So I know it’s a little bit early. And we’re still fully immersed in cobs of corn and juicy tomatoes over here. But! If you’re anything like me and love to plan your dinners ahead, I’ve got you covered. I wanted to share my favorite fall dinner recipes today so you can get that list going! I’m even considering planning out my meals for an entire MONTH so we get everything in.

I love doing this post every year because it gives me so much dinner inspiration. There are so many good flavors. I mean, yes, it’s definitely a squash appreciation post. But still! There is a ton of variety here.

You’ll find lots of my favorite pasta dishes, salads, sheet pan meals and soups. I already have everything on my list for the next few months and I can’t wait to get these going in my kitchen. Savory pumpkin, crispy sage, brown butter, maple, roasted squash – you name it, it’s here!

If you have some basil or pesto to use up and want an easy meal tonight, make this pesto melt chicken skillet. It’s so easy and super flavorful, and you know we’re always looking for non-boring chicken recipes over here.

Things have been very pesto-forward on the blog lately! It’s the perfect excuse to use up all those herbs as summer comes to a close and I can’t get enough.

When I say I make my pesto nearly every single week in the summer… that is no exaggeration.

We love it, not just on pasta, but as a spread, in a dip and more. Eddie drizzles it on just about anything.

This chicken is embarrassingly easy. The pesto on top browns a bit in the oven, so don’t be alarmed. It’s covered by cheese, so you’ll barely notice!

Let’s make it!

To start, I like to marinate the chicken. You can use either boneless chicken breasts or thighs here – your preference! I do an easy marinade of olive oil, red wine vinegar, lots of garlic and spices. Sometimes I marinate for 30 minutes, other times it’s overnight! Just depends on how prepared I am. 

I sear the chicken in a hot skillet. Just until it’s all golden and browned and delicious looking! 

Then, I top with pesto. We are obsessed with my homemade pesto and I use it on this chicken 95% of the time. But you can use ANY pesto here. Any flavor, any variety, homemade or store-bought.

My favorite part comes next… the cheese. Of course! I top with a slice of fresh mozzarella. You can also do a handful of grated provolone or any italian blend cheese. 

Then I throw the whole skillet in the oven! I like to sear the chicken in an oven-safe skillet so I can use the same pan the whole way through. Bake until the cheese is melty and the chicken is 165 degrees F, then serve! Ooooh it’s good.

You can really serve this with anything, but here’s an easy hack: stir some pesto into your grain. I’ve done this for years with my couscous or quinoa or rice – that’s what I do here for an easy side dish. I also toss roasted vegetables with pesto too for an easy zing. You can also slice it over a huge salad for a super savory topping. When it’s warm, it’s divine on salad!

This cheesy tortellini skillet is one of our favorite weeknight meals. Especially good for back-to-school season, this skillet has a quick marinara meat sauce, cheese tortellini, fresh mozzarella and tons of basil. Baked until melty – it’s perfect.

It’s official back-to-school time for us so I am breaking out my menu plan and adding in all of our favorite easy weeknight meals. This is a newer one that I am so excited to share with you – everyone in this house ate it right up.

It’s easy. 

Customizable! 

Super delicious. 

And cheesy. You know we can’t go wrong there. 

Baked cheesy (and beefy!) ravioli is where it’s at. I love to make a dinner that EVERYONE is excited about. This is the kind of dinner that you look forward to all day. The one that tastes like home, is everyone’s favorite and occasionally… eaten up so there are no leftovers!

I mean, sad about the leftovers but a huge win when everyone loves it so much.

It’s pretty darn simple and semi-homemade with a jar of marinara. Here’s how I do it!

To start, I brown ground beef or turkey in an oven-safe skillet. We’re going to throw the whole skillet in the oven, so just start it right in that pan. I season it a bit more with salt, pepper, garlic, basil and oregano. 

Then I throw in a jar of my favorite marinara! We love Rao’s and I have a ton in my pantry. I’d say we go through two jars or every single week. 

I also cook some tortellini! I like to do a cheese or spinach tortellini for this recipe. You can use whatever flavor you love or whatever you have on hand. Cheese is my number one though. It just goes perfectly.

The tortellini cooks fast, so while it’s a pain that you need to cook it ahead of time, it only takes about three minutes once the water is boiling. Once it’s down, I drain it and throw it in the pan with the meat sauce.

Next, I top everything with some torn fresh mozzarella. Oh yum. 

Finally – bake it! Place the skillet in the oven for about 15 to 20 minutes or so, just until the cheese melts and everything is warm and melty. Top it with tons of fresh basil and serve it.

