Mint is always the first thing to pop up in my garden each spring, and I have tons of it growing right now. I love adding it to salads. If you’re like me and have a lot of it, too, then this quinoa salad will be an excellent way to use it up! The mint combined with quinoa, dried cranberries, fresh kale, and lemon juice results in a very flavorful salad that is also super easy to make. It’s probably pretty obvious by the many fried rice recipes on my blog that I LOVE fried rice! While I enjoy ordering takeout from a restaurant, I always try to find ways to recreate fried rice at home. That way, I can control what goes in it and keep it a bit lighter. I have multiple fried rice recipes, like House Special Fried Rice, Pineapple Shrimp Fried Rice, and Spicy Shrimp Fried Rice , but since I am the only salmon lover in my house, I usually whip this dish up for one, it’s my favorite! Also great with leftover salmon. You can double or triple as needed.

The bright green color of this Spring Pea and Fresh Herbs Soup is lovely. It will fade a little if you save the soup for the next day, but what you trade off in color, you gain in even deeper flavor that comes from the ingredients melding together. This spicy Chickpea Salad is made with canned chickpeas tossed in a creamy, spicy buffalo sauce made with Greek yogurt, Frank’s Red Hot, lemon juice, and Tahini. The chickpeas are then topped with crunchy carrots and celery and sharp, tangy blue cheese. Buffalo flavor is one of my favorites, and I have tons of buffalo recipes on my site. You guys are in for a treat! When my cousins visited me a few weeks ago from the Dominican Republic, they showed me how to make these delicious Dominican beans made from scratch with dry red kidney beans. In DR, these beans are served daily in most homes. There’s no meat in these beans, so they are great for vegetarians. Of course, if you want to serve them along side some pork chops, steak or Pollo Sabroso that’s great too!
