I was lucky enough to get a bunch of fresh broccoli last week, so I wanted to share this super simple salad that I made with it, along with some ideas for variations to use some other things that you might have on hand. What Kind of “Cooked Chicken” Should I use?

This recipe is pretty flexible and can use just about any type of precooked chicken like rotisserie chicken, grilled chicken, or canned chicken breast. If you have raw chicken breast on hand, simply season your chicken with a pinch of salt and cook in a skillet with a touch of oil until the chicken is browned on the outside and cooked through (internal temperature of 165ºF). Let the chicken cool before chopping and adding to the salad.

Can I Use Frozen Broccoli?

This recipe works best with fresh broccoli. Frozen broccoli florets will probably be too wet and soft to achieve the proper texture in this salad.

What Else Can I Add to This Salad?

I kept this salad pretty simple because I’m working with what I have during this lock down, but if you have some of these other ingredients on hand they would be awesome in this Broccoli Cheddar Chicken Salad:

  • Cooked bacon or bacon bits
  • Sunflower seeds
  • Finely diced red onion in place of the green onion
  • Shredded Parmesan in place of the cheddar for more of a Caesar salad vibe
  • Diced hard boiled egg
  • Small shaped cooked pasta like mini shells or orecchiette

When adding additional ingredients, you may need to increase the amount of dressing used to make sure everything is covered.

How to Serve Broccoli Cheddar Chicken Salad

Okay, here’s where it gets fun. I could barely stop forking it into my mouth right out of the bowl, but I also ate it a couple other ways. It’s really good rolled into a tortilla (or pita) as a wrap sandwich, especially with the tomato flavored wraps that I happened to get from Aldi. That tangy flavor was the perfect juxtaposition for the salad. The next day I also made it into a quesadilla by stuffing it inside a regular tortilla and toasting it in a skillet until the inside got warm and the cheese melted. That was so insanely good that I immediately made a second one after I finished the first! And of course you could mix this with some cooked and cooled pasta for a really good pasta salad, as mentioned above.

Broccoli Cheddar Chicken Salad

This chunky chopped Broccoli Cheddar Chicken Salad is a great fresh salad that can be eaten on its own or turned into several different easy lunch ideas!

Ingredients

  • 1 lb. fresh broccoli (about 2 cups chopped) $1.89
  • 1 cup chopped cooked chicken* $1.16
  • 2 oz. cheddar, shredded (about ½ cup) $1.00
  • 2 green onions, sliced $0.25
  • 1/3 cup ranch dressing $0.49
  • freshly cracked pepper to taste $0.05

Instructions

  • Finely chop the broccoli. It's important that the broccoli pieces be very small. Chop the chicken into small pieces as well.
  • Add the broccoli, chopped chicken, shredded cheddar, sliced green onions, and ranch dressing to a large bowl. Stir well until everything is evenly coated in dressing. Add freshly cracked pepper to your liking.
  • Serve as is, stuff into a tortilla or pita for a sandwich, or stuff into a tortilla and toast in a skillet until the inside is melted for a quesadilla. Keep any remaining salad refrigerated for up to 3-4 days.

How to Make Broccoli Cheddar Chicken Salad – Step by Step Photos

Finely chop one pound of fresh broccoli. It’s really important that the broccoli be in tiny pieces, so once you think you’ve chopped it enough, just go ahead and chop it a little more. ;)

You’ll also need about 1 cup chopped cooked chicken. This can be any type of cooked chicken, like rotisserie chicken, grilled chicken, canned chicken breast, or a piece of chicken that you just cook up in a skillet real quick (that’s what I did). Just make sure you let your chicken cool a bit before adding it to the salad. Again, you want the pieces to be pretty small.

You also need two ounces shredded cheddar (about ½ cup) and two sliced green onions.

Add the chopped broccoli, chopped chicken, shredded cheddar, and sliced green onions to a large bowl, then add ⅓ cup ranch dressing.

I used this ranch dressing that I got from Aldi. Another brand that I really like is Ken’s Steakhouse buttermilk ranch. Or you can make your own ranch dressing using my Homemade Ranch Dressing recipe!

Stir until everything is coated really well with the ranch dressing. I also added some freshly cracked black pepper just for an extra kick!

It’s almost Friday and it’s this part of the week when my cravings for comfort food really start kicking in. It doesn’t help that it’s been dark and rainy non-stop for like, the last three weeks straight! So this week I whipped up this Creamy Chicken and Rice Skillet, which has to be one of the most comfort-food-y comfort foods of all time. Or maybe I should just call it “February food.” Creamy, cheesy, carby deliciousness in one easy skillet. Imagine chicken pot pie filling baked into rice and topped with cheese. If that doesn’t make you forget how dreary it is outside, I don’t know what will.

Can I Make this with Brown Rice?

I don’t suggest using brown rice for this recipe. Not only will it require a lot of other changes to the recipe (the amount of liquid used, the cook time, etc), but I just don’t think the flavor and texture of brown rice would be a good match for this particular recipe. This one is supposed to be creamy, soft, and indulent. If you’re looking for a healthy chicken and rice recipe, I’d look for one that is designed to be healthy (and I’m sure there are some good ones out there!).

Can I Use Chicken Thighs instead of Breasts?

Yes, absolutely. You should be able to swap out chicken thighs for chicken breasts in this recipe without making any other adjustments. Use approximately 3/4 lb. chicken thighs.

Can I Use Fresh Vegetables?

Sure! I used frozen peas and carrots for this recipe because I intended this recipe to be more of a convenience comfort food, but you can certainly use fresh if you have them available. Fresh vegetables will likely need a little bit more time to cook, since frozen vegetables are blanched before freezing, so I would add your fresh vegetables at the same time that the broth is added, so they can simmer with the rice.

Can I substitute the Heavy Cream?

Yes, you do have some options here. If you want to make it just a little lighter, you can use half and half. If you’re looking for a non-dairy substitute, I would use coconut milk (the kind in the can, not the kind in a carton meant as a dairy milk substitute). Or, you can just leave the cream out and make it a non-creamy chicken and rice dish. The cheese on top will be plenty richness for some people!

