Their warm, spicy aroma just smells like Christmas, and decorating them is SO. MUCH. FUN. What Are Gingerbread Cookies?

Gingerbread cookies are a cookie made with rich molasses and plenty of warm spices, like ginger, cinnamon, and cloves. The gingerbread cookies are often cut into the shape of a man (aka gingerbread men), but can also be cut into a variety of holiday-themed shapes. Decorating gingerbread cookies is a popular holiday activity and my personal favorite!

Ingredients for Gingerbread Cookies

Gingerbread cookies have many of the same ingredients as most basic cookies but include a variety of rich and warm spices. Here’s what you’ll need to make gingerbread cookies:

  • Butter: Butter is the base for many cookies. It gives the cookies plenty of richness and creamy buttery flavor.
  • Brown Sugar: Brown sugar gives these cookies a deeply rich sweetness, and helps keep the cookies soft.
  • Molasses: Molasses sweetens the cookies, adds an amazingly deep flavor, and gives the cookies a rich brown color.
  • Egg: Egg helps give the cookies structure and helps them rise just a little bit while baking.
  • Vanilla: Vanilla adds to the warm flavor profile of the cookies.
  • Baking Soda: A small amount of baking soda helps the cookies rise so they are nice and soft.
  • Flour: All-purpose flour gives the cookies structure and bulk.
  • Spices: A mix of cinnamon, ginger, cloves, nutmeg, and salt gives the gingerbread cookies tons of warm flavor in every bite! Cinnamon also helps deepen the cookie’s classic brown color.

How to Decorate Gingerbread Cookies

While you don’t have to decorate gingerbread cookies, I think that’s half the fun. I like to keep things simple with a basic powdered sugar icing. To make the icing, mix 1 cup powdered sugar with 1-2 Tbsp water, or just enough for it to form a thick icing. You can make multiple batches of the icing and color each one separately with a couple drops of food coloring, for even more decorating fun. Then just spoon the icing into a plastic bag, cut off just a sliver of the corner of the bag to create a piping tip, and then decorate away!

You can also add tons of other fun items to the gingerbread cookies, like sprinkles, red hot candies, peppermints, or any other type of small candy. These extras will take your gingerbread cookies to the next level!

Storing Gingerbread Cookies

Once cooled and decorated (and once the icing has dried), the gingerbread cookies can be stored in an air-tight container at room temperature for about one week. …But I’m sure they’ll all get eaten before then!

Gingerbread Cookies

  • 1 cup powdered sugar $0.32

Instructions

  • Add the butter and brown sugar to a bowl and use a mixer to beat them together until light and creamy. Add the molasses, vanilla, and egg, and beat until creamy again.
  • In a separate large bowl, stir together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  • Add about ⅓ of the flour mixture to the butter and sugar mixture, then beat on low speed until incorporated. Repeat until all of the flour has been added to the batter. It should form a very soft cookie dough.
  • Transfer the cookie dough to a large piece of plastic, shape it into a ball, and wrap it tightly. Refrigerate for at least two hours, or up to one day.
  • When ready to make the cookies, preheat the oven to 350ºF. Divide the cookie dough in half to make it easier to work with (keep the other half in the refrigerator until ready to use). Roll the dough out on a lightly floured surface until it's about ⅛-inch thick. Cut the dough into your desired shapes and place them on a parchment-lined baking sheet, at least one inch apart.
  • Bake the cookies for 8 minutes, or until slightly puffed in the center and they are just beginning to brown on the outer edges. Remove the cookies from the oven and allow them to cool completely.

Icing (optional)

  • While the cookies are cooling, place the powdered sugar in a bowl and add 1 Tbsp water. Stir to combine, then continue to add water, a very small amount at a time, until it forms a thick icing (about 1-2 Tbsp total).
  • Place the icing in a plastic bag and cut a very small piece off the corner to create a piping tip. Pipe the icing onto the cooled cookies in your favorite design!

How to Make Gingerbread Cookies – Step by Step Photos

Using a mixer, beat together 12 Tbsp (¾ cup) room-temperature salted butter and ¾ cup brown sugar until light and creamy. Add ½ cup molasses, one tsp vanilla extract, and one large egg, then beat until smooth again.

In a separate bowl, stir together 3 cups of all-purpose flour, 2 tsp cinnamon 1 Tbsp ginger, ½ tsp cloves, ½ tsp nutmeg, and ½ tsp salt.

