Mimosa Board for Brunch

A fresh, fruity Mimosa Board is one of my absolute favorites to serve at a brunch with my girls. Have a blast letting your guests come up with their own mimosas and share all the fun flavor combinations. This board is such a fun experience to share with friends! We inspire each other to try different flavors. Fresh fruit adds such delicious flavor and texture to the cocktails. Like a buzzy choose-your-own adventure. And it’s perfect for your friends who don’t drink because they can still create a fun and fruity mocktail without adding the bubbly.

Believe it or not, the green goddess juice makes an exceptionally delicious mimosa. It’s often the most popular juice (and the one to need refilling first!). If a green goddess mimosa isn’t your thing, try a berry mimosa with blackberries and mint. Or go for a classic! You can’t go wrong.

Mimosa Board Ingredients and Supplies

Ingredients:

  • Orange juice
  • Mixed berry juice
  • Green Goddess juice
  • Champagne or Prosecco
  • Blackberries
  • Blueberries
  • Fresh mango
  • Pomegranate seeds
  • Fresh pineapple
  • Strawberries
  • Raspberries
  • Granola clusters
  • Orange
  • Mini Cinnamon Rolls
  • Glazed donut holes
  • Fresh mint

Supplies:

A large rimmed wood Lazy Susan filled with colorful fresh fruits in small white dishes, glass carafes of fruit juice and three bottles of Prosecco.

How to Make a Mimosa Board

  • Pour the orange juice, berry juice, and green juice into small carafes and place the carafes on the board. Add the champagne bottles to the board, or keep chilled in an ice bucket to the side.
  • Press 3 blackberries onto each of 4 toothpicks and 5 blueberries to 4 other toothpicks. Place the 8 blackberry and blueberry toothpicks in small serving bowls next to the juice carafes.
  • Put the remaining blackberries and blueberries in small serving bowls, along with the diced mango, pomegranate seeds, diced pineapple, diced strawberries and raspberries in individual serving bowls. Place the bowls around the board or lazy Susan.
  • Add the granola chunks to a small bowl and place in the center of the board. Surround the bowl of granola with orange slices, pineapple wedges, whole strawberries, mini cinnamon rolls and donut holes.
  • Garnish with fresh mint.

Tips for Building a Mimosa Board

  • Set out ice for those who like their mimosas really cold
  • For those who prefer booze over juice, mix one-third juice and two thirds champagne. For a less boozy sip, mix half juice and half champagne.

  • 2 cups orange juice
  • 2 cups mixed berry juice
  • 2 cups Green Goddess juice
  • 23 bottles of Champagne or Prosecco
  • 3/4 cup blackberries
  • 1/4 cup blueberries
  • 1/2 cup diced mango
  • 1/2 cup pomegranate seeds
  • 6 pineapple wedges, divided
  • 1/2 cup diced strawberries, plus 5 whole strawberries, divided
  • 1/2 cup raspberries
  • 1 cup granola clusters
  • 1 large orange, thinly sliced
  • 8 Mini Cinnamon Rolls
  • 12 glazed donut holes
  • 2 sprigs of fresh mint

Instructions

  1. Pour the orange juice, berry juice, and green juice into small carafes and place the carafes on the board. Add the champagne bottles to the board, or keep chilled in an ice bucket to the side.

The Best Pico de Gallo Recipe

Finely chopped fresh onion, tomato and jalapeños seasoned with salt, lime juice and cilantro make this easy, Classic Pico de Gallo perfect for dipping. This fresh and flavorful dip is sure to become a staple at taco night.

What is Pico de Gallo?

What does “pico de gallo” mean? The literal translation of the Spanish phrase means “beak of the rooster” or “rooster’s beak.” The dish may get its name for the small size of the chopped ingredients, which resemble bird feed.

What is it? Pico de gallo is a fresh salsa traditionally made with chopped tomato, onion, and serrano or jalapeño peppers. Sometimes referred to as ‘salsa fresca.’

What is the difference between pico de Gallo and salsa? Salsa ingredients vary, while pico always contains the same basic fresh ingredients. And unlike most salsa, it’s never blended or cooked. It has a chunky consistency more like a relish than a sauce.