How to Store the Leftover Chicken and Rice Skillet

After cooking your skillet full of comfort, divide the chicken and rice into single portions and refrigerate for 4-5 days. A quick reheat in the microwave and you’re back on the comfort food bandwagon. Unfortunately I haven’t tested freezing this one, but I suspect it would freeze well, since all of the ingredients used generally freeze well.

  1. Dice the onion and add it to an oven safe deep skillet (3 qt. capacity) along with the butter. Sauté over medium heat until the onions are soft and translucent.

  2. While the onions are cooking, dice the chicken breast into small, 1/2-inch pieces. Add the chicken to the skillet and continue to sauté for about 3 minutes more, or just until the outside of the chicken pieces have turned opaque (the chicken will finish cooking through as it simmers with the rice).

  3. Add the rice, thyme, sage, salt, some freshly cracked pepper (about ten cranks of a pepper mill), and the chicken broth to the skillet and stir to combine.

  4. Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come to a boil. Once it reaches a full boil, turn the heat down to low and let the skillet simmer for 15 minutes, stirring occasionally, replacing the lid each time. Cooking the rice in an excess of broth and stirring occasionally as it cooks will produce a saucy rice mixture.

  5. After 15 minutes, the rice should be tender and saucy (if not yet tender, let it continue to cook for 5 more minutes). Stir in the frozen vegetables (no need to thaw), replace the lid, and let it sit over medium-low heat for another 5 minutes to heat the vegetables through. Finally, add the heavy cream, stir to combine, taste, and add extra salt if needed (this will depend on the salt content of the broth you used).

  6. Turn on the oven's broiler, top the skillet with the shredded cheese, and place the skillet in the oven under the broiler for a few minutes to melt the cheese. Serve hot.

How to Make Chicken and Rice – Step by Step Photos

Dice one yellow onion and add it to a deep skillet (3 qt capacity) with 2 Tbsp butter. Sauté the onion over medium heat for about 5 minutes, or until it’s translucent.

While the onions are cooking, dice one boneless, skinless chicken breast into small 1/2-inch sided pieces. Add the chicken to the skillet and cook for just a few minutes more, or until the chicken is cooked and opaque on the outside (it will finish cooking through as it simmers with the rice).

Once the chicken pieces are partially cooked, add 1/2 tsp dried thyme, 1/4 tsp dried sage, 1/4 tsp salt, some freshly cracked pepper (about 10 cranks of a pepper mill), and 1 cup long grain white rice (uncooked). Stir to combine.

Also add 3 cups chicken broth to the skillet. Stir to combine again.

Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come up to a full boil. Once boiling, turn the heat down to low and let it simmer for 15 minutes, stirring occasionally, making sure to replace the lid each time. Cooking the rice in an excess of liquid and giving it a stir every now and then makes it end up more saucy instead of fluffy rice grains.

After 15 minutes, the rice should be tender and saucy. Add 1/2 lb. frozen peas and carrots and stir them into the rice. Return the lid and let the chicken, rice, and vegetables sit for another 5 minutes or so to heat the vegetables through.

Finally, stir in 1/3 cup heavy cream. Give the chicken and rice a taste, and add salt if needed (this will depend on how much salt your broth contains).

Turn the broiler on in the oven. Top the skillet with 4 oz. shredded cheddar, then place the skillet in the oven for a few minutes to melt the cheese. (You do not need to move the oven’s rack up closer to the broiler, leave it in the middle.)

This Slow Cooker White Chicken Chili is the perfect example of why people love slow cookers so much. Does White Chicken Chili Have Chili Powder?

Nope! Unlike traditional red chili, this “white” chili does not contain chili powder. It’s flavored using salsa verde, cumin, and oregano. This chili gets its name from the white beans used in place of the red kidney beans used in red chili.

Is This Chili Spicy?

This chili is a “medium” level spicy. If you want to make the chili more mild, skip the jalapeño and cayenne pepper listed in the ingredients, and make sure to use a mild salsa verde.

What Size Slow Cooker do I Need?

You can make this in a 3-4 quart slow cooker, or double the recipe for a 5-7 qt slow cooker and feed a crowd. I have a 5 quart slow cooker (affiliate link) and the recipe, as listed below, filled it about half way.

Can This White Chicken Chili be Frozen?

Yes, this chili freezes very well! As always, make sure to chill your chili completely in the refrigerator first, before transferring to the freezer for long term storage. I prefer to freeze all my leftovers in single portions so they can be reheated one by one whenever I get hungry.

Chili Topping Ideas

I highly suggest topping this chili with something creamy, like the Monterrey jack cheese listed in the ingredients below, some sour cream, or avocado. The creamy flavor is the perfect contrast to the salsa verde. You can also top with some green onion, sliced jalapeño, cilantro, pico de gallo, crumbled cornbread, or pickled red onions.

Easy Slow Cooker White Chicken Chili

The slow cooker does all the work with this easy, flavorful, and healthy white chicken chili. This "dump and go" dinner will become a family favorite!

  • 1 yellow onion ($0.32)
  • 2 cloves garlic ($0.16)
  • 1 jalapeño (optional) ($0.11)
  • 1 boneless skinless chicken breast (about 3/4 lb.) ($3.62)
  • 1 16 oz. jar salsa verde ($2.59)
  • 2 15 oz. cans cannellini beans ($0.98)
  • 1 15 oz. can pinto beans ($0.89)
  • 1 Tbsp ground cumin ($0.30)
  • 1 tsp dried oregano ($0.10)
  • ¼ tsp cayenne pepper ($0.02)
  • ¼ tsp freshly ground black pepper ($0.03)
  • 2 cups chicken broth ($0.26)
  • 4 oz Monterrey Jack cheese, shredded ($0.85)
  1. Dice the onion and mince the garlic. Slice the jalapeńo lengthwise, scrape out the seeds with a spoon, then dice. Place the onion, garlic, jalapeño, and chicken breast in the bottom of a slow cooker.
  2. Drain and rinse the cannellini beans and pinto beans, then add them to the slow cooker, along with the cumin, oregano, cayenne, and freshly ground black pepper. Pour the salsa over top.

