  • Make ahead. This recipe is perfect for meal prep, as it can be prepared up to 4 days in advance, reducing stress and allowing for an easy weekday meal.
  • Portable. Concerts, potlucks, picnics – this salad is a great option for all three as it travels well and holds its shape.
  • Versatile. Feel free to customize! Don’t have mango chutney? Try chopped dried apricots or a drizzle of honey. Swap the almonds for cashews or peanuts.

Ingredients for Curry Chicken Salad with Pasta

Here’s what you’ll need to create this impressive salad, all of which should be available at your local grocery store:

Curry Dressing

  • Mayonnaise
  • Sour cream or nonfat Greek yogurt – I use a mix of the two, around half of each
  • Curry powder – Madras is my personal preference
  • Tumeric
  • Ground cinnamon
  • Cayenne pepper – for just a bit of heat!
  • Mango chutney – often sold under the brand Major Grey’s

Chicken Pasta Salad

  • Short pasta – orecchiette (in my photos), farfalle (bow ties), or medium shells all work well.
  • Cooked chicken – use leftover chicken, store-bought rotisserie chicken, or quickly sauté some boneless chicken breasts
  • Raisins
  • Green onions
  • Celery – try to find stalks with some leaves as they layer in a bit more subtle flavor.
  • Green apple – Granny Smith is my recommendation.
  • Kosher salt
  • Ground black pepper
  • Toasted slivered almonds

Step-by-Step Instructions for Making Curry Chicken Salad with Pasta

Here’s all you have to do to create this easy recipe. No special equipment required!

Curry Dressing

  1. Combine mayo and sour cream.
    In a medium bowl, whisk together mayonnaise and sour cream (and/or yogurt).  whisking mayo, sour cream, and yogurt for curry dressing in a blue bowl
  2. Add spices.
    Whisk in curry powder, turmeric, cinnamon, and cayenne pepper. Adding curry dressing spices to mayo-cream-yogurt base
  3. Add chutney.
    Cut up any large pieces of mango in the chutney and add to the mayonnaise mixture. Mix well. whisking mango chutney into curry dressing
  4. Refrigerate.

Chicken Pasta Salad

  1. Cook pasta; drain, and pat dry.
    Cook pasta according to package instructions until al dente. Drain, rinse under cool running water, and gently pat dry.
  2. Toss together salad ingredients.
    In a large bowl, toss together cooled pasta, shredded chicken, raisins, chopped green onion, celery, and apple (I like to use my hands). Curry Chicken Salad with Pasta ingredients in a large bowl
  3. Add dressing.
    Add half of the dressing and (using spoons this time!) toss to coat. Add more dressing to your taste (I usually use all of it). tossed Curry Chicken Salad with Pasta in a large bowl
  4. Refrigerate.
    Cover and refrigerate for at least 30 minutes, up to 24 hours before serving.
  5. Add almonds; adjust seasonings.
    Around 20 to 30 minutes before serving, remove the salad from the refrigerator and stir in almonds. Taste and adjust seasonings with salt, pepper, and cayenne pepper.

Substitutions and Variations

I love this recipe just the way mom always made it, but it is very versatile so feel free to modify it to suit your tastes or the ingredients you have on hand. Here are a few ideas:

  • Use roasted peanuts or cashews instead of almonds
  • Substitute chopped red onion for the green onion
  • Substitute golden raisins for regular
  • Add chopped bacon
  • Add chopped fresh tomato
  • Add chopped jalapeno pepper

Serving and Side Dish Suggestions

My favorite way to serve this colorful salad is to line the outer edge of a serving bowl or platter with lettuce or spinach leaves, then spoon the salad into the bowl or onto the platter.
 
Here are a few other ideas for serving:

  • In hulled-out large tomato halves
  • Create a chicken salad sandwich by placing the salad between two pieces of lightly toasted whole-wheat bread
  • As a lettuce wrap (inside large boston or romaine lettuce leaves)
  • Stuffed inside a pita half
  • In individual lettuce-lined bowls

In terms of sides, this salad is fairly rich and filling, so I usually just serve it with one of these chilled soups alongside: 

Make Ahead and Storage for Curry Chicken Salad

Curried Chicken Salad can be prepared up to 4 days in advance, placed in an airtight container, and refrigerated. I recommend adding the slivered almonds just before serving, so they stay crunchy. And, I think this salad has the best flavor when served within 24 hours of preparation. 
 
I don’t recommend freezing this dish as it will diminish the flavor and have a funky consistency.

