Next up: pork milanese! Oh my gosh it is SO good. The arugula salad is crave-worthy.

The best citrus salmon avocado salad for the season! Everything is so fresh.

Chicken meatball pitas are everyone’s favorite!

Finally, a winter brussels bowl with toasted farro. This is SO satisfying and good.

For breakfasts, I’m going with my salted maple granola. YUM.

And for lunches – my smashed chickpea salad! Love it.

Start things off with my new buffalo chicken wraps!! They are just SO good. While you’re at it, make some extra chicken for tomorrow…

Use that extra buffalo chicken on top of this emerald kale salad. OMG. This salad is so crunchy and SO good. Other options include using rotisserie chicken or even chickpeas or shrimp. Or just eating it plain with some toasted sourdough!

We love these bolognese stuffed peppers – it’s a ground turkey bolognese and so flavorful and comforting.

Chickpeas and dumplings for the win! This is the ultimate comfort food.

Our go-to everyday grilled steak salad is another huge favorite. You can make it a clean-out-the-fridge meal.

Sheet pan shrimp nachos for the weekend!

The best ever egg salad is on tap for lunch for the week!

And blood orange chia puddings for breakfast!

Turkey taco stuffed peppers for taco tuesday! Extra guac please.

We can’t get enough of this super easy lemon cauliflower gnocchi.

Everyone loves spaghetti squash parmesan. It’s customizable too – add in anything else you love!

Hot ginger salmon salad is the best. One that you will make over and over again!

Finish things off with chicken tortellini soup. It’s the best!

Make a batch of greek orzo salad for lunches!

And pistachio coconut oatmeal for breakfasts. YUM.

It’s Christmas week!!

I’m sharing a bunch of delish options below – some easy meals for early in the week along with some holiday meals too!

What To Eat This Week

Start things off this week with my sheet pan kung pao cauliflower. Super easy and good.

Try my new vodka sauce meatballs with ricotta toast. Such a delish and cozy dish.

Keep things easy with breakfast for dinner! Chipotle sweet potato and quinoa breakfast skillet is amazing.

For a delish Christmas meal, I suggest making my espresso crusted tenderloin with truffle sage risotto! Throw this holiday greens salad on the side – it’s so good.

As it’s such a special week, try this lobster bisque too! Make some parker house rolls on the side. Oh my gosh.

If you need something light towards the end of the week, make this kale caesar crunch salad. You can always throw on some chickpeas or rotisserie chicken.

For breakfasts, I’m going with my easy overnight oats! They are the best.

Lunch is a batch of our favorite tortellini salad. Love it so much.

Kick things off with a batch of fire roasted minestrone! This freezes great too, just don’t add the pasta when freezing.

Next up, my smoky pork marsala. It’s the ultimate comfort food.

Fuji apple chicken salad is up next! This one is so, so satisfying.

We love this bacon brussels fried rice! Leftovers of this are also amazing.

Maple sheet pan sausage is a winner for the weeknight. It’s so easy and so good.

Finish the week of with my hot honey pepperoni pizza! It’s crave worthy.

For lunches, I’m going with my tuscan tuna melts.

And breakfasts – my lemon curd chia pudding!

Make these chili lime sweet potato taco bowls for taco tuesday!

Yes yes to my cheddar cauliflower chowder. It’s so comforting and satisfying.

Buffalo chicken spaghetti squash is a huge favorite in our house.

Make these bolognese stuffed peppers – everyone loves them! House salad on the side please.

And finally, roasted cauliflower pitas! So much flavor and really great leftovers too.

My maple BBQ salmon is to die for! Served with brown butter couscous. Oh yum.

These french onion sweet potatoes are a fabulous meal. So comforting and cozy.

Slow cooker brisket chili for the win! Leftovers are amazing and you can freeze them too.

We love this crispy baked parmesan chicken and lemon arugula greens. Such a light but satisfying meal.

This warm winter farro salad is amazing. Made with cranberry cinnamon vinaigrette, it’s delicious.

Shaved egg avocado toast for lunch! This is such a fun spin on avocado toast.

And another week of cranberry overnight oats! They are SO worth it.

Monday is for soup! Make my new lemon ginger couscous chicken soup. It’s so nourishing and comforting.

Taco tuesday = my easy ground beef tacos. Keep it simple!

Caramelized onion, brussels and pistachio pizza is up next. Majorly crave worthy!

If you don’t want to cook a Thanksgiving meal, make this rosé coq au vin instead. OMG, it is outstanding.

If you do have turkey, make some leftover roasted turkey ramen! You can also use rotisserie chicken.

My honeycrisp kale quinoa salad is perfect for a satisfying but light dish.

Chicken salad stuffed avocados for lunch!

And ’tis the season for cranberry sauce overnight oats. YUM.

Pomegranate braised short ribs are incredible. Make them with a side of our favorite tortellini salad.

We love these green goddess salmon burgers. So different and satisfying.

Sesame chicken with coconut rice!  We love a good bowl meal. It’s dreamy.

For lunches, make a batch of mediterranean marinated chickpeas. Use on salads, in wraps, on toast – everything.

Peanut butter overnight oats for breakfast. I could eat these every single day.
