If you have followed me for a while, you know that I am a fan of pozole. In fact, I already have two different varieties on this website, including Pozole Rojo and Pozole Verde. I love these recipes because they remind me of Mexico and because they are so delicious! They are especially perfect for cold winter days here in Colorado when I need something to warm me up. I also choose pozole when I am entertaining for small groups here at home, since it is easy to make and serves many. 

Today, I am going to share a third variety of pozole, called Pozole Blanco. The main difference between this version of Pozole is that it does not have red or green chiles to give it the color that the other ones do. That said, it is usually served with a spicy salsa on the side, so you can still get that flavor if you want it. 

How Do You Make Pozole Blanco?

Some of the ingredients you need for Pozole Blanco are:

  • Chicken
  • Hominy
  • Chicken Broth

This recipe is actually pretty easy to make. You will always start by adding the chicken, fresh herbs, garlic, and onion together in a large pot and letting them cook together. You will add the hominy next after removing the large herbs, garlic and onion from the broth.  After the pozole is done cooking, you can add some garnishments, such as raddish, lettuce, onion, tortilla chips, cilantro and lime.

Traditionally, pozole blanco is served also with a very spicy chile de arbol salsa. Warning – this is very spicy, so you can omit it if you prefer or use a more mild salsa. For those of you brave enough to try it, the recipe is below. 

When I made it this week, I used a couple of favorite new kitchen items – one of the pots and one of the frying pans from my T-Fal Easy Care Cookware Set. This is a 20 piece set that has everything you need. I love this set because the quality non-stick interior makes cooking and clean-up quick and easy. I usually handwash my cookware because I prefer to, but these are dishwasher safe so when you are in a hurry to clean up you don’t have to worry about that!

This is important when I am entertaining, since I would rather spend time with my friends and family than cleaning up. I also love that all T-fail non-stick cookware is 100% toxin free, which gives me peace of mind when I make food for my friends and family.

Spice Bag Trick

As you can see above, this recipe includes a lot of fresh herbs, spices, and other ingredients that are better off removed at the end of the cooking process. In order to avoid picking each piece out, I like to use a spice bag.

The concept is simple, you add the larger spices and ingredients that don’t typically dissolve (i.e. bay leaves, onions, oregano, etc.) and just drop it in during the cooking process. Then, prior to serving you remove the bag. This helps to maintain the delicious flavor, but also makes sure your guests aren’t accidentally getting big bits of herbs and onions!

This worked really well for this recipe, so I definitely recommend it to save time and effort.

Ingredients

For the Pozole

  • 6 cups Water
  • 2 Chicken Breasts
  • 1 can Hominy 25 oz
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Oregano
  • 1 tbsp Fresh Thyme
  • 1 tbsp Fresh Marjoram
  • 2 Bay Leaves
  • 3 Cloves of Garlic, peeled
  • 1/2 onion
  • 2 tsp salt more or less to taste

For the Chile de Arbol Salsa

  • 4 chile de arbol
  • 1 Chile ancho
  • 1 Chile guajillo
  • 3 garlic
  • salt
  • 1/4 onion
  • 1/2 cup avocado oil or other oil

Accompaniments

  • chopped radish
  • limes
  • Tortillas Strips
  • Chopped Cilantro
  • Chopped Onions
  • Avocado

Instructions

For the Pozole

  • Bring the water to a boil in a large pot and add the salt.
  • Add the following ingredients either to a spice bag or directly to the water: rosemary, oregano, marjoram, thyme, bay leaves, garlic, and onion. If using the spice bag, close it and add to the water.
  • Immediately add the chicken breasts and cook over medium high heat until the chicken breasts are cooked through. Remove the spice bag if using. If not using, remove the onion, garlic, bay leaves, and other herbs and dispose of them.
  • Remove the chicken, shred, and then add it back to the broth.
  • Add the hominy and bring to a boil for 15 minutes.
  • Serve hot with the the chile de arbol salsa (if desired) and the other accompaniments.

Chile de Arbol Salsa (Very spicy!)

