Frittatas are the perfect breakfast or brunch necessity. Also great to make ahead for meal prep. I usually make them with whatever I have on hand. In the spring, asparagus is wonderful with Swiss cheese, but you can also use mozzarella or Havarti. Some other egg dishes you may love Tomato and Zucchini Frittata, Spinach and Feta Frittata or Broccoli and Cheese Quiche.

On weekends, I occasionally like to treat myself to dessert. If you’ve never made whipped cream from scratch before, you’re in for a treat! One of my favorite ways to lighten whipped cream is to whip it up and fold in some Greek yogurt. It gives it a slight tang, which is wonderful with fruit and cuts down on the fat and calories. Perfect for a quick and easy dessert, or try them in crepes or on Yogurt Waffles.

My mom has been making Spanish Tortilla all my life. It’s usually something she’ll bring to a brunch or serve as an appetizer. Her recipe has a lot more olive oil than this lighter version, but the great news is that you don’t miss it here! The pimenton aioli takes this tortilla to a whole new level, so don’t skip it (you may want to double it if serving guests). I typically gravitate to warm fruit desserts, berry custards, or bread puddings, so naturally, a Flaugnarde of Mixed Berries has my name all over it. A flaugnarde is a rustic French custard-like dessert that is made with eggs, milk, and fruit and then dusted with powdered sugar and eaten warm. Because this recipe is more of a custard, using whole eggs is a must. So, to lighten it, I replaced the cream with low-fat milk and was really please with the results.
