The spice rub for these air fryer pork chops is the real star of the show.   • Pork Chops: We were able to fit two boneless center-cut pork chops in our air fryer basket. You’ll want chops that are 1-1 1/2 inches thick to ensure they stay nice and juicy.
  • Seasoning: Smoked paprika, garlic powder, onion powder, salt, pepper, ground mustard, and dark brown sugar create a smoky, sweet, savory, and tangy spice rub. Make sure to save extra for dusting on top when you flip the chops– this helps them crisp up beautifully.
  • Cooking Oil: We like budget options like canola or vegetable oil, but olive oil will also work.

Tips For Making Air Fryer Pork Chops

  • Seasoning the chops with the seasoning rub 20-30 minutes before cooking and letting them sit on the counter at room temp will ensure 1. the flavor is as maximized as possible and 2. the outside doesn’t overcook while the inside gets to the proper temperature. Giving your chops a little extra time on the counter before they hit your air fryer ensures that they will have a nice crust on the outside while remaining juicy on the inside!
  • There should be about 1 Tbsp of the seasoning leftover. Save it and sprinkle it over the chops after flipping them. This will help to ensure they stay nice and crispy.
  • Remove your pork chops from the air fryer as soon as they reach 145°F and let them rest for at least 3 minutes before slicing to lock in the juices.

  • Preheat the air fryer to 420ºF for at least 5 minutes. Pat pork chops dry with a paper towel.
  • Drizzle the cooking oil over top of pork chops on cutting board, then add the seasoning mixture. Rub the pork chops until they are well coated in oil and spices. The brown sugar will caramelize in the air fryer and make the texture of the pork chops perfect! Reserve at least 1 Tablespoon of the sugar seasoning mixture to rub on top when you flip half way through!
  • Place the pork chops in the air fryer basket and cook for 7 minutes. Flip, sprinkling reserved seasoning mixture evenly over top and cook for 8 minutes more.
  • Use a meat thermometer to make sure the internal temperature has reached 145ºF, and if not, cook for 1-2 minutes longer.

In a small bowl, combine 1 1/2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp ground mustard, 1/4 tsp onion powder, 4 Tbsp dark brown sugar, 1 1/2 tsp salt, and 1/4  tsp pepper. Preheat the air fryer to 420ºF for at least 5 minutes. Pat 2 boneless center-cut pork chops dry with a paper towel.

These hot and cold spring days have me feeling all kinds of confused about what to make for dinner. One day it’s warm and sunny, and the next it feels like winter all over again. But no matter the mood, I feel like soup is always the right answer, and this Ham and Potato Soup is a crowd pleaser. Creamy but not too heavy, and loaded with fresh veggies and salty ham, this soup is perfect for this transitional season!

What is Ham and Potato Soup?

This rich and creamy soup is made from a base of vegetable broth enriched with milk and butter and stuffed to the brim with fresh veggies, chunky potatoes, and salty ham. It’s real belly-warming food, perfect for taking the chill off!

Ingredients for Ham and Potato Soup

Here’s what you’ll need to make ham and potato soup:

  • Oil: I used olive oil, but a neutral-flavored oil like canola or vegetable oil will also work well.
  • Mirepoix: A base of celery, carrots, and onion builds the flavor of this soup.
  • Potatoes: I used 2 medium potatoes, which came out to be 3 1/2 cups once diced. I prefer to peel my potatoes for this recipe, but you can leave the skins on if you like them!
  • Cooked Ham: You can buy a ham steak or use your leftover ham from our Baked Ham recipe! Vegetarian? No problem. You can leave out the ham and this becomes more of a vegetable chowder and it is delicious!
  • Vegetable Broth: You’ll need 6 cups, or you can dissolve 2 Tbsp of vegetable bouillon in 6 cups of water. You can also use Chicken Broth if that’s what you have on hand!
  • Salted Butter: Adds richness and helps form the roux that thickens the soup.
  • All-Purpose Flour: Combines with the butter to form a roux that thickens the soup.
  • Milk: Adds creaminess to the soup.
  • Salt and Pepper: Enhance the overall flavor of the soup.
  • Parsley: A bit of minced fresh parsley adds some color and freshness to the soup.

What Potatoes Are Best For Soup?

