This time of year, I’m a big fan of apples for breakfast. 

Sometimes I get fancy and make things like caramel apple cinnamon rolls or apple cider donuts. Other times, it’s as simple as spreading some of my slow cooker apple butter on a piece of toast and shoving that in my mouth while I get the kids ready in the morning.

These glazed apple scones fall somewhere in the middle. They’re pretty easy to make, but scones always seem fancy, don’t they? 

I’ll be snacking on these perfectly spiced scones all autumn long – right until it’s time for cranberry orange scone season!

Tart apples are cooked to perfection with butter, brown sugar, and spices. Serve these simple sautéed apples over everything from vanilla ice cream and cheesecake to pancakes and french toast.

No fall is complete without taking my girls apple picking at least once. We bring home bags of fresh, crisp apples and then get to decide what recipes we’re going to make with them.

There’s always a batch or two of crockpot applesauce, at least one homemade apple cake, and at least a couple breakfasts that are made extra special with these sautéed apples.

After all, what better way to wake up than to the smell of warm cinnamon apples floating through the house?

Why we love this recipe

Hello and welcome to our current obsession: this no-cook caramel apple dip recipe! Just 4 ingredients come together into a glossy caramel texture that tastes like peanut butter, but it’s completely no cook and dairy free. It’s like some kind of kitchen sorcery!

Our kids go crazy over this stuff, and it couldn’t be simpler to mix together with ingredients you probably already have on hand. It’s the perfect healthy snack and it’s also perfect as a fall appetizer. As cookbook authors each fall we create some apple recipes with apples we pick at an orchard: this is the #1 favorite of the season!

Ingredient notes for apple dip

This caramel apple dip has just 4 ingredients that stir together into a quick caramel texture—it’s like magic! A standard caramel recipe has heavy cream and sugar that make the sweet, sticky texture. This recipe uses peanut butter (yes!) and maple syrup to mimic this common ingredient, making it a healthier alternative using a natural sweetener. Here’s what you’ll need:

  • Creamy peanut butter: We used no sugar added peanut butter. A quality peanut butter makes a nicer tasting apple dip. For peanut allergies, try a high quality creamy almond butter or cashew butter. (Feel free to experiment with sunflower butter for nut free.)
  • Pure maple syrup: For all of our recipes with maple syrup, we prefer using Grade A: Dark Color and Robust Flavor. We find it tastes better than bottles labeled Amber or Golden.
  • Neutral oil: The oil in this recipe makes the glossy texture; we do not recommend leaving it out. We used organic grapeseed oil; you can also substitute melted coconut oil.
  • Vanilla extract: The vanilla brings the classic flavor to the caramel.
  • Salt (optional): Depending on the saltiness of the peanut butter brand you use, you may want to use a pinch of salt. Don’t go overboard, because all you need is a little!

Oil alternatives

While olive oil is a healthier oil, it does bring quite a strong flavor to the caramel (we tested it and liked the flavor better with neutral oil). You can also use melted coconut oil, but keep in mind it does become solid when refrigerated, whereas grapeseed or vegetable oil stay soft.

Ways to serve apple dip

This apple dip is the perfect fall appetizer for a party or great as a healthy snack anytime! It’s kid friendly and adult friendly, and everyone we’ve served it too gobbles it right up. Other than sliced apples, here are a few more ways to serve this healthy caramel dip:

  • Pear slices
  • Fresh strawberries
  • Graham crackers
  • Vanilla cookies or ginger cookies
  • Pretzels
  • With chopped peanuts on top

Storing leftovers

This caramel apple dip stores very well refrigerated. Enjoy it immediately, or refrigerate it for up to 2 weeks.

Instructions

  1. Mix the peanut butter, maple syrup, oil, vanilla extract, and salt in a small bowl. Enjoy immediately with apple slices, or refrigerate for up to 2 weeks.

Notes

For the oil, a neutral oil is best. While olive oil is a healthier oil, it does bring quite a strong flavor to the caramel (we tested it and liked the flavor better with neutral oil). Fall, fall, fall! It’s finally fall, though Ohio can’t seem to decide between crisp fall weather or hot late-summer weather. 

I can’t even with that, so I’m ignoring it entirely and focusing on my favorite fall flavors instead.