  3. Pour two cups of chicken broth over the contents in the cooker and then give everything a brief stir. Place the lid on the slow cooker and cook on high for four hours, or on low for eight hours.

  4. After four hours on high, or eight hours on low, carefully remove the chicken breast from the slow cooker and use two forks to shred the meat. Return the meat to the slow cooker. Stir the chili, slightly mashing the beans with the back of the spoon as you stir. The mashed beans will help thicken the chili.

  5. Serve the chili topped with shredded Monterrey Jack cheese. Other optional toppings include fresh cilantro, diced avocado, freshly squeeze lime, or tortilla chips.

How to Make Slow Cooker White Chicken Chili – Step by Step Photos

Dice one yellow onion and mince two cloves of garlic. Slice the jalapeño in half, scrape out the seeds, then dice the remaining pepper. Add the onion, garlic, jalapeño, and chicken breast to the slow cooker.

Drain and rinse two 15oz. cans of cannellini beans and one 15oz. can of pinto beans. Add the drained beans to the slow cooker along with 1 Tbsp cumin, 1 tsp oregano, ¼ tsp cayenne, and some freshly cracked black pepper.

Pour one 16oz. jar of salsa verde into the slow cooker (I’ve used many brands for this recipe in the past, the one in the photo is Kroger’s Private Selectrion brand).

Briefly stir the contents of the slow cooker to distribute the spices. Place a lid on top and cook on high for four hours, or low for eight hours.

After cooking on high for four hours, or on low for eight hours, remove the chicken breast to a clean cutting board to shred (or you can shred directly in the pot with two forks).

Return the shredded chicken to the slow cooker and stir to combine. Use the back of a spoon to smash some of the beans agains the side of the pot. The smashed beans will help thicken the chili.

I’m all about quick stir fry dinners because they’re easy, you can work a LOT of vegetables into them, and they’re just plain delicious. My newest creation, Crunchy Chicken Ramen Stir Fry, is kind of a new twist on an old favorite Beef and Cabbage Stir fry. This time we’re using chicken instead of beef, using the same light and easy sauce, tons of shredded cabbage and carrots for inexpensive bulk, and some crushed up ramen noodles for crunch. Oh, and I added a drizzle of creamy sriracha mayo because I was feeling a bit #extra. ;)

Quick & Easy Crunchy Chicken Ramen Stir Fry

Can I Skip the Ramen?

Sure! If you’re not the ramen type, this is still a really killer (although slightly less crunchy) stir fry recipe! No hard feelings. You do you. 

Same goes for the sriracha mayo topping. While *I* love the contrast of the creamy spicy with the fresh crunch, you don’t have to add it to your stir fry if you’re not into it.

How to Store Your Stir Fry

If you plan to eat some of your stir fry as leftovers, make sure to keep the crunchy crushed ramen noodles separate from the stir fry and just stir them in after the stir fry has been reheated. Same goes for the sriracha mayo topping. Add that after reheating. The cabbage and carrots do get slightly softer after refrigeration and reheating, but I still find it to be quite delicious.

Other Vegetables You Can Add:

The other awesome thing about stir fries is that you can add just about any vegetable that you might have leftover in your fridge. Some other good options would be spinach, broccoli, bell pepper, mushrooms, snow peas. Keep in mind that if you increase the amount of vegetables, you may also want to increase the sauce.

Crunchy Chicken Ramen Stir Fry

Crunchy Chicken Ramen Stir Fry is an easy weeknight dinner with tons of cabbage and carrots, crunchy crushed ramen, and a creamy sriracha drizzle.

Stir Fry Sauce

  • 2 Tbsp soy sauce ($0.12)
  • 1 Tbsp toasted sesame oil ($0.30)
  • 1/2 Tbsp brown sugar ($0.02)

Sriracha Mayo Drizzle (optional)

  • 1 Tbsp mayonnaise ($0.09)
  • 1 Tbsp sriracha ($0.11)

Stir Fry

  • 1 boneless, skinless chicken breast (about 2/3 lb.) ($4.08)
  • 2 Tbsp cooking oil ($0.08)
  • 1 14oz. bag coleslaw mix (shredded cabbage and carrots) ($1.49)
  • 2 cloves garlic ($0.16)
  • 1 tsp grated fresh ginger ($0.10)
  • 3 green onions ($0.30)
  • 1 3oz. block ramen noodles (seasoning packet discarded) ($0.25)
  1. Prepare the sauces first so they're ready to use when needed. In a small bowl stir together the ingredients for the stir fry sauce (soy sauce, sesame oil, and brown sugar). In a separate small bowl stir together the sriracha and mayonnaise.

  2. Mince 2 cloves of garlic, grate about one teaspoon of fresh ginger, and slice three green onions.

  3. Without opening the package of ramen, use a rolling pin or mallet to crush the noodles into small pieces. Once crushed, open the package and discard the seasoning packet.

  4. Chop the chicken into small 1/2-inch pieces.

  5. Place a large skillet over medium-high heat. Once hot, add the cooking oil and swirl to coat the surface of the skillet. Add the chicken pieces and sauté until they're cooked through (3-5 minutes). Add the garlic and ginger to the skillet about half way through cooking the chicken.

  6. Once the chicken is cooked through, add the coleslaw mix (shredded cabbage and carrots). Continue to sauté for about 2 minutes more, or just until the cabbage begins to soften slightly (do not overcook at this step).

  7. Add the stir fry sauce to the skillet and continue to sauté for 1-2 minutes more, or until the cabbage has softened to your liking (I prefer mine still slightly firm).

  8. Finally, turn off the heat, stir in the crushed ramen, and top with sliced green onions and a drizzle of sriracha mayo.