Curry Dressing

  • 1/2 cup mayonnaise

  • 1/2 cup raisins
  • 1/2 cup chopped green onions (white, light green and some dark green part)
  • 1/2 cup chopped celery (including leaves)
  • 1/2 cup (heaping) chopped green apple – around 1/2 large apple
  • Kosher salt, to taste
  • Fresh ground pepper, to taste
  • 1/4 cup toasted slivered almonds

Instructions

Six ingredients all of which I usually have on hand, combined with 45 minutes from beginning to end, and I have a light, elegant dish bursting with freshness. In this dish, fresh grape or cherry tomatoes are tossed with kosher salt and left to sit, to draw out some of their moisture. Instead of throwing out the tomato juices, you whisk them with goat cheese into a creamy, sauce full of tomato flavor.

Chicken, Goat Cheese, and Tomatoes Ingredients

You only need 6 ingredients to create this colorful and delectable recipe:

  • Red and yellow grape or cherry tomatoes – These are my favorite type of tomato to use in this recipe due to their sweetness and size. You can substitute other types if you prefer (see section on Substitutions below).
  • Kosher salt
  • Mild goat cheese – a soft and creamy goat cheese log works best in this recipe because you whip a portion of it with liquid to form a delicious sauce. Don’t use pre-crumbled cheese! The anti-caking additives they contain reduce the flavor and make it difficult to make the sauce.
  • Extra virgin olive oil
  • Fresh ground pepper
  • Boneless, skinless chicken breast halves – you can substitute boneless, skinless thighs but they won’t look as elegant on the plate as a breast.

How to Make Grilled Chicken, Tomatoes, and Goat Cheese

You’re going to be amazed at how quick and easy this chicken dish is to put together:

  1. Preheat grill to medium-high heat.
  2. Season the tomatoes; let rest.
    Put the tomatoes in a colander set over a medium mixing bowl. Toss tomatoes with the sea salt and let stand for at least 20 minutes to release the juices.
  3. Add goat cheese and oil to tomato juice.
    Remove and set aside the colander; into the collected juice from the tomatoes, whisk half the goat cheese and 2 tablespoons of the olive oil until smooth. 
  4. Mix in tomatoes and remaining cheese; season.
    Fold in the tomatoes and remaining goat cheese. Season with freshly ground pepper.
  5. Prep chicken. 
    Pat chicken breasts dry with paper towel. If breasts are large, butterfly and halve, or pound to an even thickness.
  6. Grill chicken.
    Brush the chicken breasts on both sides with the remaining 1 tablespoon of olive oil and season with salt and pepper. Brush the heated grill grates with oil. Place breasts in a single layer and grill for 4 to 5 minutes per side, or until they reach 165 degrees on an instant-read thermometer inserted in the thickest portion. (See Tips below.)
  7. Let chicken rest.
    Place cooked chicken breasts on a serving platter and cover with foil. Let rest for 5 minutes.
  8. Serve.
    Spoon the tomato-goat cheese mixture on top of the breasts and serve.

Tips for Grilling Chicken to Perfection

Here are my tips to follow in order to have tender, moist chicken breasts:

  • Ensure breasts are an even thickness. To ensure even cooking, either butterfly the breasts or pound them to an even thickness before grilling. This will prevent the thinner parts from drying out while waiting for the thicker parts to cook through.
  • Don’t oil grill rack until it’s preheated. If you oil the grill rack earlier, then the oil cooks off when the grill is preheating.
  • Also oil chicken. Brushing the breasts with oil enhances flavor, ensures they stay moist, and helps to promote nice grill marks.
  • Place chicken properly on grill rack. Place breasts at an angle to get the best-looking grill marks. And, leave space between the pieces so the heat can circulate and cook the chicken evenly.
  • Let cooked chicken rest before serving. Letting the chicken rest for 5 minutes allows the juices to redistribute throughout the meat.

Substitutions and Additions

While this recipe is delicious as is, it is also very flexible so feel free to adjust it to make it your own. Here are a few suggestions:

Substitutions

  • Use other kinds of fresh tomatoes instead of grape or cherry – chopped Roma works well.
  • Amp up the flavor by using a flavored goat cheese, such as sundried tomatoes or herb- flavored.
  • Substitute another type of cheese – feta or fresh mozzarella cheese. Just note that these won’t make a creamy sauce like the goat cheese.
  • Replace the chicken breasts with boneless, skinless chicken thighs.

Additions (to the toppings)

  • Chopped fresh herbs – fresh basil leaves, parsley, even cilantro.
  • Chopped artichoke hearts.
  • Sliced black or green olives.
  • Chopped sun-dried tomatoes.
  • Lemon zest.
  • Chopped red onions, green onions, or shallots.
  • Dijon mustard to the oil for brushing onto the chicken.
  • Balsamic vinegar or lemon juice.

