What is elote? Elote (pronounced eh-loh-tay) is Mexican street corn. If you’ve had it, I bet you love it. If you haven’t, you’re in for a treat! Elote tastes sweet and savory, tangy and spicy all at once. I love to make mine with grilled corn for some smokiness, too.

Elote is made with corn on the cob, slathered with mayonnaise, seasoned with chili powder and fresh lime juice, sprinkled all over with salty Cotija cheese and cilantro. It’s messy to eat but worth every bite. Elote is the perfect summertime side dish for any Mexican-inspired meal.

In Mexico, elote means an ear of corn, and this recipe replicates a popular serving style sold by street vendors. I can’t claim that this elote recipe is quite authentic, but it brings me back to the elotes I enjoyed in Mexico City.

I’m dreaming of traveling throughout Mexico, sampling the cuisine region by region. Someday! For now, we’re making the most of dinner at home.

My best tip for how to make a killer pan of homemade enchiladas?

This homemade enchilada sauce recipe. 

It has been the secret ingredient in my favorite enchilada recipe for over years and years.  And every time I make a pan of chicken enchiladas for a dinner party, or take some enchilada soup to a friend with a new baby, or whip up a quick batch of enchilada nachos or enchilada cups for a party…this enchilada sauce always gets rave reviews and someone inevitably always asks for the recipe.

It’s a million times better than anything you can buy in the can and is made with the coziest, warm chili flavors.  But best of all, this homemade red enchilada sauce recipe only takes about 20 minutes to make and calls for a few simple ingredients that you probably already have sitting in your pantry.  So if you have yet to try this recipe, I say it’s time!

Chili powder (to make red enchilada sauce)

Homemade Red Enchilada Sauce Ingredients:

To make this easy enchilada sauce recipe, you will need the following ingredients:

  • Oil and flour: To make our roux, which will thicken the sauce.  Feel free to use any type of oil or butter that you prefer.  And see notes below if you need a gluten-free option for the flour.
  • Chili powder: Very important note — this recipe calls for American-style chili powder, which is actually a blend of various mild chilis and seasonings.  (It is not cayenne!)  I recommend investing in a good-quality brand of chili powder for this recipe, since it is the main seasoning used here.  And if you happen to be an international reader, please (please) note that you need to look for a specifically American-style chili powder.  Many readers have reported over the years that most international chili powder blends are typically more similar to straight cayenne and can be overwhelmingly spicy.
  • Garlic powder, ground cumin, dried oregano: These are the other dried seasonings that we will use in the sauce.
  • Veggie or chicken stock: I also recommend using some good-quality stock in this recipe, which will add some delicious depth of flavor to the sauce.
  • Fine sea salt: And finally, don’t forget to season the sauce!  I typically add in about 1/2 teaspoon, but please note that the amount of salt you’ll need will directly relate to how salty your veggie/chicken stock happens to be.

How To Make Enchilada Sauce:

Here are the basic steps for how to make enchilada sauce (full instructions included in the recipe box below):

  1. Cook the roux and spices: In a small saucepan, we’ll cook the flour and oil together to form the roux, and then whisk in the spices to briefly toast them before adding in the stock.
  2. Simmer: Gradually add in the stock, while whisking the sauce to blend in any lumps.  Then heat to a simmer, and let it simmer for about 10-15 minutes until it has reduced and thickened a bit.
  3. Season: Season with salt (or any extra seasonings that you might like to add), to taste.
  4. Serve: Then serve it up in a pan of enchiladas or whatever recipe sounds good…and enjoy!

Possible Variations:

This recipe is quite flexible, so please feel free to tinker around with ingredient amounts and customize it however you prefer!  For example, you could…

  • Make it gluten-free: You can either use an all-purpose gluten-free flour blend, in place of the AP flour.  Or you can nix the flour and instead add a cornstarch slurry (equal parts cornstarch and cold water whisked together) to the sauce once it is simmering to thicken it.
  • Make it creamy: Whisk in 1/2 cup of heavy cream to turn this recipe into an epic creamy enchilada sauce.
  • Make it spicier: Feel free to add in a pinch or two of cayenne to make this sauce even spicier.  Or alternately, you can choose to use ancho chili powder in place of standard American chili powder.
  • Make it milder: American chili powder should naturally be quite mild.  But if you are wary of heat, feel free to start with 2 tablespoons (instead of 4 tablespoons) of chili powder in the recipe.  Then once the sauce has simmered, give it a taste and feel free to add more if you would like.
  • Make it smokier: Feel free to swap some of the American chili powder for chipotle chili powder, if you would like this sauce to have a smoky chipotle kick.  (Also note that chipotle powder is considerably spicier, so this version would pack more heat too.)
  • Add tomato sauce: If you would like to have a more tomato-y enchilada sauce, you are welcome to add 1/2 cup tomato sauce to the recipe in place of 1/2 cup of the stock.