Pico de Gallo Ingredients and Supplies

  • Jalapeño
  • Diced white onion
  • Fresh lime juice

How to Make Pico de Gallo

  • In a medium mixing bowl, combine the tomatoes, garlic, jalapeño, white onion, and lime juice.
  • Gently fold in the chopped cilantro.
  • Season with the salt and black pepper and adjust to taste.

  • Fold gently until salt and pepper are blended. Store in the refrigerator until ready to serve.

How to Store Pico de Gallo

While this dish is best served fresh, you can store leftovers in an airtight container in the refrigerator for a couple days.

What Do I Need to Make Loaded Twice Baked Potatoes?

  • Yukon Gold potatoes
  • Extra-virgin olive oil
  • Sour cream
  • Buttermilk
  • Butter, softened
  • Real bacon bits
  • Shredded cheddar cheese
  • Green onions, divided
  • Kosher salt
  • Freshly ground black pepper

The Best Potato for the Job

What kind of potato should you use in stew? Which potatoes are best for baking? Here’s my go-to guide for choosing the best potato for whatever you’re making.

  • Mashed potatoes: Yukon gold potatoes are perfect for mashed potatoes and twice-baked potatoes because they whip up so creamy and not-too-starchy.
  • Baked potatoes: Russet potatoes bake up with a crisp, delicious skin.
  • Beef stew: Baby Yukon gold potatoes or baby red potatoes soak up the flavor while holding their shape.
  • Oven-roasted: Baby red potatoes, baby gold potatoes, and fingerling potatoes are the perfect size for roasting up crispy on the outside and tender on the inside. Their skins are delicate, so you don’t need to peel them.
  • Potato Salad: I prefer petite potatoes like baby red or baby gold for potato salad, especially if I intend to keep the skins on. They boil to become tender without falling apart.

How to Make Loaded Twice Baked Potatoes

  • Preheat the oven to 375°F. Rub the outsides of each potato with olive oil and poke a few times with a fork.
  • Place the potatoes on a rimmed baking sheet and bake for 45 minutes, or until soft. Allow to cool for 20 minutes, or until cool enough to handle. Do not turn off the oven.
  • Slice each potato across the top, removing about 1/8 inch to create a baked potato bowl. Scoop out the insides of the potatoes and transfer to a medium mixing bowl, leaving a 1/8-inch thickness to the skin.
  • Return the hollowed-out potatoes to the oven to crisp up the exterior for about 5 minutes. This will make them sturdier to hold the filling. Again, do not turn off the oven.

  • Meanwhile, in a stand mixer fitted with the paddle attachment or with a handheld mixer, beat the potato insides, sour cream, buttermilk, and butter until smooth.
  • Stir in ⅓ cup of the bacon bits, 1 cup of the shredded cheddar cheese, 2 tablespoons of the sliced green onions, salt, and black pepper until well combined.
Steps to make twice baked potatoes.
  • Fill each potato skin heaping full with the potato filling.

How to Store and Reheat Twice Baked Potatoes

Store leftover twice baked potatoes in an airtight container in the refrigerator for up to three days.

Reheat on a prepared baking sheet in a 300°F oven until heated through (about 15 to 20 minutes). Or reheat in the microwave (covered with a damp paper towel) in 30 second increments until heated through (about 2 and 1/2 minutes total).

When Cheddar is Better

If you’re not into processed cheese, this easy queso dip recipe is for you. It uses real cheese (no Velveeta here, folks) and milk to make a creamy, flavorful cheese dip you’ll make again and again. I use a medium cheddar but you could certainly substitute mild cheddar if that’s what you have on hand.

If you’re a fan of restaurant style queso, I think you’ll be surprised how easy it is to make at home. Real shredded cheese, fresh aromatics, peppers and cilantro add such great flavor. It comes together so quick and tastes so much like our favorite restaurant queso, we can’t get enough!

What Do I Need to Make Easy Stovetop Queso?

