I am sure I’m not alone in being ready for summer, for outside, for all of my friends to get vaccinated, for my kids lives to normalize so they can be off screens all day, and I know you do not get things by stamping your feet and demanding them (I may have tried) but if there’s one thing on this list we can safely take an advance on, it’s spring vegetables. Grocery store asparagus is lovely and here for us until the freshly-plucked Greenmarket stuff emerges and I say we embrace it with abandon.

With the weather warming up, all I have on the brain are cheeseboards and chilled white wine! Okay, maybe a few other snacks too, but as soon as spring rolls around I can’t help thinking about all the outdoor entertaining possibilities. Obviously this year, I’m craving those times even more! Even if it’s just US sitting outside and enjoy the newfound sunshine and warmth, I want to make it feel special.

Below are a few of my favorite spring entertaining recipes that I love to throw together if we’re doing something simple outdoors or just want a spring snack during happy hour. Ones that I just can’t wait to make this year – and ones that I already have in minds for some family get togethers!

What Are Ramps, Anyway?

Ramps (allium tricoccum), sometimes referred to as wild leeks or wild garlic, are technically a wild onion that grow most abundantly in the eastern and central U.S. and Canada (though you can find them showing their verdant heads in a couple other southern and western American states). Ramp patches typically begin to sprout in wooded areas around early April, and last until May or early June.
