Shrimp Po’ boys are the perfect sandwich… I said what I said! These easy Po’ Boys are crunchy, creamy, and tangy, with soft, chewy French bread and a subtle ocean flavor from the perfectly cooked fried shrimp. Sigh… they make me think me back to my college days and my first trip to New Orleans. If you don’t have a trip to New Orleans planned, don’t worry! My homemade take on the classic dish means you can whip up a shrimp po’ boy sandwich anytime.

To say New Orleans is a magical place is one of the biggest understatements I can think of as a chef, history buff, and appreciator of the arts. The food is outstanding, the people are full of life, and the pride residents have for the city’s culture is unlike anywhere else in the United States.

The most magical NOLA experience I’ve had was about 15 years ago when I was working with a band destined for South by Southwest in Austin, Texas. After our gig in the French Quarter, we were invited to someone’s house for a crawfish boil. I’m not kidding when I tell you it was the most welcoming and delicious hang I’ve ever been a part of. One of their neighbors was practicing with their jazz band within earshot, and there were fireflies around us in the backyard as we shared the messiest flavor bomb of a meal ever, everyone eating with their hands. Like I said… New Orleans is a magical place.

What Is A Shrimp Po’ Boy?

This sandwich is a staple in New Orleans, served up hot by local restaurants, groceries, and street vendors alike. While it may seem like a simple concept – fried shrimp piled onto French bread and ‘dressed’ with lettuce, tomato, and a tangy remoulade (a mayonnaise-based sauce with mustard and spices) – it’s the history that makes them really special. Extra hot sauce for me, please!

During the 1929 streetcar strike in New Orleans, brothers Bennie and Clovis Martin (of the Martin Brothers’ Coffee Stand) offered free sandwiches to the striking workers to show their support. The original sandwiches were likely loaded with fried potatoes, roast beef gravy, and roast beef scraps. It’s said they would call out, “Here comes another poor boy!” when a striking worker approached—which eventually evolved into the term “po’ boy,” as the sandwiches are known today.

Ingredients

Here’s what you’ll need to make this shrimp po’ boy recipe:

  • Shrimp: Use shrimp that have been peeled and deveined, either fresh or frozen. I’ve included instructions on safely thawing frozen shrimp in the recipe card below!
  • Flour: Dip the shrimp in all-purpose flour to help the egg wash and breadcrumb coating stick.
  • Eggs: Helps the seasoned panko breadcrumbs stick to the shrimp.
  • Buttermilk: Adding buttermilk to the egg wash helps to tenderize the shrimp and create a light, crispy texture. I highly recommend using real buttermilk (the flavor is unbeatable!), but you can make buttermilk by using milk and vinegar in a pinch. Mix ⅓ cup of milk with 1 teaspoon of white vinegar and let it sit for 5 minutes before using. 
  • Panko Breadcrumbs: These absorb less oil than other breadcrumbs, giving the shrimp a lighter and crispier texture. Use plain panko breadcrumbs with no added seasonings.
  • Vegetable Oil: For frying the breaded shrimp. Any neutral-flavored oil with a high smoke point will work. Canola and grapeseed oil are good alternatives to vegetable oil for shallow frying.
  • Baguette: Traditional shrimp po’ boys are made with New Orleans-style French bread… but this isn’t always readily available outside of NOLA. I used a fresh baguette, and it was a great substitute!
  • Seasonings: Tony Chachere’s creole seasoning adds an authentic kick to the shrimp. I also add some Tony Chachere’s to the remoulade, along with smoked paprika, cayenne pepper, and fresh parsley. 
  • Remoulade Sauce: I make a quick and easy homemade remoulade sauce using mayonnaise, grainy mustard, garlic, dill pickle relish, horseradish, Worcestershire sauce, seasonings, and hot sauce (I like the Louisiana brand). If you don’t want to buy a full-size bottle, I recently saw the mini bottles of Louisiana brand hot sauce in the $1 sauce display at Walmart!
  • Iceberg Lettuce and Roma Tomatoes: Crisp iceberg lettuce and juicy Roma tomatoes add a refreshing crunch to your fried shrimp po’ boy sandwich.

Are Po’ Boys Always Shrimp?

