Apple pie is always a favorite dessert in my kitchen, but I’ll admit that I don’t always have a basket full of apples on hand ready to bake with. These Brown Sugar Apple Cupcakes with Candied Ginger are an excellent choice for times when you want an apple dessert, but only have a single apple on hand. Anyone who has baked a pie knows that you’ll need at least a few apples to create the filling, and it’s nice to know that there are some options out there for times when you have only one apple waiting to be put to good use!

These Brown Sugar Apple Cupcakes with Candied Ginger are a wonderful option for fall and winter baking. The base is a buttermilk and brown sugar batter that is spiced with ground ginger, nutmeg and vanilla. They’re packed with bits of diced apple and candied ginger. They have a tight, but very soft crumb, and the flavor of the apple and spices comes through really well. They’re downright addictive – and very satisfying if you’re in the mood for an apple dessert.

For best results in these cupcakes, you will need to dice your apple very fine. Any type of apple can be used – unlike apple pie, where you need apples that will hold their shape during a long bake – so feel free to use what you have on hand. My apple was diced into pieces that were less than 1/4-inch, which was about the same size as the pieces of candied ginger that I used. The apples blended almost seamlessly into the batter at that size, giving the cupcakes a lovely apple flavor without making them soggy due to excess moisture.

You could shred the apples if you’re really in a hurry, but the texture is best if you have small chunks in these cupcakes. And with only one apple, it doesn’t take much time. You don’t even need to peel the apple!

Brown Sugar Apple Cupcakes with Candied Ginger

The cupcakes are finished with a vanilla cream cheese frosting and a sprinkling of candied ginger. They’re actually delicious enough to eat on their own, without the added frosting, but a little cream cheese is always a nice match for an apple cake. A few bits of candied ginger ties the frosting in nicely with the cupcakes and gives those eating them a look at what they’ll find inside.

Brown Sugar Apple Cupcakes with Candied Ginger
1 1/2 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp ground ginger
1/4 tsp ground nutmeg
1/2 cup butter, room temperature
1 cup light/golden brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1/4 cup candied ginger pieces
3/4 cup finely diced apple (1 large)
1 batch Vanilla Cream Cheese Frosting (recipe below)
candied ginger, for garnish

Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together flour, baking powder, salt, ginger and nutmeg.
In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs, one at a time, followed by vanilla extract. Stir in half of the flour mixture, followed by the buttermilk. Mix in the remaining dry ingredients and add in the ginger and diced apple when almost all the flour has been incorporated. No streaks of flour should be visible in the finished batter and both the apple and ginger pieces should be well-distributed.
Divide batter evenly into prepared muffin cups.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean or with only a few moist crumbs attached. Allow cupcakes to cool on a wire rack before frosting with Cream Cheese Frosting and decorating with candied ginger.

Makes 12.

Vanilla Cream Cheese Frosting
1/2 cup butter, room temperature
8 oz cream cheese, room temperature
2 – 2 1/2 cups confectioners’ sugar
2 tsp vanilla extract
pinch salt

Combine butter and cream cheese in a large bowl and beat until smooth. Blend in 1 1/2 cups confectioners’ sugar, vanilla and salt and mix until frosting is smooth. Gradually blend in remaining confectioners’ sugar until frosting is thick and spreadable.

I don’t skimp on spice during the spring and summer, but I definitely incorporate a lot more spice into my fall and winter baked goods. There is something about a really flavorful spice cake that just feels especially warm and satisfying when there is a chill in the air. These Bourbon Spice Cupcakes with Cranberries are a great way to welcome in a change in the season, with a wonderful blend of flavors that is perfect for holidays from Thanksgiving through New Year’s.

The cupcakes are moist with a dense, tight crumb. You can really taste all the warm spices and the bourbon in the cake, but the cranberries are what take these from good to great. They add a sweet-tart pop of flavor that contrasts well with the spices, brightening up the cupcakes and making them downright addictive! Plus, they bring in a beautiful holiday pop of color!

Bourbon itself is slightly sweet and has distinct notes of oak, which tends to be a bit spicy itself. There are many recipes that include spirits where they don’t make much of an impact on the flavor of the recipe and that is simply not the case with these cupcakes. Here, the bourbon makes a difference and makes the overall flavor of the cupcakes richer and more complex. I also added a small splash of bourbon to the frosting to emphasize it a bit more.

You can use any kind of bourbon in these cupcakes. I happened to use Maker’s Mark in this batch. The alcohol from the bourbon is going to bake out as the cupcakes are in the oven, so you don’t need to worry about anyone getting a buzz off one one of these cupcakes. With 18 cupcakes in a batch, there is less than a teaspoon in each cupcake anyway. That said, if you really want to leave out the bourbon, there is no good nonalcoholic substitute for it flavor-wise. You’ll can replace it with milk, double the vanilla extra and enjoy a (still delicious!) simple spiced cranberry cupcake instead.

