What To Eat This Week

Kick things off this week with my brown butter lemon salmon. It’s so fast and easy! I love to served it with these buffalo brussels sprouts too. And maybe some rice if you wish!

Next up, parmesan crusted chicken salads. One of my most favorite salads ever! It’s so hearty and satisfying.

Midweek, go with this potato chip frittata. We love breakfast for dinner and this is amazing.

Bolognese stuffed peppers are up next! I make the ones in the post with ground turkey, but you can use my lentil bolognese too. So delish.

Throw in another winter crunch salad somewhere! I know I shared it a few weeks ago but citrus is wonderful right now. Adding in crispy chickpeas here is soooo good.

Finally, wrap up dinner with this bacon brussels fried rice. Top it with an egg and it’s perfection!

Smashed chickpea salad is what’s for lunch! On toast of course. And for breakfasts, I’m going with an apple cinnamon oatmeal latte.

Kick things off this week with some winter citrus butter salmon! I love serving this with rice and something delicious like my bacon roasted carrots.

Pizza stuffed shells are up next! Oooh we love this comforting meal – everyone enjoys this and leftovers are delicious.

For for this salsa chicken quinoa pot for a mid-week meal. This comes together fast and can be loaded with toppings.

Chickpeas and dumplings are the ultimate comfort food. Of course, you can make my chicken version too!

We love these halloumi hummus bowls. They are satisfying but light and just taste so darn good.

For the weekend, go with my veggie supreme detroit style pizza. This is our favorite kind of pizza to make!

I’m in a pumpkin mood, so I’m making my cinnamon toasted pumpkin pie oatmeal for breakfasts. And these tuscan tuna melts for lunch!

This week is loaded with satisfying, seasoning flavors and I’m excited about it!

What To Eat This Week:

Broccoli lemon carbonara to kick things off for the week! Oooh this is a good one.

For Taco Tuesday, make this slow cooker chicken taco soup! It has cheese quesadilla croutons and is so, so good.

Next, make this pork milanese with lemon arugula. I love this light but filling meal so much. the leftover pork is really good too.

Cheeseburger chopped salad is up next! A classic favorite that we all adore in this house.

Try this hot honey roasted salmon! For a perfectly seasonal side, this lemon butter spaghetti squash is super delicious.

Finally, this mediterranean kale salad with quinoa makes for a great weekend salad – it’s hearty and any leftovers taste great!

For breakfast, I’m making a batch of my salted maple granola! And lunch will be green goddess tuna melts.

What To Eat This Week

Kick things off this week with sheet pan gnocchi and vegetables! If you want, you can add in sausage or another protein. We love this just as is.

Next, try some chicken parmesan soup. Oooooh this is so comforting and hearty. The kids absolutely love it. The cheesy croutons are amazing.

For Wednesday, go with this brussels fontina puff pastry tart. This is like cheaters pizza and we absolutely adore it!

Next, we’re going to make maple BBQ salmon with brown butter couscous. A light but hearty and satisfying meal.

Sheet pan shrimp fajitas are up next. Adore these – so much flavor and they come together fast for fajitas. Throw them in a tortilla or even on a salad.

For the week, try these smoky sloppy joes! I don’t even want to tell you how often I make these. I use all ground turkey or a mix of both as called for in the recipe. We eat these at least once a month! Leftovers are incredible.

For breakfast, I’m going with lemon curd chia pudding! …. And for lunches – I want to do some make-ahead baja grain bowls!

December is in full swing and our menu this week is DELISH.

We have delicious salads, potatoes, pasta and tacos up this week!

What To Make This Week:

Kick things off with this zucchini bolognese lasagna! It’s one of my favorite meals ever – and the leftovers are incredible. It’s a little time consuming but so, so worth it.

Roasted salmon salad with hot ginger vinaigrette is next. Crave worthy and crisp – this is such a nice salad to lighten things up.

Next we have sticky apricot chicken and broccoli! This is a fantastic staple meal in our house. Easy to make and everyone goes crazy for it.

French onion stuffed sweet potatoes are on the menu too. You can roast the sweet potatoes ahead of time. These are so delicious and satisfying. If you need something extra, serve with our favorite tortellini salad.