This is SUCH a huge hit. It reminds me a lot of my burrata baked ravioli dish from last year, and we adore that. So I’m always looking for similar dishes that everyone may love.

The best part is that this is very customizable depending on what you have, love or your preferences. You can stir in some spinach like I do with my ravioli. You could add extra veggies, a spicier marinara, use an impossible meat variety or even switch up the cheese. And of course – the tortellini flavor is up to you.

We can’t get enough.

This is the perfect weeknight meal for us during the school year. It’s incredibly cozy and comforting, easy to throw together and feeds a crowd. I pair with a big house salad and it’s incredibly satisfying. If you really want to take things over the top, add in some of my best garlic bread from Everyday Dinners.

I love these avocados because you can make them for one, or for a family. You can make them with leftover taco ingredients from taco night and you can add whatever toppings you love. There is no wrong way to make them. You just have to find a nice ripe avocado and you’re set.

I’ve made stuffed avocados before – both times with chicken! I’ve done cheesy chicken stuffed avocados AND chicken salad stuffed avocados, so I love this new little twist.

In fact, I wanted to call these “walking taco avocados” but I realize that completely defeats the purpose of the walking taco in a bag of chips. My thinking was that all the toppings are actually ON the avocado. So yeah, the name is cute but it’s a no go because none of us are literally walking around with a stuffed avocado in our hands. Whomp whomp.

Anyway, let’s talk filling!

I use my seasoned ground beef from my weeknight ground beef tacos. I keep the beef mixture on the drier side (but not in a bad way!) for the avocados so they aren’t as messy. My mom always made a saucier ground beef mixture for tacos and I often do too, but the drier version works so well here. I do include the saucier version below as well, so you can choose whichever you like.

Below, you will also find the homemade seasoning mixture for the tacos. I love it because it doesn’t taste like straight 100% cumin and salt. There’s a bit more smoky flavor. Now if you have a taco seasoning packet you adore – use that! Keep it simple.

For the rest of the toppings, I like to do a really classic taco.

Think like a ground beef taco from the 90s.

Shredded lettuce.

Shredded cheddar,

Chopped tomatoes.

Maybe even some taco sauce if you have it. (I do have it: an excellent recipe for it is in Everyday Dinners!). 

Crushed tortilla chips of course!

We all love these, aside from Eddie who isn’t the biggest avocado fan. The kids though? Totally sold on them.

They are easy, great for leftovers and can come together fast. I like to serve them with the beef warm (so the cheese melts slightly too!), but you can also serve them completely cold. They are super flavorful and very satisfying thanks to the avocado. A must make! (more…)

Okay technically it can ALWAYS be zucchini boat season, but if you find yourself with a ton of garden zucchini this time of year and you’re not sure what to do with them? Make these boats. They are incredible!

The zucchini boats are smothered in garlic butter and then filled with ground turkey bolognese, topped with cheese and baked until everything is melty, warm and wonderful. We can’t get enough over here.

This zucchini bolognese is a perfect weeknight meal – it’s cozy and comforting, is a great way to use up all that garden zucchini, is an even better way to use up some leftover bolognese you may have and it all around delicious! I’ve been obsessed with zucchini boats ever since making my bruschetta quinoa zucchini boats and these are no exception.

Also, my kids LOVE this, so it’s a great way to get in some vegetables. And we enjoy it so much too. The zucchini is a big crunchy on the bottom, so the texture is there too. It’s awesome.

For this recipe, I use my weeknight ground turkey bolognese. It’s a riff on our favorite bolognese which is a recipe that can be found in my cookbook The Pretty Dish. Everyone absolutely loves it.

This weeknight version is fairly simple and comes together fast, but it’s also something you can make ahead of time! It’s hearty and filled with vegetables, a touch of red wine and parmesan. Of course, the longer it sits the better it tastes, so it’s up to you when you make it. But don’t be discouraged if you find this recipe and plan on making it the day of. It’s still super delicious. We adore!

And! If you want to make this entire recipe meatless, I also have a lentil bolognese recipe that has excellent texture and the same classic flavor. I’ve served it to Eddie before and he ACTUALLY THOUGHT IT WAS MEAT!

Which is huge, because he’s the biggest carnivore ever. So if you’re looking for a veg substitute, make the lentil version instead.

My favorite part of these zucchini boats is the garlic butter. I make a garlic butter and brush it all over the cut zucchini, which adds an extra layer of flavor. Heck, I could eat the zucchini slathered in the garlic butter alone – it’s that good. 

Once done, I top with lots of parmesan, fresh basil and it’s perfect mix of comfort food with fresh garden herbs. Delish.

