I’m a total sucker for the holidays and especially the foods that you get at this time of year. I always loved celebrating Hanukkah with my friends when I was growing up, spinning the dreidel, lighting the menorah for 8 days, eating chocolates coins (Hanukkah gelt), and especially munching on crispy Potato Latkes with tons of homemade applesauce and sour cream. And now I get to celebrate with my husband and kids. Making these treats is a beautiful way to celebrate the festival of lights.

  • Egg: The glue that holds everything together, making sure your latkes don’t fall apart.
  • All-purpose flour: Just a little flour keeps the latkes crispy and helps absorb extra moisture.
  • Kosher Salt: A pinch of salt enhances the potato flavor and gives your latkes that perfect seasoning.
  • Vegetable oil: Go for a neutral oil that can handle the heat to get that golden, crispy crust.
  • Applesauce, for serving: Sweet, tangy, and the perfect pairing to balance the savory goodness of latkes.
  • Sour cream, for serving: Cool, creamy, and tangy—it’s a must-have topping for the ultimate latke experience.

How to Make Crispy Potato Latkes

Step 1: Grate the onions and potatoes using a box grater or food processor.

Step 2: Place grated potatoes and onion mixture into a clean kitchen towel and squeeze out excess moisture into a bowl. Discard any clear liquid in the bowl, reserving the thick white starch at the bottom.

Step 3: Place the onion, potatoes, reserved potato starch, egg, flour, salt and pepper in a bowl and throughly combine.

Step 4: Heat enough oil to cover the bottom of a sauté pan over medium heat. Spoon 1-2 heaping tablespoon of potatoes in the oil and flatten into a circle forming small patties.

Step 5: Cook for 2-3 minutes or until golden and flip over. Cook another 2-3 minutes or until cooked through and remove to a paper towel lined plate to drain.

Step 6: You can serve these immediately or keep them warm in a 300°F oven until all latkes are prepared. When ready, serve with sour cream and applesauce.

Tips for The Best Latkes Ever

  • Hot Oil is Key: Ensure the oil is hot enough before frying to achieve that coveted crispy exterior. To test if your oil is ready, sprinkle a little flour in there. If it sizzles, it should be hot enough.
  • Consistent Size: Keep latkes a uniform size for even cooking. Consider using a trigger release scooper to portion out your latkes evenly.
  • Save the Potato Starch: I’ve already mentioned this, but don’t discard the potato starch after you squeeze the grated potatoes. The starch helps make the crispiest latkes that are totally irresistible!

FAQs

Can you freeze leftover latkes?

Absolutely! To freeze leftover latkes, allow to cool, then place in zip-loc bags, label and place in the freezer. When ready to eat, pop them into an oven preheated to 300°F for 10 minutes or until warmed through. Alternatively, you can defrost in the fridge for 24 hours then heat through in a dry pan.

How do you make super crispy latkes?

After grating the potatoes, be sure to strain all the liquid into a bowl. Let it sit for a few minutes, then carefully pour off the water, leaving the thick potato starch (it looks like cornstarch) at the bottom. Add this potato starch back into your mixture when you’re combining the eggs, flour, and salt. The potato starch helps bind the latkes together while keeping them light and airy. This trick ensures they fry up crispy and crunchy on the outside while staying tender on the inside—just the way a perfect latke should be!

Do you serve latkes with applesauce or sour cream?

There’s always a heated debate about applesauce vs sour cream when it comes to latkes. And the answer is, you really can’t go wrong. Sour cream adds a cool, creamy tanginess that pairs perfectly with the crispy, savory latkes. Applesauce brings a sweet, fruity contrast that balances the richness of the latkes beautifully. Many people love a dollop of both for the ultimate sweet-and-savory combo!

  • Heat enough oil to cover the bottom of a saute pan over medium heat.
  • Place 1-2 heaping tablespoon of potatoes in the oil forming a circle.

What is Matzah?

Matzah (also spelled matzo or matza) is a type of unleavened bread traditionally enjoyed during Passover. Made with just flour and water, it’s baked quickly to keep the dough from rising. While it’s often topped with butter, cheese, or jam, matzah also shines in dishes like matzah ball soup or matzah brei.

Even though matzah isn’t typically part of Hanukkah celebrations—which focus on the miracle of the oil and the lighting of the menorah—I love finding ways to include it in our festivities. The history and symbolism behind these crispy crackers are so meaningful to the Jewish faith, and it’s always fun to enjoy them in creative dishes during the holidays!

Why I Love This Recipe

I love Chocolate Dipped Matzah because it’s so simple to make and a great recipe to get kids involved in the kitchen. I’m always looking for new treats to make for my kids during the holidays. Hanukkah particularly is one of my favorite times to take traditional goodies like Rugelach, but I also love to add a little spin when I can. I didn’t grow up celebrating Hanukkah, so when I started observing the holiday with my husband, it was like a whole new beautiful world to me. There is something so calming and grounding, with the lighting of the menorah and reciting of the blessings. I cherish this time so deeply with my family and absolutely love passing on this tradition to my kids. 

The Ingredients

  • Matzah Crackers: I buy the large sheets and cut them into smaller pieces so these treats are the perfect handheld size.
  • Chocolate Chips: You can use bittersweet, semi-sweet or any type of chocolate chips or chunks you love.
  • Sprinkles: It’s no secret that I love my dye-free sprinkles. For this recipe I used these blue and white sprinkles, but feel free to customize with any dye-free sprinkles you love!

How to Make Chocolate Dipped Matzah with Sprinkles

Step 1: Cut large matzah crackers into 6 smaller crackers.