  • Unsalted butter
  • Garlic
  • White onion
  • Jalapeño
  • All-purpose flour
  • Milk
  • Shredded medium cheddar cheese (a high-quality, good-melting cheese is best)

  • Melt the butter in a medium saucepan or skillet over medium heat.
  • Add the garlic, onion, and jalapeño, and cook until the onion is translucent, about 5 minutes.
  • Whisk in the flour, and then slowly whisk in the milk.

  • Reduce the heat to low.
  • Add the cheese and stir until melted.
  • Stir in the tomato, cilantro, lime juice, and salt.
  • Serve immediately, or keep warm while serving so it stays melted. Stir in additional milk, 1 tablespoon at a time, if the queso starts to thicken.

How to Serve and Store Easy Stovetop Queso

Serve immediately with tortilla chips. Keep warm on the stovetop over low heat, stirring frequently. Or, transfer to a fondue pot or slow cooker to keep warm. Stir frequently to prevent clumping.

Store leftover queso in an airtight container in the fridge for up to five days. Reheat in a sauce pan over medium low heat stirring continuously. Or reheat in the microwave at 50% power in 30-second increments.

Creamy cheddar cheese with fresh tomato, onion, jalapeño and cilantro make this Easy Stovetop Queso a flavorful party favorite.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 1/4 cup chopped white onion
  • 1 jalapeño, seeded and minced (keep seeds for spiciness if desired)
  • 1 tablespoon all-purpose flour
  • 1 and 1/2 cups milk, plus more if needed
  • 3 cups shredded medium cheddar cheese
  • 1/2 cup seeded and diced tomato
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon kosher salt

Instructions

  1. Melt the butter in a medium saucepan or skillet over medium heat. Add the garlic, onion, and jalapeño, and cook until the onion is translucent, about 5 minutes.
  2. Whisk in the flour, and then slowly whisk in the milk.
  3. Reduce the heat to low. Add the cheese and stir until melted. Stir in the tomato, cilantro, lime juice, and salt.
  4. Serve immediately, or keep warm while serving so it stays melted. Stir in additional milk, 1 tablespoon at a time, if the queso starts to thicken.

Perfectly Easy Avocado Margarita

Your favorite 5 o’clock beverage gets a flavorful update with this Avocado Margarita. This balanced and refreshing cocktail combines the crispness of a classic margarita with the subtle creaminess of avocado. A hint of cilantro provides a bit of bite while agave and a splash of pineapple juice makes it sweet and so, so drinkable.

A Taste of Vacation

The first time I ever had an avocado margarita was on vacation. So that’s what this cocktail will always taste like to me. Relaxation! I love the hint of cilantro because it balances out the sweetness of the agave and the tartness of pineapple. So refreshing!

No Blender Needed

You won’t need a blender to make this avocado margarita. Just muddle, shake and serve. I love to serve margaritas over crushed ice. We have a nugget ice maker that makes the perfect ice to use in drinks you want to keep extremely cold. But regular cubed ice will work just fine, too!

Tools of the Trade

Learn all about our favorite tools for making fabulous cocktails in my Cocktail Crafting 101. To make this avocado margarita recipe, you’ll need a shaker and a muddler.

  • Boston Cocktail Shaker – This is a classic two-piece shaker where you have a larger metal shaker (usually 28oz) and a smaller shaking tin or glass (usually 16oz). You need to use a hawthorne strainer (usually comes with most Boston Shaker sets) to pour the drink which is easy to use once you get the hang of it. I like a Boston Shaker because you can either use it as a shaker or just use the larger glass to stir drinks. It is also very easy to separate the two pieces after shaking, making clean up a snap.
  • Cobbler Cocktail Shaker –  This other major type of shaker has a removable top with a built-in strainer. This makes it easier to pour since the strainer is built in, but clean up is trickier. Removing the lid of a Cobbler Shaker can be challenging as the metal expands when it’s cold and you have three pieces to clean in between drinks. However, it’s still a great shaker and I use ours frequently. 
  • Muddler – muddler allows you to smash and blend various fruits, herbs, or vegetables before adding the liquid ingredients. This process helps release the flavors of these ingredients much more than shaking (grab a leaf of mint and rub between your fingers for a few seconds and you’ll get the idea). For the longest time, I used the handle of an ice cream scoop to muddle. Boy, was I missing out! A good muddler makes it so much more effective.

