So many cozy and comforting meals. It’s time to live it up!

My lemon brown butter salmon is dreamy! Serve with parmesan roast broccoli for my favorite meal.

Make these chili lime sweet potato taco bowls for taco tuesday!

Yes yes to my cheddar cauliflower chowder. It’s so comforting and satisfying.

Buffalo chicken spaghetti squash is a huge favorite in our house.

Make these bolognese stuffed peppers – everyone loves them! House salad on the side please.

And finally, roasted cauliflower pitas! So much flavor and really great leftovers too.

This avocado chicken salad is one of my favorite lunches.

Pumpkin protein pancakes for breakfast! Love them because you can prep them ahead of time and reheat.

Shredded brussels and kale spaghetti kick the week off well. DELISH.

My maple BBQ salmon is to die for! Served with brown butter couscous. Oh yum.

These french onion sweet potatoes are a fabulous meal. So comforting and cozy.

Slow cooker brisket chili for the win! Leftovers are amazing and you can freeze them too.

We love this crispy baked parmesan chicken and lemon arugula greens. Such a light but satisfying meal.

This warm winter farro salad is amazing. Made with cranberry cinnamon vinaigrette, it’s delicious.

Shaved egg avocado toast for lunch! This is such a fun spin on avocado toast.

And another week of cranberry overnight oats! They are SO worth it.

Monday is for soup! Make my new lemon ginger couscous chicken soup. It’s so nourishing and comforting.

Taco tuesday = my easy ground beef tacos. Keep it simple!

Caramelized onion, brussels and pistachio pizza is up next. Majorly crave worthy!

If you don’t want to cook a Thanksgiving meal, make this rosé coq au vin instead. OMG, it is outstanding.

If you do have turkey, make some leftover roasted turkey ramen! You can also use rotisserie chicken.

My honeycrisp kale quinoa salad is perfect for a satisfying but light dish.

Chicken salad stuffed avocados for lunch!

And ’tis the season for cranberry sauce overnight oats. YUM.

Start things off with these broccoli shells and cheese! They are SO SO GOOD!

Next up, halloumi fajitas for taco tuesday. These are so flavorful and quick.

Chicken romano meatballs with a side of hot honey brussels sprouts for Wednesday! Yes please.

Pomegranate braised short ribs are incredible. Make them with a side of our favorite tortellini salad.

We love these green goddess salmon burgers. So different and satisfying.

Sesame chicken with coconut rice!  We love a good bowl meal. It’s dreamy.

For lunches, make a batch of mediterranean marinated chickpeas. Use on salads, in wraps, on toast – everything.

Peanut butter overnight oats for breakfast. I could eat these every single day.

Kick things off with this 15 minute lemon cauliflower gnocchi. It is SO easy. I like to pair with my favorite broccoli on the side.

Sheet pan chicken fajitas for Taco Tuesday! No complaining here.

Next, try my pork schnitzel! This recipe has gone crazy, you guys are loving it. The brussels slaw is amazing too.

Lentil bolognese for the win. I successfully “tricked” Eddie – he actually thought this was meat.

20 minute ramen sesame noodles with a fried egg. Love a quick and easy meal.

And finish things off with baked cheeseburger tacos. The absolute best.

For breakfasts, I’m going with my almond butter baked oatmeal (minus the figs).

And lunch = this cauliflower farro salad which is so satisfying and flavorful!

My one pot fall vegetable orzo has been a hit this week! So many of you made it. It’s the perfect meatless meal.

This chicken taco soup with cheese quesadilla croutons is made in the slow cooker and so flavorful.

My pecan crusted chicken salad with triple citrus vinaigrette is absolutely amazing!

Next try my roasted broccoli and cheddar risotto. This meal is such a treat.

Cauliflower schnitzel sandwiches as we had into the weekend! These are RIDICULOUSLY good.

Finally, try my vodka sauce pizza. You’ll want to make it every single week!

For lunches, I’m doing a make-ahead greek orzo salad.

And for breakfasts, a batch of salted maple granola!

Start the week off with my slow roasted sweet potatoes with spicy garlic chickpeas! This is one of the most popular recipes on the blog!

Sheet pan nacho chicken is up next! Serve this on tortillas, with rice, on a salad – however you’d like!

This fire roasted minestrone with kale pesto is SO good. It’s also a great meal prep meal as long as you keep the pasta separate.

Smoky sweet potato kale salad for the win! This hot ginger dressing is incredible.

We love this 30 minute cajun salmon with salted lime butter. It’s the perfect easy weeknight meal.

Spaghetti squash parmesan is the ultimate comfort food to take you into the weekend!

For lunches, make my marinated white beans! They get more delicious as they sit. Great on toast, wraps, salads or even alone.

Finally, cinnamon toasted pumpkin pie oatmeal! Tastes like the best fall ever.

Kick things off this week with my butternut squash parmesan frittata! Breakfast for dinner is the best. Add in some toasted sourdough and you’re good to go.

Next up, sheet pan shrimp fajitas for taco Tuesday! Woohoo.

My sesame beef bowls are ridiculously easy and SO good. The leftovers are the best too.

Honey mustard chicken salad, coming in hot! We adore this recipe. The dressing is down right drinkable.

Try the new ricotta skillet pasta I shared this week. Any roasted vegetables can be tossed in – it can be a clean-out-the-fridge meal.

Finally, halloumi hummus bowls for an easy end of week meal.

For breakfast, make my pumpkin protein pancakes! You can make them ahead for the week too.

And lunches – smashed chickpea salad. Works on toast, in wraps, in lettuce cups or on salad. Or with crackers.
