As usual, I’m a million years late on the trend, but I have the most delicious crispy smashed chickpea tortilla wrap for you today. It’s loaded with veggies and so, so filling – perfect for lunch or a quick and easy dinner.

And it’s crunchy. Super textured. And so seriously flavorful. 

I love it!

This tortilla wrap is filled with so many delicious ingredients, folded and toasted until crispy in the pan. It’s warm and crisp and ridiculously satisfying, no matter what you stuff in it. This has been all over tiktok and instagram for a year or two now. And I’ve made a few versions at home for us, whether it be for lunch or dinner. Nothing seemed exciting or new enough to share with you here. 

Until now! I’ve found the best veg-focused wrap fillings that I not only love, but come together quickly, are unique and delicious and will make for an exciting new lunch for you to try.

Here’s the quick rundown for what’s inside:

Avocado.

Chickpeas, smashed perfectly.

Lemon and garlic, for said chickpeas.

Roasted red peppers.

Crumbled feta cheese.

A touch of red wine vinegar.

Lots of fresh spinach.

I make two quick mixtures for this wrap.

First up, roasted red peppers and feta. I like to chop up roasted red peppers then toss them with a bit of the olive oil from the jar, some crumbled feta and crushed red pepper. This is the perfect flavor bomb. Simple, but really packs a punch. It’s sweet, savory, tangy and creamy. I could eat this on just about any sandwich or salad. 

Next, avocado smashed chickpeas. I adore this too. You can make this alone for a quick toast topper or croissant. I mash the avocado and canned chickpeas with some garlic, lemon, salt and pepper. You can mash it as much as you’d like or leave it chunky. I prefer it somewhere in between. I love the texture of smashed chickpeas and the avocado helps hold it all together.

For this tortilla wrap, I only fill three of the four quarters. In testing the recipe I found that this was best, because it didn’t make it overstuffed, especially when toasting in a skillet. Since the smashed chickpeas and the roasted red peppers have a chunkier texture, the tortilla is PACKED. I do fresh spinach on another quarter and if you really want, you can add in pickled onions or another spread or dressing in the fourth.

I fold this up, toast it in a hot skillet with a little bit of olive oil. The entire thing is warmed and crispy. It’s such a delicious combo.

I serve this with some quick pickled onions – you can also do a balsamic glaze (so good!) or even a ranch drizzle. A vinaigrette, sauce or more hummus would work too.  (more…)

Garlic bread grilled cheese. It’s a thing. At least, let’s make it a thing. One that we can never forget!

A super roasty savory garlic butter spread on sourdough and toasted until golden and cheesy and crispy and melty and… it’s just everything. Grilled cheese, elevated. Grilled cheese, fancy, but not. 

I’m just not sure I can eat grilled cheese any other way now.

This is truly the most indulgent grilled cheese – it’s perfect for garlic lovers but also just anyone that adores fun flavor. My first test of these happened when we had a house full and I cut them into tiny strips. They disappeared almost instantly! A buttery, melt-in-your-mouth sandwich that cannot be ignored. I am telling you it is the best thing to make this week. 

Also, if you need soup, it goes fabulously with my favorite tomato soup recipe. They are the best combo ever.

Here’s how I do it!

I make the garlic butter first. I love to use roasted garlic cloves for this or even better – my garlic confit. The recipe for the confit is in Everyday Dinners and it is divine! 

The roasted garlic cloves get mixed into softened butter with parmesan, some salt and fresh herbs. Oh my word. It’s so delicious. In the summer, I make this butter mixture all the time for garlic bread on the grill. I use the leftovers for pan-roasting vegetables or even grilled chicken. It’s versatile!

Today, like a complete lunatic, I’m spreading it on sourdough bread for the perfectly garlicky grilled cheese. It will CHANGE THE GAME when it comes to grilled cheese.

For the cheese itself, I love to use freshly grated fontina cheese. It’s the meltiest cheese and just so fantastic. But of course, any cheese works! Use your favorite cheese because just about anything goes with garlic bread. This is a fact.

Then, I mean… I toast it. Just like a regular old grilled cheese. Low and slow.

The garlic-buttered bread slices get stuffed with the grated fontina cheese and hang out in a skillet for a bit until super toasty, golden, crunchy, buttery and melt-in-your-mouth delish.

Cue all the exclamation points. These are so delicious, so satisfying, so incredibly wonderful for lunch or dinner.

These soft tortillas are filled with the crunchiest lemon chicken cutlets, topped with crisp romaine lettuce, drizzled with my homemade lemon caesar dressing and sprinkled with parmesan.

They.are.so.good.

If you’re a sandwich or a wrap person, you’re about to lose your mind. These are dreamy. They are wonderful when made fresh and served slightly warm or prepped ahead of time for lunch and enjoyed chilled. They taste like they came from your favorite boutique cafe – and they’re worth making the chicken AND the dressing.

That’s right, we’re making crispy lemon chicken cutlets and a lemon caesar dressing. Both are fantastic, and you can add them to the list for salads, sandwiches, pretty much anything. 