Variations in Chicken Cooking Method

Don’t have a grill? No problem! Here are other ways to cook the chicken in this recipe:

  • Broil the chicken. Preheat broiler on high. Place the top oven rack  around 5 inches from the heat source. Place oiled chicken breasts on a rimmed cookie sheet lined with foil or parchment paper. Broil 4 minutes, flip over and continue cooking an additional 4-5 minutes or until  the internal temperature of the chicken reaches 165 degrees.
  • Roast the chicken. Preheat oven to 400 degrees. Place oiled chicken breasts on a rimmed cookie sheet lined with foil or parchment paper. Cook for 10 to 12 minutes or until internal temperature reaches 165 degrees.

How to Serve Grilled Chicken with Tomatoes and Goat Cheese

Here are various ways you can serve this chicken recipe:

  • On a serving platter. Arrange breasts in a single layer and spoon tomato and cheese mixture over the top.
  • On individual dinner plates. Place one breast on each plate and spoon tomato and cheese mixture over the top.
  • Atop pasta. Place cooked pasta noodles (I like to use fettuccini or linguini) on a serving platter and top with breasts; spoon tomato and cheese mixture over the top.

In addition, for a pop of contrasting color, you can garnish the top of the dish with fresh parsley.

Add an easy tossed salad of mixed greens and our Mustard Vinaigrette and a loaf of crusty bread, and dinner is complete!

How to Store and Reheat Chicken, Tomatoes, and Goat Cheese

If you have leftovers, place them in an airtight container and refrigerate. They will last for 3 to 4 days. I don’t recommend freezing as the tomato mixture can become watery

Here’s what you’ll need to create these delicious, messy-to-eat sandwiches (quantities are in the recipe card below):

Sloppy Joe filling:

  • Ground turkey (90% lean) – I tried this recipe with 85%, 90%, and 99% lean ground turkey, and around 90% was the best in terms of moistness and flavor
  • Yellow onion
  • Large red bell pepper (can also use green pepper), optional – the pepper adds a nice layer of flavor, but tested without was also delicious
  • Kosher salt
  • Garlic cloves
  • Light brown sugar
  • Chili powder
  • Ground cinnamon – a subtle addition that adds depth and balances the sweetness
  • Tomato paste
  • Yellow mustard
  • Worcestershire sauce
  • Fresh or canned diced tomatoes
  • Beer – all of the alcohol will be cooked off when preparing the filling, but if you prefer you can substitute the juice from the canned tomatoes (or water)
  • Red wine vinegar
  • Fresh ground pepper 

To serve:

  • Hamburger buns
  • Melted butter (to brush the buns before toasting)
  • Toppings: Cheddar cheese, red onion, jalapeno pepper, lettuce, dill pickle

How to Make Sloppy Joes with Ground Turkey

And here’s all you have to do to create these crowd-pleasing Sloppy Joes:

  1. Brown turkey.
    In a large skillet over medium-high heat cook brown turkey just until no longer pink. Ground turkey cooking in skillet
  2. Add vegetables.
    Add onion, bell pepper, and garlic; lightly season the mixture with salt and cook, stirring occasionally, until onion is soft, 3 to 4 minutes. 
  3. Add sugar, spices, and tomato paste.
    Stir in sugar, chili powder, cinnamon, then tomato paste. Cook, stirring constantly, for 3 to 4 minutes.
  4. Add mustard, Worcestershire sauce, tomatoes, and beer.
    Stir in mustard, Worcestershire sauce, then diced tomatoes and beer. Bring to a boil, reduce heat, and simmer, stirring occasionally,  for 8 to 10 minutes, or until the mixture thickens. 
  5. Add vinegar, salt, and pepper.

    Lightly brush the insides of the hamburger buns with melted butter and toast. Fill with Sloppy Jane mixture and serve with toppings on the side.

Tips for Making the Perfect Turkey Sloppy Joes

To ensure your turkey Sloppy Joes turn out perfect every time, here are some tips to keep in mind:

  • Choose the right ground turkey. Opt for ground turkey that is around 90 to 93% lean. I found this level to deliver the best results in terms of flavor and moistness.
  • Season the turkey and vegetables when sautéing. Add salt draws out the natural flavors of the ingredients, making them taste brighter and more intense.
  • Layer in the ingredients in the order given. Adding the ingredients in a certain order allows the flavors to be gradually incorporated, adding depth and balance to the final mixture.
  • Brush hamburger buns with butter and lightly toast. Who wants a delicious hot filling on a cold bun? And, brushing the inside of the buns with butter before toasting helps them crisp up, adds still more flavor, and keeps the bread moist.

Variations and Additions to Personalize Your Turkey Sloppy Joes

  • Add chopped jalapeno or serrano peppers, or your favorite hot sauce to the turkey mixture.

  • The alcohol in the beer will cook off; you can also use nonalcoholic beer, water, or the tomato juice from the canned diced tomatoes.

To reheat, place the mixture in a saucepan and heat over medium-low heat, stirring occasionally, until warmed through. You may need to add a splash of water or broth to loosen the sauce if it has thickened in the refrigerator.