Step 2: Place the chocolate chips in a microwave safe bowl and heat for 60 seconds, stopping to stir half way through the cooking time. Alternatively, you can place the bowl over a small pot filled 1 inch up with boiling water and stir until melted, about 3-4 minutes.

Step 3: Using a spoon, drizzle the chocolate over half of the cracker and place on parchment paper.

Step 4: While the chocolate is still warm, sprinkle the dipped pieces of matzah with sprinkles and allow the chocolate to cool, about 20 minutes.

Tips and Tricks

  • Chocolate Hack: For shinier chocolate that hardens quickly, feel free to add a couple teaspoons of coconut oil to the chocolate chips to make DIY Magic Shell.
  • Sprinkle Quickly: While the chocolate is still warm, get out your sprinkles and go to town. If you wait too long, the chocolate will harden and the sprinkles will have a hard time sticking, so it’s best to do it right away. It’s no secret that I love my dye-free sprinkles. For this recipe I used these blue and white sprinkles from Supernatural.

Why I Love This Recipe

  • Easy to Make: This Pan Seared Beef Tenderloin is super simple to make with just a few basic ingredients. Plus, no fancy tools needed – just a skillet and your stove!
  • Absolutely Delicious: If you’re looking for the most tender, juicy and flavorful steak – this recipe is the ticket.
  • My Kids Love It: I would describe my daughters as carnivores – they LOVE steak. When I make this beef tenderloin, they’re always saying “More!”. If you’re looking for more recipes for your little carnivores, definitely try Southern Style Pork TenderloinMoroccan Chicken or even Air Fryer Steak.

The Ingredients

  • Beef Tenderloin: We prefer grass fed beef whenever possible. Luckily for us, we have an incredible butcher shop in our neighborhood that almost exclusively sells grass-fed beef!
  • Olive oil: To get that perfect sear all around.
  • Kosher salt: I opt for simple seasoning to let the steak shine, feel free to add fresh cracked pepper or other seasonings you love it you prefer.
  • Butter: This adds flavor and is used to baste the tenderloin to keep it all juicy and delicious.

How to Make Pan Seared Beef Tenderloin

Step 1: Preheat the oven to 350°F. Lightly sprinkle tenderloin with salt (and pepper if desired) on all sides.

Step 2: Heat 1 tablespoon of oil in a large sauté pan over medium/high heat. Sear each side of the steak for 2 minutes.

Step 3: Remove pan from the stove, place in the preheated oven and cook for 6-8 minutes for medium rare and 10 minutes for medium. Remove steak from the oven. Place a tablespoon of butter in the pan, swirl to melt and spoon over the steak.

Step 4: Transfer steak to a cutting board and let rest for 5 minutes before slicing and serving.

Tips and Tricks

  • Room Temperature: If possible, remove your steak from the refrigerator about an hour before cooking to bring it to room temperature. This will help it cook more evenly.
  • For Different Doneness: If you want to cook the steaks to varying doneness levels, cut the beef tenderloin into 4 even filets before cooking. This makes it easier to customize cooking times for each steak.
  • Use a Meat Thermometer: For perfectly cooked filets, aim for 130°F for medium-rare and 140°F for medium. A good meat thermometer will be your best friend!
  • Use an Oven Safe Skillet: If you own a cast iron pan this is the time to use it as they’re oven safe and leave a beautiful sear on the outside of the tenderloin. If you don’t have an oven safe skillet, you can sear it in a sauté pan then transfer to an oven safe dish to finish cooking.
  • Let It Rest: Skipping this step can cause the juices to run out, which is no good! Allow the beef to rest for at least 5 minutes before serving.
  • Serve with These Sides: I love serving this tenderloin with Mascarpone Mashed PotatoesCrispy Smashed Potatoes or Air Fryer French Fries for a steak frites vibe and some sort of veggie like crispy broccoli, Roasted Brussels Sprouts or Grilled Lemon Asparagus.

What’s the best way to cook beef tenderloin?

I love this recipe for cooking beef tenderloin. The quick sear on the pan gives it a nice crust, then finishing it in the oven makes sure it remains juicy and doesn’t over cook!

How do I reheat leftover steak?

I actually prefer to keep leftover steak cold and serve it on a steak salad the next day. But, if you prefer warm, I would gently reheat it in a skillet over low heat with a little butter or olive oil. Avoid the microwave – this will just give you chewy, overcooked steak.

  • Heat 1 tablespoon of oil in a large sauté pan over medium/high heat. Sear each side of the beef tenderloin for 2 minutes.
  • Remove pan from the stove, place in the oven and cook for 6-8 minutes for medium rare and 10 minutes for medium. (See below for internal temperatures and approximate cooking times for each.)
  • Remove steak from the oven. Place a tablespoon of butter in the pan, swirl to melt and spoon over the steak. 
  • Transfer steak to a cutting board and let rest for 5 minutes before slicing and serving.

Notes

For Different Doneness: If you want to cook the steaks to varying doneness levels, cut the beef tenderloin into 4 even filets before cooking. This makes it easier to customize cooking times for each steak.
Use a Meat Thermometer: For perfectly cooked filets, aim for 130°F for medium-rare and 140°F for medium. A good meat thermometer will be your best friend!
Let It Rest: Skipping this step can cause the juices to run out, which is no good! Allow the beef to rest for at least 5 minutes before serving.
Doneness Internal Temperatures: 
  • Very rare: 120-125 degrees (in the oven for 4 minutes)
  • Medium rare: 125-130 degrees(in the oven 5-6 minutes)
  • Medium 135-140 degrees (in the oven 6-7 minutes)
  • Medium well 145-150 degrees (in the oven 8-9 minutes)
  • Well done: 160 degrees (in the oven 10 minutes plus)