The best potato for any given soup really depends on the texture you’re after.

  • With this soup, I wanted to keep distinct chunks of intact potato, so I went for red potatoes. Other varieties that hold their shape well include new potatoes, baby potatoes, and fingerlings.
  • If you’re looking for your potatoes to soften up a bit more but still mostly hold their shape, Yukon Golds are a great choice for this soup.
  • Starchier potatoes, like Russets, will melt into the soup, making it super thick, but you won’t get the whole potato texture in every bite.

A Note on Salt

You may not need any salt depending on the ham you’re using, so taste often and adjust as you see fit. Between the salted butter, bouillon, and the ham from our Baked Ham recipe, I didn’t have a need for more than a pinch of additional salt.

How Do You Thicken Ham and Potato SOup?

I chose to thicken this soup with what’s known as a “blonde roux.” It’s a mixture of butter and flour that is cooked over medium-low heat until it juuust starts to change color from white to blonde. This deepens the flavor of the soup without overpowering the natural flavor of the other ingredients.

When the holidays roll around (Hello, Easter!), there’s nothing my family craves more than a sweet and savory baked ham. I know what you’re thinking, ham is expensive. But this baked ham recipe is proof that a typically expensive meat can be budget-friendly. By using a boneless ham, we don’t waste a single dollar on bones, and it comfortably feeds 11 people. That’s a lot of ham! The texture of this ham is perfectly juicy with a great chew to it. The glaze makes the outside nice and crisp but still tender. There’s nothing quite like a beloved holiday tradition!

Why Make Baked Ham?

While Easter traditionally calls for lamb, ham has become the dominant centerpiece because it’s much less expensive and more readily available, both things we love here at Budget Bytes. This baked ham recipe is a true superstar. Salty, savory ham coated in a sweet and tangy glaze made from brown sugar and pineapple juice is just so good. The glaze is super sticky, extra sweet, and gives a beautiful color to your ham. Adding the pineapple juice to the glaze recipe really makes this glaze shine (literally and figuratively!)

Ingredients for Pineapple Ham

Here’s what you’ll need to make baked ham:

  • Smoked Ham: We tested a bone-in ham and a boneless ham. Because hams are priced by weight, we found the boneless hams to be cheapest and offered in smaller quantities. We ended up going with a 5.5lb. ham for this recipe.
  • Sliced Pineapple: The pineapple helps keep the ham moist during cooking. Did you know pineapple also contains natural acidic enzymes that help tenderize any meat you cook with it?
  • Water: Helps steam heat your ham and keep it moist. The amount varies based on the size of your roasting pan. You will want 1/2 inch of liquid in the bottom of the pan to ensure your ham is nice and juicy.
  • Spices: Salt, pepper, garlic powder, onion powder, and pumpkin pie spice create a beautiful blend of sweet and savory flavors.
  • Brown Sugar: Adds depth of flavor, a beautiful color and sweetness to the glaze.
  • Dijon Mustard: Adds balancing bitter notes, earthiness and tanginess to the glaze.

Do you bake a ham covered or uncovered?

We found that it’s best to bake this ham tented with foil to seal in moisture. Without the foil, the ham tends to dry out and turn tough. Remove the foil in the last 10 or so minutes of baking to reduce and brown the glaze.

Tips

  • Most hams sold in the U.S. are fully cooked but require several hours of heating in the oven. So, you can pop it in the oven and then focus on the rest of your side dishes!
  • If you do not need this much meat or your budget is stretched because of the cost of the ham, hunt for a smaller ham. Sometimes if you go to the deli counter, they can help you. Hams are sold by weight, so if you plan on 1/2 – 1/3 pound per person, that will help you choose which size ham your family needs!
  • I know the thought of “pumpkin spice ham” may sound strange, but pumpkin pie spice is a blend of cinnamon, cloves, allspice, ginger, nutmeg, and black pepper… all perfect flavors to compliment a juicy, sweet-but-savory ham!
  • I only filled the bottom of our roasting dish with 1/2 inch of water. A lot of recipes call for 1 inch, but the drippings are great for basting or using as a gravy and we found them to be too diluted if we did the 1 inch of water.
  • The pineapples slid off to the side after the glazing at the end, but they did their job keeping the ham moist and tender. The glazing at the end of cooking will make your ham nice and shiny on the outside, so don’t worry about taking your ham in and out of the oven to baste it (unless you want to, certainly won’t hurt it!) You can always opt to just keep it tented and baste at the end.