Ingredients for Homemade Lemon Bars

Here are the key ingredients you’ll need to create these bright, refreshing lemon bars from scratch (quantities are provided in the recipe card below):

Cookie crust

  • Butter – Nama, mom and I all use salted butter for the best taste. If you opt for unsalted butter, add 1/4 teaspoon salt
  • Powdered (Confectioners’) sugar
  • All-purpose flour

Lemon filling

  • Large eggs
  • Granulated sugar
  • Lemons – I recommend using regular lemons and not Meyer, as the latter’s lower acidic content results in less tangy flavor, making the cookies bland
  • Baking powder – don’t skip as this is the key to making the filling lighter.
  • Table salt

Frosting

  • Butter, salted
  • Powdered (Confectioners’) sugar
  • Whole milk – you can substitute 2% milk
  • Vanilla extract

How to Make Lemon Bars from Scratch

Follow these simple steps to achieve a delicious cookie-like crust and a luscious lemon filling:

A. Preheat oven and prep pan (if needed)

Preheat oven to 325 degrees. You have the option to use a 7 by 11-inch glass baking dish as is or line it with two pieces of parchment paper, placed crosswise. (I don’t recommend using a metal pan.) The paper will make it easier to remove the cookies from the pan, but you will not get those lightly browned chewy edges.

B. Cookie crust

  1. Combine butter and sugar.
    With an electric mixer fitted with the paddle attachment, blend together the butter and powdered sugar until smooth, fluffy, and light in color, around 3 to 4 minutes. 
  2. Add flour.
    Add the flour and mix just the mixture starts to form clumps. Don’t overmix. close up of raw crust dough showing the lumpy texture
  3. Press into pan.
    Press dough into the bottom of the prepared baking pan, in an even layer. Crust dough pressed into baking dish, before baking
  4. Bake.
    Bake for 15 minutes. Remove from oven and set aside (don’t turn the oven off).

C. Lemon filling

  1. Combine eggs and sugar.
    Again with the electric mixer, beat the eggs and sugar together just until light in color and well blended. 
  2. Add remaining ingredients; blend.
    Add the lemon juice, lemon zest, baking powder and salt and blend until just mixed. 
  3. Add to crust.
    Spread the lemon mixture over top of baked crust. Unbaked lemon filing in baking dish on top of baked crust
  4. Bake.
    Bake for 20 to 25 minutes or until set – gently press the top with your finger to test. (Lemon filling will have puffed up and then settled down a bit).  Set aside to cool in the pan for at least one hour before frosting. Cooked lemon bars, in baking dish before adding frosting

 D. Frosting

  1. Combine ingredients.
     In a small mixing bowl, whisk all ingredients together until frosting consistency. Add more milk if too thick or more sugar if too thin.
  2. Spread on cookies.
    Spread over the top of the cooled bars. Refrigerate for at least one hour. Frosted homemade lemon bars, in baking dish

Variation in Method – Without an Electric Mixer

If you don’t have an electric mixer, you can combine the lemon bar ingredients for each layer the way my grandmother did in her original recipe – by hand:

  • For the Crust: Place all crust ingredients in a mixing bowl, and using a fork, gently blend just until they are well combined and the mixture is forming clumps.
  • For the Lemon Filling: Place the eggs and sugar in a large mixing bowl and whisk until light in color and well blended. Add remaining ingredients and whisk until well combined.

Tips for the Best Lemon Bars

Here are my tips to ensure that your lemon bars turn out perfectly every time:

  • Use fresh lemons. For the best flavor, always use freshly squeezed lemon juice and zest. Bottled lemon juice lacks the vibrant taste that fresh lemons provide. And, I don’t recommend using Meyer lemons in this recipe; they have less “zing” due to their lower acidity.
  • Don’t overmix the crust. Overmixing the ingredients can lead to a tough and chewy crust. Stop mixing as soon as the ingredients are combined and forming lumps.
  • Bake the crust before adding the filling. Don’t skip this step! Pre-baking the crust ensures that it holds its shape and doesn’t become soggy when the lemon filling is added. 
  • Cool the bars completely. It’s important to let the lemon bars cool to room temperature before frosting, so the frosting adheres properly.
  • Refrigerate before slicing. You need to refrigerate these cookies for at least one hour before slicing, to allow them to set. They will be much easier to slice cold!

Variations on the Classic Lemon Bars Recipe

While this easy lemon bars recipe is undeniably delicious, there are several ways to make them your own. Here are a few ideas:

  • Add candied ginger. Following on the heels of my Blueberry Lemon Tart recipe, add chopped candied ginger to the filling. 
  • Add coconut. Add shredded coconut into the crust or sprinkle it on top of the bars.

