As I’ve mentioned numerous times, Thanksgiving is all about the sides for me. I honestly don’t even think I had a bite of turkey last year.

I am absolutely obsessed with my Sweet Potato Casserole, brown butter stuffing, Jiffy Corn Casserole, Baked Macaroni and Cheese and of course – my Cranberry Fluff and Ambrosia Salad.

It’s so hard to choose, but I think these homemade garlic mashed potatoes might be my favorite side dish ever! They’re rich, creamy and absolutely perfect for Thanksgiving or just a Wednesday night!

Instant Pots are one of the most versatile kitchen gadgets, and in recent years, they’ve been guaranteed to be on steep sale during Black Friday. But that also means filtering through tons of deals. That’s why we’ve done all the legwork for you with the very best Instant Pot Black Friday deals right here—and get this—some are at their lowest price to date.

Now, two things upfront. Even though most Instant Pots come in 3-, 6-, and 8-quart capacities, we’ve focused on deals for the 6-quart, which is the most popular size. The 3-quart capacity is best for up to two people and the 8-quart for larger households up to eight—so six is the happy median. We’re also excluding the entry-level Instant Pot because we haven’t seen any deals on those yet (although that might change as more retailers release their sales). Currently, there are better sales on other models that have more features like the Duo, Crisp, and Pro Crisp, so you’re getting more versatility for less money.

It is a truth universally acknowledged that whenever a recipe for fried food is published—be it chicken or French fries, falafel or doughnuts—the first question will be whether that food can be baked instead.

And fair enough! Frying is messy, stinky, and splatter-y. While I'd happily accept a fried fish taco if someone else is offering, I don't want to fry on a weeknight in my small, ventilation-poor kitchen (and I imagine you don't either). Unless I have to, that is.

The No-Browning Way to Store Peeled Potatoes

One of the most revelatory things I learned while working as a line cook was that restaurant food is, essentially, very good reheated leftovers. Sure, proteins are seared on the spot and crème brûlée is torched to order, but everything else—risotto, pasta, green beans, soups—are made hours and days in advance. As soon as an order is fired (meaning the server tells the kitchen staff to start preparing the salads and steak tartare for table 11), everything is reheated in skillets and sizzler platters in the oven. What does this have to do with potatoes? Right. Those are prepared way in advance too.

Most mornings on the job, I was tasked with peeling pounds and pounds of russets for creamy potatoes. I would then cut the spuds with the largest restaurant-provided chef’s knife I could find and transfer them to a 22-quart container, cover them in water, and store the incredibly heavy container in the refrigerator. At that point, they would hang out, uncovered, for a few days until we were running low on mashed potatoes or hand cut French fries and it was time to make more.

This Low-ABV Basque Wine Needs Place on Your Holiday Table

If you’re looking to switch up your usual Sauvignon Blanc or Pinot Grigio, there’s a lesser-known, super versatile white varietal that belongs on your table: Txakoli. Pronounced “cha-ko-lee” (and sometimes called “chacoli” or “txakolina”), this Basque wine is light on alcohol, delicate in flavor, and can be enjoyed before, during, and after a meal.

My first encounter with Txakoli was in the Spanish seaside town of San Sebastian, where my husband and I found ourselves on our first pintxos crawl. We asked the bartender for a recommendation to go with the array of small bites we had chosen, and without hesitation, he pulled out a slender green bottle from a bucket of ice, held it high overhead, and poured the wine into two glass tumblers with a flourish. Bright, with plenty of acidity, and slightly effervescent on the tongue, it was a perfect accompaniment to nearly every dish, from garlicky shrimp to jamon iberico. Because of its versatility (and the great memories it brings of these bars in San Sebastian), Txakoli has been in regular rotation at my house ever since.

TikTok’s 15-Hour Potato Is the Best Thing on the Internet

I have a confession: I want to marry a potato. That’s right: a root vegetable that’s bronzed like a Ken doll will be my spouse. For those who know me, this won’t come as a surprise, since, for my entire life, I’ve been drawn to taters of every shape, size, and form. But there’s a new spud in town that I’ve got eyes for—TikTok’s 15-hour potato.

TikTok user Poppy O’Toole, who goes by the username of @poppycooks, posted a video of what she calls the “15-hour potato” that has since gone totally and completely viral. We don’t use the word viral lightly, either; since the TikTok was posted on August 1st, 2021, Poppy’s video has gained 18.2 million views, nearly three million likes, 12,000 comments, and 116,000 shares. At first glance, it’s hard to tell exactly what it is, but it certainly doesn’t resemble a potato. In fact, it more closely resembles a flaky pastry dusted in powdered sugar (one user said it looked like baklava). But in fact, each paper-thin layer that you see is a thin slice of potato. If these look familiar to you, you're not alone—they're remarkably similar to the famous confit potatoes from The Quality Chop House in London.
