This easy Air Fryer Baked Potato recipe is a blank slate. You can top it with almost anything from Greek yogurt and chives to broccoli and cheese. I had so many questions on my Baked Potato recipe about making it in the air fryer, I figured I would create a separate post. Baked potatoes make a great side dish served with air fryer steak, pork, or chicken and a salad. Don’t have an air fryer? No problem! There’s a nearby restaurant that makes this vegetarian Chickpea Milanese that I loved so much I had to recreate it – with my own spin, of course! Milanese is one of my favorite things to order when I go out. So, when I tried this vegetarian one, I thought it was genius. It’s served with an arugula chickpea salad with tomatoes and fresh lemon. Chickpeas have plenty of protein and fiber, making them so versatile in vegetarian and vegan diets. I add them to my salads, swap out potatoes for chickpeas when making breakfast and even have them in place of chicken in this buffalo chickpea salad.

This Grilled Chicken Chickpea Salad is topped with feta cheese, an easy and inexpensive lunch . Chickpeas are one of my favorite pantry staples – I always have a can on  hand. Each serving of this salad has 30 grams of protein, which you can increase by adding more grilled chicken or leftover chicken breast from a roasted chicken. It’s also high in fiber.