How to Serve This Recipe for Lemon Bars

To serve this easy dessert:

  • Using a sharp knife cut the refrigerated cookies into bars. I usually cut them into 15 pieces, but for a larger group, I cut them slightly smaller, into around 24 pieces.
  • Place on a serving platter or individual serving plates.
  • Add a small sprig of fresh mint leaves to the plate or platter for a pop of contrasting color. 

Note that if you stack the cookies for a long time (e.g., other than to quickly serve), place parchment paper between the layers to keep them from sticking together.

How to Store Lemon Bars

If you have any leftover lemon bars or want to prepare them in advance, cover them tightly with aluminum foil or plastic wrap and refrigerate. They are best when consumed within 2 to 3 days, but will last up to 4 to 5 days. They can also be frozen for up to 2 months. Thaw, covered, in the refrigerator overnight. (See note in section above about stacking the bars.)

Lemon Bars FAQs

Can I use bottled lemon juice instead of fresh lemons?

While it is possible to use bottled lemon juice, I recommend using fresh lemons for the best flavor. Bottled lemon juice lacks the bright, tangy taste that fresh lemons provide.

Can I substitute margarine for butter in the crust?

While margarine can be used as a substitute, the flavor and texture of the crust may be slightly different. Butter is preferred for its rich flavor and superior baking properties.

Can I use a different type of citrus fruit, such as oranges or limes?

Lemon bars are traditionally made with lemons, but you can experiment with other citrus fruits. Let me know how they turn out!

Can I make the lemon bars gluten-free?

Yes, you can make gluten-free lemon bars by using 1 cup gluten-free flour and 1/2 teaspoon xanthan gum. Double-check that all of your other ingredients are also gluten-free.

Do lemon bars need to be refrigerated?

Yes, for best results keep them well covered, in the refrigerator.

How long do lemon bars last in the fridge?

Lemon bars are best eaten within 2 to 3 days, but will last up to 4 to 5 days.

Can you freeze lemon bars?

Yes, you can freeze these lemon bars. It’s best to wrap each bar with plastic wrap, then place in a freezer-safe ziptop baggie. They will last for up to 2 months. Thaw overnight in the refrigerator.

Sunshine on a plate! Straight from my grandmother Nama’s kitchen, these Homemade Lemon Bars are a treasured family recipe. Lovingly passed down for three generations, this recipe is surprisingly easy to prepare with readily available pantry ingredients. Bursting with citrusy flavor from both fresh lemon juice and zest, the addition of a unique ingredient makes them lighter than other, more dense lemon bars. And, with the perfect balance of sweet and tart, these homemade lemon bars appeal to both young and old, making them a delightful dessert for any occasion, from family dinner to bridal showers or graduation celebrations.

  • Cooling time: 120 minutes
  • Cook Time: 40 minutes
  • Total Time: 2 hours 50 minutes
  • Yield: 15 to 24 bar cookies

Ingredients

Cookie Crust

  • 1/2 cup salted butter, softened
  • 1/4 cup powdered (Confectioners’) sugar
  • 1 cup all-purpose flour

Lemon Filling

  • 2 large eggs
  • 1 cup granulated sugar
  • 1 tablespoon fresh lemon zest (about 2 medium lemons)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon baking powder (reduce to 1/4 teaspoon above 7,000 feet)
  • 1/4 teaspoon table salt

Frosting

  • 1 tablespoon salted butter , melted
  • 3/4 cup powdered (Confectioners’) sugar
  • 1 tablespoon whole milk (or more)1/2 teaspoon vanilla extract

Instructions

Preheat oven to 325 degrees. Optional (see note below): line a 7 by 11-inch pan with parchment paper.

Cookie Crust

Notes

Note about baking dish: If you line the pan with parchment paper the cookies will be easier to remove from the pan. However, you won’t get those browned, chewy edges; your choice.

High altitude: No adjustments are necessary up to 7000 feet. Above that level, reduce the baking powder to 1/4 teaspoon.

Gluten free: Substitute 1 cup gluten-free flour and 1/2 teaspoon xanthan gum for the 1 cup flour. Double-check that all of your other ingredients are also gluten-free.

The Kentucky Derby, also known as “The Run for the Roses,” is a prestigious horse racing event held on the first Saturday in May at Churchill Downs in Louisville, Kentucky. The Derby has a rich history dating back to 1875, making it one of the oldest sporting events in the United States. But, the Derby is not just about horse racing; it is a cultural phenomenon that embodies the spirit of Southern hospitality and tradition. From the show-stopping hats to the playing of “My Old Kentucky Home” before the race, every aspect of the event is steeped in history and significance.

