Ingredients You Need

  • Frozen Fruit – These juicy fruits add a burst of sweet goodness that makes this ice cream super refreshing and delicious! We use peaches, strawberries, and mangos but you can choose your own favorites to mix in.
  • Coconut Milk – Creamy coconut milk gives the ice cream its rich, velvety texture and a hint of tropical flair, making this ice cream irresistibly smooth and luxurious.
  • Maple Syrup – A drizzle of maple syrup is the perfect natural sweetener! It enhances the fruity flavors and adds a cozy sweetness that takes this ice cream to the next level.

How to Make Peaches and Strawberry Fruit Ice Cream

  1. Blend. Place all of the ingredients into a food processor and blend them until they are completely combined.
  2. Freeze. Once the mixture is smooth and creamy, use a rubber spatula or large spoon to transfer it to an airtight container and place it in the freezer.
  3. Serve. Allow the ice cream to freeze completely before scooping and serving.

Variations

  • Berries – Swap out the peaches and mango for a mix of blueberries, raspberries, and blackberries for a tangy and vibrant berry flavor.
  • Tropical – Infuse tons of tropical flavor by using pineapple and banana along with the mango. Add a squeeze of lime juice for an extra zing!
  • Nuts – Sprinkle in some finely chopped nuts like almonds or pecans for a delightful crunch and added richness.
  • Chocolate – Drizzle in some melted dark chocolate or add a handful of mini chocolate chips to create a decadent chocolate-fruit combo.
  • Mint – Add a few fresh mint leaves or a drop of peppermint extract for a cool and refreshing twist.
  • Spices – Mix in a pinch of cinnamon and nutmeg for a warm, spiced flavor that pairs perfectly with the fruity base.
  • Coconut Crunch – Add some shredded coconut or coconut flakes for extra texture and a deeper coconut flavor.

Can I Store Leftovers?

Coconut milk-based ice cream can last for anywhere from 1 to 3 months in the freezer. However, we recommend eating it at its freshest.

To store, place the ice cream in a freezer-safe container and place it in the coldest part of your freezer.
