Cinnamon Banana Bread Recipe
One bite and you’ll be head over heels for this Cinnamon Banana Bread. A cinnamon sugar coating on the pan and a sprinkle on top give it a sweet, crackly finish all over that is simply irresistible. The inside is soft, sweet and just bursting with fresh banana flavor. It’s a must-try!
Easy, Special Banana Bread
You know I love a classic banana bread. But you’ll be surprised how much a little bit of cinnamon sugar transforms a traditional banana bread into something REALLY special. It’s so moist, and so flavorful and that cinnamon sugar crust makes it impossible to put down.
Cinnamon Banana Bread Ingredients and Supplies
(see recipe card at the bottom of this post for measurements and details)
Ingredients:
- Unsalted butter
- Granulated sugar
- Large eggs
- Pure vanilla extract
- Medium bananas
- All-purpose flour
- Baking soda
- Ground cinnamon
- Cinnamon sugar
Supplies:
- 8-inch x 4-inch loaf pan
- Nonstick cooking spray
How to Make Cinnamon Banana Bread
- Preheat oven to 350°F. Lightly grease an 8-inch x 4-inch loaf pan with non-stick cooking spray and sprinkle evenly with 1 tablespoon cinnamon sugar. Set aside.
- Place the butter in a large microwave-safe mixing bowl and melt in the microwave until just melted. Whisk in the sugar until smooth. Whisk in the beaten eggs until well incorporated.
- Add the vanilla and mashed banana
- Whisk until just combined.
- Gently stir in the flour, baking soda and cinnamon.
- Pour the batter evenly into the prepared loaf pan.
- Sprinkle the top evenly with the remaining 1 tablespoon cinnamon sugar.
- Bake for 60-65 minutes or until a knife or chopstick inserted in the center comes out clean. If the top of the bread is golden brown before the middle is completely baked through, tint the loaf pan with foil and continue to bake until the bread is cooked all the way through.
- Let the banana bread cool in the pan completely.
How to Store Banana Bread
Store any leftovers in an airtight container at room temperature for up to five days.
To freeze, let the loaf cool completely and then wrap it in a layer of plastic wrap before then wrapping it in a layer of foil or placing in a freezer-safe plastic bag in the freezer for up to three months. Let defrost at room temperature for several hours.
