I’m so excited for what this month brings to our meals! Lots of warm weather spring flavors here.

This fuji apple chicken salad can kick things off on Monday. I love the dressing and the apple chips.

Help me celebrate Everyday Dinners on Tuesday with this burrata baked ziti! We can virtually eat it together!

On Wednesday, make these chili lime chicken tacos with gilled pineapple salsa! They are absolutely delicious.

Sheet pan sausage and peppers to the rescue! This is one of my easiest, go-to meals that we love so much.

Next, try my garlic brown sugar flank steak with chimichurri! We love this with some classic rice on the side. Maybe parmesan broccoli too!

Blackened salmon with grilled naan for the weekend! We’re in official grilling season and I could not be more excited.

For lunches, I’m going with this egg salad that I love oh-so much. And some layered smoothies for breakfast!

We have a delicious week! Breakfast for dinner, easy meals and a hint of summer coming.

Kick things off with breakfast for dinner! I love these 15 minutes burrata omelets with avocado salad. So good.

Next, make some baked quesadillas for taco tuesday! You can use whatever fillings and toppings you have and love – that’s the beauty of this recipe.

Sheet pan cashew chicken and peppers is up next! We love this recipe so much and the leftovers are pretty darn good too.

For some mid-week crunch, try these BLT lettuce cups with avocado ranch. They are so super crunchy and flavorful.

Shrimp salad rolls take us into the weekend! These have me craving summer. They come together quickly and taste like heaven.

Finally, make some halloumi hummus bowls. So much flavor here – they are surprisingly wonderful.

For lunches, I’m going with my smashed chickpea salad! For breakfasts, my strawberry cashew smoothie.

We’re kicking things off this week with a batch of my lentil bolognese! Make this at the start of the week and you can enjoy it for any leftovers or lunches as needed.

I love this spicy honey chicken with thai zoodles. The flavor is SO spot on and it’s super satisfying too.

Next up, cheeseburger chopped salad. Who can say no to this? It’s one of our most favorite meals in this house.

My one pot shrimp orzo comes in next and it’s so unbelievably easy and flavorful.

Make a batch of my slow roasted tomato farro salad for an easy Friday dinner. Again, any leftovers of this are wonderful and so easy. Great hot or cold too!

Finally, this pork milanese with lemon arugula is so simple and delicious. A classic that everyone loves.

For lunches, I’m going with a batch of our favorite tortellini salad! And breakfasts? Bursting blueberry muffins. Yum.

We have a lovely spring menu to enjoy this week – as long with a few uses for all of those hard boiled eggs!

Kicking this off this week with asparagus tartines with hard boiled egg vinaigrette! This is SUCH a delicious meal and perfect if you have leftover eggs from Easter!

For Taco Tuesday, make these beer braised chipotle chicken tacos! Super flavorful and customizable. We adore them.

Next up, brussels and caramelized onion pizza with pistachios. Even if you don’t want to do a dough that rises, you can make these into a flatbread or french bread! Definitely more options if you need them!

Smoked sausage and kale gnocchi skillet for mid-week! This is a meal that comes together so fast and it surprisingly delicious.

I love making my tomato soup (it’s unreal) ahead of time to have for a quite meal during the week. Throw together some grilled cheese sticks and you’re good to go!

Finally, try this brown butter lemon salmon with my grilled asparagus caesar on the side. I can’t get over how much I love this asparagus!!

For lunches, I’m going with my best ever egg salad, of course! We have all the eggs! And for breakfasts, my vanilla ricotta toast with bananas.

Kick the week off with some breakfast for dinner! This asparagus quiche with hash brown crust is so delicious – and even as great cold the next day for lunch.

Try the turkey taco skillet for taco tuesday! Serve this with chips, with salad, with tortillas – anything, really!

Pulled chicken guacamole sliders are up next! Especially good if you have taco leftovers from the day before. Comes together so easily.

Make this spring nicoise salad for mid-week! Sometimes I just make a version of based on what I have on hand. I am loving asparagus right now.

Sesame shrimp quinoa bowls are happening next. I love these so much – satisfying but light at the same time.

Finally, make some of my chicken romano meatballs! Serve them anyway you’d like – I’m partial to this spring pasta salad on the side right now. This can be the perfect meal at home for easter if you celebrate.

For lunches, I’m going to do some tuscan tuna melts! And breakfasts – my immunity smoothie that I love so much.

So glad it’s finally here, and we have a delish menu this week to honor it.

Kick the week off with my slow roasted sweet potatoes with chickpeas and blue cheese sauce. This is an oldie but goodie and one we all love.

Crispy baked chicken tacos for taco Tuesday. A new recipe that is so crunchy, crispy and cheesy. We love it.

Make this honeycrisp kale salad with pistachios for mid-week! I love a good kale salad because even the leftovers last.

Smoky sloppy joes for the win! This is one of our favorite recipes of all time. I put a version in my next book because they are SO good. You gotta make them!

Try these bruschetta zucchini boats next. I LOVE making these this time of year, because even when the tomatoes and zucchini are out of season, they get roasted so they are delish.

For weekend eats, make this cozy lemon pasta! As citrus season winds down, it’s a great meal to make to use up those lemons and bring on all the spring feels.

For lunch, you guessed it! My marinated mediterranean chickpeas. Use them on salads, in wraps, on grains – they are so good. And for breakfasts, I’m going to make a batch of my salted maple granola. Love this with yogurt and fruit right now.

Kick things off with the asparagus croque madame! Perfect for the season – a little spring and a little comfort food.

Next, go with my lime chicken sheet pan fajitas! SO easy and you can prep a lot of it ahead of time too.

For Saint Patrick’s Day, make this irish ale potato cheddar soup! Lovely little comforting dish.

Broccoli cheddar risotto is up next! This is one of our new favorite dishes and just so delicious. Everyone loves it.

My pretzel crusted chicken salad is perfect for the end of the week. Crunchy chicken, cheddar, a wonderful dressing. Yum.

Finish off the week with sheet pan breakfast! Sweet potato hash, eggs, bacon. It’s wonderful.

For lunches, I’m doing these green goddess tuna melt tartines! And breakfast – a big batch of my cashew granola.

I’m starting to feel spring!

I know we still have a few more weeks, but I couldn’t help but add a few spring-like dishes to this week’s menu.

Kick things off this week with my parmesan pasta frittata! Top it with spring greens for such a fresh but filling meal.

Next up, guacamole turkey burgers. We love these. You can eat them deconstructed too, which is how Emilia loves them for dinner.

Skillet sausage and kale lasagna for mid-week! The leftovers of this are just as good as the first meal.

We’re doing buffalo cauliflower lettuce cups for dinner later in the week because it’s warming up here. I want something refreshing and crisp!

Lemon butter shrimp and broccoli for Friday! This meal is embarrassingly easy but so classically good at the same time.

Finally, finish things off with this marinated chickpea panzanella! It’s been ages since I’ve made this and we love it so much.

For lunches, I’m going with my smashed chickpea salad too. On toast, of course. And breakfasts are my classic peanut butter overnight oats!