Here are my tips for creating a festive Derby atmosphere, recommendations on managing timing and guest list, and suggestions for a few fun, Derby-related activities:

Round Up Your Thoroughbred Crew: The Guest List

  • Think about space. Make sure you have enough TV viewing space for the number of people you invite. Factor in seating, standing room, and areas for food and drinks.
  • Embrace tradition. Encourage guests to wear their Derby best, including fabulous hats and bow ties.

Whip Up a Southern Spread: Menu Planning and Timing Tips

  • Embrace the make-ahead: You don’t want to be in the kitchen cooking and miss all the pre-festivities or the big race! The recipes in our menus can all be prepared ahead, with last minute reheating and finishing touches.
  • Plan your serving schedule around the race. Factor in the Kentucky Derby race time (typically around 6:30 pm Eastern Standard Time) when planning your food service. Guests will likely arrive earlier, so plan to have appetizers and drinks ready beforehand. You can then serve dinner after the race when everyone has had a chance to unwind and chat.

Setting the Scene: Decorations

  • Embrace the colors. Red roses are the symbol of the Derby – they are presented to the winning horse. Decorate your table with a white (or black) tablecloth, red napkins, and rose centerpieces.
  • Horseshoe power. Hang a horseshoe-shaped wreath, create a horseshoe-shaped centerpiece for the table, and look for horseshoe-themed cocktail napkins.

Breakfast shouldn’t be complicated, but it should always be delicious. That’s the philosophy behind these Toasted Bagels with Egg Salad and Smoked Salmon. In our house, the love for both egg salad and smoked salmon runs deep (my husband Robert can attest to that!). One morning, the idea struck: why not combine these two favorites into a single, irresistible breakfast creation? The result was pure magic!

Here’s what makes this recipe such a winner:

  • Classic base, enticing extras. The recipe starts with a familiar and well-loved egg salad foundation, then adds chives, green onion, and paprika for a burst of flavor and texture.
  • Customizable. While the recipe is delicious as is, you can modify it to your tastes – use different fresh herbs, red onion or shallots in place of the green onion, and/or substitute crispy bacon strips for the salmon.
  • Simple yet impressive. This dish requires minimal effort but delivers a restaurant-worthy combination of creamy egg salad, smoky salmon, and toasted bagels.
  • Balanced flavors and textures. The creamy egg salad contrasts beautifully with the delicate smokiness of the salmon, while the chives and green onion add pops of color and freshness. The toasted bagel provides a satisfying crunch.

Smoked Salmon Egg Sandwich Ingredients

Here’s what you’ll need to make these special breakfast treats:

  • Large eggs
  • Mayonnaise
  • Dijon mustard
  • Green onions
  • Fresh chives
  • Paprika
  • Kosher salt
  • Freshly ground black pepper
  • Bagels
  • Smoked salmon

How to Make Egg Salad

For the egg salad, the first step is to cook the eggs. Here are instructions for hard boiling eggs in an Instant Pot, or on the stovetop. I prefer the Instant Pot method, because the eggs come out perfect, every time. No gray shadow around the yolks, no over-done (or under-done) yolks, and super easy to peel with no damage. What more could you ask for from a hard-boiled egg?

Hard-boiled eggs – Instant Pot method

  1. Let eggs sit at room temperature for 20 to 30 minutes. (If you don’t have time to let your eggs sit at room temperature, it’s okay. Just increase the Instant Pot cook time to 9 minutes.)
  2. Place wire rack (or steamer basket) in Instant Pot along with 1 to 1 1/2 cups water.
  3. Place eggs on rack, spacing out as evenly as possible (I cook 6 at a time and use the other 2 in another recipe). Seal and cook on high for 7 minutes.
  4. When the timer goes off, immediately release the pressure, following the “quick release” method.
  5. Carefully remove eggs (they will be hot!) and immediately place in a bowl of ice water. Let rest in water until eggs are cold to the touch.
  6. Remove from water and pat dry.

Hard-boiled eggs – Stovetop method

  1. In a large saucepan, place eggs in one layer and cover with water. Bring to a boil over high heat. Reduce heat to simmer and cook for 6 to 8 minutes.
  2. Remove pan from heat and leave eggs in hot water for another 3 to 5 minutes.
  3. Carefully remove eggs (they will be hot!) and immediately place in a bowl of ice water. Let rest in water until eggs are cold to the touch.
  4. Remove from water and pat dry.

Assemble Egg Salad

  1. Remove shells from hard-boiled eggs.
  2. Chop eggs and place in a medium mixing bowl.
  3. Stir in mayonnaise, mustard, onion and chives.
  4. Season to taste with paprika, salt and pepper. Adjust the mayonnaise and mustard, if necessary.

Quick Tip

Making egg salad is not an exact science; it depends largely on the size and freshness of your ingredients. My proportions are a good place to start; add more mustard for more zing and/or more mayonnaise for more moisture. Be careful with the onions – if you’re using large green onions and they’re very fresh, you may need only one.