Add about ⅓ of the flour mixture to the butter and sugar, then beat on low speed until combined. Repeat until all of the flour and spices have been added to the cookie batter.

When all of the flour and spices have been added, you’ll have a very soft cookie batter.

Place the cookie batter on a large sheet of plastic wrap, shape it into a ball, and wrap it tightly. Refrigerate the dough for at least two hours (it can stay refrigerated for up to a day).

When you’re ready to make the cookies, preheat the oven to 350ºF. Divide the dough in half to make it easier to work with and place the other half in the refrigerator until ready to roll. Roll the dough out on a lightly floured surface until it’s about 1/8-inch thick, then cut into your desired shapes.

Place the cut cookies on a parchment-lined baking sheet with at least 1 inch between each cookie (they will expand a little). Gather up the dough scraps, roll again, and cut more until there is little or no dough left. Keep any unused dough in the refrigerator so it stays chilled.

Bake the cookies in the preheated 350ºF oven for 8 minutes, or until slightly puffed in the center and the outer edges are just beginning to brown. Remove them from the oven and allow them to cool.

If chicken soup is good for the soul and chicken pot pie is the ultimate comfort food, then nothing can be more satisfying than a big bowl of this Chicken Pot Pie Soup! It’s cozy, comforting, and it includes all the flavors that I love from a traditional chicken pot pie including tender chicken, creamy potatoes, lots of veggies, and a rich and creamy broth. Seriously, there’s something about this soup that just makes me feel all warm and fuzzy inside. But the best part is there’s no extra hassle of having to make a pie crust, and if you’re using a rotisserie chicken then this soup can be made in half the time that it takes to make a traditional chicken pot pie, making it perfect for a weeknight dinner meal!

What is Chicken Pot Pie Soup?

I think the best way to describe Chicken Pot Pie Soup is simply cozy comfort food in a bowl. It’s the same hearty filling that you would normally get in a chicken pot pie, but served as a soup without the hassle of making a pie crust. Genius!! It’s an easy and more approachable way to enjoy the flavors of a traditional chicken pot pie!

Ingredients For Chicken Pot Pie Soup

Here’s a list of ingredients you’ll need to make this Chicken Pot Pie Soup recipe:

  • Cooked Chicken:  I used boneless, skinless chicken breasts but you can certainly use boneless, skinless chicken thighs instead. This is also a great recipe to use up any leftover rotisserie chicken or leftover turkey from Thanksgiving!
  • Vegetables: Aromatics like onion and garlic sautéed in butter sets the foundation and helps flavor the soup. Creamy Yukon gold potatoes and frozen vegetables are added later to add more color, flavor, and texture to the soup.
  • Butter and Flour: A simple roux is made with butter and flour for extra richness and to help thicken the soup.
  • Chicken Broth: Use a good quality chicken broth to give the soup extra flavor. We use Better than Bouillon to make our broth.
  • Seasoning: A simple mix of Italian seasoning, salt, and pepper is all you’ll need!
  • Heavy Cream: Heavy cream is added towards the end to give the soup extra richness and that classic creamy texture.

What Kind Of Chicken To Use

This recipe uses pre-cooked chicken and is a great way to use a rotisserie chicken or leftover turkey from Thanksgiving. If you don’t have any pre-cooked chicken on hand, here are two different ways to cook the chicken before adding it to the soup:

  • Boiled Chicken: I chose to boil my chicken on a medium-low heat for roughly 1 hour. To do this simply add your chicken breasts to a medium pot, cover them with water, add a few pinches of salt, then bring the pot to a boil. Once the pot starts boiling, immediately turn the heat down to medium-low, cover with a lid, and simmer for 1 hour. I personally like this method because you end up with tender, juicy chicken breasts that’s easy to shred and perfect for soups and casseroles.
  • Pan-Seared Chicken Breasts: For a quicker option you can pan-sear your chicken breasts in about 15 minutes, then just chop the cooked chicken into chunks and it’s ready to add to the soup.

Storing Leftovers

To store any leftovers, first divide the soup into single serving containers, then transfer it to the refrigerator to chill. Store in the fridge for 3-4 days. If the soup thickens a bit in the fridge, don’t worry it will loosen as it’s reheated in the microwave or on the stovetop. Feel free to add a splash of water or milk to the soup before you reheat it.

