Below, you’ll find wholesome vegan meals made with affordable and protein-rich whole grains, beans, and nuts. You’ll also see plenty of fresh, colorful produce, and occasionally some tofu. No funny meat substitutes here.

As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off a sprinkle of cheese or a fried egg. I’ve enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.

I love the challenge of making my favorite recipes vegan, like when I figured out how to make the lasagna and enchiladas in my cookbook without the cheese. Honestly, the cheese-free variations are just as tempting as the originals. In total, the book offers 96 tested vegan/vegan-option recipes.

True to its name, simple syrup is so simple to make. And yet, homemade simple syrup can seem intimidating if you haven’t done it before! Today, I’m sharing a basic recipe describing how to make classic simple syrup to sweeten your cocktails, coffee or tea, or any other beverage, really.

How are you doing? My heart has been heavy since the cruel and senseless murder of George Floyd. I’ve realized that hoping for change is not enough, nor is considering myself a non-racist. Black lives matter.

I have work to do. Over the past couple of weeks, I’ve been listening to the Black community and contemplating how to become a more active part of the solution. Here are a few resources that I’ve found educational, and links to additional books and resources that I’m just beginning. If you have any additional suggestions, please let me know.

We’ve almost made it to the weekend! Here are 50+ fresh, healthy and delicious recipes to commemorate Memorial Day. I’ve organized them by breakfast and brunch, appetizers and dips, salads and sides, main dishes, desserts and sweet treats, and cold drinks.

I pulled all of these recipes from the “Independence Day” category, so check there for even more options. In actuality, these recipes are perfectly suited for summer parties from now through Labor Day. I’m fully embracing the concept of a “party” as any celebratory gathering of two or more people, in real life or virtually.

This weekend, I’m looking forward to clinking drinks and eating dips all afternoon. We spent a lot of time working on our backyard and deck last year, pulling weeds and painting, so we’ll be outside enjoying the warm weather. Cheers to the long weekend!

Let’s talk about flax eggs! We’re living in a strange alternate reality where flaxseed is often easier to find than actual eggs. Flax eggs, made simply with ground flaxseed and water, are a pantry-friendly substitute that just might save you a trip to the store. In fact, you can also make chia seed “eggs” using this technique, if you have those on hand.

If you’re vegan or have an egg allergy in your family, you may be well familiar with flax eggs already. I didn’t invent them and I don’t know who did, but I’ve learned a lot about them over the years.

I’ve been guilty of referencing flax eggs as a substitution option without providing more detail. Now, I can link to this page so you’ll know what the heck I’m talking about. Today, you might learn more than you ever wanted to know.

Flax eggs work well when they’re a small component in baked goods, pancakes, and other flour-based recipes. Flax eggs yield a “gluey” substance similar to egg whites, which helps bind ingredients together. They also contain some fat, like real yolks do. As a bonus, they also offer some fiber, which you won’t find in real eggs.

Unfortunately, flax eggs don’t offer as much structural support as real eggs, and they definitely don’t work in egg-focused recipes like scrambled eggs or frittatas.

Flax eggs are an imperfect substitute, but in the right recipe, they can work great!
