Traditionally made with rich pork sausage and duck confit, this chicken cassoulet is lightened up using chicken thighs but is still cozy, nourishing, and satisfying. A true one-pot recipe topped with garlic crumbs and packed with fiber. Swiss chard is an uncommon addition, but its sautéed stems add great texture, and the greens round out the dish. It’s great over pasta, polenta or mashed potatoes. This is the version my Mom always made for us when I was a child, which I’ve always loved. I modified Mom’s recipe to make it a bit leaner by removing the chicken skin and fat and using less oil.
