This easy black-eye pea recipe that uses canned beans is a great way to use leftover ham. The ham bone gives this dish, which is somewhere between a stew and a soup, so much flavor. Whenever we eat ham for the holidays, I always freeze the bone and some ham for future recipes. This delicious black-eyed pea soup puts those leftovers to good use. Broccoli rabe and sausage is one of my favorite pasta combinations, so I knew I would like these Sausage and Broccoli Rabe Egg Rolls! They’re a great option for a party appetizer since they can be made ahead and frozen and are delicious dipped in your favorite marinara sauce. These Scallops Over Wilted Spinach and Parmesan Risotto looks like a fancy dish from a restaurant and would be wonderful to make if you have something to celebrate. Sea scallops were on sale, so that was a special enough occasion for me! Scallops may be intimidating for some, but they are actually quite easy to make. Here, I seared them in some butter and served them on top of a bed of parmesan risotto with sauteed spinach, delicious! A few of my other favorite risotto recipes are Butternut Squash RisottoCreamy Mushroom Risotto, and Spring Asparagus Risotto.

These are so simple, made with 5 ingredients not counting salt and pepper! The trick to making perfect Paprika Smashed Potatoes is to cook them twice – first, you boil the potatoes until the become soft, smash them, and then bake. This recipe is inspired by one of my favorite dishes from Spain, Gambas al Ajillo or Spanish garlic shrimp. It’s typically swimming in olive oil, so I lightened up a bit but it’s still just as delicious!! It is bright, garlicky, and perfect with some crusty bread or served over rice! And the best part, it comes together in just 10 minutes.