Nope! Shrimp po’ boys are probably the most popular, but you can have any type of filling you desire. A little walk down the streets of New Orleans, and you’ll find po’ boys stuffed with anything from roast beef and gravy to fried oysters or catfish and even alligator sausage! You could make a killer veggie option, too, using fried green tomatoes or BBQ tofu.

Storage Instructions

The fried shrimp will last for 3 days in the refrigerator, but will not be as crispy as when freshly-made. Let the shrimp cool completely before storing them in an airtight container. To reheat, pop them in the air fryer at 350°F for 2-4 minutes, or in the oven at 350°F for 5-7 minutes, flipping halfway. Store the shrimp po’ boy sauce in an airtight container in the refrigerator for up to a week. Just give it a good stir before serving! It makes a great dip for fresh vegetables, too!

Instructions

  • In a heavy bottomed skillet, heat up the vegetable on medium heat. The oil should be around 350 to 375 degrees, but hotter than that will burn your oil and result in poor flavor. You can use a meat thermometer to check.
  • Once your oil is ready to fry, use tongs or a fork to place enough shrimp in the oil without overcrowding. Flip after 1-2 minutes with tongs. (Just 1-2 minutes on each side will do!)
  • Place the fried shrimp onto a plate lined with a paper towel to drain excess oil.
  • Once your shrimps are all golden fried, make your shrimp Po’ Boys! I recommend you be generous with that remoulade! Enjoy with shaved iceberg lettuce, extra hot sauce, and chopped tomatoes in a sliced baguette.

* Other suitable oils for shallow frying include: avocado, canola, corn, safflower, sunflower, and grapeseed oil. Vegetable oil is a budget-friendly blend of oils with high smoke points of 400–450°F and it’s flavor is neutral.
** Po’ Boys are typically served on a freshly made French bread, but the best we can do here that’s widely available in Nashville is a baguette, so hopefully this works for you, too, wherever you call home!

Whisk to combine and set aside.

We’ve got the grill fired up here at Budget Bytes and that means it’s officially summertime, baby! And what better way to kick off grilling season than with a juicy, flavorful Turkey Burger? I know the combination of soy sauce, panko, and parmesan might sound strange, but it’s the magical combination that put these turkey burgers on regular menu rotation at my house. My husband loves turkey burgers and always requests his with a slice of sharp cheddar cheese or extra grated Parmesan on top. Give it a try!

Turkey burgers can be a tricky thing, but there’s no need to fear them! They are extremely lean in comparison to beef burgers, so it’s important to pay close attention and pull them as soon as they reach the proper temperature to prevent them from turning out dry. If you REALLY want to enjoy your turkey burger, step one is: don’t expect it to be like a beef burger. Get ready for a completely different experience (and new future craving!)

Ingredients

Here’s what you’ll need to make a turkey burger:

  • Ground Turkey: I found 85% lean and 15% fat to be the best ground turkey for turkey burgers, but any fat % will come out delicious with this recipe.
  • Soy Sauce: Adds seasoning and a pop of umami to the turkey.
  • Parmesan Cheese: Gives this burger some of the fat content it would otherwise be missing.
  • Panko Breadcrumbs: Helps give the turkey a more pleasant texture… do not skip the panko! During my recipe testing, I found that panko specifically sends this burger over the top whereas regular breadcrumbs didn’t help the texture as much.
  • Hamburger Buns: Of course, you can’t have a burger without a delicious bun! I recommend using your favorite store-bought buns.

Toppings

This simple turkey burger recipe leaves plenty of room for interpretation, so raid the fridge and create your masterpiece! I added lettuce, tomato, red onion, and sharp cheddar cheese to mine. Here are some other ideas:

Tips and Notes

  • Turkey burgers, in general, have a much softer texture than a beef burger with a mild flavor. It’s important to use binders (cheese and breadcrumbs in this case) to keep the meat from falling apart and to keep the texture being too soft or mushy.
  • I find flattening any burger patties a little extra helps keep them from tightening up into little meatballs during the cooking process. When we apply heat to protein during the cooking process, the protein contracts, which causes ground meat to shrink a bit on the grill.
  • Handle the burger patties gently, and resist the urge to flip them often on the grill to keep them from falling apart.
  • I like to pull my turkey burgers off the grill when they are around 160°F. Then, I cover them with aluminum foil and let them rest for up to 5 minutes so they finish cooking but stay nice and juicy.

