El aguachile, es un buen pretexto para inspirarnos y recordar el sabor del mar, la playa y el sol.

Es un platillo, fácil y sencillo de preparar “un platillo estrella”, que sin mucho esfuerzo el resultado es extremadamente delicioso. Es mucho más barato si lo preparas en tu casa, queda muy bien, como si lo hubieras pedido en tu restaurante favorito.

Que es el aguachile?

El aguachile es un platillo típico, originario y representativo de las costas mexicanas, especialmente de Sinaloa. Su preparación consta en camarones frescos, chile, cebolla y limón.

En sus inicios el aguachile se preparaba con carne machacada en agua hirviendo y el chile piquen originario de la región y con el paso del tiempo emigró a la zona costera donde se sustituyo la carne por el camarón y marinada en jugo de limón. Con el tiempo la receta fue variando en su preparación.

Desde los chiles que se utilizaban hasta el marinado, existen 3 tipos de preparación. El tradicional, como su nombre lo dice, se elabora con ingredientes tradicionales de la región y se prepara con agua hirviendo.

El mestizo, es similar a la receta original pero se agrega limón, sal y pimienta a la preparación original.

Y por último el contemporáneo, es una mezcla de nuevos sabores y texturas como lo son, el pepino, cebolla, mango, jugo de almejas, tequila e incluso mezcal, que son ingredientes que intensifican su sabor original.

Las característica de un buen aguachile de camaron, es que debe picar (poco o mucho según tus gustos) y se debe utilizar el camarón fresco, que se macera en jugo de limón por al menos 15 minutos para mantener una consistencia suave ya que si se deja marinar por más tiempo la consistencia del camarón será más dura.

El aguachile, es una preparación sencilla que se lleva muy bien en un ambiente fiestero o playero, es ideal para disfrutar en época de calor que ya están cerca.

Es un tipo de ceviche mexicano, solo que con camarón, es más jugoso y un poco más picante. En México, se suele preparar este delicioso platillo en temporada de “cuaresma” cuando se evita comer carnes rojas.

Es un platillo de sencilla preparación pero exquisito sabor que dejará sorprendido a tus familiares. Esta receta la puedes acompañar de unas ricas tostadas y una capa de aguacate y así quedarán de rechupete.

Ademas no hay nada más saludable que comer mariscos frescos, especialmente camarón, ya que son buena fuente de vitamina B12, contiene omega 3, es bajo en calorías y alto en proteínas, lo cual es muy beneficioso para nuestra organismo.

Ingredients

  • 1/2 kilo de camaron pelado, desvenados y limpios
  • 1/2 mazo de cilantro
  • 1/2 cebolla morada cortada en julianas
  • 3/4 taza de jugo de limon
  • 2 pepinos picados en media lunas delgadas.
  • 1 diente de ajo
  • chiles serranos al gusto
  • Aguacate
  • Sal y Pimienta al gusto

Instructions

  • En un tazon con tapa agrega el camaron, la cebolla, sal marina y el jugo de limon. Mezcla bien y deja reposar de 20 a 30 minutos dentro del refrigerador.
  • Una vez que el camaron este rosado y no se vea gris quiere decir que el cmaron esta "cocido" en el jugo del limon.
  • Escurre en jugo de limon del tazon en el que estan los camarones y agrega la mitad de ese jugo en una licuadora junto al ajo, cilantro, los chiles serranos, 3 pimientas enteras, dos cucharadas de pepino picado y un poquito de la cebolla morada con la que estaban con los camarones. Licua bien.
  • Mezcla lo que licuaste en el tazon con los camarones y rectifica si le hace mas falta jugo de limon agrega el que tienes reservado y agrega mas sal.
  • disfruta con tosatadas, totopos o galletas saladas! hmmm, delicioso!

What is aguachile verde?

Aguachile verde is a Mexican dish made with shrimp, serrano peppers, and tomatillos. It is served cold and makes the perfect appetizer or main course. The word aguachile means “chile water” in Spanish, which is a good description of the salsa that you will be making as part of the recipe.

This name comes from how the sauce is prepared before adding it to cooked shrimp – by blending together chile peppers, tomatillos and other ingredients into a smooth mixture. The sauce is then poured over the shrimp to create this delicious dish! The addition of chiles makes this recipe a bit on the spicy side, but you can adjust the heat by increasing or decreasing the amount of serrano peppers.

What ingredients do you need for this recipe?

To make this authentic aguachile recipe, you will need the following ingredients:

  1. Raw shrimp (jumbo or extra large) – in any case, you will want to use larger shrimp for this recipe if possible.
  2. fresh lime juice
  3. crisp cucumber, chopped into smaller pieces
  4. red onion
  5. 1/2 bunch of cilantro
  6. serrano chile
  7. garlic cloves
  8. Salt and pepper

 

How do you make aguachile?

Making aguachile super easy! You are definitely going to need a blender or food processor for making the green aguachile salsa that is typical of this recipe.

First, you will want to make sure the fresh shrimp is de-veined and rinsed (drying off the excess water). Once the shrimp is clean, you will add it to a mixing bowl with the lime juice (make sure it is freshly squeezed), a little salt to taste, and the onion slices. Make sure everything is mixed together well and then cover it and put it in the refrigerator for 20-30 minutes.

After that time has passed remove the bowl from the refrigerator and strain the lime juice from the shrimp and set aside in a separate bowl.

At this point, you will make the green chile sauce by adding half of the strain lime juice, the garlic cloves, pepper, salt, serrano pepper, cilantro, a few pieces of the onion that were with the shrimp in the refrigerator, and 2 tablespoons of the chopped cucumber in a blender and blend well.

You will then pour the resulting salsa verde in the bowl with the shrimp from earlier and mix well. Now, you can add more of the excess lime juice that you strained and adjust the flavor by adding more salt or pepper as needed.

Finally, add the remaining cucumbers and avocado if desired and it is ready to serve!

What are the health benefits of aguachile verde?

Aguachile verde has many health benefits including being a high protein and low fat dish which makes it perfect for those who want to lose weight but still enjoy delicious food.

It also contains vitamins A & C as well as iron and calcium making this dish not only healthy but nutritious as well. Aguachile verde is a great way to get your daily dose of vegetables and shrimp is a good source of omega-three fatty acids, which are beneficial for maintaining heart health and preventing chronic diseases.

How do you serve aguachile?

Aguachiles are almost always served cold as a delicious appetizer or as a main dish. You can serve them by themselves, or with rice, tortillas, or tortilla chips. My preferred way to enjoy them is with tortilla chips, but it really depends on your personal preferences.

Instructions

  • Make sure the shrimp has been adequately cleaned, deveined, and patted dry. Set aside in a large bowl.
  • Add the lime juice, a pinch of salt, and the onion slices. Cover and put in the refrigerator for 20-30 minutes.
  • Remove from the refrigerator and strain the lime juice from the shrimp and onions, and set aside.
  • Add half of the lime juice that you strained in the previous step to a blender with the garlic, pepper, salt, serrano pepper, cilantro, a few pieces of the onion that marinated with the shrimp, and 2 tablespoons of the chopped cucumber. Blend well.
  • Add the mixture made in the previous step to the bowl with the shrimp. Mix well and add additional lime juice and salt to taste.
  • Add the remaining cucumbers and avocado slices (if desired) and serve cold with tortilla chips.