How to Make Crunchy Chicken Ramen Stir Fry – Step by Step Photos

This stir fry cooks SUPER fast, so it’s best to prepare all of the components before you begin cooking. Start with the stir fry sauce: stir together 2 Tbsp soy sauce, 1 Tbsp toasted sesame oil, and ½ Tbsp brown sugar. The brown sugar might not dissolve all the way, but that’s okay.

For the sriracha mayo, simply stir together 1 Tbsp sriracha and 1 Tbsp mayonnaise.

Mince two cloves of garlic, grate about 1 tsp fresh ginger (I keep mine in the freezer for easier grating and longer storage), and slice three green onions.

Without opening the package of ramen, use a rolling pin or a mallet to crush the noodles into small pieces. After crushing the noodles you can open it and discard the seasoning packet (or use it for something else).

Heat a large skillet over medium-high heat. Once hot, add 2 Tbsp cooking oil and swirl to coat the skillet. Add the chicken and sauté until the chicken is cooked through, adding the garlic and ginger about half way through cooking. Because the chicken pieces are so small and the pan is so hot, it should only take a few minutes for the chicken to cook through.

Add one 14oz. bag of coleslaw mix (shredded cabbage and carrots) to the skillet. Continue to sauté for only 2 minutes, or just until the cabbage begins to soften.

Add the prepared stir fry sauce, making sure to scrape any sugar that has settled to the bottom into the skillet. Continue to sauté for a couple minutes more, or until the cabbage is to your desired softness. I like mine still a bit firm, so I only sauté for about 2 minutes more.

Pour the crushed ramen into the skillet. Turn the heat off, and stir the crunchy noodles into the stir fry.

Homemade chicken noodle soup from scratch is one of my absolute favorite comfort foods. Not only is it incredibly easy, but even just the smell of it simmering away is soothing and totally gives me hygge vibes. While I’ve had a stove top version of this Slow Cooker Chicken Noodle Soup for years, I thought it was high time to show just how easy and hands-off it is to make with a slow cooker (or crock pot). This is the perfect winter Sunday recipe to have going while you tend to other chores or just catch up on Netflix. :)

Homemade Slow Cooker Chicken Noodle Soup

What Size Slow Cooker Do I Need?

I would suggest using a 6 quart slow cooker. I used a 5 quart slow cooker and it was filled dangerously close to the top, so 6 quart would be a much better fit. If you have a smaller slow cooker you can cut the recipe in half by changing the number of servings in the box next to servings in the recipe card below. This will adjust the amounts of all the ingredients for you. It will still need to cook for the same amount of time.

What Are “Split” Chicken Breasts?

Split chicken breasts are one whole chicken breast that has been split down the breast bone into two pieces (right and left breast) with the bones, rib meat, and skin still attached. Also known as bone-in, skin-on chicken breasts. Using this type of chicken breast is key to getting the best flavor in your chicken soup. The bones, connective tissues, and dark rib meat are where all the flavor’s at. Bone-in chicken thighs are also a great option.

Can I Use Boneless, Skinless Chicken Breast?

Technically you can, but your soup will have a lot less flavor. You may find that you need to use pre-made chicken broth in place of the water listed in the recipe below to get more flavor in your soup.

Can I Use Frozen Chicken?

It’s not recommended to add frozen meat to slow cookers. It takes too much time for the meat to thaw and come up to a safe temperature, leaving it in the temperature “danger zone” where bacteria can flourish for too long. If you have frozen chicken that you’d like to use, make sure to thaw it fully using a safe method before adding it to the slow cooker.

To Use Chicken Skin or Not to Use Chicken Skin

I remove the chicken skin from the split chicken breasts before adding it to the slow cooker, but you don’t have to. There is a lot of fat and flavor in the skin, so if you want an extra rich soup you can leave it on. You’ll just remove the skin at the same time that you debone the chicken meat.

Can I Freeze Chicken Noodle Soup?

Yes! This recipe makes a huge batch, so you’ll probably want to freeze half of it. Make sure to divide the soup into single portions just after cooking (so it cools quickly), cool it completely in the refrigerator over night, then transfer to the freezer the next day. You can freeze in quart-sized freezer bags or reusable freezer safe food storage containers.

Slow Cooker Chicken Noodle Soup

Slow cooker chicken noodle soup is an incredibly easy and soothing winter recipe that will fill you up and warm you from the inside out!

  • 1 yellow onion ($0.32)

  • 1/2 lb. carrots (about 4 medium) ($0.30)
  • 4 ribs celery ($0.43)
  • 2 split chicken breasts* (2-2.5 lbs. total) ($6.30)
  • 1 tsp dried basil ($0.10)
  • 1 Tbsp dried parsley ($0.30)
  • 1/2 tsp dried thyme ($0.05)
  • 1 bay leaf ($0.15)
  • 1/4 tsp freshly cracked black pepper ($0.05)
  • 8 cups water ($0.00)
  • 6 oz. wide egg noodles ($0.68)
  • 1 Tbsp salt (or to taste) ($0.10)
  • 1/4 cup chopped fresh parsley (optional) ($0.20)
  1. Dice the onion, mince the garlic, peel and slice the carrots, and slice the celery. Add the onion, garlic, carrots, and celery to a 6 quart slow cooker or crock pot.

  2. Remove the skin from the bone-in split chicken breasts, then place them on top of the vegetables in the slow cooker. Add the basil, parsley, thyme, bay leaf, and pepper to the slow cooker.

  3. Pour 8 cups of water over the ingredients in the slow cooker. Place the lid on the slow cooker and cook on high for 4 hours or low for 8 hours.

  4. After cooking on high for 4 hours or low for 8 hours, carefully remove the chicken to a cutting board and discard the bay leaf. Add the egg noodles to the slow cooker, stir to combine, and replace the lid, with the heat turned on to high.

  5. Use two forks to remove the chicken meat from the bones, shredding the meat as you go. Return the meat to the slow cooker and stir to combine with the soup. The noodles should be tender after about 8-10 minutes of being in the soup (this may take a few minutes longer if the slow cooker was previously set to low).