Bourbon Spice Cupcakes with Cranberries

Bourbon Spice Cupcakes with Cranberries
2 1/4 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/2 cup butter, melted and cooled
1 1/4 cups sugar
2 large eggs
1 tsp vanilla extract
3/4 cup milk
1/4 cup bourbon
1 cup fresh or frozen cranberries, coarsely chopped.

Preheat oven to 350F. Line 18 muffin cups with paper liners.
In a medium bowl, whisk together flour, baking powder, salt and spices.
In a large bowl, whisk together butter, sugar, eggs and vanilla extract until well combined.
In a small bowl or measuring cup, combine milk and bourbon.
Blend one third of the flour mixture into the butter mixture, followed by half of the milk mixture. Stir in another third of the flour mixture, followed by the remaining milk. Stir in all of the remaining flour and mix just until all ingredients are combined and no streaks of flour remain. Fold in cranberries
Bake for 16-18 minutes, until a toothpick inserted into the center comes out clean.
Turn cupcakes out onto a wire rack to cool completely before frosting.

Makes 18 cupcakes

Bourbon Cream Cheese Frosting
4 oz cream cheese, room temperature
1/2 cup (4 oz) butter, room temperature
1 tbsp bourbon
1 tbsp milk
1/2 tsp vanilla extract
2-3 cups confectioners’ sugar

In a large bowl, cream together bream cheese and butter until well-combined. Beat in bourbon, milk and vanilla extract, then gradually blend in the confectioners’ sugar until the frosting comes together to a thick, spreadable consistency. If you want to pipe your frosting out, you may need additional confectioners’ sugar to make it stiffer.

There are plenty of chocolate cupcake recipes out there to choose from, but this indulgent recipe might just be my favorite. These Double Chocolate Cheesecake Cupcakes have a deep, dark chocolate flavor and are topped with a decadent dark chocolate ganache, delivering a double hit of chocolate in every bite. They are also filled with a vanilla bean cream cheese filling, adding just the right amount of contrast to all that chocolate.

The cupcake recipe is a classic dark chocolate cupcake, made with plenty of unsweetened cocoa powder to give it a deep and bittersweet flavor. If you’re a regular baker of chocolate cupcakes, you’ll also notice that there are equal amounts of cocoa powder and flour in this recipe. This creates a light and tender cake, rather than a dense and brownie-like one. This lighter texture is important because it lets the cake stand up to the rich filling and topping without the whole dessert seeming to heavy.

The cheesecake filling is easy to make, with just butter, cream cheese, confectioners’ sugar and vanilla. Vanilla bean paste is going to give your cheesecake filling a beautiful finished look, however extract can be substituted and will still provide a nice vanilla flavor. The filling isn’t overly sweet, so you should be able to taste the tang of cream cheese in every bite.

Chocolate ganache is the topping for these cupcakes. It is easy to make and produces a topping that is velvety smooth and rich. You can use chopped chocolate if you have a large block at home, but dark or semisweet chocolate chips will work just as well. Once the ganache is made, you’ll need to allow it to cool before you can pipe it onto your cupcakes. Give it a stir occasionally to check the consistency, but it should take somewhere from 30 – 45 minutes to thicken up enough to pipe.

Double Chocolate Cheesecake Cupcakes
Cupcakes

3/4 cup all purpose flour
3/4 cup cocoa powder, unsweetened
1/2 tsp baking powder
1/4 tsp salt
3/4 cup butter, room temperature
1 cup sugar
3 large eggs
1 tsp vanilla extract
1/2 cup sour cream

Chocolate Ganache<e/m>
12-oz dark or semisweet chocolate chips
1/2 tsp vanilla extract
1 cup heavy cream

Cheesecake Filling
1/4 cup butter, room temperature
8-oz cream cheese, room temperature
2 tsp vanilla bean paste (or 1 tsp vanilla extract)
1 cup confectioners’ sugar
pinch salt

Make the cupcakesPreheat oven to 350F. Line a 12-cup muffin pan with paper liners.
In a medium bowl, sift together flour, cocoa powder, baking powder and salt.
In a large bowl, cream together butter and sugar until light. Beat in eggs, one at a time, followed by vanilla extract. Stir in half of the flour mixture, followed by the sour cream. Stir in the remaining flour until mixture is uniform. Divide evenly into prepared paper liners.
Bake for 19-22 minutes, or until cupcakes are set and a toothpick inserted into the center comes out with only a few moist crumbs attached.
Turn cupcakes out onto a wire rack to cool completely.

Make the ganacheIn a large bowl, combine chocolate chips and vanilla extract. In a small pot or microwave-safe measuring cup, bring heavy cream to a boil, then pour over chocolate. Allow mixture to sit for 1 minute, then slowly stir using a spatula until a smooth ganache forms. Set aside to cool for at least 30-45 minutes, until thickened enough to pipe.