You can use any kind of chicken for this. In the summer, I’m always a fan of grilled chicken. I also love to use my crispy chicken cutlets, which is what I show you here in the photos and recipe below. I add some lemon zest to the breadcrumbs and slice the chicken as thin as I can. Like, paper thin! Thin chicken cutlets make for the crispiest, best bite and we adore them like this.

So I use breadcrumbs, a bit of parm and the lemon zest. A quick dip in egg, the breadcrumb mixture and then I cook in a pan in olive oil until super golden and crisp. With thin chicken breasts like this, they easily cook in the pan quickly. If I use thicker chicken breasts, I will brown them until golden and stick in an oven at 350 degrees for 10 minutes or so to ensure they are finished.

Of course, I use our favorite greek yogurt caesar dressing for this. I know I ramble on and on about how delicious this recipe is, but it has been in the rotation over here for over a decade. I make it constantly – almost once a week. It’s easy, simple, can be made in a blender and stored in the fridge for about a week. It’s perfect. 

The dressing already calls for lemon juice, so to up the lemon flavor, I add some fresh lemon zest too. Ooooh the lemony zing is so good. I’ve made it a few more times with the lemon zest for caesar salad and I can’t recommend it enough – especially if you’re a crazy lemon fan.

Once the chicken and dressing are made, you need a tortilla or a wrap (I love the lavash wraps, Eddie loves a burrito-sized tortilla), some grated parmesan and a bit of fresh chopped romaine. The crispier the romaine, the better. It adds a refreshing crunch and brings the whole thing together.

I love to use leftover chicken and dressing for salads, or make extra wraps for the next day. We think they are delicious straight from the fridge!

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 6 or 8 cutlets
  • 1 ½ cups seasoned bread crumbs
  • cup finely grated parmesan cheese
  • 3 teaspoons freshly grated lemon zest
  • 1 large egg, lightly beaten
  • 2 to 3 tablespoons olive oil
  • 4 wraps or large tortillas
  • 4 cups chopped romaine lettuce

  • 4 garlic cloves, minced
  • 3 tablespoons greek yogurt
  • 2 tablespoons finely grated parmesan cheese
  • 1 tablespoon dijon mustard
  • 2 teaspoons red wine vinegar
  • 2 teaspoons freshly grated lemon zest
  • 1 teaspoon anchovy paste
  • ½ lemon, juiced
  • kosher salt and pepper
  • cup extra virgin olive oil

Instructions

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. You want THIN slices - ones you can almost see through! I get 3 to 4 thin slices from one chicken breast. Season the chicken all over with salt and pepper. Line a baking sheet with paper towels.
  • Place the eggs in a shallow plate or bowl. Stir together the breadcrumbs, lemon zest and parmesan in another plate or bowl.
  • Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. I like to heat the oil for a good 5 minutes before adding the chicken. Watch the heat the entire time - if it seems to be too hot, make sure to lower it!
  • Dip each piece of chicken into the egg, then into the breadcrumbs, pressing gently so the crumbs adhere.
  • Add the chicken 2 to 3 pieces at a time. Cook on each side until deeply golden, about 3 to 4 minutes per side. This should cook the chicken the entire way through, but take the temperature to make sure it is 165 degrees F inside if you’re unsure. Remove each piece of chicken and place it on the paper towel-lined sheet. Repeat with remaining chicken.
  • This reheats great! I store mine in foil in the fridge and reheat in the oven or air fryer until warm.
  • Now it’s time to build your wrap! Heat the tortilla in the microwave for a few minutes or even the oven for 1 minute. Place a handful of lettuce in the center of the wrap. Top it with a few pieces of chicken. Drizzle on 1 to 2 tablespoons of caesar dressing. Top with parmesan cheese. Fold up the top and the bottom of the tortilla, then roll the sides in tightly to wrap it up.
  • Serve with extra dressing for dipping.

  • To make the dressing, add the garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, lemon zest, and a big pinch of salt and pepper to a food processor or blender and blend until pureed. With the processor still on, stream in the olive oil until a creamy dressing forms. (This may make more dressing than needed, but you can store it sealed in the fridge for about 3 to 4 days and stir well before using.)

Especially when it’s drizzled with homemade BBQ sauce and topped with a crisp refreshing slaw. This is my go-to pulled pork right now. Can’t beat it!

This root beer pulled pork is served on hawaiian slider buns and topped with the crunchiest, creamiest jalapeño apple slaw. A big drizzle of root beer BBQ sauce on top goes a long way too. 

These are super fun for a party, game day or even just dinner tonight. 

Plus, they are fairly simple. Even though there is a bit going on in this recipe, the pork gets made in the slow cooker overnight and you chop up everything for the slaw the next day. Easy as that!

Plus, it’s super easy to serve too. I love making a big pan of pull apart sliders for guests. Everyone goes crazy over them too.

To bring this pork together, I threw a bit of root beer in the slow cooker with the pork overnight. I used the rest of the root beer to make my homemade root beer BBQ sauce which is probably my favorite BBQ sauce of all time. LOVE. It’s tangy, sweet, tart and just the right consistency. Plus it is absolutely wonderful on the pork. 

