Ingredients You Need
- Cornstarch – Mixed with the water to make a slurry, this thickens up the strawberry topping to make it perfectly luscious and spreadable!
- Warm Water – Helps dissolve the cornstarch smoothly, making sure your strawberry mix is absolutely on point.
- Strawberries – Juicy, sweet, and vibrant, these berries are the sweet superstar of this recipe! Be sure to hull and half them ahead of time.
- Granulated Sugar – This sweetens the strawberries perfectly, turning them into a deliciously sticky topping.
- Your Favorite Bread – This is hearty, crispy canvas for all of the toppings. Use sourdough, whole grain, or any other variety that you love!
- Ricotta Cheese – This soft cheesy goodness adds a creamy, dreamy layer that pairs perfectly with sweet strawberries.
- Honey (Optional, For Drizzling) – A touch of extra sweetness and a lovely floral note to take it up a notch!
- Fresh Mint Leaves (Optional, For Garnish) – A pop of color and a refreshing minty hint that makes everything extra special!
How to Make Strawberry Ricotta Toast
- Make the Strawberry Mixture. Stir together the cornstarch and water until it dissolves. Then, place the strawberries and sugar in a saucepan and stir while cooking. When the strawberries have softened, pour the cornstarch mixture into the pan and continue to stir until the sauce thickens. Then remove the pan from the heat.
- Make the Toast. Place bread in a toaster or an oven and toast until the slices are crispy and browned. Allow them to cool briefly before spreading ricotta on them.
- Put It All Together. Spread the strawberry mixture on top of the ricotta and drizzle with honey. Add fresh mint leaves on top and serve.
Variations
- Mixed Berries – Swap strawberries for a mix of blueberries, raspberries, and blackberries for a burst of color and flavor.
- Lemon Zest – Add a sprinkle of lemon zest for a zesty twist that complements the berries beautifully!
- Almond Slices – Sprinkle toasted almond slices on top for a delightful crunch.
- Nut Butter – Spread a thin layer of almond or peanut butter under the ricotta for extra richness.
- Cinnamon – Dust a bit of cinnamon over the ricotta for a warm, spicy note.
- Balsamic Glaze – Drizzle a bit of balsamic glaze over the strawberries for a sweet and tangy twist.
- Prosciutto – Add thin slices of prosciutto for a savory, salty contrast to the sweet berries.
- Dark Chocolate Shavings – Add some dark chocolate shavings over the strawberries for a decadent touch.
- Basil – Replace mint with fresh basil leaves for a sweet and peppery flavor.
Can I Store Leftovers?
This dish is best devoured immediately! When stored, the bread has a tendency to become soggy. However, if you have a few left after serving, you can store them for a few days. Or, if you’re trying to make it ahead of time, just store the components separately overnight and assemble the toasts before serving.
Store strawberry ricotta toast in an airtight container for up to 3 days.
We do not recommend freezing this recipe.