Serving Suggestions

I love serving a healthy turkey burger with a side of Super Fresh Cucumber Tomato Salad and Air Fryer Potatoes. It’s all about balance!

I’m on a roll with these air fryer recipes y’all! And since I loved how well my air fryer chicken nuggets turned out, I wanted to try some air fryer chicken tenders next. This time I combined panko and regular breadcrumbs for the perfect texture and I used chicken breast tenderloins to make things super easy. They’re perfectly golden and crispy on the outside, juicy on the inside, and a lot fresher than frozen chicken tenders! So get your favorite dipping sauce ready, because these air fryer chicken tenders are perfect for a quick & easy lunch or dinner meal.

Ingredients You’ll Need

Here’s everything you need to make these crispy air fryer chicken tenders:

  • Chicken Breast Tenders: I like purchasing the chicken that is already cut into tenders or tenderloins. But you can also make your own tenders by cutting a boneless, skinless chicken breast lengthwise into strips.
  • All Purpose Flour: A light coating of flour helps the egg coating adhere to the chicken. 
  • Eggs: Eggs help the breadcrumb mixture adhere to the chicken tenders. You can also use buttermilk instead of eggs like we did for these air fryer chicken nuggets.
  • Panko and regular breadcrumbs: I used a combination of panko breadcrumbs and regular breadcrumbs. The regular breadcrumbs are finer in texture and provide a more even coating. The panko breadcrumbs give the tenders that crispy crunch that I love. Combined they provide the perfect balance.
  • Seasoning: A mix of salt, pepper, Italian seasoning, smoked paprika, garlic & onion powder, flavors the chicken and the breadcrumbs.

Recipe Tips For Success!

  1. When adding the breading, roll and press the chicken tenders into the breadcrumb mixture making sure it’s completely coated evenly all the way around.  
  2. Don’t crowd the basket. Making sure there is enough space around each chicken tender allows the hot air to circulate evenly and helps the tenders get nice and crispy. So cook the chicken tenders in two separate batches if you need to.
  3. Don’t forget to preheat the air fryer. Similar to preheating your oven, it’s a good idea to preheat your air fryer so the chicken tenders can cook evenly and get crispy on the outside.
  4. Spray the tops of the chicken tenders with cooking spray and repeat when it’s time to flip the tenders. This also helps the tenders to get crispy on both sides!

What to Serve with Air Fryer Chicken Tenders

Enjoy these easy chicken tenders with a side of roasted broccoli, air fryer french fries, or a simple Caesar salad. It can be pricey if ordering at a restaurant, but we have developed a budget conscious recipe that can be made at home. With some simple technique and a little bit of patience, you can make this savory, cheesy, saucy dinner recipe in under an hour!

What is Chicken Cordon Bleu?

Chicken cordon bleu is made by butterflying a chicken breast and stuffing it with slices of creamy, melty Swiss cheese and salty deli ham. The whole thing gets rolled up, dipped in breadcrumbs, and doused in a creamy sauce for the ultimate decadent dinner. While it can be expensive when ordering out, our version is more cost effective but equally as delicious.

Ingredients For Chicken Cordon Bleu

  • Boneless Skinless Chicken Breasts: You’ll need 4 large chicken breasts for this recipe so there’s plenty of room to stuff them. Look for ones that are about 7-8 ounces each.
  • Ham: Any flavor of deli ham works well.
  • Swiss Cheese: You can also use provolone or cheddar.
  • Panko Breadcrumbs: Create a crunchy coating on the chicken. Regular or Italian-seasoned breadcrumbs are also a good choice.
  • Seasonings: Italian seasoning, onion powder, garlic powder, salt, and freshly cracked black pepper season the chicken. Salt also enhances the flavor of the sauce.
  • Butter: Unsalted butter helps the seasonings and breadcrumbs stick to the chicken, and it also forms the base of the sauce.
  • All-Purpose Flour: A bit of flour helps to thicken the sauce.
  • Milk: Milk adds richness and moisture to the sauce. Any kind works, including non-dairy.
  • Dijon Mustard: A touch of mustard adds just a bit of warmth to the sauce.
  • Worcestershire Sauce: This umami sauce adds incredible depth of flavor.