Red Enchilada Sauce

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes

My all-time favorite homemade red enchilada sauce recipe.  It’s quick and easy to make, and a million times better than the canned stuff!

Instructions

  1. Cook the roux and spices: Heat oil in a small saucepan over medium-high heat. Add flour and cook for 1 minute, whisking constantly.  Add in the garlic powder, cumin and oregano and cook for 1 more minute, whisking constantly.
  2. Simmer: Gradually pour in the stock, whisking constantly to combine until no lumps remain.  Continue cooking until the sauce reaches a simmer.  Then reduce heat to medium-low to maintain the simmer (the sauce should continue lightly bubbling) for about 10-15 minutes, uncovered, until the sauce has slightly thickened.
  3. Season: Give the sauce a taste and season with salt, as needed.  (I typically add 1/2 teaspoon fine sea salt, but the saltiness of the sauce can vary depending on the brand of stock that you use.)
  4. Serve: Use immediately in your favorite recipe and enjoy!


Notes

Chili powder (important note): As mentioned above, this recipe calls for traditional American chili powder — which is not cayenne.  American chili powder is actually a blend of spices and is quite mild, whereas international chili powders are usually incredibly spicy.  So if you live outside of the United States, please look specifically for an American-style chili powder blend.

Gluten-free option: Feel free to use a 1-to-1 all-purpose gluten-free flour blend in place of the all-purpose flour.  Or alternately, you can thicken the sauce with a cornstarch slurry (equal parts cold water and cornstarch whisked together, then added to the sauce once it has reached a simmer).

Storage instructions: Let the sauce cool to room temperature.  Then transfer it to a mason jar or food storage container and refrigerate for up to 5 days.  Unfortunately this sauce separates a bit once it has frozen, so I don’t recommend freezing it.

What fish to use for fish tacos

What makes the flavor in these easy fish tacos? The dry rub for the fish taco seasoning! You can make up a big batch of this seasoning in advance and keep it around for taco time (it keeps for about 1 year). Or just mix up what you need day of, which is what we normally do.

Here’s the cool thing: you’ll use it as a dry rub on the fish. There’s no breading and no oil! Just pat the spices on and bake for about 10 minutes at 400 degrees Fahrenheit! The spices form a beautiful crust that’s full of zesty flavor. Here’s what’s in fish taco seasoning:

  • Chili powder
  • Cumin
  • Smoked paprika
  • Garlic powder
  • Onion powder

How to make the quickest taco slaw: tips!

One thing that’s essential for fish tacos: a slaw that’s actually fast to make. Many taco slaw recipes take longer than expected: they require lots of ingredients for the dressing or chopping lots of veggies. Not this one! We’ve pared it down to the essentials so that it takes only about 5 minutes to put together. Here are some tips:

  • Red cabbage, carrot, and green onion are all you need. This makes the quickest and easiest slaw: only a few veggies to slice.
  • Add lime and salt and you’re done! You don’t need to make a fancy dressing: tangy lime juice does the trick! Celery salt adds a nice nuance to the overall flavor. If you don’t have it, just use kosher salt!
  • Serve with a slotted spoon. This slaw picks up moisture as it sits. Serving it right away avoids this. If you let it sit for any amount of time, serve with a slotted spoon to avoid a watery taco.

  2. Cilantro Lime Crema You’ll want to bathe in this zesty cilantro lime crema! It’s made with sour cream, lime, cilantro and a few spices.
  3. Spicy Mayo Make the Mexican-style spin on this spicy mayo: it’s just 2 ingredients so you can whip it up in a flash. *Dairy free option
  4. Chipotle Sauce This easy sauce is zesty, smoky and creamy: perfect for tacos and burritos! *Dairy free option
  5. Shrimp Taco Sauce This one works on fish tacos too! It’s like a creamy ranch made with cilantro: quick and easy!

Ingredients

For the fish

  • 1 pound tilapia or cod* (wild caught preferable)
  • 1 tablespoon chili powder
  • 1 teaspoon each cumin and smoked paprika (or standard paprika)
  • 1/2 teaspoon each garlic powder and onion powder
  • 1 teaspoon kosher salt, for seasoning

For the tacos


Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Thaw the fish, if necessary.
  2. Make the fish: In a small bowl, mix together the dry rub: chili powder, cumin, smoked paprika, garlic powder, and onion powder. Pat the fish dry, then sprinkle it with 1 teaspoon kosher salt and pat it in. Add the seasoning and pat it to cover the fish. Place the fish on a parchment lined baking sheet. Bake for 10 minutes, until tender. Then broil for 2 minutes until the top is lightly browned.
  3. Make the slaw: Meanwhile, thinly slice the cabbage. Shred or grate the carrot (we used a handheld julienne peeler). Thinly slice the green onion. Place the cabbage, carrots and green onion in a bowl. Stir in the lime juice, salt and celery salt. Serve immediately with a slotted spoon. The slaw picks up moisture as it sits; if you plan to let it sit, make sure to serve with the slotted spoon to strain out the moisture.
  4. Make the sauce: Make the Fish Taco Sauce.
  5. Warm the tortillas: If desired, char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm. Or warm them according to How to Warm Tortillas.
  6. Assemble the tacos by topping the tortillas with fish, slaw, and sauce. Top with chopped cilantro and a spritz of lime. 

