  • Steak – You’ll need to grab some whole skirt steaks, mozzarella cheese, parsley, and some salami slices. We’ll keep the seasonings straightforward with kosher salt, black pepper, and garlic powder. And to get that perfect sear, you’ll also need a bit of beef tallow or high smoke point oil.
  • Homemade Cowboy Butter – The goodness starts with unsalted butter. It gets better with fresh garlic, Dijon mustard, chopped parsley, red chili flakes, and cayenne powder. 

All these fresh ingredients can be found easily at your local grocery store. However, if you’re pressed for time, no shame in opting for delivery!

How to Make Steak Pinwheels with Cowboy Butter

The Prep

Alright, let’s get into it. First up, lay your skirt steak on a cutting board and cover it with parchment paper or plastic wrap. Then, grab your meat mallet and go to town, hammering that steak until it’s less than ½” thick. And check out how great my QALO ring looks while I’m working!

The dish is constructed from pounded steak and layers of cheese and salami.

Next, you’re going to layer on the salami slices, followed by the shredded mozzarella. Then, go ahead and sprinkle the chopped parsley over the top. Now comes the fun part—roll that steak up tight, secure it with butcher’s twine. You’ll want to use two strings of butchers twine so that you can slice down the middle of the steak with a sharp knife and pull apart the two fancy pinwheels.

The classic pinwheels are created with the help of kitchen twine and a sharp knife.

Once your pinwheels are ready, slather them with some beef tallow and generously season with kosher salt, black pepper, and garlic powder. Meanwhile, get your grill fired up to medium-high heat with a two-zone setup.

The Cook

Sear each side of your pinwheels over the hot coals of the grill for about a minute, then crank the grill grate up so the pinwheels can continue to cook, but now over a more indirect heat. Continue to cook them this way until they hit an internal temperature of 125 degrees F. Let them rest for about 10 minutes while you make the Cowboy Butter.

In a small bowl, mix together your melted unsalted butter, minced garlic, Dijon mustard, chopped parsley, red chili flakes, and cayenne powder.

Ingredients

Steak:

  • 2 Whole Skirt Steaks
  • 3 cups Shredded Mozzarella Cheese
  • 2 cups Chopped Parsley
  • 20-30 Salami Slices
  • 2 tbsp Kosher Salt
  • 2 tbsp Black Pepper
  • 2 tbsp Garlic Powder
  • Oil as needed

Cowboy Butter:

  • 2 sticks Unsalted Butter melted
  • 2 tbsp Minced Garlic
  • 2 tbsp Dijon Mustard
  • 1.5 tbsp Chopped Parsley
  • 2 tsp Red Chili Flakes
  • 1 tsp Cayenne Powder

Instructions

  • Lay your steak out on a cutting board and cover it with parchment paper or plastic wrap. Using a heavy mallet or food mallet, hammer the skirt steak until it is less than ½” thick.
  • Next, add a layer of shredded cheese followed by salami and chopped parsley.
  • Carefully roll the skirt steak up lengthwise to create the pinwheel. Secure the roll with two strings of butcher twine and slice between them to make two separate pinwheels.
  • Slather with beef tallow on the outside and generously season with salt, pepper and garlic powder. Repeat this with the rest of the skirt steak for all of the pinwheels.
  • Preheat your grill for a two zone high heat temperature (around 400F).
  • Add your pinwheels to the hot side of the grill to sear each side for 1 minute per side or until they have developed a nice crust. Once they have a nice crust on the outside, pull the pinwheels over to the cool side of the grill to cook until they reach 125F internal (about 10-15 minutes more). When the steaks are done, pull them off and let rest for 10 minutes.
  • In a bowl, mix together all the ingredients for the Cowboy Butter. Set to the side.
  • Top each of your steaks with some of the Cowboy Butter, slice, serve and enjoy!