How to Butterfly a Chicken Breast

  1. Place the chicken breast flat on a cutting board and hold your knife horizontally to the cutting board.
  2. Place one hand on the chicken breast to keep it steady, then insert your knife into the center of the chicken breast and begin to cut horizontally until you have almost reached the other side.
  3. Open the chicken breast like a book.

What To Serve With Chicken Cordon Bleu

Chicken cordon bleu is rich and saucy, so it pairs beautifully with simple veggies, like Steamed Green Beans or Oven Roasted Broccoli. Soak up that beautiful sauce with Mashed Potatoes, Rice, or Garlic Herb Mashed Cauliflower.

How to Store Leftovers

Once cooked and cooled, store chicken cordon bleu in an air-tight container in the refrigerator for up to 3 days. If you plan to freeze this dish, I recommend doing so before baking it for the crispiest results. It will keep well for up to 3 months. Simply thaw overnight in the refrigerator, then bake as directed.

  • To make the sauce, melt the butter in a saucepan over medium heat. Stir in the flour. Then, slowly pour in the milk while whisking to incorporate.
  • Add in the Dijon mustard and Worcestershire sauce. Season with salt. Spoon the sauce over the chicken.

Homemade fish sticks are easy to make, deliciously crispy on the outside, and light, flakey, and moist on the inside.

Every now and then I get a MAJOR craving for fish sticks, but I’m not really a fan of store-bought frozen fish sticks. So instead, I use this homemade fish sticks recipe to get my fix. They’re surprisingly simple to make, they’re deliciously crispy on the outside, and light, flakey, and moist on the inside. Dip them in some homemade tartar sauce and I’m in heaven!

Fish sticks are seriously easy to make. They have two main components, the fish and the crispy breading. Super easy! Once you make your own fish sticks at home, there’s no going back to frozen.

Ingredients for Fish Sticks

Here’s what you’ll need to make these homemade fish sticks:

  • White Fish: You’ll want to use a mild white fish to make fish sticks, like cod, flounder, tilapia, or grouper. I used frozen flounder this time around because that’s what was available at the store for a good price, but I’ve also used cod many times. Frozen fish is usually a little more affordable than fresh, and it works great for fish sticks!
  • Flour, Eggs, Breadcrumbs: The crispy breadcrumb coating is made with just a few simple ingredients: flour, eggs, and Panko breadcrumbs (plus a little seasoning). Panko is the best type of breadcrumb for fish sticks because it’s extra light and crispy, so it doesn’t overpower the delicate fish.
  • Seasoning: You’ll definitely want a little seasoning to keep your fish sticks from being boring, so I made it easy by adding a Creole seasoning blend that includes salt. Any type of seasoning salt will work well.
  • Oil: Use high-heat cooking oil to shallow fry the fish sticks, like canola, vegetable, peanut, light olive, or sesame oil (not toasted).

Alternate Cooking Methods

I chose to shallow fry my homemade fish sticks because it’s SUPER fast and creates the most crispy and delicious bread coating. If you’re not a fan of this method, it is possible to bake them in an oven or use an air fryer, although the results won’t be quite as scrumptious. Here is how to cook fish sticks in an oven or air fryer:

Baked Fish Sticks: Preheat the oven to 400ºF. Stir 2 Tbsp cooking oil into the seasoned Panko breadcrumbs (this helps the fish sticks brown and crisp evenly). Place the breaded fish sticks on a wire cooling rack placed on a baking sheet. Bake the fish sticks for 10-15 minutes, or until golden brown and cooked through.

Air Fryer Fish Sticks: Preheat the air fryer to 400ºF. Stir 2 Tbsp cooking oil into the seasoned Panko breadcrumbs (this helps the fish sticks brown and crisp evenly). Place the fish sticks in the air fryer basket in batches, being careful not to overcrowd the air fryer. Cook the fish sticks at 400ºF for 8-10 minutes, or until lightly golden.

