslaw

I think this slaw would make a great side dish to burgers (particularly my Mediterranean Turkey Burgers), Sheet Pan Greek Chicken and Vegetables, or even Beef Kofta Meatballs.

You could also pile this coleslaw into a wrap with some Garlic Marinated Chicken to make a wrap sandwich. Or top the Mediterranean Coleslaw with some Garlic Butter Shrimp and make it a meal salad.

How Are The Leftovers?

As with any coleslaw, the cabbage will begin to wilt as it is refrigerated. I enjoyed the leftovers of this coleslaw for about two days before it got a little too limp for my tastes. You’ll definitely want to give it a stir every time before serving to make sure the dressing and all the flavors get redistributed.

Prepare the lemon garlic vinaigrette first. Combine ¼ cup olive oil, 1/4 cup lemon juice, 1/2 teaspoon garlic powder, 1 teaspoon dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl or jar. Whisk until combined, or close the jar and shake until combined. Set the dressing aside.

Dice ½ a red bell pepper and chop about ¼ cup fresh parsley. Drain the black olives. Add one 16oz. bag coleslaw mix (shredded cabbage and carrots) to a large bowl along with the bell pepper, parsley, black olives, about ½ jar of banana peppers, and 2 oz. crumbled feta.

If you’re new here, refrigerator salads are salads that hold up really well in the refrigerator, so you can have delicious and colorful meals all week. This Marinated Cauliflower Salad is the perfect example. In fact, this salad gets better as it refrigerates. The flavors mix and mingle, and all those good flavors get soaked right up by the crunchy cauliflower. 👌

Take a Short Cut

I included a homemade Italian dressing in this cauliflower salad recipe, but if you want to make this salad even a little faster you can easily sub your favorite store-bought bottled Italian Dressing. You’ll need about one cup, but you can just add as much or as little as you’d like.

Make it Vegan

The recipe as written below contains Parmesan cheese, which does give the salad a little bit of body, but if you’d like to make this dish vegan you can easily leave the Parmesan out or add a little nutritional yeast in its place.

What to Serve with Marinated Cauliflower Salad

I served this cauliflower salad with my Garlic Marinated Chicken this week, but it would also go great with Herb Roasted Pork Tenderloin, Baked Ziti, Pizza Baked Chicken, or Easy Oven Baked Fish with Tomatoes. This would also be a great dish to bring to potlucks!

How Long Does It Stay Good?

As I mentioned in the introduction, this salad actually gets better with time in the fridge. …Up to a point. Haha. This salad will be good for about 4-5 days of refrigeration, with the peak flavor being on about day 2-3. As always your mileage may vary depending on the freshness of your ingredients and conditions inside your refrigerator.

Make the dressing first so it can have a few moments to blend. In a jar or bowl combine ½ cup olive oil, ¼ cup red wine vinegar, 1 tsp Dijon mustard, ¼ tsp garlic powder, 1 Tbsp Italian seasoning, ½ tsp salt, ¼ tsp pepper, and 2 Tbsp grated Parmesan.

Shake the jar or whisk the ingredients in a bowl until the dressing is combined. You can use a store-bought Italian dressing in place of homemade, if you prefer. You’ll need about 1 cup dressing.

This is kind of just like a basic Italian pasta salad, but I’m calling it “Pizza Pasta Salad” because this is how I use my leftover pizza toppings. Haha! When you buy a jar of peppers, olives, or any other pizza toppings, it’s always way too much for one pizza, so I repurpose all the pizza toppings in a pasta salad the next day. And the best part is that this Pizza Pasta Salad is another one of those great “refrigerator salads” that hold up well for days, so you can keep munching away happily throughout the week!

What’s In Pizza Pasta Salad?

Whatever you want! Ha! That’s the beauty of this one. In my pizza pasta salad I included mozzarella, pepperoni, green bell pepper, black olives, red onion, and banana peppers. Here are some other things that would be awesome in this pasta salad:

  • Bacon
  • Grape tomatoes
  • Jalapeños
  • Spinach
  • Green Olives
  • Ham
  • Salami
  • Pesto
  • Feta
  • Fresh herbs (oregano, basil, parsley)
  • Mushrooms (marinated mushrooms would be even better)
  • Artichoke hearts

Honestly, the only thing I probably wouldn’t put in my pizza pasta salad is pineapple. While I am a pineapple-pizza fan (sorry-not-sorry), I don’t think it would be very good in this pasta salad.

What Dressing Do you Use?

In the recipe below I’ve included a homemade Italian dressing with grated Parmesan cheese. If you want to take a short cut and use a store bought dressing, I suggest some sort of Italian dressing or Caesar dressing (non-creamy style), and if it doesn’t have Parmesan already in it, I would add some. The Parmesan cheese really adds some oomph to this pizza pasta salad.

Can I Use a Different Pasta?

Absolutely! This recipe is endlessly versatile. You can use any short shaped pasta, like bowtie, penne, or even shells. While you can use a long shape pasta like spaghetti, that type tends to be difficult to stir chunky objects into (they like to fall to the sides or bottom of the bowl). This recipe should also work fine with whole wheat or gluten free pasta.

How Long Does Pizza Pasta Stay Good?

This pasta salad is very refrigerator friendly and will last about 4-5 days in your refrigerator. That means it’s great for your weekly meal prep!

  • While the pasta is cooking and draining, prepare the other pasta salad ingredients. Cut the pepperoni in half or into quarters, and chop the mozzarella into small cubes. Dice the bell pepper and red onion. Drain the banana pepper rings and black olives.
  • When the pasta is cooked, cooled, and drained well, transfer it to a large bowl. Add the rest of the prepared ingredients (pepperoni, mozzarella, bell pepper, red onion, banana peppers, and black olives). Toss the ingredients to combine.
  • Give the dressing another shake or stir before drizzling it over the pasta salad. Toss the pasta salad once again to coat everything in the dressing. Serve immediately or refrigerate until ready to eat.

Dice one green bell pepper and about ¼ cup red onion. Drain ½ of a 12oz. jar banana pepper rings, and ½ of a 4oz. can sliced black olives.

Once the pasta is cooked, cooled, and drained well, transfer it to a large bowl. Add the pepperoni, mozzarella, green bell pepper, red onion, banana peppers, and black olives to the bowl. Toss these ingredients together.

Give the dressing one last stir or shake…

Then pour the dressing over the pasta salad.

Toss the salad again until everything is well coated in dressing. Serve immediately or refrigerate until ready to eat!
