I finally conquered my fear of making spanakopita, the Greek savory spinach and feta pie, and yes, this means I’m going to tell you all about it. It took me so long because, however pathetically, I find filo/phyllo, the thin dough used to produce the flaky layers in many Middle Eastern and Balkan pastries, stressful: the tissue-like sheets can dry into crumbles in what feels like seconds. Having to brush each layer with butter or oil before using it is challenging in a small kitchen, and a lot of work in any size. Spinach Rice

Here’s a fun way to turn everyday rice into a classy side dish: Spinach Rice! After years of cooking, we’re discovering fun tricks like this. Take plain old white rice and cook up a pot with spinach and garlic, then flavor it with a pop of lemon and sprinkle of feta cheese. It’s an elegant Mediterranean-style side dish that you can serve for guests or just use to spice up weeknights. And, it’s a great way to load up on spinach. The savory, fresh flavors are unreal!

How to make spinach rice: the basic concept

Spinach rice is a mix of spinach and rice, and often other aromatic flavors like onion, garlic, dill and feta cheese. The traditional Greek version is called spanakorizo, which often has added tomatoes or tomato paste. This recipe is inspired by the Mediterranean flavors in that dish (if you want a more traditional spin, go to this spanakorizo recipe!).

The basic concept is to cook rice with spinach and seasonings until the liquid is reduced. Note that spinach rice comes out a little more gooey than a traditional fluffy rice: which is what is intended here! Here’s the basic concept (or jump to the recipe below):

  • Sauté garlic in olive oil, then add spinach and wilt. This takes about 3 minutes total.
  • Add water, rice and seasonings and cook 15 minutes. At this point the liquid should be reduced.
  • Allow to rest 5 minutes. This helps the rice to cool and set.
  • Fluff and add lemon juice, dill and feta. These additions brighten the flavors! See below for more.

A few notes on serving

One thing we love about this Mediterranean spinach rice: it packs in loads of spinach, which not only adds nutrients but helps to stretch the serving size. Often we can polish off a whole lot of rice, but adding spinach and flavorings helps it to be more satisfying.

Don’t have fresh dill? That’s ok: you can skip it! But it does add quite a bit of fresh flavor (don’t bother adding dried dill). The fresh lemon juice adds quite a punch though: we’d recommend using it if possible.

Ingredients

  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 6 cups (5 ounces) baby spinach (or chopped standard spinach)
  • 1 cup long grain white rice
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Juice of 1/2 lemon (2 tablespoons)
  • 2 tablespoons chopped fresh dill, optional
  • ¼ cup feta cheese crumbles

Instructions

  1. Mince the garlic. In a medium saucepan, heat the olive oil over medium heat. Add the garlic and sauté 1 minute until fragrant (but not browned). Add spinach and cook until it wilts, about 2 minutes.
  2. Add 2 cups water and bring it to a boil, then reduce to a simmer. Add the rice, salt, garlic powder, and onion powder. Make sure it’s simmering, then cover and cook for 15 minutes, uncovering and checking every so often to make sure that the heat is not too high.
  3. After 15 minutes, check to make sure the water is completely cooked out (if not, cook a minute or two longer but it should be done by this point). Remove the heat and let stand covered for 5 minutes. Uncover and fluff with a fork, then stir in the lemon juice and chopped dill. Top with feta crumbles and serve.

Because I add spinach to everything. I keep frozen spinach on hand so I can toss a handful into whatever I’m cooking and spinach felt like such a natural addition to my usual grilled cheese. I also added a little feta cheese for a tangy punch, a few spicy flakes of red pepper, and toasted it up on some good bread. The result was something truly spectacular. This Spinach Feta Grilled Cheese only takes a few minutes more than regular grilled cheese, and it’s SO worth the extra effort. No joke, you’ll pay about $8 for something like this at your local cafe, but not at home!

Is This a Melt or a Grilled Cheese?

Okay, so technically this type of sandwich is called a “melt.” A melt is a grilled cheese that has other ingredients added, like vegetables or meat, whereas a grilled cheese is a cheese-only grilled sandwich. While the difference between a melt and a grilled cheese often sparks heated debates, I want people to be able to find this recipe on the internet and the data shows that people are searching for “spinach and feta grilled cheese,” not “spinach and feta melt”. The English language is fluid, and the use of the term “melt” is declining. So here we are! 

