These butternut squash couscous bowls are the perfect fall meal! Massaged kale, roasted squash and chickpeas, creamy goat cheese, crunchy pepitas, all drizzled in a maple vinaigrette! Tastes like an autumnal dream.

A cozy and comforting grain bowl, complete with massaged kale, roasted squash and chickpeas, creamy goat cheese, salty pepitas for crunch and a maple vinaigrette. It’s like what I want to eat for lunch every single day in the fall.

This bowl is satisfying, easy to throw together and super good. I love how customizable it can be, how the dressing gives it a sweet and savory kick and how crunchy the kale and pepitas are. It’s filled with texture and crunch – which is the key for a meal to be swoon-worthy for me.

In my book Everyday Dinners, I share my grain bowl formula. The way I like to do it? A favorite grain, something crunchy (a nut or seed), something creamy, like cheese or avocado, a bunch of roasted vegetables and a dressing that makes it extra special. That is just a summed up version, of course, but you can see how I put it to use in this dish!

This grain bowl formula: 

  • I almost always use pearl couscous. I love how big it is, how the dressing can really coat each piece. I also prefer the texture over quinoa or farro. 
  • For vegetables, I’m obviously going with squash today because HELLO FALL!! I’m also using some kale. I chop up the kale then massage it with a drop of the vinaigrette, letting it sit and soften for a few minutes. This removes some of the bitterness and also helps in be less chewy. 
  • I want things to be a little extra satisfying, so I’m adding chickpeas! I roast them right with the butternut squash. This adds some protein and fiber and all around delicious flavor. 
  • Creamy crumbly goat cheese is my favorite option for this bowl. Feta will also work. So will parmesan! 
  • Salted, roasted pepitas give this dish an extra nutty crunch. I love them so much. And I love their size! Perfectly medium and crunchy.

The dressing is an apple cider vinaigrette with maple syrup. Oh my word, it is delicious. I love how truly MAPLE-Y it is – and how it doesn’t have mustard. Don’t get me wrong, I am a mustard freak. But without the dijon in this dressing, the maple really shines.

It’s a true, light vinaigrette – tangy from the vinegar, sweet from the syrup and excellent on any fall salad.

This grilled shrimp couscous is a lovely weeknight summer meal! Grilled lemon shrimp with a kick is served over couscous tossed with basil pesto and a spritz of fresh lemon. Easy, delicious and comes together quickly!

We’ve got some grilled lemon shrimp served with pesto couscous, for a fancy looking but simple meal that comes together in no time at all!

Seriously, you won’t believe how quickly this dish can be made. It’s a great weeknight meal because it’s so satisfying. It feels so… special. It will take around 30 to 40 minutes to fully come together, but it tastes like it took much longer. And the couscous and pesto take the longest to make, which is only about 15 minutes!

This is the kind of meal that we love to have for weeknight dinners. It makes you feel like you’re having an extraordinary meal – almost like it’s a dish that should be served in a restaurant. The leftovers are also so, so delicious. Which means that lunch the next day is solved. And maybe even a leftover dinner too!

Let’s get to it! 

The shrimp gets a quick marinade of olive oil, salt, pepper, crushed red pepper, garlic and lots of fresh lemon zest. I basically coat the shrimp in this mixture and let it hang out for a few minutes, then I skewer it and grill. I never let this marinate for more than 30 minutes. 

The actual skewers are just used for ease in this case. It’s much simpler to grill a few shrimp on a skewer like this so it can be turned once. As opposed to picking up every piece of shrimp with tongs and turning it. You can leave them on the skewer for serving or you can easily pop them off and serve on top of or mixed in with the couscous. Either way, they look so pretty!

Pesto couscous is my solution to giving couscous an extra boost of flavor – in the easiest way possible. I do this with grains all the time. See my summer flank steak bowls. I use a condiment such as pesto, chumichurri or my cilantro lime vinaigrette and toss the grain with it. Not only does it turn the couscous (or rice, quinoa, etc) a gorgeous shade of green, but it makes every bite taste wonderful. 

It’s an awesome way to elevate your side dish in one simple step. The pesto can be made ahead of time or you can even use store-bought pesto. Toss it into the cooked grains and you’re good to go!

P.S. Oh my gosh, I said this last year and I still haven’t done it. I must make a dedicated pesto recipe post for you guys to reference! My pesto is so good, easy and foolproof. I can’t even tell you how often I make it. I will try to get that posted in the next week for you. In the meantime, it’s linked below!

I like to pop some cherry tomatoes on the skewers with the shrimp. The shrimp is only on the grill for a few minutes, so it’s a great time to use tomatoes. You could use another vegetable too – or even add some chopped tomatoes or spinach to the pesto couscous.

Toss everything together and spritz with lemon to serve!!

I live for a good bowl meal, so we’re throwing our grilled lemonade chicken on top of a bowl of couscous with a lemonade dressing, some grilled vegetables, cheese and a few toppings. Satisfying, easy, versatile and customizable! That’s the name of the game over here and we love it.

I’m excited to be partnering today with Florida’s Natural® Lemonade again to bring you this delicious recipe! It’s made with all natural ingredients, no preservatives and no high fructose corn syrup. We absolutely love their lemonade and my favorite thing about this is how versatile it is! 

Of course, it tastes fabulous over ice on a hot summer day, but it’s also great in dressings, marinades and obviously in cocktails. You can also use it to make a great frozen mocktail like my frozen strawberry lemonade.

I love that Florida’s Natural is a farmer-owned cooperative that has dedicated more than 85 years to the Florida citrus industry. Their lemonade tastes so high-quality that it’s always my go-to choice, and it tastes even better than I could make at home. 

The best part is that the lemonade comes in other incredible flavors, like Strawberry, Raspberry and Peach, and Blackberry. There is really something for everyone! For this recipe though, I’m using their classic lemonade flavor.

Using an ingredient like this in an easy weeknight meal is a hack that I swear by. It’s SO simple. Keep a container of Florida’s Natural Lemonade in your fridge and you can always have the juiciest, most flavorful grilled chicken.

To make this chicken, I like to marinate it overnight. It’s such an easy step to prep. I whisk the lemonade with some olive oil, garlic and Dijon mustard. Then, I throw the chicken in and let it sit. It doesn’t have to be a full 24 hours, but I like to give it at least 30 minutes or so before grilling. 

When it comes time to grill the chicken, I reserve the extra lemonade and boil it down in a saucepan. This way it’s safe to consume and also incredibly delicious – we have a lemonade dressing of sorts to drizzle over the couscous bowls. It adds a ton of flavor. (more…)
