buckwheat pancakes recipe

Ever tried buckwheat pancakes? Sure, they aren’t the prettiest pancakes around, but they make up for their humble appearance with wonderful flavor and texture. Buckwheat, a gluten-free relative of rhubarb, has a delicate, almost nutty flavor all its own.

Thanks to the buckwheat flour, these pancakes are naturally gluten free! These pancakes possess a light and airy consistency that quietly surrenders to the pressure of a fork and soaks up maple syrup like a sponge. I just love them.

buckwheat pancake ingredients

This recipe was originally adapted from a fun cookbook called Pancakes, by fellow food blogger Adrianna Adarme of A Cozy Kitchen. I visit Adrianna’s blog any time I need some creative recipe inspiration or a laugh, which is often.

It’s been eight years, so I’m revisiting this recipe to update the photos. I also tweaked the recipe a bit to work even better with 100 percent buckwheat flour. I added another egg and a smidge more flour. Hope you’ll give them a try soon!

FOOD

Elemental Bars. The peanut butter and almond butter versions are my favorite. These have been lifesavers a few mornings. I love the seedy (almost crisp) texture and I actually think they taste so good. Great to have in a pinch and perfect for the morning. They are a nice switch from Perfect Bars (which I also love!)

Topo Chico Twist of Lime. Eddie and I have been obsessed with the lime topo chico the last few months. It’s just SO fizzy!

Kirkland Chocolate Coconut Cashews. Well these taste like caramel delites (or do you say samoas!) and are basically dangerous. SO FREAKING GOOD.

Lemon Lime Liquid IV. Liquid IV has saved me the last few months. For the first time ever I’ve had a really hard time drinking enough water (it’s all I drink unless I have coffee in the morning!) and with this pregnancy, it’s like I just don’t have room to drink as much. I’ve definitely felt dehydrated at times and had lots of braxton hicks from being on my feet, but hydration always clears it up. I started doing one liquid IV a day and it’s a game changer. I only ever used to drink them if I felt dehydrated from a workout or the sun. But this is EVERYTHING. The only downside for me is that they are a little sweet and I don’t like sweet drinks. You can always spread it out over two bottles of water! Lemon lime is def my favorite flavor.

FASHION

Rails Raw Hem Chambray. It’s no secret how much I love Rails shirts, but this one is next level. It’s such an old school looking wash and I love it, which is huge because I hate 90s grunge things and stuff like that. It’s so soft and comfy and I plan on living in it especially after the baby comes when I’m nursing.

Champion c9 Tanks. My favorite workout tanks ever (or just life tanks!) are on amazon now (used to be sold at Target) and they are the best. The cut is so flattering, they are so soft. I ordered a few more in a size up to accommodate this bump and it’s perfect.

Kurt Geiger Rainbow Mules. Couldn’t help myself and bought these a few months ago. They make me SO HAPPY.

HOME

Parchment Paper Baking Sheets. These sheets come in a folder so they are completely flat and ready for baking sheets. I love it. There is no ripping from a roll and they don’t bunch up from being rolled up.

Bose Soundlink Bluetooth Speaker.

Fabric Shaver. I discovered this a few months ago and it’s changed the game for some of our furniture. It’s been great at removing pilling from our couch and chair! It’s also weirdly satisfying, as I’m sure you can imagine.

MEDIA

Erin Church Heart & Soul Album. Cannot.get.enough. Seriously. I’ve been listening to Eric Church nonstop and love all the new music. I even ended up very optimistically buying concert tickets for later this year (no idea if we will feel comfortable going when the time comes!) because I can’t stop. It’s just so, so good.

Abby Jimenez Life’s Too Short. This is our May book pick and I read it in April – I looooove all of Abby Jimenez’s books and this one was no different. Such a great story. You can read a mini review in my what I read in April post.

Mare of Easttown. It feels like there has been nothing good on TV for months, but this HBO show is amazing. Kate Winslet is just.so.good in it! I am loving it. There are only five episodes out right now but it’s def my favorite.

KIDS

Color changing rain coats. The kids got these as gifts and they are the nicest rain coats they’ve ever had! First, they are fun. Second, they are lined so well and pretty warm – they’ve been wonderful in the chilly spring. Third, they snap which both kids can easily do. So nice!