  6. Once the chicken has been returned to the soup and the noodles are tender, begin seasoning the soup with salt. The true flavor of the soup will not be pronounced until it is properly salted. Start with 1 tsp salt, adding more until the soup is bold and flavorful. I use about 1 Tbsp (3 tsp). Finally, stir in a handful of chopped parsley for garnish just before serving.

How to Make Homemade Chicken Noodle Soup in a Slow Cooker – Step by Step Photos

Dice one yellow onion, peel and slice 1/2 lb. carrots (about four), slice four ribs of celery, and mince 3 cloves of garlic. Add all four to a 6 quart slow cooker or crock pot.

Remove the skin from two split chicken breasts (leave bones and rib meat attached). Place the chicken in the slow cooker along with 1 tsp dried basil, 1 Tbsp dried parsley, 1/2 tsp dried thyme, 1 bay leaf, and some freshly cracked black pepper.

Add eight cups of water to the slow cooker, place the lid on top, and cook on high for four hours or low for eight hours.

Add 6 oz. wide egg noodles to the slow cooker, stir to combine, and replace the lid. Let the noodles continue to cook on high heat while you shred the chicken.

As with any soup or large batch recipe, it helps to divide the soup into smaller portions before cooling in the refrigerator. This helps the food cool faster, which is a better food safety practice.

This One Pot Creamy Pesto Chicken Pasta was inspired by those little packets of powdered pasta sauce mix I always see in the grocery store. While those little packets are probably great for camping, stocking a bomb shelter, or keeping in your emergency hurricane supplies, I think regular weeknights call for something better. Chicken, Spinach, and Tomatoes Optional

This recipe idea started as just pasta and sauce. Because sometimes that’s all you need to be satisfied. But I like to rummage through my pantry, fridge, and freezer to find leftover ingredients that can be added to whatever I’m cooking. So I ended up with this creamy pesto chicken pasta, with spinach and sun dried tomatoes. But I ate it as just pasta and sauce during testing and it still made me do the happy chair wiggle.

What Type of Pasta Should I Use?

I used penne pasta, but bowties or rotini would also work well. Because this pasta to broth ratio is very important in one pot pastas I can’t vouch for alternative pastas like gluten-free, rice, chickpea, or even whole wheat pasta. They absorb broth differently than semolina pasta and may not work the same in this recipe.

Tips for Success with “one pot” Pastas

One pot pastas can be tricky for some because the pasta is cooked in a much smaller amount of liquid than traditional pasta cooking methods. Here are a few tips to make sure your one pot pasta cooks evenly and to the right texture:

  • Make sure you’re using quality cookware. Use cookware that is thick, heavy, and transfers heat evenly. Thin cookware will leave some pasta overcooked and some pasta undercooked.
  • Use a burner that is close in size to your cookware. This will help the pot heat evenly and cook the pasta evenly.
  • Make sure the broth maintains a strong simmer throughout the cooking time. If it’s not simmering, the pasta will become mushy.
  • Stir every few minutes to prevent sticking and make sure the pasta cooks evenly.
  • Keep the pot covered to trap steam, which will help cook the pasta.

One Pot Creamy Pesto Chicken Pasta

This super lush and Creamy Pesto Chicken Pasta is perfect for busy weeknights. Everything cooks in one pot and is done in under 30 minutes! 

  • 1 lb. boneless, skinless chicken breast ($5.56)
  • 2 Tbsp butter ($0.26)
  • 2 cloves garlic ($0.16)
  • 1/2 lb. penne pasta ($0.40)
  • 1.5 cups chicken broth ($0.20)
  • 1 cup milk ($0.32)
  • 3 oz. cream cheese* ($0.29)
  • 1/3 cup basil pesto ($0.73)
  • 1/4 cup grated Parmesan ($0.44)
  • freshly cracked pepper ($0.03)
  • 1 pinch crushed red pepper ($0.02)

Optional Add-Ins

  • 3 cup fresh spinach ($0.90)
  • 1/4 cup sliced sun dried tomatoes ($1.10)
  1. Cut the chicken breast into 1-inch pieces. Add the butter to a deep skillet and melt over medium heat. Add the chicken to the skillet and cook over medium heat until the chicken is slightly browned on the outside.

  2. While the chicken is cooking, mince the garlic. Add the garlic to the skillet with the chicken and continue to sauté for one minute more.

  3. Add the uncooked pasta and chicken broth to the skillet with the chicken and garlic. Stir to dissolve any browned bits from the bottom of the skillet. Place a lid on the skillet, turn the heat up to medium-high, and bring the broth up to a boil.

  4. Once the broth comes to a full boil, give the pasta a quick stir, replace the lid, and turn the heat down to medium-low. Let the pasta simmer over medium-low heat for about 8 minutes, or until the pasta is tender and most of the broth has been absorbed. Stir the pasta briefly every two minutes as it simmers, replacing the lid quickly each time.

  5. Once the pasta is tender and most of the broth absorbed, add the milk, cream cheese (cut into chunks), and pesto. Stir and cook over medium heat until the cream cheese has fully melted into the sauce. Finally, add the grated Parmesan and stir until combined.

  6. If using, add the fresh spinach and sliced sun dried tomatoes. Stir until the spinach has wilted, then remove the pasta from the heat. Top the pasta with freshly cracked pepper and a pinch of crushed red pepper, then serve.

*Cream cheese usually has markings on the outer wrapping showing lines for each ounce. Use this as a guide to cut three ounces from the block.

How to Make Creamy Pesto Chicken Pasta – Step by Step Photos

Cut one pound of boneless, skinless chicken breast into 1-inch pieces. Add 2 Tbsp butter to a deep skillet and melt over medium heat. Add the chicken pieces and sauté until the chicken is slightly browned on the outside. Add 2 cloves of minced garlic and sauté for one minute more. (I’m using an OXO 4-quart covered skillet)

Add 1/2 lb. uncooked penne pasta and 1.5 cups chicken broth to the skillet. Stir briefly to dissolve any browned bits from the bottom of the skillet.

Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come up to a full boil.

Once the broth comes to a full boil, give the pasta a brief stir, replace the lid, turn the heat down to medium-low and let it continue to simmer for about 8 minutes, or until the pasta is tender and most of the broth absorbed. Stir the pasta every two minutes or so as it simmers, replacing the lid each time.

Add 3 oz. cream cheese (cut into chunks), 1/3 cup pesto, and 1 cup milk to the skillet. Stir and cook the mixture over medium until the cream cheese has fully melted and the sauce is creamy.

Once the cream cheese has fully melted in, add 1/4 cup grated Parmesan and stir to combine.

If you’re adding spinach and sun dried tomatoes, like I did, add them once the sauce is finished and stir just until the spinach has wilted, then remove the skillet from the heat.

Whether you are using spinach and sun dried tomatoes or not, finish the creamy pesto chicken pasta off with some freshly cracked pepper and a pinch of crushed red pepper flakes. The little pops of flavor that these two bring to the dish really take it to the next level!

This Chicken and Lime Soup was inspired by a trip to a Mexican restaurant where I had the most amazing tangy Caldo Xochitl. I added more lime because I’m a lime fiend, and it gave the soup the perfect mix between spicy, salty, and sour – that same famous combo that makes Chinese hot & sour soup so delish. There’s just something about that flavor combination that tickles all the right parts of your tongue!

Make Your Chicken and Lime Soup Mild

The recipe as written is fairly spicy. The heat comes from the jalapeño pepper and the diced tomatoes with green chiles. If you’d like to make your Chicken and Lime Soup mild, simply skip the jalapeño pepper and use a 15 oz. can of regular diced tomatoes, or fire roasted diced tomatoes, in place of the tomatoes with green chiles.

If canned diced tomatoes with green chiles are not sold in your area, you can use a 15 oz. can of petite diced tomatoes plus one 4 oz. can of diced green chiles. Or, leave the green chiles out and use a can of fire roasted diced tomatoes. You can also dice up a fresh hatch green chile and sauté that with the onion, celery, and garlic in the beginning of the recipe.

Use More Chicken if Desired

Using only a small amount of meat in my recipes is kind of my calling card, so that’s what I did here. One chicken breast, shredded so you get a little bit in every spoonful, is all I needed. If you prefer more meat in your dishes, you can use two chicken breasts in this recipe without having to make any other adjustments.

Topping Your Chicken and Lime Soup

For me, topping soup with lots of stuff is half the fun, and you have a lot of topping options with this one. I wrote avocado into the recipe because I really feel like that topping is critical and really makes the soup flavors well rounded, but the rest are totally optional. When I have tortilla chips on hand, I like to use those like I would crackers in other soup, crushing them up so they can soak up that awesome broth. A little dab of sour cream would be awesome, as would a few pickled red onions.

Chicken and Lime Soup

This Chicken and Lime Soup is light, fresh, and flavorful with shredded chicken, vegetables, fresh cilantro, and a tangy lime infused broth.

  • 1 yellow onion ($0.21)
  • 3 ribs celery (about 1/4 bunch) ($0.37)
  • 1 jalapenño ($0.17)
  • 4 cloves garlic ($0.32)
  • 2 Tbsp olive oil ($0.32)
  • 1 boneless, skinless chicken breast (about 3/4 lb.) ($2.32)
  • 6 cups chicken broth* ($0.78)
  • 2 10oz. cans diced tomatoes with green chiles (Rotel) ($0.90)
  • 1 tsp oregano ($0.10)
  • 1/2 Tbsp cumin ($0.15)
  • 1 lime ($0.22)
  • 1/2 bunch cilantro ($0.40)
  • 1 avocado ($1.50)
  1. Dice the onion, celery, and jalapeño (scrape the seeds out of the jalapeño before dicing). Mince the garlic. Add the onion, celery, jalapeño, garlic, and olive oil to a large soup pot and cook over medium heat for about 5 minutes, or until the onions are soft and translucent.

  2. Add the chicken breast, chicken broth, diced tomatoes with chiles (with juices), oregano, and cumin to the pot. Place a lid on the pot, turn the heat up to high, and bring the broth up to a boil. Once boiling, turn the heat down to low and let the pot simmer for 45 minutes.

  3. After simmering for 45 minutes, carefully remove the chicken breast from the pot and use two forks to shred the meat. Return the shredded meat to the pot. Squeeze the juice of one lime into the soup (2-3 Tbsp juice).

  4. Rinse the cilantro and then roughly chop the leaves. Add the chopped cilantro to the soup, give it a quick stir, then serve. Slice the avocado and add a few slices to each bowl.

*I use Better Than Bouillon chicken soup base to make my broth because it is less expensive than buying canned or boxed broths.

Step By Step Photos

Dice one yellow onion, three ribs of celery, and one jalapeño. Mince four cloves of garlic.

Remove ribs and seeds from jalapeño

Before dicing the jalapeño, slice it in half lengthwise and use a spoon to scrape out the white ribs and seeds. These are the hottest parts of the jalapeño, so removing them first will give you a little more jalapeño flavor and a little less heat.

Add the celery, onion, jalapeño, and garlic to a large soup pot with 2 Tbsp olive oil. Sauté over medium heat for about 5 minutes, or until the onions are soft and translucent.

Add one boneless, skinless chicken breast to the pot (about 3/4 lb.). Then add 6 cups chicken broth (I use Better Than Bouillon so I can mix up any amount needed at any time).

Next, add two 10 oz. cans of diced tomatoes with green chiles. If you can only find 15 oz cans, you can use one. Or, if you can not find canned diced tomatoes with green chiles, you can either use diced tomatoes and one 4 oz. can of green chiles, or just use fire roasted diced tomatoes.

Add cumin and oregano to the soup pot.
In addition to the diced tomatoes with green chiles, also add 1/2 Tbsp cumin and 1 tsp dried oregano.

Place a lid on the pot, turn the heat up to high, and allow it to come up to a boil. Once boiling, turn the heat down to low and let the soup simmer for 45 minutes (lid on).

