We love sausage and peppers in my house, and these foil packets kick it up a notch flavor-wise with marinara and cheese. I used Arrabbiata sauce for a spicy kick, which I highly recommend, but regular marinara works too if you prefer milder food. Tommy gave these packets two thumbs up! Caesar dressing is full of such great flavors and goes perfect with grilled chicken. My secret ingredient to lighten the dressing is Greek yogurt which replaces oil. Plus, yogurt is an incredible marinade, making the chicken super tender and juicy. While the grill’s hot, throw on some romaine to quickly char it, and then drizzle the leftover dressing over the kabobs and lettuce. My mom has been making Spanish Tortilla all my life. It’s usually something she’ll bring to a brunch or serve as an appetizer. Her recipe has a lot more olive oil than this lighter version, but the great news is that you don’t miss it here! The pimenton aioli takes this tortilla to a whole new level, so don’t skip it (you may want to double it if serving guests). Turkey Picadillo

Growing up in a Latin home, beef picadillo was on dinner rotation as a kid. It’s also one of the first things I learned how to cook. It’s a 30 minute dish, while it cooks I cook my rice in another pot so everything is ready at the same time. Serve it with a quick slaw for a little acidity and dinner is ready! My family loves it with beef, but some nights I like to switch it up with turkey as a leaner option. I personally am not a fan of 99% lean turkey, it’s too dry for my taste so I use 93% lean ground turkey instead. Leftovers are great in tacos, empanadas or quesadillas.
