Peanut Butter Blossoms – sometimes known as Hershey Kiss Cookies or Peanut Butter Kiss Cookies – are the perfect classic holiday cookie to make with kids or bring to a cookie exchange.

Long-time readers know that I used to teach school full time – more specifically junior high. 

I found myself with an extra period each Friday and had to figure out something to do with the 50 minutes that would both keep the kids busy and force them to interact with each other in a positive manner.

I remember sitting at the computer when it hit me – I could have them cook and bake together.

I quickly pretty much relinquished all control over what we cooked and baked to my students. I allowed them to choose the recipes, create the shopping lists and make the dish from start to finish (minus any knife work).

Although I was a little bit nervous with the whole process, the students displayed an amazing amount of teamwork and enthusiasm – honestly, I couldn’t have been more proud of them.

During the holidays, we decided to make Peanut Butter Blossom cookies. I thought there was no more perfect time of year to introduce them to this classic chocolate-peanut butter cookie.

Even though I haven’t taught full-time in years, I’m still grateful for the opportunity to allow my students to channel their creativity and curiosity in a positive way. I hope they still remember making Peanut Butter Blossoms together and taking them home to share with their families.

I am all about keeping things simple at this time of year.

Instead of cooking at home, we’re ordering pizza and wings for pre-trick-or-treat dinner and I’m whipping up these super simple semi-homemade Pumpkin Spice Cupcakes for dessert. I just plan on topping them with one of those little pumpkin candies you can find near the candy corn to make them a little more festive.

You all know I love my doctored cake mix recipes, and I couldn’t resist giving it a seasonal twist.

The result is these pumpkin spice cupcakes that are so irresistibly moist you can’t stop at just one!

If you love pumpkin bundt cake, you’ll definitely fall for the combo of spice cake mix and pumpkin. The lightly spiced cream cheese frosting makes the cupcakes so special.

There is just something about quick breads that make me happy. They’re one of my absolute favorite things to bake no matter the season.

Earlier this week, I actually went shopping inside our local grocery store instead of doing curbside pickup. I’ve definitely popped into the store here and there to pickup a couple of random items, but I haven’t done a complete in-store shop in what seems like forever.

I spent way to much time browsing the aisles to check out all of the new items. When I came upon the produce section, I loaded my cart with way more fresh fruit than we needed, but I couldn’t resist because everything looked so good!

Once I came home and washed and prepped everything, I decided to whip up this Orange Fruit Dip to serve up with all of the gorgeous berries, peaches, nectarines, pineapple and oranges that I picked up

This simple Spicy Guacamole recipe is made with avocados, tomatoes, jalapeño, lime, garlic, cilantro, and an extra kick from Sriracha. Make this guacamole as mild or as spicy as you like!

I’m all for trying different foods – at least once. Sometimes one bite is all it takes to make me a convert. Other times, that first bite will be the only bite of that food that will ever cross my lips. 

For instance, I’ve eaten a raw oyster and a frog leg once – I’ll never consume either of these foods again. Recounting those moments gives me the shivers. But guacamole – that’s a totally different story.

Up until about 10 years ago, avocados and I weren’t on good terms. And if I’m being honest, I hated them before even giving them a chance. 

I think I had a negative textural perception of them. I’m big on textures and if something falls into the categories of slimy, gritty, jiggly or velvety (unless it’s ice cream), I immediately deem it as suspect.

Then, during a fateful trip to Whole Foods, I was wandering around and lost my friend for a minute. When I found him, he was standing in the middle of the produce section oohing and aahing over a tub of $9.00 guacamole. 

I went over to inspect the situation and was welcomed with a guacamole-covered chip shoved near my face. Of course, I got all dramatic, recoiled and claimed I hated the stuff. 

However, I decided to take a tiny nibble – just to prove to him that I did indeed loathe the velvety green dip. But I was wrong. I actually loved the stuff and immediately tossed the pricey container into our cart. 

From that day forward, I was a guacamole lover.

This Spicy Guacamole recipe is one of the best I’ve found, and certainly my favorite. Try it at your next barbecue, or heck – on a random Tuesday night. Then come back here and tell me what you think.

‘Tis the season for planting our little garden around here. I usually kill everything – except mint, that stuff grows out of concrete! – but I still try for a small garden every year.

This year we have some tomatoes, cilantro, and basil. I always plant basil, even though the bugs usually get to it and the leaves end up full of holes. Not very pretty, but perfect for using for pesto.

Elle had never tried pesto before, but since she loves pasta I grabbed a fresh basil plant at Meijer (while we wait for ours in the garden to grow) and whipped up a batch of this homemade Fresh Basil Pesto for an easy pasta dinner.

I don’t know about you, but for some reason, I get in a little dinner funk every year around this time. It’s either nothing strikes my fancy, or I just don’t feel like cooking.

Even though Eric and Elle are pretty easy to please and would be totally happy with mac & cheese and chicken fries, I still try to get a home-cooked dinner on the table most nights. Even if I’m not feeling it at all.

That’s why I love have a list of go-to recipes that I can make pretty quickly. Whether it’s a batch of Hot Ham & Cheese Sliders with tater tots, Honey Soy Chicken & Rice, or this Easy Chicken Chili, simple recipes like these save me on busy weeknights.

I know it’s only December 4th, but I am already getting the urge to start holiday baking. Only problem is, I don’t really have the freezer space at the moment to store much of anything. That thing is packed with butter, chicken and more mini ice cream sandwiches than I care to admit.

I am pretty obsessed with Peppermint Oreo Balls every holiday season. They’re super simple to make and can easily be adapted to fit your personal taste.

Don’t like peppermint? No problem. Simply use regular Oreos and omit the crushed peppermint, or use any other of your favorite flavors of Oreos. I have used regular Oreos, Mint, Peanut Butter and Peppermint Bark all with great results.
