Coconut-Poached Chicken with Bok Choy and Mushrooms

This one-pan cooking method builds a deeply savory, vegetable-packed broth while also keeping the chicken breasts super tender and juicy. Mushrooms, ginger, and coconut milk go a long way in building flavor without taking much time at all. Although the rice or quinoa is optional, I loved adding it to soak up the wonderful broth. The cucumber sesame salad is the perfect fresh side that compliments the whole dish. Each year, I make this asparagus salad recipe to celebrate the arrival of spring…which, in Chicago, is usually later than you’d think. So when we have the odd warm day in March or early April, I don’t get my hopes up. “Winter isn’t over yet,” I tell myself, “Don’t get used to this.” But this year, Jack’s birthday arrived…and it didn’t snow. It was still a little chilly, but the air smelled clean and fresh, and tulips and daffodils bloomed around the neighborhood. Dare I […]

I roasted them with cauliflower, broccoli, and red bell peppers, but you can use whatever you have on hand. Perfect for meal prep too! Asparagus Tartlet
Asparagus and Feta Tartlet with Phyllo Crust

These Asparagus and Feta Tartlets with Phyllo Crust taste as amazing as they look. At their peak in Spring, the asparagus are tangy and bright after a quick sauté and a splash of lemon juice. The feta adds briny flavor, but goat cheese would also work beautifully. Spring Pea Soup with Fresh Herbs

The bright green color of this Spring Pea and Fresh Herbs Soup is lovely. It will fade a little if you save the soup for the next day, but what you trade off in color, you gain in even deeper flavor that comes from the ingredients melding together. The lemony yogurt topping is cool and creamy and brightens up the dish. For more of my favorite pureed soups, try this Cream of Asparagus Leek Soup with Crème Fraiche and Cream of Zucchini Soup.

This carrot salad recipe is one of my new favorites. I love it because it’s so simple (really, you can make it in 15 minutes or less), so vibrant, and so delicious. Crisp carrot matchsticks mingle with nutty pistachios, fresh cilantro, and mint. Medjool dates add sweetness, and a cumin-spiced dressing ties it all together. This carrot salad recipe would be a stunning side dish for a special occasion brunch or dinner, and it packs up nicely for lunch or a picnic too. Most often, though, I eat it at the counter, scooping forkful after forkful straight from the bowl. […]