Friends, let me introduce you to my all-time favorite pie, the incomparable Sweet Potato Pie! Ok, I realize that’s a big statement, but it’s true. This creamy Sweet Potato Pie recipe is made with baked sweet potatoes for a deep, caramelized flavor, warm spices, and a flaky, buttery crust. It comes in at under a dollar per serving and it can be made in advance to free up your oven on Thanksgiving day for all of those delicious side dishes. Sweet Potato Pie is definitely a classic Thanksgiving dessert that will steal the show at this year’s holiday dinner!

Sweet Potato Pie vs. Pumpkin Pie

Growing up in the South, there was always this fun, light-hearted debate over which pie was better – Sweet Potato Pie or Pumpkin Pie. They both are made with a custard filling and with similar ingredients. However one major difference is that pumpkin pie is made from canned pumpkin puree, and sweet potato pie is made by cooking sweet potatoes (no cans involved). So which is better? Well I don’t want to upset any pumpkin pie lovers out there, so I’ll just say they’re both equally delicious!😉

Ingredients For Sweet Potato Pie

Here’s everything you need to make this dreamy Southern-style Sweet Potato Pie:

  • Baked Sweet Potatoes: Baking your sweet potatoes in the oven will give you a deep, rich flavor. You’ll need about 2 lbs. or roughly 2-3 sweet potatoes, depending on the size.
  • Salted Butter: Adds to the richness, flavor, and texture of the pie.
  • Brown sugar & Granulated sugar: A combination of brown sugar and granulated white sugar sweetens the pie filling. If you’re in a pinch you can use all white sugar, however brown sugar adds a richer flavor.
  • Spices: A simple mix of warm spices like ground cinnamon and nutmeg adds amazing flavor to the sweet potatoes.
  • Vanilla Extract: A touch of vanilla to further enhance the flavor of the pie.
  • Evaporated Milk: Gives the sweet potato pie a creamy and smooth texture.
  • Eggs: Eggs help the custard pie filling bind together and set.
  • Pie Crust: I like to use a store-bought 9-inch deep dish pie crust to keep things simple, or you can make our 3-Ingredient Pie Crust from scratch.

Tips For The Best Sweet Potato Pie

  1. Baking vs. Boiling. It may be tempting to peel, chop, and boil the sweet potatoes in the interest of time, but I recommend you bake them instead. Baked sweet potatoes have a richer, caramelized flavor that you just can’t get with boiled sweet potatoes.
  2. To get a head start on making this pie, you can bake your sweet potatoes a day or two in advance. Then once the sweet potatoes are completely cool, just wrap them tightly with foil or store them in an air-tight container in the fridge. They’ll be already cooked and ready to go the next day!
  3. If you want a velvety smooth texture to your sweet potato pie, add the baked sweet potato flesh to a food processor and pulse for a few seconds until the sweet potatoes are pureed and smooth.
  4. Although not required, if you prefer a crisp, lightly golden brown crust, I recommend you blind-bake (or at least par-bake) the crust prior to adding the wet custard filling.
  5. To keep the edges of your crust from over-browning, loosely cover the edge with an aluminum foil pie ring as it bakes.
  6. If you really want to get ahead of your holiday cooking, you can make the entire pie a day or two in advance. Let the pie completely cool at room temperature (for about an hour), then cover the pie with plastic wrap or place it in an air-tight container and store in the fridge. Now that’s one less dish you have to worry about on the big day!

Storing Leftovers

If you’re lucky enough to have any leftovers, this pie stores well in the fridge for 3-4 days. I like to store mine by placing plastic wrap around the entire pie, then I simply slide the pie in a storage bag and place in the refrigerator. Of course if you only have a couple slices left, you can easily just store those in an air-tight container. If you are making the pie in advance, make sure to let the pie completely cool first at room temperature (about an hour) before storing in the fridge.