After simmering for 45 minutes, the chicken should be tender enough to shred. Carefully remove it from the pot to a clean cutting board, then use two forks to shred the meat into small pieces. Return the shredded meat to the soup pot.

Squeeze the juice from one lime (about 2-3 Tbsp) into the broth. To get the most juice out of the lime, I like to cut it in half, squeeze as much by hand, then insert a spoon into the lime and twist to squeeze out the rest.

Rinse the cilantro to make sure there’s no sand hiding in there, then give it a rough chop. You don’t have to take the time to carefully remove all stems. Cilantro stems are tender enough to enjoy. Stir the cilantro into the soup.

This creamy cheesy chicken and tortilla casserole is pure comfort food heaven and I guess that’s just what I need after months of eating nothing but summery refrigerator salads. 😅

What is King Ranch Chicken Casserole?

King Ranch Chicken Casserole is a classic Texan casserole, with layers of chicken, cheese, tortillas, and a rich creamy gravy (read about the purported history of the casserole here). Like a lot of casseroles, King Ranch Casserole is usually made with canned condensed soups. But if you know me, you know that I can’t get down with that. So I made a from-scratch version of this classic recipe, with a quick and easy homemade creamy chicken gravy. 

King Ranch Chicken Casserole, My Way

This is one of those recipes where there are as many versions as there are small towns in America. My interpretation of Kinch Ranch Chicken Casserole has a little less “sauce” and a little more texture. I did this by using crunchy tortilla chip strips (the thick rectangular chips) instead of raw corn tortillas, and used a little less of that creamy gravy than you might normally find in a King Ranch Casserole. It’s still creamy, cheesy, and good, just less gloopy

The Rotisserie Chicken Short Cut

If you want to make your King Ranch Chicken Casserole a little easier, you can skip cooking the raw chicken breasts below and use pulled meat from a rotisserie chicken. You’ll need 2-3 cups of shredded rotisserie chicken to replace the chicken breasts. You can start the recipe with the step where you add butter, onion, and bell pepper to the skillet, modifying by adding the 1 Tbsp chili powder to the vegetables instead of to the raw chicken.

How Spicy is This King Ranch Chicken Casserole?

My casserole’s spice level was virtually non-detectable. The heat level will vary based on two ingredients: the chili powder and the diced tomatoes with green chiles (Rotel). Chili powder (which is a chili seasoning, not ground red chiles) can vary in heat from brand to brand and the one I have right now (a grocery store generic) has zero heat. The same is true for canned diced tomatoes with green chiles. Some brands are spicy, some are mild. Some label them as spicy or mild, some do not. So just be aware of these two ingredients if you’re trying to control the heat.

  1. Place the chicken breasts on a cutting board, cover with plastic wrap, and use a mallet or rolling pin to pound the chicken to an even thickness, about 3/4 to 1-inch thick. Season both sides of the chicken breasts with chili powder.

  2. Heat the cooking oil in a large skillet over medium. Once hot, swirl the oil to coat the surface of the skillet, then add the seasoned chicken breast. Cook the chicken until browned on each side and cooked through, about 5 minutes each side. Remove the chicken to a clean cutting board to cool.

  3. While the chicken is cooking, finely dice the onion and bell pepper, and shred the cheddar cheese. Begin to preheat the oven to 375ºF.

  4. After removing the chicken from the skillet, add the butter, onion, and bell pepper. Sauté the onion and bell pepper in the butter over medium heat until the onions are soft and translucent.

  5. Add the flour to the skillet with the onion and bell pepper. Continue to sauté for about one minute more, or until the flour coats the bottom of the skillet and turns golden brown.

  6. Add the chicken broth to the skillet and stir to dissolve the flour and any browned bits of chicken from the bottom of the skillet. Allow the broth come up to a simmer, at which point it will thicken to a gravy. Remove the skillet from the heat.

  7. Drain the can of diced tomatoes with green chiles well. Dice the cooked chicken. Stir the chicken and tomatoes into the gravy.

  8. After stirring the chicken and tomatoes into the gravy, add the sour cream and 1/2 cup of the shredded cheddar, and stir until combined.

  9. Layer a few handfuls of the tortilla chip strips into the bottom of a 9×13-inch or 3 quart casserole dish. Spoon half of the chicken mixture on top of the chips. Layer more tortilla chip strips on top (about half as much as before), then spoon the remaining chicken mixture on top. Finally, add the remaining 1.5 cups of shredded cheddar.

  10. Bake the casserole in the preheated 375ºF oven for 15 minutes or until the cheese is melted and the casserole bubbles around the edges. Sprinkle sliced green onions on top after baking, then serve hot.

These are the thick rectangular tortilla chips, like these chips from Mission (I used a generic). Their thick texture makes them ideal for this casserole.

Begin by pounding two boneless, skinless chicken breasts (about 1 lb. total) to an even thickness, about 3/4 to 1-inch thick. This will help it cook quickly and evenly without drying out. Season the chicken breasts on both sides with about 1 Tbsp chili powder.

Add 1 Tbsp cooking oil to a large skillet and preheat it over medium. Once hot, swirl to coat the skillet in oil, then add the chicken breasts. Cook the chicken until browned on both sides and cooked through (about 5 minutes per side). While the chicken cooks, dice one yellow onion and one bell pepper. Shred 8 oz. cheddar cheese.

Remove the cooked chicken to a clean cutting board to cool. Begin to preheat the oven to 375ºF. Add the diced onion and bell pepper to the skillet along with 2 Tbsp butter. Sauté the onion and bell pepper in the butter over medium heat until the onion are soft and translucent (about 5 minutes).

Add 2 Tbsp all-purpose flour to the skillet and continue to stir and cook over medium heat, for about one minute more, or until the flour begins to coat the bottom of the skillet and turn golden brown.

Add 1 cup chicken broth to the skillet and stir to dissolve the flour and any browned bits from the bottom of the skillet. Allow the skillet to come up to a simmer, at which point the broth will thicken into a gravy. Remove the skillet from the heat.