Babiators. I’m in sunglasses 24/7 because my eyes are so sensitive and the kids wear them often too. I don’t know if it’s from having light eyes (I’ve heard this but who knows), but we’ve used babiators since Max was one. We’ve never lost or broken a pair. They are 100% worth it. I love that they are polarized and fit snuggly but don’t hurt their ears. They are almost stretchy, if that makes sense!

Dino Eggs. We got these for the kids for easter and it was their first time having them. Both are obsessed with dinosaurs so this has been SO fun for them to do together. It’s kind of messy but since it’s warm out now, we just do it outside!

Ahhh I’m so excited!

It’s been a few months since I did a beauty faves! Last year I really fell off the wagon of sharing my monthly favorites, because with quarantine it was the same thing every single month. I also went so many days without wearing any sort of makeup or anything, and my skin care stayed the same. But! At the end of last year I told you how my skin has been a WRECK this entire pregnancy (it’s crazy!) and while not much has changed, now that I’m in the third trimester it does seem to be getting sliiiiightly better. I feel like I’ve been able to wear makeup a bit more and have got to pick up my skincare routine again.

Also, I’m super excited for the sephora VIB spring sale! It feels like it’s been ages since I’ve been excited for MAKEUP (and not just skincare, which is mostly what I care about these days), but I’ve found some great things this year. I narrowed it down to 15 products I use all the time and absolutely love – skin, makeup, body, etc. Some are repeats you’ve heard me rave about, but some are new since the start of this year!

For a lot more of my favorites, you can check out my VIB sale post from this last October, as well as the one from last spring!

15 Products I’m Loving Right Now

Supergoop Glowscreen. I can’t handle how much I love this sunscreen for my face and neck. I use it both on non-makeup days and under light makeup. It evens out my complexion so much and the glow is incredible. Only thing is – don’t get it too close to your eyes or it will migrate into them.

Indie Lee Brightening Cleanser. This has been my favorite cleanser for a few years and one I’ve repurchased probably ten times. I love how it cleanses, how it smells and the texture. It doesn’t dry out my skin at all.

Sol de Janiero Bum Bum Cream. Forever favorite! I buy one of these in spring every year for the summer – it’s now a nostalgic scent for me. It’s a bit shimmery too and I love it on legs/arms in the sunlight.

Augustinus Bader The Rich Cream. I started using this cream early last fall and throughout my pregnancy, this has single handedly saved my skin. This is also what I use as an eye cream. It is so expensive but you can often find it on sale – and now sephora has it! I love it and cannot imagine being without it.

Westman Atelier Peau de Peche Tinted Highlight. This may be my favorite new product of 2021. Despite the name, this isn’t so much a highlight. I look at it as a highlight + blush + almost bronzy color for my skin. It really warms up my skin, but not in a bad way because I’m very cool toned. Adore it!

Westman Atelier Baby Cheeks Blush in Poppet. This is the only blush I’ve used for the last few months. The color looks crazy but once blended it’s the perfect shade of pink. Such a good pop!

Sephora Pro Foundation Brush. This is the brush that I use for both products above. I love how it blends! It’s super soft and I find it to be a great brush for the price.

Westman Atelier Lit Up Highlighter. I really love all the highlighters from WA, but this one is probably my favorite. It’s so glowy and natural, you can put it anyway. It’s effortless and super easy to use, especially in a pinch.

Ilia Super Serum Skin Tint Foundation. I still don’t like heavy foundation on my skin, and this is my current fave if I want a little more coverage. I’ve used this since last summer and love how it works and evens my skintone.

Saie Super Gel Dewy Highlighter in Starglow. Another amazing gel-like highlight! I mix this with the Ilia serum above for a really good glow.

Kosas Moisturizing Baked Bronzer. Fell in love with this bronzer last year and it’s amazing. I use the light shade. Such a good shade if you’re cool toned (won’t make you look orange) and blends so nicely.

Fresh Sugar Lip Balm in Bloom. I always buy two or three of these during a sale. Another effortless product – perfect color, without needing to use a mirror. And super moisturizing too. Plus it has SPF!

Tom Ford Soleil Blanc. This is my favorite warm weather scent and since perfumes (especially Tom Ford!) never go on sale, it’s the best time to get one. This is a light, summery fragrance with a hint of beachy coconut – but not sweet coconut. It’s fantastic.

St Tropez Bronzing Water Face Mist. When it comes to self tanning, this face mist is unbeatable. I discovered it last summer and it is SO easy to use, especially since tanning products never last on my face with my skincare. It doesn’t turn my skin orange and is so even.