Notes

*If you’re serving 4 hungry eaters, you may want to increase the fish to 1.5 pounds and up the spice quantities accordingly. The slaw and sauce should work for 12 tacos. Or, make sure to serve with a filling side dish like refried beans (purchased or homemade).

Let me introduce you to one of the best meals I’ve had all season! These fresh black bean burrito bowls are made from scratch with simple, wholesome ingredients. While the components initially take some time to prepare, they make great leftovers to enjoy all week long. These bowls pack well for lunch, too.

Meet my go-to, foolproof black bean recipe! If you’ve ever wanted to learn how to cook black beans from scratch, this guide is for you. These beans are rich and creamy, yet lively and full of flavor. They rival the frijoles negros I’ve loved in Costa Rica, Mexico and Belize, and they make a delicious side dish or meal component.

Home-cooked black beans offer far more flavor than canned beans, especially when you include the right seasonings. I’m thrilled with how these turn out. Dried beans are also less expensive than canned beans, and they reduce waste (no cans to throw away).

Plus, black beans are very good for you. Black beans are rich in fiber and plant-based protein, and a fantastic source of folate, thiamin (vitamin B1), phosphorus, manganese and magnesium. If you’ve ever read that beans are “unhealthy,” it’s because beans contain lectins until they’ve been sufficiently cooked. Lectins, which are naturally present in many plant foods, are considered an anti-nutrient. If you’re eating properly cooked beans, as instructed below, there’s no reason for concern.

You might be surprised to hear that black beans are actually so blue that they appear black. Black beans are full of anthocyanins, a powerful group of flavanoids that also makes blueberries, purple cabbage and red onions so nutritious. You can read all about black bean nutrition here.

If you’re learning to cook dried beans, start them early. The wild card with dried beans is that you’ll never be 100 percent certain when they’ll finish cooking. Better to start cooking well before you’re in a rush for dinner. Let’s get to it!

Looking for an easy way to liven up your meals? Add a fresh sauce! Let me introduce you to my latest favorite—this refreshing cilantro and hemp seed pesto. It’s made simply with fresh cilantro, hemp seeds, garlic, optional jalapeño (for some heat) and olive oil.

Even if you typically don’t love cilantro, there’s a strong chance you’ll enjoy this sauce. My husband is typically in the “no cilantro” camp, but he kept going back for spoonfuls of this pesto.

I’m using the term “pesto” loosely here, since traditional basil pesto is made with basil, pine nuts and Parmesan. Instead of pine nuts, I used hemp seeds, which are high in protein and key minerals, including potassium, magnesium, calcium, iron and zinc.

When blended, the hemp seeds become so nice and creamy that this sauce tastes complete without cheese. This nut-free and dairy-free pesto would be great with basil as well.

This recipe is inspired by a cilantro-hemp sauce that I enjoyed at True Foods Kitchen in Kansas City. They serve it on their “Ancient Grains Bowl,” which is topped with sweet potatoes, onions, portobello mushrooms and avocado. Naturally, this sauce goes well with all of the above, as well as almost any meal with Mexican-inspired flavors. You’ll find more ideas below!

Happy Taco Tuesday, friends!  You knew what was coming after yesterday’s post on my favorite recipe for Mexican carne asada

I’ve long had a weakness for these grilled steak tacos whenever I spy them on a menu at restaurants and street taco stands.  But now, living in Barcelona where good Mexican food is much harder to find, I’ve taken to making my own carne asada tacos at home.  And as someone with very high standards for what constitutes very good tacos, I have to say…these are pretty damn good.

As I mentioned in my post yesterday, I’m a big fan of using a bold marinade for carne asada steak, and love letting mine soak up a delicious balance of citrusy, garlicky, herby flavors before searing it over high heat on a grill.  (Or, if you’re like me and don’t have one right now, an indoor grill pan or cast-iron skillet works great too.)  Then from there, I prefer to serve my tacos street-style on warm corn tortillas with a simple topping of chopped white onion and cilantro, a squeeze of lime juice, plus a scoop of guac or sliced avocados if you would like to add some creaminess.  That said, though, feel free to add on whatever other toppings you love too — salsa, crema (or sour cream), chiles, radishes, crumbled cheeses would all be delicious too.

The recipe itself is really quite simple, but it does take a few hours to marinate the steak.  So plan ahead, maybe go the extra mile and make some homemade corn tortillas while you wait on the steak (highly recommend), serve them up with some ice-cold margaritas, and enjoy enjoy!
