After all, leftovers are the best part!

I also love to make a chicken soup that feels like it can bust through any cold during this crazy fall season. Our house has been sick off and on for the last few weeks and making a citrusy soup is comforting and soul warming. 

Takes some of the worst out of those colds!

Also, we have to note that this is an excellent recipe to use for leftover turkey! Replace the chicken with turkey and you have a delightful soup that can last through the weekend and keep you full. 

And! Since it doesn’t have noodles in it, you don’t have to worry about them soaking up all the broth. Making this a truly ideal leftover soup.

Here’s how I make it!

This soup is incredibly easy. At the same time, it’s loaded with flavor. Thanks to the garlic and ginger powerhouse, the broth is rich and tangy and has a lovely bite to it. 

The base is made with onions, garlic and fresh ginger – like, a lot of it. I like to use at least three or four tablespoons of fresh minced ginger. This can change based on your preferences. Add a little more or less.

I like to use a good quality chicken stock or even a chicken bone broth too. Something that has an excellent depth of flavor to it.

The chicken can be shredded for a rotisserie chicken or it can be leftover chicken from your dinner the night before. I use at least a cup of chicken, maybe two. Again, this just depends on your own preferences! Don’t be afraid to add a little something more or less based on what you and your family love. 

While the soup is cooking, I make a batch of cilantro lime rice. I LOVE serving the soup over this. It makes it feel super hearty and the flavored rice tastes fancy and special. It gives it a little something extra than just regular old white or brown rice.

I store these separately and I serve them separately! I like to allow everyone to take a scoop of rice for their bowl. Then, ladle the chicken soup over the rice. 

Finally, the toppings. Some extra cilantro. Another spritz of lime.

Creamy cauliflower and beans. Mustardy, crunchy croutons. The ideal textured crunch along with a smooth, velvety soup. I crave things like this all the time and love when I find a unique way to make them!

I make cauliflower soup often, and I make it a few different ways. First, my cauliflower chowder is the chunky version. It’s perfect. My original creamy cauliflower soup was discovered after a dinner we had downtown over a decade ago. 

And I’ve even combined cauliflower with potatoes to make a creamy cauli-potato soup. Maybe we can call it caulito?

Potato soup was one of my favorites growing up so it came as no surprise to me when I fell in love with cauliflower soup. It’s equally – if not more – silky and creamy and melt-in-your-mouth soft.

I love how creamy it is on its own.

Many times when I’ve shared other soup recipes, I’ve seen you guys in the comments talking about thickening the soup with beans. Bean soup is another dish I can get behind, so that’s always sounded wonderful to me. 

It wasn’t until I pureed the beans WITH the cauliflower that I realized just how incredible it truly is!

This combination was meant to be together. Tender cauliflower. Soft cannellini beans that have a buttery, soft inside and blend into a whipped texture. The end result is absolutely perfect and I can’t say it enough: you have to try it!

Now, pureed cauliflower and pureed white beans don’t have tons of flavor on their own, so that’s where the aromatics and stock and toppings come in. I like to add lots of garlic, a really flavorful and hearty vegetable or chicken stock and some herbs.

While the soup simmers, I make these delicious croutons. They are truly incredible and I love them on salad too. As a self-proclaimed mustard freak, the thought of melting butter and mustard together, drizzling the mixture over chunks of bread and roasting those chunks until golden and crisp? Well.

It’s a straight up dream.

Seriously, these croutons are the best I have ever made. They are coated with a tangy dijon hint while still being extra buttery. It’s like I was destined to discover these during soup season. And it should be said that these can go on any cauliflower soup! Or any soup, of course. If the beans aren’t your thing, make the original version and throw the croutons on top. (more…)

My classic tomato soup is topped with cheddar cheese, then a layer of cheesy puff pastry. I pop it in the oven until the puff pastry is flaky and golden and puffy. It’s almost like grilled cheese on TOP of the tomato soup.

I know, I know! ANOTHER recipe with puff pastry. It just so happens to be one of my favorite things ever – and the ways to use it are endless. So here we are, with another way to use it. Just one more. 

For years, I’ve shared a tomato soup + grilled cheese combo for Halloween. Many moons ago, one of you mentioned that it was your tradition. And I am ALL ABOUT tradition. Like, I am obsessed with tradition for my children. So, I started doing tomato soup + grilled cheese for trick-or-treat.

It’s the perfect Halloween meal because it’s cozy, comforting and quick. It’s easy to make (you can even make the tomato soup ahead of time!) and the grilled cheese can be served in a multitude of ways. 

As a side note, I’ve also made a chili bar for Halloween which is another favorite idea. Toppings galore!

This recipe is not anything super new. We’re talking about my tomato soup – the best nordstrom copycat tomato basil soup – that is a dish I have made for years and years. I’ve served it in so many different ways, I’ve put a spicy twist on it and instead of making grilled cheese dippers, have made halloumi cheese dippers

I can’t rave enough about the soup. The base uses fire roasted tomatoes. It turns tomato soup haters into lovers. It’s creamy and has a ton of flavor from the splash of sherry.

It’s phenomenal!

So this year, instead of serving it with grilled cheese, I’m doing puff pastry. CHEESY puff pastry. Which I accidentally typed as “cheeesay” and I might say it like that forever. 