Instructions

  • Preheat the oven to 400°F. Wash and dry the sweet potatoes, then prick them several times with a fork. Set the baked sweet potatoes aside to cool.
  • Lower oven temperature to 350°F. Next blind-bake the pie crust. Prick the bottom and sides of the crust a few times with a fork. Add a square piece of parchment paper inside the center of the crust and place pie weights (or dry beans) on top.
  • Bake the crust in the oven for 15 minutes. After 15 minutes, remove the pie weights and parchment and return the crust to the oven to bake for another 10 minutes. Remove crust from the oven and let cool.
  • Now make the pie filling. Scoop about 2 cups of the sweet potato flesh from the baked sweet potatoes and add to a large bowl. Using a potato masher or hand mixer, mash or blend the sweet potato flesh until smooth.
  • Add the melted butter, brown sugar, white sugar, vanilla, cinnamon, nutmeg, and a pinch of salt to the bowl. Blend the ingredients together with a hand mixer until smooth.
  • Add the eggs and evaporated milk to the sweet potato mixture and blend until smooth.
  • Pour the sweet potato pie filling into the crust. Add a foil ring around the edges to prevent the crust from over-browning. Bake the pie in the oven for 50-55 minutes or until the pie is mostly set and the center is no longer liquid. It’s ok if the center has a slight jiggle when you shake the pan.
  • Remove the pie from the oven. It will be slightly domed and puffed around the edges. Let the pie cool at room temperature for at least 1 hour. Serve at room temperature or cover and refrigerate to serve later.

  • Our Undeviled Eggs are ALWAYS a hit. They’re a simplified way to serve the more traditional deviled eggs and can be topped with just about any yummy, topping of your choice!
  • One of our favorite dips for a crowd is this Black Pepper and Lemon Asiago Dip! We love to serve it with a variety of crackers as well as a bunch of fresh crudité!
  • ‘Tis the season for all things pumpkin so another dip option is our Roasted Pumpkin Hummus! It’s thick, creamy and always hits the spot! An added bonus is that this dish is vegan!

  • Cheesy Herb Beer Bread is our go to when we want warm bread without all the fuss of yeast. This no-yeast bread is savory, fluffy and delicious and takes no time at all to make!
  • These Ham and Cheese Popovers are absolutely delicious, light and airy, and just a little something special for your table!
  • Our Cheesy Herb Pull Apart Bread is flaky and delicious. We love making a couple loaves to place around the table for guests to share.
  • Pumpkin Cornbread is something we love to make this time of year! It has a delicate pumpkin flavor that we love and should be paired with lots of soft butter. It’s a simple thanksgiving recipe that should definitely be added to your meal!

Thanksgiving side dishes are favorites for many people and we definitely don’t have a shortage of delicious side dishes to include in your thanksgiving meal! In fact, we think side dishes are maybe the best part of Thanksgiving. This collection of side dishes has everything you could want!

Thanksgiving Stuffing Recipes

  • Stuffing is probably my favorite part of any thanksgiving meal. I love stuffing of all kinds, but one of my absolute favorites is this Fig, Herb and Sausage Stuffing. I promise you guys, this is SUCH a crowd pleaser. I can never make enough and it’s the first thing to go, ALWAYS!
  • It’s always nice to have some delicious, but “no-frills” dishes on the table during thanksgiving and our Homemade Stuffing recipe is it! Perfectly moist and flavorful with a delicious toasted top!
  • Another stuffing very high on my list is this Apple and Fennel Stuffing. I love the combination of apple and fennel. The flavors balance each other out so nicely and just soak into aaalllll the bread. So good. Swapping the butter out for a vegan alternative and using vegetable stock will make this vegetarian dish, vegan friendly!
  • Our Mushroom and Sage Stuffing is another great vegetarian friendly thanksgiving recipe that can also easily be made vegan by swapping the butter out for a vegan alternative. We love the rich and savory mushroom flavor in this stuffing!
  • Finally, we have our Butternut Squash, Andouille and Herb Stuffing. The spicy andouille pairs so well with the sweet butternut squash, it’s such a delicious