Like these caramel apple cinnamon rolls. I first made these when Elle was a toddler, and she was a BIG fan. She loved picking out the sweet, soft baked apple pieces and eating them first.

Making Breakfast Bread Pudding might sound complicated, but in reality, it couldn’t be easier, especially if you prep it the night before! It’s super delicious with bites of sweet apples and raisins and the warmth of cinnamon and vanilla.

Why I Love This Recipe

  • Flavorful: This breakfast bread pudding recipe is sweet (but not too sweet), made with bite-sized chunks of apples, raisins and a dash of cinnamon and vanilla extract. It’s so delicious and comforting. You could even serve it for dessert. If you’re looking for a more savory breakfast bread pudding, try my Breakfast Casserole recipe!
  • Make Ahead: The key to this dish being even easier is preparing it ahead of time. I’m a big fan of recipes like this. Just like my Refrigerator Oatmeal and Chia Seed Pudding the prep is so simple, and as you already know, I’d prefer to cook the night before than in the morning! It freezes super beautifully too. Just make sure you do it before baking.
  • Great for a Crowd: I love dishes like this one because you can serve it to a crowd easily. It’s the perfect recipe for holidays like Thanksgiving when you have a lot of cooking on the horizon but a crew that still needs breakfast before the big event.

The Ingredients

  • Large eggs: Eggs give your bread pudding that custardy texture while holding everything together.
  • Milk: A bit of milk adds moisture to the dish.
  • Honey, Vanilla and Cinnamon: These ingredients add a touch of sweetness and overall warmth to the bread pudding making it irresistibly delicious. 
  • Small apples: We like to use Gala, Fiju or Golden Delicious apples for this recipe, but any apple you love will work. Cut them into small pieces for a pop of sweet apple in every bite.
  • Raisins: I like to add raisins for chewiness and more natural sweetness.
  • Bread of Choice: Fresh or stale 1 inch chunks of bread will work here, so feel free to use that loaf of bread that you weren’t sure what to do with! Whether it’s challah, multigrain, french or brioche, it will be delicious.

Variations and Substitutions

  • Milk Swap: Any type of milk will work in this breakfast bread pudding recipe so feel free to use plant-based milk if that’s what you prefer.
  • Bread: I’ve made this recipe with challah bread, multigrain sandwich bread, whole wheat and even a french loaf and they all turned out perfectly. Feel free to experiment!
  • Dried Fruits: You could substitute any dried fruit in place of the raisins. Or, make this even more decadent and add some chocolate chips!

How to Make Breakfast Bread Pudding

Step 1: Preheat the oven to 350°F. Whisk the eggs, milk, honey, vanilla, cinnamon and salt in a large bowl.

Step 2: Stir in the apples, raisins and bread cubes. Using your hands or a rubber spatula, combine the ingredients to make sure everything is evenly coated.

Step 3: Transfer the mixture to a greased or parchment lined 8-inch baking dish pressing down lightly. Cover with foil and allow to rest for 15 minutes.

Step 4: Bake for 30 minutes covered. Uncover and continue to cook for an additional 20 minutes. Bake until golden and cooked through.

Freezing and Reheating Tip

  • Freeze for Meal Prep: Cover tightly and freeze the unbaked breakfast bread pudding so you can have a last minute breakfast on hand. To reheat, bake from frozen and add 8 minutes to the cooking time.
  • Reheating Tip: I served leftovers of this to my kids two days in a row by pouring a little milk or cream over the top and microwaving until it’s heated through. Super yummy!

  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • pinch kosher salt
  • 2 small apples, peeled, cored and cut into small dice (I like Gala, Fuji or Golden Delicious)
  • 1/3 cup raisins
  • 4 cups whole wheat or multigrain bread (fresh or stale bread), cut in 1-inch cubes (you can use any type of bread you have on hand)

Instructions

  • Preheat the oven to 350°F.

I know we’re only a few days into September and still have Halloween ahead of us, but I’m already thinking about the fact that the holiday season is coming up fast.

Even if you want to ignore that it’ll be Thanksgiving before we know it, there are lots of fall get-togethers and game days and all kinds of times when you’ll probably be entertaining guests.

When I have guests over, I really appreciate recipes that are easy to make but look impressive. Things like marinated cheese, apple butter brie bites, mini pumpkin pies, and this puff pastry apple tart.