  • Remove the stems from the chiles, and then saute all of the ingredients in a frying pan with the oil for 1-2 minutes.
  • Add all ingredients (including remaining oil) to a blender and blend well. You can add a small amount of water or broth for a thinner consistency.

I know that some of you noticed I haven’t done beauty faves in a month. I mean, it’s crazy considering I didn’t miss a month for almost a decade and it’s one of my favorite posts to do!

As I’m sure most of you can relate, I have barely been wearing any makeup. It’s been amazing for my skin. I’ve def been keeping up on skincare (will update you on that fully next month!), but not makeup as frequently. Obviously!

EVERYTHING below is something I use and love (or have used and loved) – these are all my personal recommendations. They probably come as no surprise considering I talk about beauty stuff nearly every month, but here we are! I did include a wishlist of what I want at the end. Spoiler alert: it’s not huge.

I love to use the VIB sale to stock up on my favorite skincare. I also love it to buy perfume, because you can rarely find that on sale (if ever!) – especially my favorite Tom Ford.

Obviously this is a frivolous post in this crazy time, but if you need a moment to take your mind off everything, it’s here!

2020 SEPHORA VIB SALE LIST

SKINCARE

Indie Lee Brightening Cleanser. My favorite cleanser I have found in years. Been using it for at least a year and love it. Plus, it smells like strawberries.

Dr. Dennis Gross Daily Peel Pads. I haven’t stopped raving about these since I bought them and they have changed the texture of my skin. Can’t imagine ever going without these now. I use them every other day.

Caudalie Moisturizing Toner. I use this every single day, morning and night, with an exfoliating cotton round. It’s the best!

SkinFix Barrier+ Eye Cream. This has been my go-to eye cream for well over a year. It works wonders under makeup!

Drunk Elephant The Littles. This is the perfect travel set – also great if you want to try out all Drunk Elephant without the investment. In years I’ve traveled a bunch, I’ve bought this twice. I also LOVE the bag it comes with.

Drunk Elephant LaLa Retro Whipped Cream. This is my favorite nighttime moisturizer, but it also works during the day too. I use it because I have dry skin.

Drunk Elephant Protini PolyPeptides Cream. I use this one during the day under makeup. It dries down so nicely and is slightly more of a gel texture.

Sunday Riley Good Genes. I’m still OBSESSED with this product. It works wonders on my skin. It’s my OG holy grail – have used it for years. I alternate it with the peel pads above.

Sunday Riley Luna Oil. I love this as well, and it does work great in conjunction with Good Genes.

Farmacy Honeymoon Glow. This is an incredible resurfacing serum. I occasionally use this instead of Good Genes. It’s very light and really does make you glow.

Kate Somerville Exfolikate. This is the only physical exfoliator I use on my face. I also use this on my body and it’s great. It has a chemical exfoliate in it as well.

Supergoop Glow Screen. Found it this summer and fell.in.love. It also makes wearing sunscreen everyday bearable.

BODY

Sol De Janiero Bum Bum Cream. As a freak for all things scent, I love using this from April to October – it’s the best summer scent ever. I always buy the huge one at this sale for spring to come.

Sol de Janiero Nude Body Cream. This is a fragrance free RICH body cream. Fantastic for winter.

First Aid Beauty Ultra Repair Cream. I love this cream for all over the body – everyone in our family uses this. It’s also fragrance free. It’s mild and great for eczema.

Derma Doctor KP Duty Scrub. I only use three body scrubs: the exfoliate above, my homemade ones in The Pretty Dish and this one. If you have those bumps on the back of your arms or if you have eczema, this is great. I use once or twice a week.

Derma Doctor KP Duty Cream. Same as the above, in cream form! I don’t use this every day or even every week, but I use it as needed. Eddie really loves this too.

Tax Luxe The Butter. This is my favorite self tanner. I don’t use it in the winter (funny, right?) but I use it all summer long.

MAKEUP

Beauty Blender. If I wear any sort of foundation, this is the only thing I apply it with. I also apply concealer with it.

Charlotte Tilbury Hollywood Flawless Filter. I LOVE this combined with BB cream. Such a pretty glow. I put it in any sort of foundation or tinted moisturizer.