I love the fall season – it always represents the start of a new “year” for me, even before my kids were in school! It’s my favorite time of year and the kids love it too. Feels so good to get back into somewhat of a structured routine – and that means making easy, delicious weeknight meals that everyone loves. It’s no secret that I am always on the hunt for excellent lunch recipes that can be prepared ahead of time. And here I am today with a super delicious one for you. These couscous bowls have tons of flavor and are simple, satisfying and customizable. 

That’s what I love to hear. 

Much like my baja grain bowls, you can put these together the night before! Whether you toss it all or keep it segmented, it’s one of those recipes that works for make-ahead prep and may even taste better the longer that it sits. Music to my ears, thank you very much.

We’re in back-to-school mode over here and that really means back to routines. Dinner meal planning comes fairly easy to me given this job, but it’s lunch that I find to be a struggle. It’s better for me during the week to have a few ideas in mind – sometimes that means cooking something ahead of time, using my 10 minute meal prep theory or just generally having an idea of what I can grab.

Anything to make me have less decision fatigue, especially on big work days at home.

So let me introduce my new favorite lunch! And how it comes together.

First, the couscous. I sauté some bell peppers and onions in with the grain before adding liquid, then cook it all together. This is SO wonderful. It really adds an extra depth of flavor that you don’t get with raw diced onion and peppers on top. This is my new favorite way to cook a grain and a method I’ll use with rice and quinoa too. 

I almost always have a cooked grain on hand during the week. It is such a simple part of meal prep that can be done on the weekend without much thought. And grains are incredibly versatile. So if you know you want to make this, prep it ahead of time and it makes things that much easier. 

Here’s what we have in our bowl:

The couscous – pearl couscous to be exact. It’s my favorite. I use this one and get it at my local grocery store.

Beans! I like black beans here. But any beans work.

Corn, for which you have many options. You can use frozen or fresh corn, right from the cob. You can use leftover grilled corn. For this, I love to use that roasted corn from Trader Joe’s that comes frozen. Really whatever corn you have and enjoy. 

Tomatoes, green onions and fresh herbs (like cilantro) round everything out.

If you’re looking for more, this is also a fantastic base to use for chicken (I’d just grab a rotisserie one!), shrimp or even steak. 

One of my favorite parts about this bowl is the dressing! You know what a huge fan I am of homemade vinaigrettes and this one does not disappoint. It’s a chili lime dressing, originally found in Everyday Dinners, that adds so much flavor to any bowl or salad. I love the weeks when I have this one in the fridge because it’s delish on all the things. 

This bowl can be served warm or cold, it’s entirely up to you. You can make this into smaller or larger portions, depending on what you’re looking for. You can also toss the entire thing together as a side dish. And of course, you can easily multiply it to feed a ton of people, because grain bowls are easy like that.

We are in love with these pesto risotto stuffed peppers! Creamy, parmesan risotto laced with classic basil pesto, stuffed in sweet bell peppers and roasted until perfect. Cozy, comforting summer food!

These stuffed summer peppers are cheesy and herby and everything you want a delicious summer dinner to be.

Creamy parmesan risotto with lots of fresh basil pesto is loaded into halved bell peppers, then topped with cheese and baked until the peppers because little warm boats of love. These are divine.

The risotto stuffed pepper is not a new thing here! In fact, I made these peppers by accident one day for dinner, because I didn’t have all the ingredients I wanted for my other recipe. I was blown away at how simply delicious they were, and even though it feels a little cop-out-ish, I knew I had to share. You are going to love them.

Because here’s the thing! 

I was inspired to make these peppers because of how much we all LOVE my summer risotto stuffed peppers. They are a staple meal during this warm season – and bring a cozy, comforting vibe when certain grilled and uncooked dishes do not. You know? Those peppers are incredibly satisfying and delicious and surprisingly good for a make-ahead meal prep dish. They are filled with corn and zucchini, but you really could add in any summer vegetables that you enjoy.

So, pesto risotto peppers it is!

These peppers are slightly less substantial – they are more cheesy, creamy risotto instead of all the summer produce. They are an excellent side dish or could be your main dish with a big summer salad on the side. You can make a big pan of them for the week ahead and use them for lunches with a greens salad or as side dishes with dinner.

And my favorite way to make these is with LEFTOVER risotto! It makes it super easy and fast, especially if you want to prepare these on a weeknight. You do lose a bit of that hydrated creaminess that risotto is known for, but the texture and flavor is still there, big time.

To make these, I do a super classic version of risotto here. I use arborio rice, chicken stock and white wine, plus lots of parmesan cheese. Risotto is intimidating at first, but once you make it a few times, it’s simple. You know the drill, how it works. And I’ve said this many times in my recipes before, but risotto is all about how the rice feels as it cooks. Yes, feels! 

