This simple Spicy Guacamole recipe is made with avocados, tomatoes, jalapeño, lime, garlic, cilantro, and an extra kick from Sriracha. Make this guacamole as mild or as spicy as you like!

I’m all for trying different foods – at least once. Sometimes one bite is all it takes to make me a convert. Other times, that first bite will be the only bite of that food that will ever cross my lips. 

For instance, I’ve eaten a raw oyster and a frog leg once – I’ll never consume either of these foods again. Recounting those moments gives me the shivers. But guacamole – that’s a totally different story.

Up until about 10 years ago, avocados and I weren’t on good terms. And if I’m being honest, I hated them before even giving them a chance. 

I think I had a negative textural perception of them. I’m big on textures and if something falls into the categories of slimy, gritty, jiggly or velvety (unless it’s ice cream), I immediately deem it as suspect.

Then, during a fateful trip to Whole Foods, I was wandering around and lost my friend for a minute. When I found him, he was standing in the middle of the produce section oohing and aahing over a tub of $9.00 guacamole. 

I went over to inspect the situation and was welcomed with a guacamole-covered chip shoved near my face. Of course, I got all dramatic, recoiled and claimed I hated the stuff. 

However, I decided to take a tiny nibble – just to prove to him that I did indeed loathe the velvety green dip. But I was wrong. I actually loved the stuff and immediately tossed the pricey container into our cart. 

From that day forward, I was a guacamole lover.

This Spicy Guacamole recipe is one of the best I’ve found, and certainly my favorite. Try it at your next barbecue, or heck – on a random Tuesday night. Then come back here and tell me what you think.

We’d resigned ourselves to veggie burgers forever, until this salmon burger came along. Our entire family gave it 5 stars! Here’s what to know about making this salmon burger recipe:

  • You’ll use raw salmon. No need to pre-cook it! You can use any type of salmon, though of course the better the salmon the better the flavor (see below).
  • A food processor is handy, but a knife works too! Whiz the dough to get the right texture: or you can use a knife to finely chop.
  • Refrigerate before cooking. Firming the burgers for 15 minutes does wonders for the texture.
  • Pan fry for 5 minutes per side. Then it’s a quick pan fry in healthy olive oil. It comes out lightly crispy on the outside and browned to perfection.

Best salmon to buy

One think we like about this salmon burgers recipe: because you’re adding seasoning and shaping it into patties, you don’t need the most expensive, beautiful fillet. You can get away with lower quality salmon in a burger! But like any recipe, the better the raw ingredients the better the flavor. Here’s what we’d recommend for this recipe:

  • Fresh salmon is best. You can find decent frozen salmon. But for the very best salmon, buy it fresh from your local seafood counter.
  • Buy wild caught salmon. Wild caught is the way to go! It’s most sustainable and has the best flavor. Avoid Atlantic salmon as it is typically farmed salmon.

Once you’ve cooked up your salmon burger, pair it with a tasty and delicious sauce for maximum deliciousness! Here we’ve gone classic with a traditional Remoulade Sauce. But there are so many options, each with a different vibe. Salmon burger sauce ideas to try are:

  1. Remoulade sauce, a traditional French and Cajun mayo-based sauce (our top pick!)
  2. Tartar sauce, a common seafood sauce
  3. Lemon dill sauce, for a Mediterranean spin
  4. Creamy cilantro sauce, a zingy dairy-free option

What’s panko?

These salmon burgers use panko to hold them together. Not used to working with this ingredient? Here’s what to know:

  • Panko is a Japanese-style breadcrumb mixture that is airier and lighter than traditional breadcrumbs. We like using panko because it’s light and crunchy, and makes a great texture.
  • Need a substitute? You can use coarse breadcrumbs or even homemade breadcrumbs.
  • Is all you can find regular breadcrumbs? Use only 1/2 cup instead of 3/4 cup panko, because regular breadcrumbs are very finely ground.

How to make this recipe gluten-free

Can you make these salmon burgers free? Yes. Here’s what to do:

  • Look for gluten-free panko or breadcrumbs in stores or online. It’s pretty easy to find these days!
  • Try a gluten free breadcrumb substitute like rolled oats or crushed gluten free crackers.

Description

Here’s the salmon burgers recipe you need! They’re easy and have the best flavor: each bite is perfection slathered with remoulade sauce. 


Ingredients

  • 1 pound salmon, skin and bones removed
  • 1/2 cup fresh parsley or cilantro
  • 1 tablespoon capers, drained
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup panko or coarse breadcrumbs (gluten free if desired)*
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 3 tablespoons olive oil, for cooking
  • 1/2 cup Remoulade Sauce or another salmon burger sauce (see above)
  • For serving: Bun, red onion, tomato, lettuce

Instructions

  1. Cut the raw salmon into chunks. Add it to a food processor with parsley or cilantro, capers, onion powder and kosher salt. Pulse 8 to 10 times until roughly chopped; be careful not to over-process. (Alternatively, chop everything with a large chef’s knife until it has a uniformly roughly chopped texture.) Remove blade and stir in the panko, Dijon mustard and mayonnaise (you can do this in either the bowl of the food processor or transfer to a bowl). 
  2. Form the dough into 4 burger shapes that are about 3/4 inch thick. Refrigerate 15 minutes to firm up the texture (or up to 24 hours). While the burgers rest, make the Remoulade Sauce.
  3. When ready to cook, heat the olive oil in skillet over medium high heat. Add the burgers and cook for 4 to 5 minutes until browned, then flip and cook another 4 to 5 minutes or until the inside registers 130 degrees Fahrenheit on a food thermometer. You can also grill the burgers on medium high heat for the same amount of time. 
  4. Serve on a bun garnished lettuce, tomato, red onion, and Remoulade Sauce or other salmon burger sauce. Make ahead and storage: Store refrigerated up to 2 days, or wrap in freezer safe wrapping and freeze up to 3 months. Allow to defrost in the refrigerator the night before cooking. 