Tan Luxe The Butter Illuminating Cream. I’ve repurchased this so many times – it blends incredibly and is such a nice self tanning cream to use. It is a gradual tanner and doesn’t transfer to clothes once dry. The smell isn’t terrible either.

FOOD

FeverTree Sparkling Pink Grapefruit. I love all Fever Tree drinks (their ginger beer and tonic water is the best!) and have been adoring this the last few months. If you’re a grapefruit freak like I am, you will love it! It’s incredible, and I can only imagine how good it will be in margaritas or just with some tequila and lime come summer.

American Spoon Almond Butter. Oh my gosh. It’s no secret how much I adore American Spoon products. Their almond butter is UNREAL. The texture – the taste – it’s moved into the #1 spot for me. Delish.

Live Love Salt and Vinegar Popcorn. Oh my word – this is the best snack. I can’t even handle how much I love the flavor. Popcorn isn’t one of my go-tos, but I adore anything salt and vinegar and this is so wonderful.

Panera Madagascar Vanilla Cold Brew. I’m a LITTLE bit back on the coffee train! After a few months off, I’ve been getting it once a week or so. This cold brew literally tastes like chocolate milk… or a milkshake. It’s amazing.

MEDIA

The Kindest Lie. I absolutely loved this book so much. Wrote about it in my February reads if you want to read more!

I’ve been playing Eric Church nonstop and am SO excited for his albums next month! Right now I can’t get enough of Hell of a View and Heart on Fire.

FASHION

MZ Wallace Medium Metro Tote. The size of this tote is everything. I’m no stranger to MZ Wallace bags – I used one as my diaper bag for Max for the first 6+ months or so. I still use that duffle when we travel on vacation. They are the best, hold a TON and so well made. They last forever! The above one in the photo is the medium tote which is my favorite size. I find it perfect for throwing things in for kids that I may need in the car, or at my mom’s, or something like that. I also throw my computer or books in it if I need to do something like work during the school pick up line, or back when we went places all the time. It’s just such a great bag. The one above is a few years old, but they have TONS of the cool colors in the medium size. Also, occasionally Nordstrom has them on sale and sometimes MZ Wallace sends out coupon codes too!

Align Leggings. I have to give my usual shout out to my lulu align leggings, which I’ve worn since the minute they came out. While they are basically my work uniform, workout uniform AND pregnancy uniform – they are the best for pregnancy. I have tried other leggings, including these popular ones (which I loathed) and align are just the best. My regular size fits the bump and usually does until the end. Nothing compares for me!

Ugg Wedge Boots. We’re a little late now that it’s into spring, but I got the ugg wedges this past winter and adore them. As much as I trash talk my regular black uggs (which I do love for winter weather, but barely will wear in public), these wedges are so cute and comfortable. So much better than I anticipated! As much as I love my sorel wedge boots, these are warmer for the really cold days, or even if you’re doing things outside (like seeing people socially distanced in the snow. Let’s hope that is over!).

HOME

Adirondack Chairs with Cup Holder. I feel like a real adult because these chairs are making my life. They are so light and perfect to drag out on our driveway while the kids play (before I would carry a chair around the house from the patio if we were out for a bit, I wanted to work a little outside, etc). The best part about them? They have a cup holder AND a phone holder!! Literally life changing.

Disposable Bamboo Serving Trays. I love these so much!! They are disposable and compostable trays that you can make a snack plate or cheese board on and take to someone’s house. Obsessed with making a cheeseboard on it so you can take it and leave it and not worry about getting your tray back!

Crane Humidifier. I could not live without my humidifier. We run it every night and the kids’ have them too. I swear they keep any of our allergies at bay and it’s also so good for my skin (which is dry). If I don’t use it one night, I can totally tell a difference. Years ago I had the expensive dyson humidifier and it’s not worth it. The Crane is the best and I’ve broken a few (dropped them while cleaning and cracked them) and always rebuy the same!

Cooling Cover Pregnancy Pillow. I had the same pregnancy pillow for my pregnancies with Max and Emilia but at 7+ years old, it had seen better days. When I went to get a new one, I saw this one with a cooling cover. And OMG. It is life changing. So silky and cooling and wonderful. I always run hot and hate being hot at night, but also want piles of covers on me. This is amazing.