Next we have garlic sauce pasta with roasted shrimp and broccoli. So hearty – and again, leftovers are wonderful.

Bang bang cauliflower tacos are up for the weekend. Can’t beat the flavor and crunch of these.

For breakfast, I’m going with a batch of pumpkin pie steel cut oatmeal. And for lunches, a version of these nicoise bagelwiches!

Kick things off this week with the easy sheet pan pesto salmon with lemon potatoes. We love this meal and it’s so delicious!

Next up, make this cheesy tortilla soup! It’s perfect if you have leftover turkey – or you can use a rotisserie chicken too.

Chipotle sweet potato quinoa breakfast skillet is on tap next for dinner. We adore breakfast for dinner and make it maybe once a week!

Then go with these roasted chickpea pitas. Absolutely delicious and so much flavor!

To keep things on the lighter side, try this bang bang shrimp over napa cabbage slaw. This meal is crunchy and super flavorful.

Caesar salad with pizza croutons finished out the week! Gosh, we adore this. Add some extra protein if you wish, but I love this as a simple, satisfying salad.

For breakfasts, I’m going with my peanut butter overnight oats – and lunches, these chicken salad stuffed avocados!

This week is a crazy one! Here’s my thoughts on what to eat, with lots of options depending on how you’re spending the week!

Monday, make a batch of this butternut white chicken chili. It’s easy and delicious, comforting and hearty, and leftovers are great for lunch or another quick dinner.

On tuesday, make this mediterranean kale salad with chicken. Use a rotisserie chicken! This is a nice break from seasonal flavors, and since this is made with kale, it’s hearty enough to store leftovers in the fridge.

Next, keep things simple with this pasta parmesan frittata. It’s delicious and so simple. Your greens are right in there too.

Thursday is choose your own adventure! Are you making Thanksgiving dinner? Or choosing something untraditional but still special?

On Friday, use your leftovers to make this roasted turkey ramen. If you don’t have turkey, you can make this with leftover rotisserie chicken or keep it meatless.

Leftovers are the name of the game the rest of the week!

For breakfasts, make these cranberry overnight oats! I’m making extra cranberry sauce early so I can have these all week. For lunches, I suggest something super simple, like my make ahead egg salad.

Kick things off with this honeycrisp quinoa pistachio salad! It’s super satisfying (you can always add chicken or beans or another protein if you wish!) and it holds up for a day or two with the kale. Love it!

Next up, black bean taquitos with avocado pico! We adore this meal. You can make the black bean mixture ahead of time. Perfect for Taco Tuesday!

Chicken parm meatballs with garlic spaghetti are up next. This is a delicious meal. You can definitely make the meatballs ahead of time, or even freeze half for another meal. To add some veggies, make these cacio e pepe brussels!

Comfort food is next with this cider braised pot roast with butternut squash. This is the ideal comforting meal! And the flavors are so perfect for fall.

Chipotle tomato soup with pull apart cheddar bread brings in the weekend. Have you ever seen anything more delish?!

This lovely little caramelized onion and burst tomato pasta is perfect for an easy weekend dish too.

For lunches, I adore these goat cheese toasts with egg vinaigrette! And for breakfasts, I’m all in with an apple cinnamon oatmeal latte.

It’s so hard to believe. We’re really in the month of comfort food now! Let’s get to the menu…

Kick things off this week with my sheet pan kung pao cauliflower! It’s so delicious served over rice.

For taco Tuesday – make our favorite ground beef tacos! It’s a bit of a modern spin on the classic 90s beef taco.

Halloumi hummus bowls are up next! Super filling and delicious. I even love leftovers the next day.

Try this bacon egg and brussels sprouts carbonara. It’s so wonderful and perfect for the season. Major comfort food.

Chicken tortellini soup is on the menu next. This soup is absolutely incredible and everyone loves it.

This detroit style pizza with hot honey and goat cheese is unreal. It’s totally worth making.

For lunches, I’m making a big batch of my favorite egg salad. And for breakfasts – another week of pumpkin pie oatmeal!