What Kind of Bread is Best for Grilled Cheese

I originally used ciabatta bread for this recipe, but it wasn’t available this time around so I chose a nice sourdough bread instead. Homemade focaccia would also be nice. Because the ingredients in this recipe are a little more hearty than your everyday grilled cheese sandwich, I would suggest using any sturdy bread that can hold up to the filling ingredients. Skip the soft white bread for this one. ;)

What Kind of Spinach to Use

I used frozen spinach for this recipe because it’s easy to keep on hand without worrying about it spoiling, but you could absolutely use fresh spinach if you have it. Just sauté it down until most of the moisture is gone, just as I did below with the frozen spinach.

As far as frozen spinach goes, you’ll want to buy the kind that comes loose in a bag rather than the type that is frozen into a block. That will allow you to thaw just enough for this recipe while leaving the rest in the freezer for your next cooking adventure.

What to Serve with Spinach and Feta Grilled Cheese

As with any grilled cheese sandwich, this spinach and feta version goes great with a cup of tomato soup. But you could also serve it with a little dish of pasta sauce or pizza sauce for dipping!

What Else Can I Add?

Oh, there are so many delicious possibilities for add-ins here: olives, artichokes, red onion, parmesan cheese… I’d not be against putting an egg on there, too. ;)

Ingredients

  • 1/2 Tbsp olive oil $0.08
  • 1 clove garlic, minced $0.08
  • 1/4 lb. frozen chopped spinach $0.42
  • 1 pinch salt and pepper $0.05
  • 4 slices bread $1.00
  • 2 Tbsp butter $0.20
  • 1 cup shredded mozzarella $1.15
  • 1 oz. feta $0.62
  • 1 pinch crushed red pepper $0.02

Instructions

  • Add the olive oil and minced garlic to a skillet. Sauté over medium heat for about one minute, then add the frozen spinach (no need to thaw), and a pinch of salt and pepper. Continue to sauté over medium until most of the moisture has evaporated from the skillet.
  • Spread butter over one side of each of the slices of bread. Flip the bread over so the buttered side is facing down as you build the sandwiches.
  • Divide half of the shredded mozzarella between two slices of bread. Top the mozzarella with the crumbled feta.
  • Divide the cooked spinach between the two sandwiches, then top with the remaining shredded mozzarella and a pinch of crushed red pepper flakes. Top each sandwich with the second slice of bread, buttered side facing out.
  • Heat a large skillet over medium-low. Once hot, add the sandwiches and cook on each side until golden brown and crispy on the outside and warm and gooey on the inside.
  • Cut the sandwiches in half and serve!

How to Make Spinach and Feta Grilled Cheese – Step by Step Photos

Add a 1/2 tablespoon of olive oil and one minced clove of garlic to a small skillet. Cook the garlic for about a minute, then add ¼ lb. froen spinach (you can just estimate ¼ of a one pound bag, or ⅓ of a 12oz. bag). Season with a pinch of salt and pepper and continue to sauté over medium until most of the moisture has evaporated.

Spread about ½ Tbsp butter over one side of each slice of bread (four slices).

Flip the bread over so the unbuttered sides are facing up. Add about ¼ cup shredded mozzarella to two of the slices. Top each with a little crumbled feta.

Add another ¼ cup shredded mozzarella to each along with a pinch of crushedred pepper. Top with the second piece of bread, butter side facing out.

Bake up scrambled eggs in muffin tin cups with healthy veggies, then refrigerate them for meals all week! This works as a grab-and-go breakfast, and it’s perfect for kid lunch boxes. We also find ourselves sneaking them out of the refrigerator for a quick snack. The filling is packed with good stuff: loads of spinach, cottage cheese for healthy protein, and jarred red pepper. They’re easy to whip up and so full of flavor!

Egg muffins are scrambled eggs that are baked in muffin tin cups, often with added vegetables or meat. Our spin on an egg muffin recipe loads up on healthy vegetables: spinach and red pepper. Because why not pack in healthy veggies? This makes them perfect for a healthy breakfast or lunch boxes. Our son loves these (and he’s wary of spinach: go figure!). Here’s what you’ll need:

  • 10 to 12 ounces frozen spinach*
  • 6 large eggs
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped roasted red pepper (from a jar), plus more for topping
  • Fresh ground black pepper

Instructions

  1. Preheat oven to 375°F. Spray or grease a standard 12-cup muffin tin.
  2. Place the spinach in a colander and let warm water run over it until it is thawed, about 1 minute (some brands take a bit more effort to defrost: you can also use a microwave if necessary). Then use your hands to squeeze out as much excess liquid as you can.
  3. In a large bowl, whisk the eggs. Then stir in the oregano, salt, garlic powder, cottage cheese, grated Parmesan cheese, spinach, and roasted red pepper. Add a few grinds of fresh ground black pepper if you like.
  4. Fill each muffin cup three-quarters of the way to the top with the egg mixture. Sprinkle the tops with additional chopped roasted red pepper.
  5. Bake 22 to 24 minutes until set in the center and golden around the edges. Allow to cool for a few minutes (they’ll deflate, which is expected), and then run a butter knife around the edges of each muffin to loosen it and pop it out. Enjoy immediately or store refrigerated for up to 5 days: you can eat them cold, room temp, or re-warmed. (You can also freeze them for up to 3 months and defrost by placing in the refrigerator overnight.)