Make the cheesecake filling. In a medium bowl, beat together butter, cream cheese and vanilla until smooth. Blend in confectioners’ sugar and salt until uniform. Set aside.

Assemble: Using the cone method, insert a paring knife into the top of each cupcake and remove a cone of cake to create a cavity to fill. Cut off the base of the cone and save the “lid”. Fill cupcakes with cheesecake filling and replace the “lid” of the cupcake.
Transfer cooled ganache to a piping bag and pipe a generous swirl of ganache on top of each cupcake. Decorate with sprinkles and serve.

Very Vanilla Layer Cake with Vanilla Cream Cheese Buttercream
Vanilla cakes are always one of my favorites. I love it when the creamy floral sweetness of vanilla comes through in any baked good, but when you pair a vanilla can with a vanilla frosting, you get a burst of vanilla flavor that is impossible not to enjoy. This Very Vanilla Layer Cake with Vanilla Cream Cheese Buttercream is more than just “plain vanilla” and is a great cake for any occasion, from an everyday treat to a birthday celebration.

The cake batter itself is easy to make and has the unusual addition of hot milk. The milk does not need to be boiling (no need to risk scalding it), but it does need to be very hot when you add it to the batter. The hot milk produces a more tender cake that will really melt in your mouth when it is served. Despite its tenderness, the cake is still quite sturdy and is easy to stack in layers – even if you decide to use this recipe as a base for a much taller cake.

The cake gets its vanilla from vanilla extract and vanilla bean. Real vanilla bean gives you the best vanilla flavor and leaves you with beautiful vanilla flecks in the cake. If you don’t have a real vanilla bean available, you can use vanilla bean paste instead, which will give you a similar look. There is vanilla bean in the vanilla cream cheese frosting, as well, and you can feel free to substitute vanilla bean paste to get the look here, too. I used a 2-to-1 ratio of butter to cream cheese in the frosting, which gives it a nice flavor but makes it a little bit easier to work with than the usual 1-to-1 cream cheese frosting. This one is easy to spread and thick enough to pipe on, if you want to use it to dress the cake up a bit more.

To add more layers to your cake, these cakes could easily be cut in half and stacked with a bit more icing to create a four-layer cake. Since this cake recipe is one of my favorites, I didn’t want to upset the cake-to-frosting ratio in favor of the frosting here. That said, if you were to use a frosting that had a more unusual flavor – like coffee, toffee or dark chocolate – you might want to split those layers to make more space for additional frosting/filling. It all comes down to personal preference – and whether or not you want to spend a few extra minutes stacking your cake up!

No matter how you stack it, this cake will keep well for 2-3 days after baking when kept in an airtight container or well-sealed cake plate. If you would like to prepare the cake layers the night before assembling the cake, you can. Simply bake and cool the cake layers, then wrap them up with plastic wrap and unwrap when you are ready to frost and assemble.

Very Vanilla Layer Cake with Vanilla Cream Cheese Buttercream

Very Vanilla Layer Cake with Vanilla Cream Cheese Buttercream
2 cups all purpose flour
2 tsp baking powder
1 tsp salt
4 large eggs, room temperature
2 cups sugar
1/2 vanilla bean
1/2 cup butter
1 cup milk
2 tsp vanilla extract

Preheat oven to 350F. Lightly grease two 9-inch round cake pans and line the bottoms with parchment paper.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, or the bowl of a stand mixer, beat eggs and sugar together at medium-high speed until the mixture has at least tripled in volume, about 5 minutes. Split vanilla bean lengthwise and scrape out the seeds using the back of a knife or a spoon. Add to sugar mixture and beat to incorporate. Whisk in flour mixture by hand or with the mixer at low speed.
In the meantime, combine butter and milk in a small saucepan and bring to a simmer, stirring to melt the butter. Remove from heat and add in vanilla extract. Allow to cool slightly, about 2 minutes.
With the mixer on low speed, gradually incorporate the hot milk mixture into the cake batter until batter is uniform.
Divide evenly into prepared pans.
Bake for about 24-26 minutes, or until the cake springs back when lightly pressed and a toothpick inserted into the center of the cake comes out clean. Allow cakes to cool for about 5 minutes in the pans, then run a knife around the edges and turn them out onto wire racks to cool completely before frosting.

Vanilla Cream Cheese Buttercream
16-oz (1 cup) butter, room temperature
8-oz cream cheese, room temperature
2 tbsp milk
1/2 vanilla bean
1 tsp vanilla extract
pinch salt
3-4 cups confectioners’ sugar

In a large bowl, beat together butter, cream cheese and milk until smooth.
Split the vanilla bean lengthwise and scrape out the seeds using the back of a knife or a spoon. Add vanilla to butter mixture, along with vanilla extract and salt. Gradually blend in the sugar until frosting is thick and creamy, and the vanilla is well-distributed. Frosting should be thick enough to spread easily and hold its shape.

Makes 1 layer cake; Serves 10-12.