What to Serve with Baked Ham

This tasty baked ham is truly the star of the show, so we recommend serving it with simple roasted carrots and steamed green beans.

  • Place the ham cut side down in the roasting pan of your choosing.
  • Brush the ham with half the glaze mixture and cover it with slices of canned pineapple. Add 1/2 inch of water to the bottom of the roasting pan.
  • Make a tinfoil tent to cover the entire ham. Place the tinfoil over the ham and bake for 20 minutes per pound of meat, or until the internal temperature reaches 145°F. Baste the ham periodically, using a baster or a large spoon.
  • Once the ham reaches 145°F, remove the tinfoil tent and baste. Then, brush the ham with all remaining glaze.

Creamy Parmesan risotto is comfort food at its finest! Warm, rich, and cheesy, this dish is a perennial favorite. It’s loaded with belly-filling Arborio rice and Parmesan cheese to keep you full and satisfied for under $10. What could be better?!

What is Parmesan Risotto?

Risotto is a magical dish created by slow-cooking starchy rice in broth. Part of the magic is how the rice leeches its starches into the liquid, creating a creamy and rich sauce. This is achieved by adding the broth slowly over a longer period of time and stirring continuously. Most risotto has cheese, and we love Parmesan, so it felt like a natural choice for this Parmesan risotto recipe!

Ingredients for Parmesan Risotto

Here’s what you’ll need to make Parmesan risotto:

  • Vegetable Broth: We used Better than Bouillon to cut costs. You can also substitute chicken broth if you prefer.
  • Dry White Wine: We used a mini chardonnay Bota Box for this recipe, but white cooking wine also works well. If you don’t have white wine on hand, just up your recipe to 5 cups of vegetable broth.
  • Olive Oil: Helps cook the onion without burning it. You can use canola or vegetable oil to cut costs.
  • Yellow Onion: Adds a sweet and earthy flavor to the risotto.
  • Arborio Rice: An Italian, short-grain rice that has a high starch content, perfect for making risotto.
  • Butter: Salted or unsalted is fine, you will just need to adjust any additional salt based on whatever butter you have on hand. We used unsalted butter.
  • Salt and Pepper: Enhance the overall flavor of this risotto.
  • Parmesan Cheese: Provides the majority of the flavor of this dish. We do not recommend using pre-shredded cheese for this recipe. Shred yours fresh!
  • Parsley: Adds a pop of freshness and color.

What Else Can I Add to Parmesan Risotto?

This Parmesan risotto is great as is, but you can also make it your own by experimenting with additional ingredients. Try adding:

  • Sauteed mushrooms
  • Frozen peas
  • Frozen corn kernels
  • Cherry tomatoes
  • Ricotta cheese
  • Crushed red pepper flakes

Tips for Making Parmesan Risotto

  • This recipe requires few ingredients, but it is a labor of love! You don’t want to pour all of the broth in at once, because then you will just have regular boiled rice. Your rice will slowly absorb the liquid and become super creamy if you take your time and follow the directions. Risotto shouldn’t take you much longer than 20 minutes from start to finish. As you can see in the photos, we used up all of the veggie broth, so be patient and watch the magic happen!
  • Risotto is traditionally enjoyed “al dente” with a little chew left to it.
  • Typically, we don’t use wine on Budget Bytes because it tends to hike the grocery bill up and, if you don’t imbibe, you will have a lot leftover and therefore a lot of waste. This is definitely a special date night recipe, so we say you splurge for the wine and enjoy yourselves!
  • If you are vegan or just dairy-free, you can definitely make risotto with vegan butter or margarine and omit the Parmesan cheese.

What to Serve with Parmesan Risotto

We love serving risotto with sauteed asparagus and fresh herbs. It’s also fantastic with sauteed or balsamic roasted mushrooms. YUM!

