Full Fat Unsweetened Canned Coconut Milk – This gives the mash its creamy texture without any dairy.
Maple Syrup – A touch of maple syrup enhances the natural sweetness of the potatoes with a subtle caramel flavor.
Fresh Ginger – Grating fresh ginger adds a bright, spicy note that balances the sweetness perfectly.
Ground Cinnamon – This warm spice deepens the flavor and adds a cozy component to the dish.
Cayenne Pepper (Optional) – Just a pinch is all you need, but you can add a lot if you’re feeling adventurous! It gives the dish a little heat to contrast the sweetness.
Sea Salt – Salt is a must for balancing all the flavors and bringing out the best in the sweet potatoes and other ingredients.
How to Make Dairy Free Mashed Sweet Potatoes
Prep the sweet potatoes. After washing the sweet potatoes, use a fork to poke holes in them.
Roast the sweet potatoes. Place the sweet potatoes on a prepared baking sheet and roast until they are fork-tender.
Cool and peel. Once the sweet potatoes have cooled to a temperature that makes them easy to handle, peel off the skin and place the flesh in a large bowl.
Mash the sweet potatoes. Use a potato masher or a fork to mash the sweet potatoes until they’re smooth and lump-free.
Mix in the other ingredients. Pour in the coconut milk and maple syrup before shaking the fresh ginger, cinnamon, cayenne pepper (if using), and sea salt into the mashed sweet potatoes. Stir until everything is well combined or use a hand mixer on a low setting to achieve even fluffier and creamy mashed sweet potatoes.
Serve and store. Serve the potatoes immediately or transfer them to a container for storage in the fridge.

Almond Milk – If you prefer a lighter texture, almond milk works perfectly as a substitute.

Mash the sweet potatoes with a masher or fork until smooth.
Mix in the Ingredients:
Add the unsweetened canned coconut milk, maple syrup, fresh ginger, ground cinnamon, cayenne pepper (if using), and sea salt to the mashed sweet potatoes.

What are Pickled Red Onions?
These pickled red onions are thinly sliced onions that have been soaked in a vinegar-based solution. This process not only preserves the onions but also transforms their flavor, creating an amazing balance of tanginess and subtle sweetness.
Originating from traditional preservation techniques, pickling has been a method to extend the shelf life of vegetables for centuries. Pickled red onions are particularly popular in Mexican and Central American cuisines, but you can also find them around the world. The pickling liquid typically includes vinegar, water, sugar, and salt, but you can also easily customize it with various spices and herbs!
Ingredients You Need
Red Onion – Slice these thinly so they can easily absorb the pickling flavors.
Apple Cider Vinegar or White Vinegar – Vinegar is a key ingredient when pickling and it also adds a tangy kick that balances the sweetness of the onions.
Water – A bit of water helps dilute the vinegar.
Granulated Sugar – We add just a touch of sugar to balance the tanginess with a hint of sweet goodness.
Kosher Salt – Salt enhances all of the flavors and helps in the preservation process.
Garlic Clove – This optional addition adds a savory depth to the pickling liquid.
Black Peppercorns – While these are optional as well, we love that they add a subtle spice to the onions.
Mustard Seeds – Also optional, these introduce a mild, earthy heat to the mix.
Fresh Herbs – Fresh herbs like thyme or dill infuse the onions with an additional layer of flavor and fragrance.
How to Make Pickled Red Onions
Slice the Onion. After peeling the onions, slice them thinly. You can leave them as rings or slice the rings in half.
Prepare the Pickling Solution. Add the vinegar, water, sugar, and salt to a saucepan along with any of the optional spices, aromatics, or herbs.
Combine with Onions. Once the sugar and salt dissolve completely, transfer the onions to a heatproof container. Then, pour the mixture over them, covering all the onions completely.
Cool and Store. Keep the onions in the mixture on the counter until they come to room temperature. Then, place the lid on the jar or container and refrigerate.
Serve. After a few hours, the onions should be ready to incorporate into all your favorite dishes!

Jalapenos – For a spicy kick, slice some jalapenos and add them to the jar with the onions.

Let the onions sit at room temperature for about 30 minutes. Once cooled, cover the jar and refrigerate. The onions will be ready to eat in about 1 hour, but they taste even better after sitting for a few hours or overnight.

Our crispy smashed potatoes are a delicious way to enjoy potatoes with a unique twist. Unlike traditional mashed potatoes, these are boiled until tender, then smashed and roasted to create a crispy exterior while keeping the insides super fluffy and soft.
What we love about these potatoes is that they are so incredibly versatile. They’re perfect for breakfast, lunch, or dinner and pair wonderfully with just about anything. Ingredients You Need
Small Gold Potatoes – We love using small gold potatoes because they have a creamy texture and a buttery flavor. Their thin skin crisps up nicely, adding an extra crunch that makes them irresistible.
Sea Salt – Adding sea salt brings out the natural flavor of the potatoes. We use it in both the boiling water and for seasoning after roasting.
Extra-Virgin Olive Oil – This oil helps to create a crispy exterior and adds a rich and subtly fruity flavor to the potatoes.

How to Make Smashed Potatoes
Boil the potatoes. Add a portion of the salt and all of the potatoes to a large pot. Add enough water to submerge the potatoes entirely. Boil until the potatoes can be easily pierced with a fork.
Prepare the potatoes. Pour the potatoes and water into a colander to drain and cool briefly. Then, put the potatoes onto a prepared baking sheet and smash them using the flat bottom of a glass or measuring cup.
Season the potatoes. Add the garlic powder, onion powder, smoked paprika, sea salt, and black pepper to the potatoes and pour olive oil over top.
Roast the potatoes. Place the potatoes in the preheated oven and roast for the recommended time, rotating the pan halfway through the cooking time. Remove from the oven when they are browned and crispy.
Finish and serve. Add more salt and pepper to taste, and sprinkle on the chives and dill before serving.
Variations
Cheese – Sprinkle grated parmesan or cheddar cheese over the potatoes during the last few minutes of roasting for a cheesy twist.

Caprese Pasta Salad Ingredients and Supplies

Ingredients:
Cavatappi pasta (can also be made with penne or bowtie pasta)
Cook the pasta to al dente according to package directions.
Drain and rinse with cold water. Add the cooked pasta to a large mixing bowl.
Add the halved tomatoes, diced red onion and entire container of mozzarella cheese balls, marinade and all, to the bowl with the pasta. Stir with two spoons to coat everything well in the marinade.
Gently toss in the chopped fresh basil. Salt to taste, if desired.
Serve immediately or refrigerate until ready to serve. Stir again before serving. Enjoy
