This Grilled Chicken Chickpea Salad is topped with feta cheese, an easy and inexpensive lunch . Chickpeas are one of my favorite pantry staples – I always have a can on  hand. Each serving of this salad has 30 grams of protein, which you can increase by adding more grilled chicken or leftover chicken breast from a roasted chicken. It’s also high in fiber. I love cottage cheese, and now that the weather is warmer, I love eating it with fresh berries. It’s so simple and quick to whip up, topped with blackberries, raspberries, blueberries, sliced strawberries, and slivered almonds. Excellent for breakfast or snack and an easy way to get more protein in your day, a whopping 19 grams! If you’re not a fan of the taste of cottage cheese, you can use yogurt instead. I’ve been getting requests for sous vide recipes, well I finally tried it and now I know what all the fuss is about! This is hands down, the juiciest chicken breast I ever made! I took that chicken breast and turned it into a delicious salad Tommy couldn’t stop eating! It’s loaded with protein and fiber and is the perfect lunch for the warmer weather. You can use this sous vide chicken in any of my other chicken salad recipes such as this Chicken Salad with Lemon and Dill or this Chicken Waldorf Salad.

Canned tuna and potatoes are budget-friendly, and I think these croquettes turned out great and super easy. I love having an open-face tuna fish sandwich or Tuna Egg Salad for lunch, or sometimes even a Tuna Melt.