Dice the cooked chicken and drain one 10 oz. can of diced tomatoes with green chiles. Add the chicken and tomatoes to the skillet and stir to combine.

Add 1/2 cup sour cream and 1/2 cup of the shredded cheddar to the skillet and stir to combine.

Lay a few handfuls of tortilla chip strips in the bottom of a 9×13-inch or 3 quart casserole dish. Spoon 1/2 of the chicken mixture over the chips (it will not cover in a solid layer).

Add a couple more handfuls of chips on top (about half as many as before), then spoon the rest of the chicken mixture over top. Lastly, add the remaining 1.5 cups of shredded cheddar on top.

Bake the King Ranch Chicken Casserole in the preheated 375ºF oven for 15 minutes, or until the cheese is melted and the casserole is bubbling around the edges. Sprinkle sliced green onions on top after baking. Serve hot.

One of the coolest things about having been blogging for over ten years is seeing how my cooking style and skills have changed through this experience. One of my first recipes to go viral was my Pepperoni Stuffed Chicken. It was a tasty recipe for sure, but way too much work for current day Beth. 😅 This Baked Pepperoni Chicken is an easier, just as delicious interpretation of pizza-style chicken. It’s perfect for weeknight dinners and holds up in the refrigerator for meal preps. Hopefully you’ll appreciate the lack of breading, stuffing, and frying in this newer version as much as I did.

How to Serve Baked Pizza Chicken

I plated my Baked Pizza Chicken with some Homemade Garlic Bread and simple salad of spring mix with light coating of Italian dressing. I like to keep my side dishes simple so that dinner doesn’t get over complicated. Bonus: you can bake the garlic bread in the oven during the last 5 minutes or so that the chicken cooks.

You could also serve your pizza chicken over a bed of pasta with red sauce. 

Another fun way to eat this Baked Pizza Chicken would be to make a sort of chicken sandwich out of it. Put it on a roll with a little extra pizza sauce, maybe some sliced red onion, and treat it like a meatball sandwich!

Is Fresh Mozzarella a Must?

Fresh mozzarella (the type packed in water) definitely works best because it melts so beautifully, but it can be pricey. If you’re lucky enough to live near an Aldi, you can get it for a steal, like I did. If you can’t get fresh mozzarella for a good price the next best is full-fat mozzarella (not packed in water). And as a last resort, you can use part-skim mozzarella. Part-skim is dryer and does not melt as smoothly, but it will work in a pinch.

Can I Add Other Toppings?

Sure! If you want to add more than just pepperoni, I suggest chopping the toppings up in to very small pieces so they kind of get stuck in the cheese and don’t fall off. Red onion would be awesome, as would black olives and maybe some finely diced bell pepper.

Baked Pizza Chicken

This easy Baked Pizza Chicken is the perfect fast and easy weeknight dinner. The chicken cooks quickly and always stays tender and juicy!

  • 1 Tbsp Italian seasoning blend ($0.30)
  • 1/8 tsp garlic powder ($0.02)
  • 1/8 tsp salt ($0.01)
  • 2 Tbsp olive oil ($0.32)
  • 2 boneless, skinless chicken breasts (about 2/3 lb. each) ($7.64)
  • 1/4 cup pizza sauce ($0.17)
  • 4 oz. fresh mozzarella ($1.33)
  • 8 slices pepperoni ($0.23)
  1. Preheat the oven to 400ºF. In a small bowl, stir together the Italian seasoning blend, garlic powder, salt, and olive oil.

  2. Place the chicken breasts on a cutting board and cover with a piece of plastic wrap to prevent splatter. Use a mallet or rolling pin to pound the chicken to an even thickness, about 3/4-inch thick. Cut each chicken breast in half to make two equal sized pieces.

  3. Place the chicken breasts in a shallow baking dish or on a baking sheet, making sure they have at least an inch of space around them. Spread the oil and herb mixture over the surface of each piece of chicken.

  4. Bake the chicken in the fully preheated 400ºF oven for 15 minutes. While the chicken in baking, slice the mozzarella.

  5. After 15 minutes, remove the chicken from the oven. Spread 1 Tbsp pizza sauce over the surface of each piece. Next top each piece with about 1oz. mozzarella and two slices of pepperoni.

  6. Return the chicken to the oven and bake for 5-7 minutes more, or until the internal temperature of the chicken reaches 165ºF. Remove from the oven and serve.

Italian herb and oil mixture

Preheat the oven to 400ºF. In a small bowl, combine 1 Tbsp Italian seasoning blend, 1/8 tsp garlic powder, 1/8 tsp salt, and 2 Tbsp olive oil.

Place two boneless skinless chicken breasts (about 2/3 lb. each)on a cutting board and cover with a piece of plastic wrap. Use a mallet or rolling pin to pound the chicken to an even thickness, about 3/4-inch thick. This helps the chicken cook quickly and evenly in the oven.

Since 2/3 pound is a LOT of chicken per serving, I always cut my chicken breasts in half. I like to cut on a diagonal to make two pieces that are similar in shape to the original piece.

Place the chicken pieces in a shallow baking dish or baking sheet, making sure there’s about an inch of space all around. Coat the chicken pieces in the Italian herb and oil mixture. Bake the chicken for 15 minutes in the preheated 400ºF oven. While the chicken is baking, slice 4 oz. of fresh mozzarella.

After 15 minutes, take the chicken out and add about 1 Tbsp pizza sauce to each piece. Spread the sauce over the surface of the chicken.

Next, add about 1 oz. fresh mozzarella to each piece of chicken, then finish each with two slices of pepperoni.

Return the chicken to the oven and bake for an additional 5-7 minutes, or until the mozzarella is melted and the internal temperature of the chicken reaches 165ºF. Mine was at 163ºF after 5 minutes, so I gave it 1-2 more minutes in the oven. The total cooking time will depend on the size of your chicken pieces and how long the chicken was out of the oven while adding the toppings.