  • Heat a large deep sauté pan over medium-high heat. Add oil to the pan. Swirl to coat and add your onion and salt. Cook for 5 minutes, stirring occasionally until onions look glossy and clear. Your onions should not caramelize or brown for this recipe.
  • Add the Arborio rice to the pan and stir to combine. Toast the onion and rice together for about 1 minute, stirring constantly.
  • Deglaze your pan with room temperature white wine and let it cook down until there’s just a little left in the pan, about ½ or less of what you poured in.
  • Now, begin adding 1 ladle of hot broth at a time, stirring the risotto constantly until the broth is about 75% absorbed by the arborio rice. I find it usually takes a solid minute or two before I add another ladle of broth. Add another ladle until your entire supply of hot stock has been used up. This step takes approximately 20 minutes total. Once you have used up all of your broth and your Arborio rice is al dente and creamy, remove pot from heat.
  • Stir in butter, pepper, and cheese. Taste and adjust salt, if needed, and finish with the parsley.

Bring 4 1/2 cups vegetable broth to a simmer in a large saucepan. Keep warm over low heat.

This Chicken Marsala recipe is so rich and flavorful, you won’t believe it didn’t come from your favorite Italian restaurant. Your family will be begging for this easy dinner recipe on repeat because it’s just that good!

What is Chicken Marsala?

Chicken Marsala is a classic Italian dish, made from thinly sliced and pounded chicken breasts coated in a wine-based sauce enriched with butter and mushrooms. The mushrooms add what’s known as umami taste, a meaty, savory flavor that makes this dish so craveable.

Chicken Marsala Ingredients

Here’s what you’ll need to make chicken marsala:

  • Vegetable Oil: Helps to cook the chicken and vegetables without burning them. Canola or olive oil also works well here.
  • Chicken: Boneless, skinless chicken breasts are the classic choice for this recipe. Slice them in half and pound them to create what’s known as escalopes.
  • Seasonings: Salt, pepper, and Italian herb seasoning add classic Italian flavor to the chicken.
  • Flour: All-purpose flour creates wonderful browning on the chicken breasts and helps to thicken up the sauce.
  • Mushrooms: We highly suggest using baby bella mushrooms because they have a rich flavor and add earthiness to the dish.
  • White Onion: Cooked white onion adds a touch of sweetness. Yellow or sweet onion will also work, so use whatever you have on hand.
  • Chicken Broth: Forms the savory base of the sauce. We used bouillon because it’s super budget-friendly. Vegetable bouillon or broth is also fine.
  • Marsala Cooking Wine: This has unique sweet, rich, and smoky notes and gives this chicken its signature flavor. Cooking wine is much more budget-friendly than straight Marsala wine since it is shelf-stable so none will go to waste!
  • Butter: Salted butter enriches the sauce, making it glossy and rich.
  • Italian Parsley: Adds a pop of color and freshness to this dish.

What can you use instead of Marsala wine for chicken Marsala?

Can’t find Marsala cooking wine? Try using ¼ cup balsamic vinegar and ¼ cup white grape juice instead. There are red and white marsala varieties out there, but the red kind (sweeter) is what’s typically used in Chicken Marsala. You can also use straight Marsala wine instead of cooking wine.

Does the alcohol cook off in Chicken Marsala?

The process of reducing the sauce will evaporate the alcohol in Marsala wine, but if you’re serving this to kids, you may want to use the balsamic/grape juice alternative. Studies from the FDA show that wine simmered for 15 minutes may still contain up to 40% of its alcohol content. Designated “cooking wines” are not meant to be drunk but they are not alcohol-free. They contain salt and other preservatives which extend their shelf life.

What to Serve with Chicken Marsala

We served our chicken Marsala with cooked bowtie pasta, also known as Farfalle. Any kind of noodle will work, or try olive oil mashed potatoes for a different take. Add a side of lemon butter green beans or lemon garlic roasted asparagus for a well-rounded meal.