I get it, a hot burger straight from the grill is always a tasty bite, but sometimes you just gotta go all out. Seasoned ribeye steak slices and beef patties on the same sandwich? Yup, you heard that right. Cowboy Butter Burgers are next level.

The cowboy butter, a rich and savory mix of unsalted butter, garlic, Dijon mustard, fresh parsley, red pepper flakes, cayenne pepper and lemon juice, makes every bite more decadent. Topped with caramelized onions and cheddar cheese, these burgers are beyond satisfying.

Ingredients Breakdown

  • Ribeye Steak – Grab some ribeye steaks to start this cowboy butter burger recipe. You’ll season them generously with kosher salt, black pepper and garlic powder.
  • Beef Patty – You’ll also need 3-4 burger patties. Like the steaks, you’ll season them with kosher salt, black pepper and then some more garlic powder, ensuring a robust and savory base for the burger.
  • Cowboy Butter – To make the compound butter mixture, you’ll need two sticks of unsalted butter, minced garlic, Dijon mustard, chopped parsley, red pepper flakes, cayenne pepper and a touch of lemon juice.
  • Caramelized Onions – We’ll season some thinly sliced white onions with kosher salt and then caramelize them in beef tallow. 
  • Additional Ingredients – To tie everything together, you’ll need toasted burger buns, 8-10 slices of cheddar cheese (or pepper jack for a spicy twist) and then your favorite mayonnaise.

How to Make Cowboy Butter Burgers

Caramelized Onions

To begin, start by preheating your grill to medium-high heat, around 350 degrees F, for direct cooking. Place a large skillet on the grill for a couple of minutes before adding the beef tallow. Once melted, toss in the thinly sliced white onions and then season them with salt and pepper.

After that, cook the onions on medium heat until they are deeply caramelized, turning dark brown. This process certainly takes patience and can take about 45-60 minutes. Once done, set them aside and then keep them warm.

Next, prepare the cowboy butter. Combine the melted unsalted butter, minced garlic, Dijon mustard, chopped parsley, red pepper flakes, cayenne pepper and lemon juice in a small bowl. Mix well and set it aside until you’re ready to use it.

The cowboy butter is easy to make and so freakin' delicious to eat.

Cowboy Butter Tip

For the best flavors, first, don’t pop the cowboy butter in the fridge. Instead, let it rest at room temperature for about 15-20 minutes before slathering it on the burgers. This way, the flavors can fully meld and mingle, undoubtedly giving your Cowboy Butter Burgers an even richer taste.

Steak & Burgers

Now, it’s time to focus on the meat. First, slather the ribeye steaks and burger patties with the canola oil (or a bit of olive oil) and then season them generously with kosher salt, black pepper and garlic powder. Next, go ahead and let them sit in the fridge until you’re ready to cook.

The meat is prepped with seasonings.

Preheat your grill to medium-high heat, about 375 degrees F, for two-zone indirect cooking. Place the steaks and burgers on the grill and then cook them for 3-4 minutes per side. Aim for an internal temperature of 120 degrees F for the steaks and 165 degrees F for the burgers. Finally, just before the burgers are done, top each patty with a slice of cheddar cheese to melt. Once everything is perfectly cooked, drizzle a generous amount of cowboy butter over the meat and let it rest for 10 minutes.

Assembling the Burgers

To assemble, start with toasted buns and spread a layer of mayonnaise. Place the burger patty first, followed by slices of the ribeye steak. Add a generous helping of caramelized onions and drizzle more cowboy butter on top. Close the burger with the top bun and get ready to enjoy.

The steaks are sliced and the Cowboy Butter Burgers are assembled.

  • 0.5 oz Simple Syrup
  • Fresh Mint

Instructions

Caramelized Onions:

  • Preheat your grill to medium high heat (about 350F) for direct cooking. Add a cast iron skillet to the grill 2 minutes before cooking.

  • Combine ingredients and ice into a cocktail mixing tin. Shake well and pour into an ice-filled rocks glass or julep mug. Garnish with fresh mint.