Bare Minerals Complexion Rescue. This is my daily go-to for any sort of color or foundation on my face. It’s super light and I’ve used it for years. I use the shade vanilla.

Illi Super Serum Skin Foundation. If I DO decide to wear foundation (zoom meeting, video conference, etc), this has been my go-to all year. It has really great coverage but feels like nothing on the skin.

Fresh Sugar Advanced Therapy Lip balm. Definitely my holy grail lip balm. It’s pricey and not one I keep in my purse (because they always go missing!), but it’s amazing for dry lips.

Laneige Lip Sleeping Mask. Another great option in a pot for dry lips. You can still feel this on your lips in the morning. Max loves this too.

Kevyn Aucoin The Contour Book. I have volume one of this and it’s great for traveling if you want an all-in-one. If the colors work for you, it has everything you need.

Kevyn Aucoin Celestial Bronzing Veil. I use both shades of this bronzer (tropical days and tropical nights) every time I wear makeup. The days shade is great for bronzing and I find that the nights shade is better for very light contour. It’s much cooler in tone.

Hourglass Ambient Lighting Powder in Luminous Light. This one is my go-to forever subtle highlight. You just look perfectly glowy with this. I love it so much! Have gone through three of these.

Benefit Gimme Brow. The ONLY thing I use on my brows. It’s so natural. Nothing compares to the tiny brush.

Nars Pro Prime Smudgeproof Base. This is my favorite for eyeshadow base. Have used it forever.

RMS Magic Luminizer. I’ve rambled about this forever. It’s an incredible gel-like luminizer and you can wear it on days you don’t wear makeup. It’s super pretty!

Milk Makeup Eye Pigment. I use this almost every single day. And I love it on its own but it’s also a great base. I have hotel lobby and after party – both gorgeous shades. Have also repurchased both!

Marc Jacobs Eyeconic Eye Palettes. These are my current favorite palettes that check every box – great pigment, so blendable, pretty shades and perfect for travel. I have glambition and provocouture. They are SO pretty.

Laura Mercier Caviar Eye Stick. This in amethyst is one of my favorite shades ever. I use it as both eyeshadow and liner.

Fresh Bloom Lip Balm. This is the MOST flattering shade ever. I use it all year round – it works with little makeup, or a full face!

Glow Watermelon Pop Lib Balm. I repurchased this twice this year. It’s a glossy balm that adds color based on your body chemistry. For me, it was the perfect pop of pink.

Sephora Cream Liquid Lipstick. I fell in love with these late last year when Lacy was getting married. We both got a shade for her wedding. It lasts super well and isn’t that uncomfortable for a liquid lipstick!

HAIR

T3 Whirl Trio. I bought this at a VIB sale a few years ago and still use it weekly. It is an amazing high-quality set that took me a long time to buy (so pricey!) but I use it SO much. And I love that it comes with three sizes of the wand.

Living Proof Perfect Hair Day. I love this for styling when I have to blow dry my hair.

Ouai Texturizing Hair Spray. This is my all-time favorite hairspray. I also always have a travel size.

Drunk Elephant Tangle Spray. I use this on Emilia’s hair every night. Smells incredible and takes the tangles right out.

FRAGRANCE

Fragrance is super personal, so I don’t know exactly how to describe these without saying “I love them!” I gravitate towards warm, woodsy scents – think amber, musk, tonka bean, vanilla, etc. Below are my favorites!

Tom Form Noir Pour Femme. This is my winter fragrance.

Tom Ford Soleil Blanc. This is my summer fragrance!

Jo Malone Mimosa and Cardamom. An all-time favorite for me.

HOME

These are my absolute favorite candles to burn during the holiday season! And they never go on sale, unless you’re lucky enough to fine leftovers come January. The reed diffusers also last a few months in my bathrooms. I always get these as gifts during this sale and sometimes buy an extra so I have one come September of the next year.

Maison Louis MarieNo.04 Bois de Balincourt Candle. I first discovered this scent on our Michigan vacation in 2018 and bought the perfume oil. I’ve been obsessed every since and adore that they make it in a candle.