When the pork is finished, I drizzle in the BBQ sauce and toss it well so everything gets mixed and married. The flavor is AMAZING.  

You will want to eat it straight out of the slow cooker. I always do.

P.S. I am STILL using this multi cooker slow cooker seven years later. It’s great. I’m not sure I’ve ever used an appliance this long aside from my stand mixer. I love that you can sear/brown meat right in the crock. It’s so easy and makes clean up a breeze. It’s a huge time saver too.

Let’s talk about this incredible slaw. It’s crunchy. And it’s slightly creamy. However, it’s also tart, has a tiny bit of heat and is a little sweet too. It’s super crisp and refreshing. 

Here’s the thing. I am not a creamy slaw person. 99% of the time I prefer my slaw to be vinegar-based. Very crunchy, briney and not creamy at all. However, I can make an exception ever so often and that’s how we ended up here.

This creamy jalapeño slaw is so super delicious. First, it balances out the tangy homemade BBQ sauce on the pork. That sauce is extra-vinegary so I like having something creamy and tart with a little spice to balance things out. Second, this doesn’t just have to be a topping. You can serve this as a side salad or make it a base for a slaw with more ingredients. It’s very versatile!

The slaw has cabbage, red onion, apples and jalapeños. A little cilantro too. I remove the seeds from the jalapeños just to keep out some of the heat. Then toss with the dressing.

The creamy dressing has greek yogurt, some mayo, a little sugar and even mustard powder. A few other ingredients that pack a punch. It’s the perfect combination! Again, I eat it right out of the bowl.

The slaw on the sandwich really takes this over the top. There are so many textures and complimentary flavors going on – it works so well. You can serve them as sliders like I did on a slab of hawaiian rolls or make single sandwiches with these. 

If I was serving this for Halloween next week (which I might!), I would keep my pork in the slow cooker, my slaw in a bowl and have a basket of hearty buns next to them. This allows people to build their own sandwiches at their own pace, and the bread doesn’t get soggy.

If you want to make these for dinner or a game day treat where everyone is really hungry and going to eat immediately, I suggest going the hawaiian roll slab route. They pull apart, are tiny which means you still have some room for other snacks and apps and are fun to eat too. Just make sure they are consumed right away, because those buns are soft and will absorb the sauce, pork and slaw mixture and then start to break down. (more…)

Lunch has always been a struggle for us. Working from home, you think it wouldn’t be, but unless we have leftovers from the night before (which we often do, we’re masters at cooking for 4 despite there being only 2 of us) our well of lunch-inspiration is disappointingly shallow.

We went through a long stretch of cheesiness (get it, cheese? stretch?) with grilled cheese, quesadillas, or cobbled together cheese and crackers being the most common of our lunch choices, along with the holy trinity of ‘salad’ sandwiches (chicken salad, tuna salad, and egg salad).

But in an effort to eat a bit less cheese, we turned to wraps, and quickly realized that basically any kind of sandwich or salad (or salad sandwich), can, in actuality, become a wrap.

Still, as good as a chicken caesar salad or turkey club wrap is, it gets repetitive after the first week or two. And the quickest way to turn us off from something is to overdo it. Needless to say we try to mix up the wrap flavors regularly to keep it fresh, so we’re always looking for inspiration.

This is for everyone who loves every version of grilled mexican street corn!

This little grilled cheese doesn’t look like much but I can’t even explain how much it is bursting with flavor. We have sweet corn, melty cheddar, crumbly cotija and salty chili lime seasoning with a kick. Every bite is something special and it’s more delicious than I can even explain!

I love a classic elote recipe and while I’ve never made one that is traditional and authentic, it’s an item on the menu that Eddie and I can’t resist. The flavors are so delicious and crunchy and wonderful.

So I’ve wanted to make a version of summer corn grilled cheese for years now and this one came at the perfect moment.

These flavors together create absolute magic, with the sandwich tasting about a thousand times better than I expected. With the combination of the outside spread, the cheese, the crunchy corn and the toppings, this takes a traditional grilled cheese over the top and makes everything feel extra fancy and special.

There is a ton of texture, so much crunch, so much cheese! 

As if I need to explain how much I adore grilled cheese.

Okay, this is how it comes together! 

I grill the corn first and slice it off the cob. You can do this however you wish – use leftover corn, don’t grill it at all, whatever is easiest. The key is to have good, crisp fresh corn here – that is what makes it great. Of course, if you’re making this in the off season, manage with what you can find.

We start with a cilantro lime butter. Oooooh yes. Fresh cilantro and lime and salt in a softened butter. That’s going to be the spread on the outsides of the bread! You can also use mayo in this situation if you want to keep that element in the recipe.

The inside of the grilled cheese consists of the corn, some grated cheddar cheese and thinly sliced scallions. Lots of flavor here, the corn stays relatively crisp and if you use sharp cheddar… it’s perfect. 

After cooking the grilled cheese in a pan, out come the toppings. I like to sprinkle on cotija cheese, some chili lime seasoning (I love tajin) and fresh cilantro. You could also do a tiny mayo drizzle if you wish.  (more…)