  • 8 oz. baby bella mushrooms, sliced (roughly 2 cups) $2.08

Instructions

  • Cut the chicken breasts in half lengthwise. Place one chicken breast at a time in a heavy-duty freezer bag (unsealed) and use a tenderizing mallet (or a rolling pin… whatever is safe and sturdy that you have on hand) to hammer each one 1/4" thin, starting in the thicker middle part of the breasts and working your way to the ends. Repeat this process until all breast pieces are 1/4" thick and equally flat.
  • Combine ½ tsp salt, black pepper, dried Italian herb seasoning, and all-purpose flour in a shallow bowl, reserving 1 Tbsp of flour. Lightly coat the chicken breasts in the seasoning mixture and shake off excess flour. Transfer to a clean plate.
  • Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook on each side for 3-4 minutes. Try to not crowd your pan! You can do this in 2 batches if you need to. Once the chicken is cooked, transfer to a clean plate and cover with foil to keep warm.
  • Turn the heat down to medium. Add 1 tsp sea salt, sliced mushrooms and onions. Spread them out on the pan, flipping as needed so each mushroom piece browns, about 3 minutes. Scrape the bottom of your pan with a wooden spoon as you go; the browned bits on the bottom become a tasty part of your sauce!
  • Add the Marsala wine and broth to the pan, scraping the browned bits off the bottom again. Simmer until the liquid reduces by 1/3, about 4 minutes on medium-high heat.
  • Now, make a slurry with your reserved 1 Tbsp of flour; whisk the flour with a small amount of water or liquid from your cooking pan until there are no lumps. Then, whisk in the flour “slurry”, minced parsley, and butter until it has completely melted. Finally, add the chicken cutlets back, flipping them halfway, cooking for another 4 minutes total. Let the sauce thicken while the chicken finishes cooking in the sauce.
  • Garnish with additional minced parsley and adjust salt and pepper to your liking. Enjoy over any pasta you have on hand!

Every now and then you come across one of those recipes that just leaves you speechless. Well, today I’m introducing you to one of those recipes. This Creamy Garlic Chicken is so delicious, so flavorful, and so easy to make for a quick weeknight meal! It starts with tender, pan-seared chicken breasts that are then covered with a creamy, garlic-infused sauce. The moment my family tried this recipe, they instantly loved it! It honestly took everyone’s breath away. If you love simple recipes that are packed with flavor and made with a luscious cream sauce, then make sure to add this one to your weekly rotation!

Ingredients For Creamy Garlic Chicken

Here’s everything you need to make this creamy garlic chicken recipe:

  • Chicken: If you’ve seen a couple of my recipes, then by now you probably know I love using chicken breasts. So I opted for two boneless, skinless chicken breasts that I cut in half. But you can certainly use boneless, skinless chicken thighs instead.
  • All-purpose flour: A little bit of flour adds a light breading to the chicken breasts and the perfect compliment to the creamy garlic sauce.
  • Garlic: Garlic is the star of the show for this dish, so we’re using lots of it. One whole head of garlic to be exact. The garlic cooks down and infuses the sauce without overpowering the dish. 
  • Olive Oil and Butter: Both are used to cook the chicken breasts and a little more butter is used to sauté the garlic cloves. 
  • Chicken Broth and Heavy Cream: The rich garlic sauce is made with a combination of chicken broth and heavy cream. Both of them simmer together, along with the garlic cloves, until a creamy, flavorful sauce is formed.
  • Seasoning: The chicken breasts are seasoned with a little salt, pepper and Italian seasoning; and the sauce is seasoned with garlic powder plus a little salt & pepper to taste.

Can you eat the garlic cloves?

You may be curious if you can eat the whole garlic cloves with your chicken. The answer is YES! Sautéing the garlic cloves in the butter, then simmering them in the sauce, removes any overpowering, strong garlic taste and leaves a very subtle, delicious flavor. I love to spoon the garlic over the chicken along with the creamy sauce right before serving.

Recipe Tips!

  1. After all the garlic cloves are peeled, I like to carefully smash them with the side of a large chef’s knife by pressing down on the side of the knife with the heel of my hand. Smashing the cloves releases more of their flavorful oils and gives the sauce a stronger garlic flavor.
  2. Make sure you stir the garlic cloves frequently when sautéing them in the skillet with the butter. You don’t want the garlic to burn. As soon as it starts to turn a light brown color, add in the liquids and stir.

What To Serve With Creamy Garlic Chicken?

Creamy sauce recipes like this creamy garlic chicken are perfect to serve with Mashed Potatoes, so the potatoes can soak up all of that extra sauce. You can also serve the chicken and sauce over a bed of pasta or rice, or serve it with a simple side salad or in our case a Caesar salad. You really can’t go wrong with any side that you choose!