Notes

*If all you can find is regular breadcrumbs, use 1/2 cup since they are much finer ground than panko.

What are the secrets to the best vegan chili?

Good question. Alex and I have been making vegan chili recipes for quite a while. Actually, many of the chili recipes on this website are vegan, though they don’t say it! Our Vegetarian Chili is vegan, but we like to top it with cheese. Our Sweet Potato Chili and Mango Black Bean Chili, and even our Quinoa Chili are also vegan. But we wanted to create a Classic BEST EVER Vegan Chili that would outshine them all. And then load it up with all the vegan chili toppings.

Here are the secrets to this best vegan chili:

  • Secret veggie blend. You’ll blend together tomatoes with parsley, carrot, vegan Worcestershire sauce, and adobo sauce to create the body for this sauce. Oddly enough, it was inspired by a chili we had once with V8 in it. But we wanted to make an all-natural version!
  • Adobo sauce! Adobo sauce adds smoky, tangy complexity to this chili that cannot be substituted! See the section below for more on this magic sauce.
  • Vegan sour cream. It’s just a topping, but it truly makes for that classic chili experience.

What is adobo sauce?

Adobo sauce is our secret weapon to add meaty, smoky flavor to our vegetarian and vegan recipes. Chipotles in adobo sauce are sold in most major grocery stores here in the US, available in the Mexican products section. The can includes two things: 

  • Chipotle chiles: smoked and dried jalapeños that then are rehydrated and canned
  • Adobo sauce, a puree of tomato, vinegar, garlic, and some other spices.

Most of our recipes use only a small amount of the adobo sauce because the chiles are super potent! You can freeze the remainder of the chipotle chiles and adobo sauce for future use.

Sour cream is our favorite chili topping. So for this vegan chili, we went the extra mile and created a Vegan Sour Cream for dolloping! Oddly enough, it has a texture and richness just like the real thing! It’s impossibly creamy, but only has a few ingredients: cashews, tofu, lemon juice, vinegar, and salt. Blend them up, and it comes together into something so sour-cream like, you’ll want to dollop it on everything!

Pickled jalapenos add a zing! (Or use pickled onions.)

The other topping that’s key here is the pickled jalapenos! Our Homemade Pickled Jalapeños are perfect, and only take 10 minutes to make. Or, you can use store-bought. Why are they important They add just the right tangy flavor and back-end heat. If you can’t handle spicy foods, no problem! Our Quick Pickled Onions also add that signature tang without the heat. They’re quick to make, too. That said…let’s talk toppings!

One of the best things about chili is the toppings, right? With a vegan chili, you have to get creative without the use cheese and sour cream. Here are all the best ways to top a vegan chili:

Ingredients

  • 228 ounce cans fire roasted diced tomatoes, divided
  • 1 small carrot
  • 1 cup parsley leaves and tender stems, loosely packed
  • 2 tablespoons vegan Worcestershire sauce
  • 1 tablespoon adobo sauce (from 1 can chipotle peppers in adobo sauce), plus more to taste
  • 1 large yellow onion
  • 1/2 green bell pepper
  • 2 tablespoons olive oil
  • 1 15-ounce can crushed tomatoes, fire roasted if possible
  • 1 15-ounce can pinto beans, drained
  • 1 15-ounce can black beans, drained
  • 1/2 cup dry quinoa
  • 1 tablespoon each chili powder and garlic powder
  • 1 teaspoon each onion powder, cumin and oregano
  • 1 1/2 teaspoons kosher salt, plus more to taste
  • 1/4 teaspoon ground black pepper
  • Garnishes: Pickled Jalapenos (or Pickled Onions), Vegan Sour Cream, lime wedges, sliced radishes

Instructions

  1. In a blender, blend the one can of diced tomatoes, carrot (peeled and chopped into a few pieces), parsley, Worcestershire sauce, and adobo sauce until fully combined.
  2. Dice the onion and green pepper. In a large pot or Dutch oven, heat the olive oil over medium high heat. Add the onion and green pepper and sauté for about 6 to 7 minutes until tender.
  3. Carefully add the blended vegetables, the second can of diced tomatoes, the crushed tomatoes, drained beans, quinoa, spices, kosher salt, and 1/2 cup water. Simmer gently for 25 to 30 minutes until the quinoa is tender and cooked through, stirring occasionally. Taste and add additional salt and adobo sauce as desired (we added 1 teaspoon adobo sauce and 1/4 teaspoon kosher salt).