KIDS

Little Sleepies PJs. These are SO SOFT and stretchy and wonderful. And of course I love anything where the kids (and even us!) can match. Pretty sure these are the 5th brand of PJs or so I’ve mentioned in a year. Hello stay at home, haha!

Interactive Talking Telescope. The kids absolutely love this. Max really wanted a real telescope for Christmas and by the time he mentioned it, everything was sold out. I grabbed this and it has been such a hit! It is really educational and fun.

DJeco Artist Collages. I have to mention these again because Emilia just LOVES them. She has completed them all but I’m practically ready to buy the same ones over because she loves doing them so much. They are really fun!

Last month, I shared three new cauliflower recipes – a Cauliflower Soup, Vegan Alfredo Sauce, and Cauliflower Mac and Cheese. As I developed them, I found myself amazed (once again) at the versatility of this humble veggie. It can blend into creamy soups and sauces without the help of nuts or dairy, and it can transform into a substitute for noodles or rice. You can boil it, steam it, sauté it, roast it, or even eat it raw. My question is, what can’t cauliflower do? Because cauliflower is one of the vegetables I cook most often throughout the winter and early […]

Each year, when winter starts to melt into spring, I refresh my rotation of easy weeknight dinners. The weather begins to change, and so do my cravings. On some days, I’m still in the mood for the cozy comfort food of winter – hearty pastas, soups, and stews – but on others, I’m hungry for weeknight dinners that are lighter and brighter. This year especially, I’m ready for a change. I don’t know about you, but I feel like I have cooked more in the last 12 months than I ever thought possible. Right now, weeknight dinners that are quick […]

FOOD

Peanut butter overnight oats. This is so on repeat for me this month. I love this and make three days worth at a time. It’s probably my favorite breakfast!

Terra Chips Heritage Blend. I am not a huge chip lover but oh my gossssh these are so good. Salty, crunchy and have so much flavor. We all love them!

My warm brussels crunch salad. I can’t stop making this. We’ve been eating it all of January and I am obsessed with it for lunch.

HOME

My passion planner!! It never fails that when January comes, I’m reminded how much I LOVE this planner. I use the academic year so don’t have a new one in January, but I’m always reinvigorated by my planner come the new year.

Stabilo Pastel Highlighters. I’ve mentioned these before too but they are my favorite highlighters to use in my planner! I also love how short and fat they are – they fit so well in your hands.

Breville Automatic Tea Maker. I.am.in.love.with.this. And it’s mind blowing! This is a splurge but I have used it every single day (multiple times a day) for over a month and a half. It’s made for loose leaf tea, but I also use it as an electric kettle a few times a day too. I wouldn’t say I’m a strict tea drinker yet but since I haven’t really been drinking coffee, this is the next best thing. Now tell me, what is your favorite loose leaf tea?!

Origins Ginger Hand Soap and Lotion. If you’ve been following along for awhile you may recognize this as one of my favorite nostalgic scents. It reminds me of the week Max was born, so I love having it somewhere in the house. This is the soap I threw in our bathroom after the holiday one finished and it smells so wonderful!

Merece Laminator. Definitely asked for a laminator for Christmas. All I wanted to do was laminate my kids’ art work! Max draws so much everyday and in order to preserve some of the keepers, this was needed!

FASHION

Nordstrom Moonlight Layering Ts. I’ve mentioned these a million times but they are the BEST layering tees. They are so soft, stretchy and fitted. They are slightly sheer so you can’t really wear them alone, but I adore them under everything.

Barefoot Dreams In The Wild robe. My mom got me this for Christmas and I adore it. I don’t actually use it as a robe, but more of a cardigan that I keep on the first level of the house because it’s freezing right now. I wear it everyday!

MEDIA

Morgan Wallen’s Dangerous double album. Love love love Morgan Wallen and this doesn’t disappoint. So excited it’s a double album! I’ve already added songs to the list for my 2021 summer country playlist.

Josh Groban’s Harmony album. My mom told me about this album and I love it. I adore Josh Groban and his is one of the last concerts we attended before 2020. This is so good! My kids are loving it too.

The Wife Upstairs. I read a ton in January (lots of good ones too!) but I think this was the one I couldn’t put down the most. If that makes sense. It’s a thrilled and while maybe a little predictable, really good and I just couldn’t wait to see what happened!