No, I don’t want you to put your hands in the pot and pick up scoops of hot risotto, but you will learn how the rice feels against your spatula or wooden spoon as it cooks, when it’s hydrated enough and when to add more liquid. Of course, I will add the instructions in the recipe below too. But once you do it a few times, you certainly get a good feel for it and it makes this entire process very simple.

When my risotto is almost finished, I stir in a lot of pesto.

In the summer I like to use fresh pesto. In the winter, I am not above using a good jarred pesto if I can find it. And while I like to do a traditional basil pesto with this recipe, the sky is the limit. Arugula, kale, sun dried tomato – all of these pesto varieties will work. I just suggest tasting your risotto after you add the pesto, and making sure it’s perfect before add it to the peppers.

As for the peppers, I like to do my stuffed pepper hack here while I make the risotto.

I slice the peppers and remove the seeds and stems, then I do a little pre-roast on them. I talk about this more in my taco stuffed pepper recipe, but I find that this makes the peppers more caramely, sweet and deliciously roasted. If you don’t roast them a bit before, it’s fine. But they won’t be as tender without drying out the filling. A little pre-roast is key!  (more…)

Okay, maybe these fritters don’t qualify as an entire meal, but I’m pretty sure if you eat a whole plate of them, they can.

A mix of corn and zucchini, the ultimate summer garden treats, come together in these fritters for a savory and sweet crispy crunchy bite. Add the lemon basil dipping sauce and it’s snacktime heaven. We can’t get enough!

I don’t make fritters often – these days I hate frying anything on the stovetop, even when it’s a shallow fry like this. I have a recipe for broccoli fritters in Everyday Dinners and those are also incredible – the kids love them. 

And now that we are so enamored with the zucchini corn version, I’m going to be a fritter making queen. When it comes to cooking them, I do an easy pan fry and it works out great.

Nothing says vegetable love like little fried cakes of batter. Seriously, back when I loathed all vegetables, fritters were a no brainer for me. Of course I would eat them!

So if you have a veggie skeptic in your house, try a fritter first. They will not be able to resist.

I love how simple this recipe is. Zucchini and corn of course. Flour, some dried spices, eggs and scallions. Plus an oil for cooking. They come together fast and are very simple, but look extra fancy when you cover them with fresh basil.

Then we have our dipping sauce!

I love to make a lemon basil aioli for this – I use my nutribullet. I use it constantly for sauces, dips like this and dressings. It’s easy and much simpler to clean than using a whole big blender. (more…)

This street corn grilled cheese is the sandwich of the summer! Charred corn with melty cheddar on toasted bread with cilantro lime butter, chili lime seasoning and a sprinkle of cotija cheese. It’s fantastic.

This is for everyone who loves every version of grilled mexican street corn!

This little grilled cheese doesn’t look like much but I can’t even explain how much it is bursting with flavor. We have sweet corn, melty cheddar, crumbly cotija and salty chili lime seasoning with a kick. Every bite is something special and it’s more delicious than I can even explain!

I love a classic elote recipe and while I’ve never made one that is traditional and authentic, it’s an item on the menu that Eddie and I can’t resist. The flavors are so delicious and crunchy and wonderful.

So I’ve wanted to make a version of summer corn grilled cheese for years now and this one came at the perfect moment.

These flavors together create absolute magic, with the sandwich tasting about a thousand times better than I expected. With the combination of the outside spread, the cheese, the crunchy corn and the toppings, this takes a traditional grilled cheese over the top and makes everything feel extra fancy and special.

There is a ton of texture, so much crunch, so much cheese! 

As if I need to explain how much I adore grilled cheese.

Okay, this is how it comes together! 

I grill the corn first and slice it off the cob. You can do this however you wish – use leftover corn, don’t grill it at all, whatever is easiest. The key is to have good, crisp fresh corn here – that is what makes it great. Of course, if you’re making this in the off season, manage with what you can find.

We start with a cilantro lime butter. Oooooh yes. Fresh cilantro and lime and salt in a softened butter. That’s going to be the spread on the outsides of the bread! You can also use mayo in this situation if you want to keep that element in the recipe.

The inside of the grilled cheese consists of the corn, some grated cheddar cheese and thinly sliced scallions. Lots of flavor here, the corn stays relatively crisp and if you use sharp cheddar… it’s perfect. 

After cooking the grilled cheese in a pan, out come the toppings. I like to sprinkle on cotija cheese, some chili lime seasoning (I love tajin) and fresh cilantro. You could also do a tiny mayo drizzle if you wish.  (more…)