*Note: To customize the mix-ins in this recipe, substitute about 1 to 1 ½ cups mix-ins for the spinach. The origin of curry

What’s the origin of a curry? The word “curry” is a Western invention to poorly describe the nuance of what colonizers observed in foreign cuisines (see Bon Appetit). Today, the term is pretty broad: it’s used to describe any dish with a spiced sauce and meat or vegetables, often eaten with rice or flatbread. It’s made in many countries with varying flavor profiles, including India, Thailand, Cambodia, Malaysia, Indonesia, South Africa, Nigeria, England and more.

This recipe is loosely based on a Thai or Southeast Asian-style red curry using red curry paste and coconut milk. After traveling in Southeast Asia, we fell in love with the flavors of ginger, garlic, galangal, lime and lemongrass. Sweet potato and chickpeas aren’t traditional ingredients in this type of curry (though pumpkin is); so this is a non-traditional spin on the concept.

This sweet potato curry is a fantastic easy dinner recipe that makes vegetables taste irresistibly rich and nuanced. The broth uses the shortcut of curry paste to infuse massive flavor into each bite. Here’s what you’ll need to have on hand:

  • Sweet potato: find medium-sized orange sweet potatoes
  • Yellow onion
  • Bell pepper
  • Garlic
  • Spinach
  • Red curry paste: we like Thai Kitchen brand because it’s flavorful yet not too spicy! See below for more notes

Red curry paste: what to know

Red curry paste is a shortcut for Western kitchens, not an authentic ingredient: it’s a jarred paste that takes all the flavor of a Thai curry and concentrates it! Curry paste is made with chili peppers, garlic, lemongrass, ginger, kaffir lime leaves, cumin, coriander, and more. It brings a massive amount of flavor and lasts for months in the fridge. A few notes on this ingredient:

  • The heat level varies based on the brand. We like Thai kitchen curry paste because it’s very mild (and works for our 4-year old!). There are many great brands to try: just make sure to taste your curry paste and if it’s very spicy, use a little less than the recipe specifies.
  • Find it near the Thai products in most grocery stores. It keeps for months in the refrigerator. You can also buy it online: Thai Kitchen red curry paste.

  • 2 medium sweet potatoes (about 1 1/2 pounds), unpeeled or peeled and diced into 1/2-inch chunks
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced into thin strips
  • 2 tablespoons olive oil
  • 15-ounce can chickpeas, drained and rinsed
  • 15-ounce can full fat coconut milk
  • 3 tablespoons Thai red curry paste (we like Thai Kitchen brand)*
  • 1 tablespoon peanut butter
  • 1 ½ teaspoons kosher salt
  • 4 cups baby spinach or chopped spinach
  • ½ tablespoon lime juice, to finish (optional)
  • Crushed peanuts and torn fresh cilantro, to garnish
  • To serve: jasmine rice or basmati rice

Instructions

  1. If serving with rice, start the jasmine rice or basmati rice.
  2. Chop the onion, sweet potato, garlic, and bell pepper as noted above.
  3. In a large skillet, pot or Dutch oven, heat the olive oil over medium heat. Add the onion and sweet potato and sauté for 5 minutes, until onions are translucent. Add the garlic and red pepper and sauté for 1 minute.
  4. Add the chickpeas (drained and rinsed), coconut milk, curry paste, peanut butter, 1 cup water and the kosher salt and bring to a simmer. Simmer until sweet potatoes are tender, about 15 to 20 minutes.
  5. Add the spinach and lime juice and cook until the spinach wilts, about 1 minute.
  6. Garnish with crushed peanuts and torn cilantro. Serve immediately with rice. Leftovers store up to 3 days refrigerated, or 2 months frozen.

Notes

*The heat level for red curry pastes varies based on the brand. The brand we like, Thai Kitchen, is very mild. Taste your curry paste beforehand and add a little less if you’re worried about the heat level.