How to Assemble a Smoked Salmon Bagel with Egg Salad

Lightly toast bagel halves. Divide egg salad equally among the bagels, spreading into an even layer. Lay salmon slices on top. Garnish with chopped chives, if desired.

Additional Toppings or Variations

Here are some ideas on how to vary these breakfast bagel sandwiches; some changes make them healthier, others change the flavor a bit:

  • Substitute 1 heaping tablespoon greek yogurt for 1 tablespoon of the mayonnaise.
  • Use yellow mustard instead of Dijon.
  • Substitute chopped shallots for the green onion.
  • Add chopped fresh dill – or use in place of the chives.
  • For the non-fish eaters in your home, substitute crispy cooked bacon strips for the smoked salmon.
  • Use toasted mini bagels or pumpernickel cocktail bread instead of the regular-size bagels, and serve as an hors d’oeuvre or a side dish for a brunch.

Serving a Smoked Salmon Egg Salad Bagel

Place assembled bagels on a serving platter, or on individual breakfast plates. Platter can be part of a buffet, or passed at the table. They are delicious alongside Pimiento Cheese Sandwiches, as part of a luncheon or Master’s viewing party!

Note that these sandwiches are on the rich side; Robert and I find one half, combined with a serving of fresh fruit, is plenty for each of us.

Salmon Egg Salad Bagel FAQs

Can a Smoked Salmon Bagel Sandwich with Egg Salad be made ahead of time? What is the best way to store it?

Egg Salad can be made up to 24 hours in advance, covered and refrigerated. Sandwiches can be assembled up to 2 hours ahead, covered and refrigerated (any longer and the bread can become soggy). Bring to room temperature before serving.

What is the difference between lox and smoked salmon?

Lox is salmon that’s been cured or brined with salt and not smoked; smoked salmon may or may not be salt cured or brined, then hot or cold smoked. “Nova” lox is salmon from Nova Scotia that has been salt cured (usually with less salt than lox) and also cold smoked.

Can you put egg with salmon?

Yes, definitely! The egg and salmon pair together perfectly, and make a delicious, high protein, low calorie combination.

Tasty and colorful, Toasted Bagels with Egg Salad and Smoked Salmon are my husband Robert’s favorite breakfast. A bit tangy, a bit smoky and full of flavor, they are quick and easy to prepare. And, the egg salad can be made 24 hours ahead, too!

  • Yield: 2 to 4 servings

Ingredients

  • 4 large eggs
  • 2 heaping tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 green onions, chopped (white part and some of the green)
  • 1 tablespoon chopped fresh chives
  • Paprika, to taste
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 bagels, sliced in half (I like to use whole wheat or poppy seed)
  • 3 to 4 ounces smoked salmon

Instructions

Hard-boiled eggs – Instant Pot method

  1. Let eggs sit at room temperature for 20 to 30 minutes. (See Note below.)
  2. Place wire rack (or steamer basket) in Instant Pot along with 1 to 1 1/2 cups water.

Oven braising is a cooking technique that involves searing meat over high heat. After this initial sear, the meat is slowly cooked in a covered pan with liquid. This slow cooking process allows the tough connective tissue in the meat to break down, resulting in tender and succulent ribs. For these beef ribs, the braising technique allows them to slowly tenderize in a rich, spicy sauce.

Once you see how easy it is to braise ribs, you’ll wonder why you haven’t been doing it for years. Simply sear the ribs in a hot pan, prep the braising sauce, add the ribs, cover, and bake.

Selecting the Right Beef Short Ribs

The ideal cut of beef for braising is bone-in short ribs, as the bone adds richness and depth of flavor to the dish. Beef short ribs come in two main styles, English and Flanken:

  • English-style short ribs are cut parallel to the bone, with one bone per piece, and contain a larger piece of meat. They are often more tender and have a higher fat content, making them ideal for braising.
  • Flanken-style ribs are cut across the bone, resulting in thinner pieces of meat with several smaller bones attached.

When selecting beef short ribs for this recipe, opt for English-style ribs if you can find them. The marbling (fat distribution) within the meat, adds flavor and helps keep the ribs moist during cooking. And, look for ribs that have a bright red color and avoid those with excessive fat or a grayish hue.

If you can’t find bone-in English-style ribs, you can use either boneless or flanken-style with this recipe. Just keep in mind that they will have sightly less flavor.