What Do I Need to Make an Avocado Margarita?

Ingredients:

  • Large avocado
  • Fresh cilantro
  • Agave
  • Fresh lime juice
  • Pineapple juice
  • Orange liqueur
  • Tequila (we prefer reposado tequila)
  • Crushed or cubed ice
  • Tajín (lime and chili pepper seasoning), optional for garnishing

What Does it Mean to ‘Double Strain’?

To double strain means to pour the cocktail through your shaker’s strainer and through a smaller strainer to eliminate any small particles of ingredients or ice in the final drink.

  • Mash and muddle the avocado and cilantro leaves in a cocktail shaker until the avocado is smooth.
  • Add the agave, lime juice and pineapple juice.

  • To rim the glass, if desired: Wet the rim of the glass with a lime wedge. Then roll in a shallow dish of Tajín (or coarse salt, if desired).

The texture of this cinnamon roll breakfast casserole recipe reminds me of bread pudding. And if you haven’t had bread pudding, you’re in for a treat.   • Pour custard over the cinnamon roll dough in the baking dish. Let set for 10 minutes while you make the topping.
  • In a separate mixing bowl, stir together the flour, brown sugar, cinnamon and salt. Add the butter.
Steps to make cinnamon roll breakfast casserole.
  • Mix with a fork until well combined and crumbly.
  • Sprinkle the topping evenly over the cinnamon roll pieces in the baking dish.
  • Bake for 45 minutes or until golden brown and starting to crisp on top but still a bit wobbly overall.
  • Let rest for 5 minutes before drizzling with the cinnamon roll icing.

How to Store Cinnamon Roll Breakfast Casserole

Store: To save leftover cinnamon roll breakfast casserole, allow to cool completely after baking. Then cover tightly with plastic wrap and store in the refrigerator for up to four days. The longer it sets, the softer it will become.

To reheat in the microwave, place a single portion on a microwave safe plate. Microwave for 15-20 seconds or until heated through. To reheat in the oven, place the bread pudding in a baking dish in the oven at 300°F for about 8-10 minutes or until heated through.

Making it in Advance?

To make cinnamon roll breakfast casserole in advance, prepare the breakfast casserole in the baking dish up to one day in advance before baking it. Simply prepare to just before baking it and then cover the baking dish tightly with plastic wrap and refrigerate until you’re ready to bake it.

When you’re ready to bake the cinnamon roll casserole, remove it from the refrigerator and remove the plastic wrap. Let it set at room temperature while you preheat the oven to 350°F and then bake as instructed.

  • 2 (12.4 ounce) cans cinnamon rolls (8 rolls per can)
  • 4 large eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar

Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/4 cup (1/2 stick) unsalted butter, softened

Sauce:

  • 2 packages of the icing that comes with the canned cinnamon rolls

Instructions

  1. Preheat oven to 350°F. Generously butter a 9×13-inch baking dish.
  2. Cut cinnamon rolls into 1/2-inch pieces (6 pieces per roll) and evenly cover the bottom of the baking dish.
  3. In a large mixing bowl, whisk together the eggs until pale yellow. Add the milk, cream, sugar and vanilla and whisk together until well combined and slightly frothy.
  4. Pour custard over the cinnamon roll dough in the baking dish. Let set for 10 minutes while you make the topping.

I make these personal-sized pizzas so often for the boys before late practices or when they have friends over. They’re just so quick to make and everyone loves them! Pair with a big salad and everyone is satisfied and happy!

The kids love to customize these tortilla pizzas with their own choice of toppings. I made these pizzas with salami and fresh basil, but the topping options are endless! Try some of these or add your favorites:

  • mini pepperoni
  • sliced olives
  • pineapple pieces
  • jalapeno slices
  • Italian sausage
  • Canadian bacon or prosciutto

Not Delivery…

It’s not delivery, it’s do it yourself stuffed crust! To me, stuffed crust pizza always seemed like a lot of work, something I’d definitely save for ordering out. Friends, you are going to love how truly easy and delicious this pizza recipe is. Quick to prepare and out of the oven in about 20 minutes. That’s hard to beat!