  • We’re starting with our Shaved Brussels Sprouts Salad (and yes, it’s so much more than just a salad! The crispy, salty bits of pancetta, toasty pieces of pretzel bread and crunchy shaved brussels sprouts get tossed together in the best mustard vinaigrette, for the tastiest side/salad/whatever you want to call it!
  • Our Cheesy Root Vegetable Gratin is not only a stunner, but tastes just as delicious as it looks! Filled with bubbling Parmesan and gruyere and super fragrant thyme, it’s one of our favorite side dishes ever!
  • This Butternut Squash with Brown Butter is a delicious side dish that by no means takes the place of mashed potatoes – but certainly will if you need a sub!
  • We have TONS of mac and cheese recipes on the blog, but this classic, Creamy Stovetop Mac and Cheese has always been and will probably be one of our favorites. This no fuss, creamy concoction is something we want to face plant into every time it’s in front of us. So creamy and satisfying!
  • Our Parsnip and Roasted Garlic Mash is the perfect alternative to mashed potatoes and a great vegetarian side dish. You can also swap out the butter and cream for vegan alternatives, resulting in an equally delicious thanksgiving side dish!
  • Maple Glazed Roasted Acorn Squash is always a great addition to any thanksgiving table, and so easy to throw together. We love that it’s a delicious and beautiful dish that takes minimal effort; perfect for when you have an entire feast to plan and cook!
  • If you’re looking for something extra decadent, but also easy to make our Cheesy Potato Casserole is for you! It’s creamy and delicious and the over the top potato chip crust might be one of our favorite things about this crazy good thanksgiving recipe!
  • It’s hard to beat ultra rich and creamy Mashed Potatoes and we promise our recipe won’t disappoint!
  • We think one of the stars of the thanksgiving dinner is the gravy (which we pour on everything!), so it needs to be great, right? Our Roasted Garlic Gravy is our absolute favorite gravy ever!
  • Want a more traditional take on gratin? Our Cheesy Potatoes Gratin is equally as delicious as our root vegetable version, but made with creamy russet potatoes!
  • We have nothing against canned cranberry sauce, in fact we love it! We do also love a nice homemade Cranberry Sauce and think our recipe is a little special with the addition of citrus zest, cinnamon and star anise!

Main Dishes

While turkey is the traditional main dish most people expect to enjoy we also have other alternatives if turkey isn’t your thing!

  • Citrus and Herb Roasted Turkey is my go-to if I’m going the classic route for thanksgiving. I love the flavor this brine imparts into the meat, and the cooking method insures you have a very juicy bird, with nice and crispy skin.
  • Our Citrus Dry Brined Turkey is another delicious take on roasting a whole thanksgiving turkey. It takes less fridge space, is a little more low maintenance to make and results in an equally flavorful and juicy turkey with crispy skin.
  • Not into turkey? Then this Pork Belly Porchetta might just be for you! Surprisingly low maintenance and very delicious, this is the perfect entrée alternative for any pork lover.
  • Our Standing Rib Roast recipe is a great beef alternative from the traditional turkey. We serve it with a simple and delicious savory au jus and a creamy horseradish sauce.
  • Maybe you just want something smaller to feed less people. Our Spatchcock Chicken recipe is just for you! The spatchcock method not only results in a deliciously juicy bird with crispy skin, but it also takes less time in the oven!
  • Looking for a vegan option? Our Roasted Chickpea Stuffed Sweet Potatoes with Cilantro-Garlic Cashew Sauce is for you! These sweet potatoes are delicious, so filling and one of my favorite meatless meals! You’ll want to drink the cilantro-garlic cashew sauce!

Dessert

Even if everyone is ready to roll themselves home after thanksgiving dinner, people can and will always find some stomach space for dessert!

  • Pies are all the rage, especially pumpkin, apple, pecan, and sweet potato, but we’re changing things up a bit here with our French Silk Pie. I love this lighter than air chocolate pie with a buttery and delicious Nilla wafer crust!
  • This Sunken German Apple Cake is great pie alternative for thanksgiving dessert. Not only is it such a pretty dish, but so tasty, especially when served slightly warm.
  • Want something a little more traditional? Our Pumpkin Pie with a Chocolate Crust is our take on the traditional pumpkin pie. The chocolate wafer crust pairs surprisingly well with the sweet pumpkin filling. We promise you will love it!
  • We also have a mile high Browned Butter Apple Pie with a Cheddar Crust! If you’ve never had an apple pie with a cheddar crust before you’re in for a real treat!
  • Our Apple Cake with Chai Spiced Buttercream is the perfect cake to serve this holiday season. The bright flavor of chai cuts though some of the richness of the buttercream and compliments the apples in the cake quite well.
  • Our Caramelized Pear Tart is another low maintenance dessert that everyone will love! We love serving it warm with a scoop of vanilla ice cream or some soft whipped cream!
  • Our Cranberry Crostata is a super autumnal, minimal effort dessert that anyone can make! The cranberry topping and phyllo crust can both be made ahead of time and assembled right before you’re ready to serve it up!
