Marshmallows are one (or some) of my favorite things. We don’t often use ‘marshmallow’ in the singular and we certainly don’t make them one at a time. When we talk about marshmallows, it’s generally in the plural since it’s hard to imagine just one, lone, solitary marshmallow. That would be triste, as you’d say in French, or sad. Except, of course, when it’s floating on top of a warm cup of hot chocolate. That makes me happy. And what makes me even happier is when the marshmallow is made of chocolate. In that case, I’m absolutely delighted.

Ambrosia Salad is a creamy fruit salad loaded with pineapple, mandarin oranges, coconut and miniature fruit-flavored marshmallows.

You guys, December is seriously flying by. My to-do list is a mile long and just seems to keep increasing.

But for some reason, I’m really not that stressed out about the holidays.

Maybe because 30 people won’t be crammed in our house and there aren’t any games to plan or menus to coordinate. While I have all the feelings about Christmas 2020, it’s sort of refreshing not to feel the stress creeping in.

But that’s pretty much how I’m feeling in the moment. Ask me again in a few days and I’ll probably be all kinds of sad eating Oreos dipped in peanut butter, or hopped on cold brew wrapping gifts at midnight. Who really knows?

One thing I do know is that this simple Ambrosia Salad is one of my fave dishes during the holidays and it’s still happening even if our typical Christmas dinner is not.

Also, don’t @ me about this not being a salad. I get it. There’s no lettuce, but there’s a bunch of stuff tossed together in a bowl and that’s salad enough for me.

I think I’ve died and gone to heaven. Cue all the exclamation points.

And this is soooo not my regular Monday recipe. But we could all use some s’mores!

This was another “recipe” that I shared on instagram when we had my mom’s birthday two weeks ago. I couldn’t believe how many of you asked for the recipe and I hate to say, there really is no recipe! But here is the method for getting the perfect pan of s’mores, sans fire.

Now of course, disclaimer:

Yes yes YES I 100% think most of the fun with s’mores is roasting the marshmallow yourself. And just the simple act of roasting it over the fire. It totally MAKES the experience.

But! Here’s the thing. If you don’t have a fire pit, and it’s late, and you have a few family members over (if you’re doing that, right now we’re doing our immediate fam) and you all want s’mores… you’re sort of out of luck.

Sure, the microwave works. I have been known many a time to make a microwaved s’mores in a moment of desperation. I am not ashamed. 

Making sheet pan s’mores is the secret though. Also, a fab idea for a bunch of kids!

The first time I made these I had a complete brain meltdown. See, I’m terrible at math (you know this) and even worse, I don’t really care that I’m terrible at math? Thank you iPhone calculators and everything else in the last ten years. I made a big sheet pan and it didn’t register that I would just be adding tops to the s’mores. I kept thinking I was combining the s’mores that were on the sheet.

So we ended up with 25 s’mores. Yes. 25.

Oops! 

That’s a fun mistake though, let me tell you. I was thinking we’d end up with 12, because I’d smash them together. I know. It makes zero sense. Brain meltdown!

Anyway, that’s why these are so great. You can make a LOT at once and they are all done at the same time. It’s not like you have to wait to share sticks or big skewers for roasting. At the same time, a bunch of people can enjoy their s’mores! That’s a win.

You can use homemade ingredients if you wish. I’ve made homemade graham crackers here and homemade marshmallows lots of times!

Or you can use store bought ingredients too. I like plain grahams, these big square marshmallows and lindt chocolate (because it’s the best, but also because the square fits so well on a graham!) or a peanut butter cup

Other bonuses:

The marshmallows still get toasty and brown. I prefer them charred and on fire, but this is close enough.

The chocolate gets wonderfully melty too. Like PERFECTLY melty. You know how sometimes you might have an unmelted bite of chocolate in your s’more? That doesn’t happen with these.

The grahams get a little toasty too. Like, adding-depth-of-flavor toasty. In the best way. This makes them taste richer and nuttier.

Sheet Pan S’mores

These sheet pan s'mores are embarrassingly easy and oh so good. Perfect for a crowd, kids or when you don't have access to a bonfire!