Here are the ingredients you’ll need to make this easy recipe, all of which should be available at your local grocery store (quantities are included in the recipe card below):

  • Bone-in beef short ribs, preferably English cut
  • Vegetable oil, canola oil or other high smoke point oil
  • Kosher salt
  • Fresh ground pepper
  • Yellow onion
  • Tomato sauce
  • Light brown sugar
  • Jalapeno pepper
  • Garlic
  • Dry mustard
  • Cayenne pepper
  • Ground cloves
  • Ground cinnamon
  • Beer
  • Fresh cilantro, optional for garnish

How to Make Spicy Short Ribs

Here’s a detailed step-by-step guide to braising beef short ribs (more abbreviated directions are in the recipe card below):

A. Prepare the ribs

  1. Bring to room temperature.
    Take the short ribs out of the refrigerator bring to room temperature. Allowing the meat to warm up slightly before cooking ensures more even cooking throughout.
  2. Rinse and pat dry.
    Rinse the ribs under cold running water and dry with paper towels to remove any excess moisture. This step is important because it helps create a nice crust on the meat when searing. 
  3. Season.
    Brush the ribs all over with vegetable oil, then generously sprinkle both sides with kosher salt and ground black pepper. The salt helps enhance the meat’s natural flavors while the pepper adds a subtle kick. And, the oil helps to form a nice crust.
  4. Sear.
    Heat a large Dutch oven or other heavy-bottomed pan over medium-high heat. Add ribs in one layer, preferably without touching each other, and sear for 2 minutes on each side or until lightly browned. Remove ribs and set aside; don’t clean out the pan!   5. Preheat oven.
    Move one of the racks to the bottom third of the oven and preheat to 325 degrees.

B. Prepare the Spicy Sauce

  1. Cook onions.
    With the burner turned off but while the pan is still hot, add onions and cook, stirring, until they stop sizzling. 
  2. Add remaining sauce ingredients; simmer.

  3. Turn off heat and stir in beer. 

Braise the beef ribs in the Spicy Sauce

  1. Add ribs to sauce.

  2. Cover and braise.
    Cover the pan and bake until meat is very tender, around 2 to 2 1/2 hours. You can check the tenderness with a fork; the meat should easily pull away from the bone.
  3. Remove from oven, let sit.
    Remove pan from oven and let ribs sit in sauce, covered, for 10 minutes. 
  4. Plate and serve.
    Remove ribs to a serving platter. Spoon some sauce over the ribs, garnish the ribs or platter with cilantro (if desired), and serve, passing additional sauce on the side. 

Tips for Making Perfect Braised Beef Short Ribs

Here are some helpful tips to keep in mind:

  • Sear the ribs before braising. Briefly cooking the short ribs over high heat before braising adds flavor and texture to the final dish. I used to skip this step,  but then when I added in searing the ribs, I discovered that the resulting dish had much more depth!
  • Make sure ribs are dry before searing. Wet meat will tend to steam and not brown. 
  • Place ribs correctly in braising liquid. When placing ribs in the sauce, put them bone side up (fat down) for the best flavor and moistest meat.
  • Don’t overcrowd the pot. When searing the short ribs, make sure not to cram the ribs in next to – or overlapping – each other. Overcrowding can cause the meat to steam instead of brown, resulting in a less flavorful end result. Work in batches if necessary to brown the ribs evenly.
  • Braise ribs in a covered pan. If you don’t, the sauce will mostly cook off before the ribs are tender and you’ll be left with dry meat and little sauce.
  • Let the meat rest before serving. Once the short ribs are braised, it’s best to let them sit at room temperature for around 10 minutes before serving. Resting allows the juices to redistribute throughout the meat, resulting in a juicier and more flavorful result.

Spicy Short Ribs Make Ahead Instructions

Ribs can be prepared up to 3 days ahead: once cooked, cool to room temperature. Either cover the pan (ribs with sauce) or place the ribs and sauce in an airtight container and refrigerate.

To reheat: bring to room temperature, then cover and place in a 375-degree oven until heated through, around 30 to 40 minutes. 

Braised Short Ribs and Spicy BBQ Sauce Storage

 If you are making these spicy short ribs ahead or have leftovers, cool to room temperature, place in an airtight container, and refrigerate. 

Braised Beef Short Rib Variations

While these ribs and sauce are delicious as is, they are also very flexible and you can modify this recipe to suit your tastes and to make it your own. Here are a few suggestions:

  • Use flanken-style ribs. They will cook faster; start checking after around 1 1/2 hours.
  • Use boneless ribs. Just keep in mind they may not hold their shape when done cooking.
  • Use dry red wine in place of the beer. Or, use chicken broth for a non-alcoholic version.
  • Add chopped celery and/or bell peppers.
  • Add a dash of Worcestershire sauce to deepen flavor even more.
  • Mix in fresh herbs like thyme.

In addition, you can vary the cooking method as well:

  • Slow cooker – Place seared ribs and prepared sauce in a slow cooker and cook, covered, on low for 6 to 8 hours.
  • Cooktop – Leave the prepared ribs and sauce on the cooktop, on medium-low to low heat, and cook for 2 to 2 1/2 hours.