Seasoning Ideas for Fish Sticks

I used Tony Chachere’s to season my fish stick recipe, but there are a lot of other great seasonings that would also work well. Just remember, if the seasoning blend you use does not contain salt, you’ll need to add about 1/4 tsp to the flour mixture and 1/2 tsp to the panko breadcrumbs. Here are some alternate seasoning ideas for your homemade fish sticks:

What to Serve with Fish Sticks

You’ll probably want a little something delicious to dip your fish sticks in, so I would suggest a creamy tartar sauce, a zingy comeback sauce, creamy-tangy mayo ketchup, or plain ketchup (if that’s how you roll).

To round out your fish stick meal, try pairing them with a creamy coleslaw or a zippier cumin lime coleslaw, go “fish and chips” style with some steak fries, or get some greens with a side of roasted broccoli. Or, go full on comfort food with some creamy mac and cheese. ;)

  • 1 lb. white fish $6.00
  • 1/2 cup all-purpose flour $0.16
  • 2 tsp Tony Chachere's seasoning, divided* $0.20
  • 2 large eggs $0.18
  • 1 cup panko breadcrumbs $0.62
  • 1/4 cup cooking oil $0.16

Instructions

  • If the fish is frozen, thaw completely, then pat with a paper towel to remove any excess moisture. Cut the fish into "sticks" about three inches long and ½-inch wide, and no more than ½-inch thick (if using a thicker fish filet).
  • Prepare the breading by combining the flour and 1 tsp seasoning (Tony Chachere's or seasoning of choice) in a bowl. In a separate bowl, whisk the eggs. In a third bowl, combine the panko breadcrumbs and remaining 1 tsp seasoning.
  • Begin to bread the fish sticks by dipping them one at a time into the flour, then egg, then panko breadcrumbs. Place the breaded fish sticks on a plate or cutting board once breaded.
  • Heat the cooking oil in a small skillet over medium heat. When the oil is hot enough that a breadcrumb dropped into the pan sizzles strongly as soon as it hits the oil, you're ready to fry the fish sticks.
  • Fry the fish sticks in batches, making sure not to overcrowd the pan, frying for 2-4 minutes on each side or until the breading is golden brown. Transfer the fried fish sticks to a paper towel-lined plate to drain as you fry the rest. If the oil gets too hot as you fry, remove the pan from the heat to allow it to cool slightly before continuing. Do not let the oil smoke. If needed, add slightly more oil and allow it to fully heat before cooking more fish sticks.
  • Allow the fish sticks a few minutes to cool slightly before enjoying with your favorite dipping sauce.

How to Make Fish Sticks – Step by Step Photos

Thaw about 1 lb. of white fish, then dab with a paper towel to remove excess moisture. I used flounder because that’s what was available, but cod, tilapia, or grouper all work great.

Cut the fish into “sticks” about three inches long and ½-inch wide. If you are using thicker pieces of fish, like a cod, filet the pieces in half to make sure they are not thicker than ½-inch.

Prepare the ingredients for the three layers of the breadcrumb coating. In one bowl, combine ½ cup flour with 1 tsp Tony Chachere’s seasoning (see blog text above for alternate seasoning ideas). In a separate bowl, whisk two large eggs. In a third bowl, combine 1 cup Panko breadcrumbs with 1 tsp Tony Chachere’s seasoning.

Begin breading the fish sticks by first dipping them in the seasoned flour, shaking off the excess, then dipping them into the whisked eggs, and finally into the seasoned breadcrumbs until fully coated. Place the breaded fish sticks on a plate or cutting board.

Add ¼ cup high-heat cooking oil (like canola, vegetable, peanut, light olive oil) to a small skillet and heat over medium. Test the heat of the oil by dropping in a pinch of Panko breadcrumbs. When the breadcrumb sizzle furiously as soon as it hits the oil, it’s ready to fry the fish sticks. Work in small batches, taking care not to overcrowd the pan. Fry the fish sticks for 2-4 minutes on each side, or until golden brown. If the oil becomes too hot, take the pan off the heat for a moment or two before proceeding. If the oil begins to smoke, take it off the heat immediately.