To bring this to life, I make a batch of my tomato soup. This can easily be done ahead of time. I ladle it into ramekins or oven-safe soup bowls, then add a sprinkling of grated cheddar. 

Next, I pop a round of puff pastry on top. I cut the round out with the rim of the glass. Then I add a sprinkling of cheddar on that too.

Then, it’s time to bake. I throw them in the oven for about 20 to 25 minutes. Just until the puff pastry is puffed and golden and crisp. 

Finally, I add a sprinkle of chives.

I love sharing new soup recipes in the cooler months, and this one is going to the top of the list.

The first word that comes to mind with this meal: NOURISHING. This is the ultimate, nourishing corn chowder. 

I left out the bacon, the chicken, the fried goat cheese – all the things I’ve added to corn chowder before to make it fancy and fun.

This version is pretty simple, but it’s absolutely delicious. It tastes GOOD. And it isn’t heavy. I make a slurry with half and half to thicken it up a bit instead of using straight cream.

It’s such a nice lunchtime soup that doesn’t weigh you down – it keeps you alert and satisfied!

Here’s what goes into our chowder:

Onions, garlic and sweet peppers! I slice the sweet peppers into rings, but you can also dice them up. 

Green chiles. This adds the best pop of flavor – it’s unexpected and delicious at the same time. 

Sweet potatoes, of course. 

Sweet corn! I like it straight from the cob, but since we are finishing up with corn season right now, my next choice would be frozen sweet corn. Either works!

I use chicken or vegetable stock as the base of the soup. Whichever I have on hand! Then I simmer it until it’s time to add a slurry to thicken things up. 

Fresh herbs to finish things off. Chives, cilantro and move.

This sausage squash tortellini soup is simple, satisfying and a huge crowd pleaser! Fire roasted tomatoes, butternut squash, italian sausage, kale and parmesan make this extra delicious!

I’m back with another installment of my favorite soup!

This is my go-to soup base when I need something quick, delicious and a big bowl of food that everyone will love. It starts with fire roasted tomatoes, some greens and cheese tortellini, and I switch out a few ingredients to make it different each time.

Today’s soup is filled with butternut squash, sweet italian sausage and kale! I’ve also made this fire roasted tortellini soup with chicken before, and also a vegetarian version with white beans!

WE LOVE THIS SOUP.

Seriously, this is SO good. It’s incredibly easy, but because I use the diced fire roasted tomatoes, the flavor is over the top. And it’s pretty forgiving too. If you have some extra veggies to use up or want to remove an ingredient, it will still work. 

Satisfying, cozy and comforting is the name of the game.

Here’s how I make this! 

I start by browning the sausage. I love that this leaves flavor bits in the pot – and that it also releases some fat, so I can then soften the onions, garlic and squash in those bits. 

Once the onions and squash have softened, I stir in some tomato paste. I cook that tomato paste with the sausage and squash mixture until it’s slightly caramelized and dark in color. This really adds a depth of flavor that I find makes a huge difference. 

Then come the tomatoes! Diced fire roasted tomatoes are my love language. I have multiple cans in my pantry at all times. 

I stir in some chicken stock and bring the mixture to a boil, then reduce it and simmer until the squash is tender enough to eat.

Don’t forget a parmesan rind! This is the best thing you can add to any soup for an extra pop of flavor. I buy mine in a container at the cheese counter at Whole Foods, then store them in my freezer. I also always save the rinds on my parmesan too. 

Next, the good stuff. I stir in some heavy cream. Some chopped spinach or kale, whichever green I have on hand and some parmesan cheese. 

Finally, the tortellini! I stir that in and cook for just a few minutes, until it’s tender and perfect to eat. (more…)

This pumpkin turkey chili is a spin on my favorite weeknight maple turkey chili, and it’s super satisfying, perfectly spiced and easy to make on a busy evening!

We have had ultimate chili weather this week! It’s been super gray outside, cold, drizzly and rainy – the perfect combo for a hot bowl of chili served with beer bread. So how timely that I have this recipe lined up for you today!

Get ready to enjoy this all season long because it’s going to become a new favorite too.

My maple turkey chili is a major favorite as soon as the temperature dips here. I love it because it’s such an easy chili, but very flavorful and tastes like it’s simmered all day long. When in reality, it comes together in about 30 minutes or so. Sure, it tastes EVEN BETTER the next day, but it’s still super wonderful the day that it is made.

And this chili is like that too! I keep a little of the maple syrup in here, because it complements the pumpkin so well. I also add a bit more spice, a sprinkle of cinnamon and a quick shake of nutmeg, which doesn’t make it taste sweet, but just more spiced. It’s great!

The best part is that there is an entire can of pumpkin here! A whole can!!

It really ups the satiety of the chili since there is a ton of fiber in the pumpkin puree. I also love how much it thickens the soup, in an excellent way. This chili is so hearty, with the turkey, the beans, the pumpkins and the fire roasted tomatoes.

Speaking of! It’s no secret that I love using fire roasted tomatoes in all of my soups. I find that they add an excellent pop of flavor, so I couldn’t recommend them more here. The diced tomatoes cook down as the soup cooks too, so if you’re concerned about big tomato chunks, don’t be!

Toppings are key here. This doesn’t taste like a pumpkin spice latte or anything, so there is no reason to be worried that it’s going to be sweet. I stick to my regular toppings on chili – lots of cilantro, maybe some green onions and I also really love crumbly cotija cheese.