  • Ham: Any flavor of deli ham works well.
  • Swiss Cheese: You can also use provolone or cheddar.
  • Panko Breadcrumbs: Create a crunchy coating on the chicken. Regular or Italian-seasoned breadcrumbs are also a good choice.
  • Seasonings: Italian seasoning, onion powder, garlic powder, salt, and freshly cracked black pepper season the chicken. Salt also enhances the flavor of the sauce.
  • Butter: Unsalted butter helps the seasonings and breadcrumbs stick to the chicken, and it also forms the base of the sauce.
  • All-Purpose Flour: A bit of flour helps to thicken the sauce.
  • Milk: Milk adds richness and moisture to the sauce. Any kind works, including non-dairy.
  • Dijon Mustard: A touch of mustard adds just a bit of warmth to the sauce.
  • Worcestershire Sauce: This umami sauce adds incredible depth of flavor.

  1. Place the chicken breast flat on a cutting board and hold your knife horizontally to the cutting board.
  2. Place one hand on the chicken breast to keep it steady, then insert your knife into the center of the chicken breast and begin to cut horizontally until you have almost reached the other side.
  3. Open the chicken breast like a book.

What To Serve With Chicken Cordon Bleu

Chicken cordon bleu is rich and saucy, so it pairs beautifully with simple veggies, like Steamed Green Beans or Oven Roasted Broccoli. Soak up that beautiful sauce with Mashed Potatoes, Rice, or Garlic Herb Mashed Cauliflower.

How to Store Leftovers

It includes lots of chicken, tons of veggies, and THEE best sweet and savory stir fry sauce! It’s also perfect for using up vegetables that you already have on hand in your fridge or freezer. Not only is it great to add to your weekly dinner rotation, but it also makes a lot, so it’s perfect for meal prep! #winning

Why I Love Stir Fry Recipes

I make stir fry recipes quite often because it helps take away the mental stress of worrying about what to cook for dinner. They’re quick, easy to make, and super versatile so you can always switch things up. Just pick your favorite protein, a mix of vegetables, make a yummy stir fry sauce, and dinner is ready in about 30 minutes!

Ingredients For Chicken Stir Fry

Here’s what we used to make this easy chicken stir fry recipe:

  • Chicken Breasts: I use boneless, skinless chicken breasts for this recipe, but if your budget is tight, you can also use boneless, skinless chicken thighs instead.
  • Vegetables: This is where you can really be flexible. I used a combination of broccoli, carrots, red bell pepper, and onion for this stir fry. But feel free to choose different vegetables based on your budget, what’s in season, or what’s in your fridge. Sometimes I’ll use just one or two vegetables because that’s what I currently have on hand. Some other great veggie options are green beans, zucchini, mushrooms, snap peas, or different color bell peppers. 
  • Stir Fry Sauce: A good stir fry sauce will definitely bring the entire dish together. I used our same stir fry sauce from our Vegetable Stir Fry recipe as a base, because it’s sooo good, increased the measurements slightly to make it extra saucy, and added a touch of sriracha sauce for just a little kick!

Stir-Fry Recipe Tips

  1. Make the stir fry sauce first. Stir fry recipes cook fast, so you want the sauce to be ready when it’s time to add it to the skillet.
  2. Use a big wok or very large skillet. In order for all of the chicken and vegetables to fit in the skillet with enough space to cook fairly evenly, you’ll want to use a big wok or large skillet. We used a 12-inch skillet for this recipe. 
  3. Don’t overcook the vegetables. You want the vegetables to just be tender-crisp and vibrantly colored. You can always cook them a little longer once the sauce is added at the end, but if you cook them too long in the first steps you’ll end up with limp vegetables that are a drab color.

What To Serve With Chicken Stir Fry

You can easily serve this chicken stir fry with a side of brown or white rice or give our Coconut Rice a try! And if you really want the full take-out experience, whip up some of our Vegetable Fried Rice to serve on the side.

Storing Leftovers

This chicken stir fry recipe stores very well in the fridge and works great for meal prep! You can make it on Sunday, divide it into equal portions, then store in meal prep containers along with your rice. This dish will stay good in the refrigerator for about four days.
