How to Make Tomato Basil Chicken with Burrata

  • Marinate. Add all of the ingredients for the chicken marinade into a large bowl. Then add the chicken and coat it with the marinade.
  • Cook. Place the chicken on the preheated grill and cook on both sides until the chicken reaches 165 degrees Fahrenheit.
  • Prep the Topping. Add the tomatoes, salt, pepper, lemon juice, olive oil, and basil to a medium bowl and stir to combine.
  • Assemble. After the cooked chicken has rested briefly, top it with burrata cheese, tomato basil topping, and balsamic glaze and serve immediately.

Variations

  • Chicken – Swap the chicken breasts with chicken thighs.
  • Olive Oil – Use avocado oil or any other neutrally flavored oil.
  • Italian Seasoning – Try using fresh herbs like rosemary, thyme, or oregano instead.
  • Tomatoes – Use heirloom tomatoes, cherry tomatoes, or Roma tomatoes for a variety of flavors and colors.
  • Fresh Lemon Juice – Try using balsamic vinegar or red wine vinegar for a different tangy twist.
  • Olive Oil in Topping – Use flavored olive oils like garlic or basil-infused for an extra layer of flavor.
  • Fresh Basil – Mix in other fresh herbs like parsley, mint, or cilantro for a unique twist.
  • Balsamic Glaze – Drizzle with a honey balsamic reduction or even a fig balsamic for a sweet kick.
  • Burrata Cheese – Replace with fresh mozzarella, goat cheese, or even a dollop of ricotta for a different creamy experience.

Can I Store Leftovers?

You can definitely store leftovers of this dish! However, you might want to store the components separately, if possible so that you can easily reheat the chicken.

Store leftovers in the fridge for 3-4 days in an airtight container.

While we don’t recommend freezing the burrata, the chicken and the topping can both be frozen in freezer-safe containers for up to 3 months.