What Do I Need to Make Stuffed Crust Tortilla Pizza?

Sheet pan pizza, pizza muffins, heart shaped tortilla pizzas, and quick and easy pizza dough.

How to Make Stuffed Crust Tortilla Pizza

  • Preheat oven to 400°F.
  • Place the tortilla on a parchment-lined baking sheet or pizza pan that’s been sprayed with non-stick cooking spray.
  • Slice each cheese stick in half lengthwise. Place a cheese stick, sliced side down, on four opposite sides of the tortilla.
  • Roll the edge of the tortilla up over and slightly under each cheese stick, securing each side with two toothpicks (through the cheese stick and into the bottom of the tortilla). Once all of the cheese sticks are wrapped in the tortilla and secured with toothpicks, this will create a square shape.
  • Spread the inside of the tortilla with the pizza sauce and then sprinkle with the shredded mozzarella cheese.

  • Arrange the salami slices on top of the cheese and then sprinkle with the shredded parmesan cheese.
  • Stir together the melted butter and garlic salt. Brush the stuffed edges of the tortilla pizza generously with the melted garlic butter. 
  • Bake for 18-20 minutes or until the crust is golden brown and the cheese in the middle is bubbling.
  • Remove from the oven and let set for a few minutes before removing the toothpicks.
  • Garnish with grated parmesan and chopped fresh basil.

How to Store a Stuffed Crust Tortilla Pizza

Store leftovers in an airtight container in the refrigerator for up to three days.

To reheat, warm a non-stick skillet over medium heat. Add a slice of pizza and cook for about 3-5 minutes or until the crust starts to crisp again and sizzle around the edges. To get the cheese a bit more melty, add a few drops of water to the pan away from the pizza. Cover with a lid, and let steam for another minute or two until the cheese is melted completely. 

Alternatively, reheat in a 350°F oven on a prepared baking sheet until heated through, about 5 minutes.

Description

This Stuffed Crust Tortilla Pizza comes together in a matter of minutes and with just a few simple ingredients. It’s easy, cheesy perfection!


Ingredients

  • 1 burrito-size flour tortilla (10 inches in diameter)
  • 2 mozzarella cheese sticks, halved lengthwise
  • 2 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella cheese
  • 9 small salami or pepperoni slices
  • 1 tablespoon shredded parmesan
  • 1 tablespoon butter, melted
  • 1/4 teaspoon garlic salt
  • Grated parmesan cheese, for garnishing
  • Fresh basil, for garnishing

Instructions

  1. Preheat oven to 400°F.
  2. Place the tortilla on a parchment-lined baking sheet or pizza pan that’s been sprayed with non-stick cooking spray.
  3. Slice each cheese stick in half lengthwise. Place a cheese stick, sliced side down, on four opposite sides of the tortilla.
  4. Roll the edge of the tortilla up over and slightly under each cheese stick, securing each side with two toothpicks (through the cheese stick and into the bottom of the tortilla). Once all of the cheese sticks are wrapped in the tortilla and secured with toothpicks, this will create a square shape.
  5. Spread the inside of the tortilla with the pizza sauce and then sprinkle with the shredded mozzarella cheese. Arrange the salami slices on top of the cheese and then sprinkle with the shredded parmesan cheese.
  6. Stir together the melted butter and garlic salt. Brush the stuffed edges of the tortilla pizza generously with the melted garlic butter.
  7. Bake for 18-20 minutes or until the crust is golden brown and the cheese in the middle is bubbling.
  8. Remove from the oven and let set for a few minutes before removing the toothpicks.
  9. Garnish with grated parmesan and chopped fresh basil. Slice and enjoy!

With these delicious treats, there’s no campfire needed to enjoy the classic taste of s’mores. Honestly, the hardest part is waiting for them to cool. These no-bake desserts are perfect for playdates, sleepovers and that last minute get together that calls for something sweet.