Ingredients

  • 24 graham crackers
  • 12 squares of chocolate lindt is my favorite, or use peanut butter cups
  • 12 marshmallows

Instructions

  • Place your oven rack on the lowest level of the oven. This is important! We’re using the broiler, and placing it on the lowest rack gives the marshmallows and chocolate a minute or two to toast and melt before burning.
  • Preheat the broiler in your oven to high. Place 12 graham crackers on a sheet pan. Top each with a piece of chocolate or a peanut butter cup. Top each with a marshmallow.
  • Place the sheet pan in the oven for 1 to 3 minutes - keeping your eye on it the whole time. This will all depend on your broiler! You want the marshmallows puffed and golden brown on top.
  • Remove the pan from the oven and top with the remaining graham crackers. Serve immediately.

With everything going on in our world right now, I figured a little throwback, simple, trashed up rice krispie treat would do the trick for Saint Patrick’s Day… that we will probably all spend at home! While I photographed this recipe weeks ago in anticipation for the holiday, its retro vibe is giving me all the feels for one of my favorite childhood treats. 

Honestly, right now I’m in constant not-trying-to-panic mode. As someone who has had major anxiety over sickness and my loved ones getting sick since I was a child, I’m trying not to freak out. So we’re staying home and I’ll be cooking up a storm with what I can – mostly to distract myself and feed everyone delicious food and hopefully give you a few minutes to take your mind off everything.

I’ll be doing what I do right here everyday, so please stop in and chat!

Big time question for you. How do you feel about the marshmallows?

I know some people looooaaathe them. The crisp, crunch, almost like styrofoam. Eddie has a severe aversion to styrofoam (it’s funny) so he can’t even IMAGINE eating the marshmallows. 

But I’m the odd one out and love the texture. While I’ve never really cared to eat a bowl of Lucky Charms with milk, I DO want to crunch on a few marshmallows here and there.

So, this is kind of my dream. Crisp, chewy, marshmallowy rice krispie treats studded with lucky charms marshmallows AND topped with them.

Also, side note – the marshmallows today are so ridiculous and outrageous! When I was a kid, they looked nothing like this.

Oh and you can also make a larger pan, I just happen to like really thick rice krispie treats. So I go with a square pan.

Lucky Charms Rice Krispie Treats

These lucky charms rice krispie treats are a throwback recipe to one of my favorite childhood treats! Here's a little festive twist for Saint Patrick's Day.

Ingredients

  • 4 tablespoons unsalted butter
  • 1 10- ounce bag of mini marshmallows
  • 6 to 7 cups crisped rice cereal
  • 2 cups lucky charms marshmallows (or as many as you can find in the bag!

Instructions

  • Line a 9x9-inch baking dish with parchment paper or spray it with nonstick spray. You can also use a 9x13 inch baking dish, the squares just won't be as thick!
  • In a large pot, melt the butter over low heat. Once the butter is melted and even a little browned, stir in the mini marshmallows. Stir until the mixture is creamy and the marshmallows have melted.
  • Turn off the heat and fold in the rice krispies. Completely mix until all the rice cereal is mixed in. Stir in 1 cup of the lucky charms marshmallows and fold them in for a few minutes. Press the mixture into the dish. I like to press it down with a piece of parchment paper so it gets super smooth on top and it doesn't stick to the spoon. Then I press the remaining lucky charm marshmallows into the top! Let them set for about an hour. Slice into squares and serve!

I can’t believe we’re almost half way through January and this is the first recipe I’ve posted.

I wish my excuse was that I’ve been on a tropical vacation, but nope, just hanging out in Ohio feeling as though I’m in this weird bubble of crazy varying temperatures and sickness that just keeps circulating.

Seriously though, did any of you experience a 38 degree temp drop they other day like we did? It went from 68 to 30 degrees over the course of about 8 hours.

And since no amount of hot tea with honey, cough drops, or cold meds seem to be helping, I decided to make cookies. Ooey, gooey S’mores Cookies!