KIDS

The Floor is Lava Game. The kids got this for Christmas and are equally in love with it. It’s really fun to play, especially if your kids are into the whole hot lava thing.

Color Me Fun Big Coloring Pages. Max is OBSESSED with these. He got one for his birthday and then a few for Christmas. They keep him entertaining for a long time. Emilia likes them too, but not as much as he does. They are super fun, even for adults! We love coloring them with the kids.

Djeco Collage Art Kit. Now these are Emilia’s favorites. She got one for Christmas and I’ve since bought every other one that is made because she loves them so much. Everyday she asks if she can her collages right when she wakes up and it’s so cute. She loves any sort of art and takes her time doing it. These are so fun.

T is for Tame Hair Styler. This is the hair styling spray I’ve used on Max for the last three years. I’ve had so many questions about it when I show it on instagram. It smells like cake, doesn’t get crunchy or crispy in the hair and sprays nicely. I love it.

I’m popping in today to highlight some of my favorite plant-based recipes! If you saw my post over the weekend, you know that I get tons of questions about plant-based eating at this time of year. It makes sense – in the last few years, plant-based diets have gotten a lot of press. They’re said to be better for your health and better for the planet. What’s not to love? With the pandemic, I have barely been wearing makeup, but then when I got pregnant, I really pretty much stopped. I was just so sick for the last 3.5 months that I couldn’t even handle it. I figured whatever I shared beauty-wise would give it away!

So the last three+ months, basically since the moment I found out I was pregnant, my skin absolutely blew up. I have never had breakouts or pimples or acne in my life – not even in high school. The hormones must be doing a number on me right now. I’m not sure if I can call it acne, but it’s def clusters of pimples that have seemed nearly impossible to get rid of.  That, and combined with the fact that I can’t use my Dr Dennis Gross Peel Pads – it’s been rough!

I think it’s a combination of hormones breaking me out AND my skin being weirdly irritated and dry by winter weather. But it’s just been awful. Sharing below a few of the things that have helped to clear it up. A huge produce I said I’d never buy and one I rediscovered from when I was pregnant with my others.

December Beauty Favorites

Burt’s Bees Herbal Blemish Stick. This is one of the only things that has saved my skin in the last three months! I was desperate for weeks then I remember using this as a spot treatment when I was pregnant with Max. I ordered one and it IMMEDIATELY helped. Like, next morning. It def can dry out the skin a bit so you need a thick moisturizer over it – but I adore this. I am so thankful I remembered it from before!

Augustinus Bader The Rich Cream. Yes, I did this. I still can’t believe it, but oh man was I desperate. In the last few months my with skin a disaster, I tried so many things. I ended up buying this after thinking about it for the last year or so. Long story short – combined with the blemish stick above and my caudalie toner, it has been a miracle worker. My skin is notoriously dry and always has been. This has worked wonders. It’s calming and moisturizing on another level. I don’t really have any scarring for this to clear up, but it has improved my complexion so much. I don’t even mind that I’m not using my other favorite skincare products anymore. The thing about this is that they don’t want you using any other products with it. It’s one of the reasons I always avoided it because I didn’t want to give up some of my favorites. But I was desperate, so it didn’t matter. One downside – the pump is GARBAGE. I’m on my third bottle and the pump hasn’t been great on any of them. Thankfully you can open up the bottom, take out the packaging and cut it to get out every last bit. See also: I have only bought this on sale! Would not pay full price for it.

Bumble and Bumble Invisible Oil Shampoo and Conditioner. My sister-in-law gave me this for my birthday in early November because she loves it so much. I have to say this is the best gift ever – and I gifted it to someone for Christmas! I haven’t changed my shampoo in ages. This is amazing – it smells incredible, cleans my hair without drying out, the conditioner is perfect (my hair is also dry) and works – I am so, so happy with it! I already almost finished the bottles she gave me and I bought the jumbo ones.

Clinique Acne Solutions BB Cream. When I started breaking out, I noticed it was incredibly worse the day after I wore makeup. That wasn’t too often, but still – I wanted a way to combat that! I have used this before and ended up repurchasing. It’s tricky because my skin is dry so I can’t use too much of this, but the formula is super thin and blendable and it also covers SO well. I haven’t used it a ton, mostly because it has lots of ingredients that I don’t use normally in my face makeup. But there have been some times I’ve had to wear makeup and I even be used it as just a spot concealer. It’s really good.