I’ve been obsessed with s’mores basically my whole life. I’ve worked that classic graham cracker-chocolate-marshmallow combination into countless recipes. There’s a s’mores ice cream cake, a pumpkin s’mores snack cake, s’mores cheesecake bites with scrumptious graham cracker crumb crusts, and even s’mores popcorn. And so many more.

So when I tell you this s’mores bar recipe is delicious, I know what I’m talking about. But don’t take my word for it! Mix up a batch and you’ll see! They’re an instant hit with kids and us kids at heart.

How to Make No-Bake S’mores Treats

  • Lightly grease and line a 9×13-inch baking pan with parchment paper.
  • In a large pot over medium-low heat, melt the butter. Add 9 cups (all but 1 cup) of the mini marshmallows and stir frequently until melted and smooth.
  • Remove the melted marshmallow mixture from the heat and quickly stir in the Golden Grahams cereal.
Steps to make no-bake s'mores bars.
  • Stir until the cereal is evenly coated.
  • Press about a cup of the mixture into the prepared baking dish at a time and then add some of the chocolate pieces and some of the remaining 1 cup of mini marshmallows to the mixture.
  • Continue to alternate cereal mixture with chocolate pieces and mini marshmallows until they’re all pressed into the baking dish. You want the chocolate pieces and mini marshmallows to be evenly distributed throughout the mixture and on top.
  • Let set until cooled completely (about 1 hour) before lifting from the baking pan and slicing into bars.
Steps to make no-bake s'mores bars.

How to Store No-Bake S’mores Treats

Store in an airtight container at room temperature for up to 5 days. Marshmallows go stale easily so make sure to wrap tightly!

  • 8 cups Golden Grahams Cereal
  • 3 (1.55 ounce) Hershey’s milk chocolate bars, broken into pieces

Instructions

  1. Lightly grease and line a 9×13-inch baking pan with parchment paper.

Easy Does It!

When it comes to breakfast, I’m a HUGE fan of easy. And this Baked French Toast fits the bill. Served with all the trimmings it’s a masterpiece. But it’s also fabulous enjoyed by itself. With a sweet cinnamon crust, it tastes like big cinnamon toast crunch. It’s a kid favorite, for sure!

French Toast: All About the Bread

What kind of bread should you use for French toast? The key to great French Toast is using the right bread. Too thin, and it soaks up all of the egg mixture and turns out too flimsy to transfer or even flip on the griddle. Too thick, and it won’t cook all the way through when the outside is perfectly crisp.

For French toast, each slice of bread should be 3/4″ to 1″. To me, the best bread is thick slices of a good challah or brioche loaf, but a soft, thick white bread works well, too. Some folks prefer day-old French bread. You do you!

How to Make Baked French Toast

  • Preheat oven to 350°F. Generously butter a 16×12-inch rimmed sheet pan.
  • Beat eggs, vanilla, cinnamon, sugar and a pinch of salt in a mixing bowl until well combined and slightly fluffy.
  • In a small mixing bowl, whisk together the 2 tablespoons sugar and 2 teaspoons ground cinnamon until well combined.
  • Dip the bread slices in the egg mixture 
Steps to make Baked French Toast.
  • Let soak on each side for 10 seconds until slightly saturated but not soggy. Transfer the soaked slices of bread to the prepared sheet pan. When transferring the soaked bread to the sheet pan for cooking, be sure to let any excess egg mixture drip back into the shallow dish.
  • Sprinkle the top of the bread slices on the sheet pan generously with some of the cinnamon sugar mixture.
  • Place the sheet pan on the middle rack of the oven and let bake for 10 minutes.
  • Remove the sheet pan from the oven and carefully flip each slice of bread. Sprinkle the top of the slices generously with some of the remaining cinnamon sugar mixture.
  • Return the sheet pan to the oven and let the bread back for another 10 minutes or until the bread is golden brown and slightly crisp on both sides.
  • Serve with maple syrup, fresh fruits and powdered sugar, if desired.
