Perfectly spiced, moist pumpkin cake is topped with tangy cream cheese frosting for an easy and delicious dessert that’s as perfect for a weeknight as it is for your Thanksgiving table.

I love a dessert recipe that can pull double duty. Like, an easy recipe that you can throw together on a weeknight that’s also delicious enough to serve to company or for your Thanksgiving dessert.

My pumpkin pecan pie bars, puff pastry apple tart, and apple butter cake are all examples of these kinds of recipes.

This pumpkin cake with cream cheese frosting also fits that bill.

Made with crushed pineapple, shredded zucchini, coconut, and a tangy cream cheese frosting, this pineapple zucchini cake is a moist, flavorful cake that is perfect for the end of summer.

This is the time of year where my gardening friends and family start to show up with extra zucchini, begging me to take it off their hands. Which is why I have quite the collection of zucchini recipes that I’ve created over the years. 

One thing I love is a good zucchini cake. I’ve made a bunch of variations, including chocolate zucchini cake, lemon zucchini cake, and a zucchini cake with maple cream cheese frosting. 

This pineapple zucchini cake is a big favorite. Pineapple and zucchini were meant to go together, and when you add a tangy cream cheese frosting? Totally perfect.

This incredibly easy pineapple cake is topped with a light and fluffy pineapple frosting for a simple, summery dessert that you can whip up any time.

The instant summer hits, I start craving all the pineapple. There’s just something about a perfectly sweet pineapple that is so delicious and refreshing on a hot summer day.

I love to throw it on the grill for simple grilled pineapple, turn it into pineapple fluff, and I really love using it in cakes.

Pineapple upside-down cake might be the most well-known cake that uses pineapple in it, but it’s not the only one! My pineapple cake with cream cheese frosting is always a hit, pineapple angel food cake is a light and fluffy delight, and cherry pineapple dump cake and pineapple dump cake are perfect for taking to any cookout.

And today we’re going to add this easy pineapple cake to that list!

Rich, moist, and nearly the size of the state it’s named for, Texas sheet cake is a classic recipe that will put a smile on any chocolate lover’s face.

One of the most amazing things about blogging is the incredible friendships you build along the way.

I’ve met a lot of people because of this site, and one of them is my friend Amber who I met way back in 2010 on Twitter. She helped me create custom table markers for an event I was assisting with and we became instant friends.

Amber is from Texas, so when she had her first baby and some of us bloggers threw her a virtual baby shower, I knew I had to bake up something to honor her home state. It was the first time I made Texas sheet cake, but it definitely was not the last!

I might be a Midwestern girl through and through, but I know how to spot good chocolate cake recipes and lemme tell ya – Texas sheet cake is one of the best! Serve it up with some Southern sweet tea for a taste of the South no matter where you live.

We are all finally back into our routine. My oldest is back to school, we’ve gotten through the holidays and winter break, and I can get back to work.

So obviously that means it’s time for cake! Cinnamon roll cake, to be exact.

Because I loooooove cinnamon rolls, but I don’t always love how much time they take. (Although I do love making cinnamon rolls with heavy cream as a shortcut!)

But this cake? It’s got all the amazing flavors of that famous breakfast pastry without any of the rising time.

Bake, glaze, and eat. It’s totally one of my new go-to recipes.
