I will go ahead and say it — this Grilled Steak and Chimichurri Orzo Salad is the pasta salad of the summer. I am calling it now!

This time of year, you really can’t keep me away from the grill so I Iove to think of new recipes to create. Because pasta salads are so popular this time of year, I wanted to create a recipe that utilized grilled veggies and a protein and I love how this Grilled Steak and Chimichurri Orzo Salad turned out! Pasta salads are usually seen as an accompaniment to a larger meal but this dish is sure to be the star of the show.

Other than the perfectly grilled veggies and steak, the chimichurri is what really sets this pasta salad over the edge. It has such a fresh flavor from the herbs, plus a slight kick from the jalapeño that brightens the dish and makes it feel much lighter than a traditional pasta salad — while also filling from the steak!

Ingredients:

  • Orzo Pasta
  • Fresh Parsley Leaves
  • Fresh Cilantro leaves
  • Garlic
  • Jalapeño
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Freshly Squeezed Lemon Juice
  • Kosher Salt
  • Freshly Ground Black Pepper
  • Corn
  • Red Onion
  • Red Bell Pepper
  • Zucchini
  • Flap Steak

Step-by-Step:

Step One: Cook the Orzo

Bring a pot of water to a boil. Add the orzo and cook according to package directions. Drain and set aside.

Step Two: Make the Chimichurri

In a food processor or wide-mouth jar using an immersion blender, place all of the chimichurri ingredients and blend until just smooth. Set aside.

Step Three: Prep the Veggies

Place the corn, sliced onion, bell pepper, and zucchini on a large sheet pan, and drizzle with 3 tablespoons of the oil, and season with ½ teaspoon of salt and ¼ teaspoon of black pepper. Set aside.

Step Four: Prep the Steak

Add the steak to a platter and drizzle with the remaining 2 tablespoons of oil and season both sides evenly with 1 ½ teaspoon salt, and ¾ teaspoon black pepper. Set aside while your grill heats.

Step Five: Grill the Steak (Weber Wood Pellet Grill Method):

Fill the grill with the Oak or Hickory wood pellets and preheat to 450℉. When the grill is ready, oil the grates. Place the steak and veggies directly on the grill grates and grill until a golden crust and grill marks appear, the veggies should be tender but not overly soft and the steak should be cooked to medium. See notes below on timing and flipping instructions.

Step Six: Assemble the Pasta Salad

Place the orzo in a large bowl. When the veggies are cool enough to handle- dice up the onion and red bell pepper, remove the corn from the cobb, and slice the zucchini into thin half-moons. Add to the bowl of orzo. Dice the steak into ½-inch cubes and add to the bowl along with the chimichurri sauce. Toss until well coated. Finish with fresh chopped cilantro and parsley for garnish.

Recipe FAQs:

Can I make the chimichurri in advance?

Yes! But I would suggest only making it up to one day in advance for extra freshness. Store in the fridge!

I can’t find flap steak — what else can I use?

Flank or skirt steak would work here as well!

Could i make this vegetarian?

Absolutely! Omit the steak if you prefer and double up the veggies for an extra-filling dish.

Ingredients

  • 9 ounces orzo pasta

For the Chimichurri:

  • 1 cup packed parsley leaves, plus more for garnish

  • 1 jalapeno, seeds and stem removed and roughly chopped
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

For the Grilled Steak and Veggies:

  • 2 ears of corn
  • 1 small red onion, sliced into ½-inch rounds
  • 1 large red bell pepper seeds and stem removed, cut into 3-inch-wide strips
  • 1 large zucchini, cut in half lengthwise
  • 1 lb flap steak
  • 5 tablespoons extra virgin olive oil, divided
  • 1 ½ teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided

Instructions

Cook the Orzo:

Be careful not to use too much oil, because that's a sure-fire way to start a good flare-up—a little goes a long way here.
  • See notes below on timing and flipping instructions.

Assemble the Pasta Salad:

Grill Timing and Tips:
  • The onions should take about 5 minutes, flipping halfway through.  
  • The zucchini and bell pepper should take about 8 minutes, flipping halfway through.
  • The corn should take 10 to 12 minutes, turning every 3 to 4 minutes.
  • The steak should take 10 to 12 minutes, flipping halfway through, the temperature should read about 135℉ for medium.

Steak Prep Basics

  • Cut of Steak – If you take nothing else from this post, remember to invest in good steak. The right steak, such as a good filet mignonribeye steak, or New York Strip Steak can make all the difference from an alright meal to an unforgettable one.  
  • Avoid Cold Steak – For perfectly grilled steak, bring your raw steak to room temperature before grilling. This ensures even cooking throughout the center of the steak and also gets you a better crust.
  • Simple Seasonings –  A simple blend of sea salt, black pepper, and garlic powder is sometimes all you need to season steak. However, there are endless creative ways to kick up the flavor and the heat and these recipes will show you how.

Grilling Basics

  • Cooking Temperature – When it comes to cooking, the key is to use high heat and cook the steak for the right amount of time. Without the heat, you won’t get those iconic grill marks that make you feel like a cowboy.  
  • Clean the Grill Grates – Before you grill, push all laziness aside and make sure all the crud from the last time is completely gone so that your new recipe flavors don’t get sabotaged.   
  • Steak Recipe Cooking Times – For thicker steaks, generally aim for 3-4 minutes per side over direct heat, then finish cooking over indirect heat until the steak reaches your desired level of doneness. On the other hand, thinner steaks only take about 1-2 minutes per side. 

Serving Time

  • Let the Steak Rest – I say it often enough but don’t forget to let your great steak rest before you slice it with a sharp knife.
  • Cut Against the Grain – With some exceptions, depending on the cut of steak, you will get a tender juicy steak bite when you slice it against the grain. This is especially important for skirt steak and flank steak.
  • Garnish – Some chopped parsley, chives, or cilantro can give your dish a pop of flavor and color to level up the steak’s presentation.

The ideal internal temperature when cooking steak varies depending on the level of doneness you prefer. While I prefer rare to medium-rare steak, here is your guide for every preference. Instead of eye-balling it, invest in an instant-read thermometer for the most accurate reading. 

  • Rare: 120-125°F (49-52°C)
  • Medium Rare: 130-135°F (54-57°C)
  • Medium: 140-145°F (60-63°C)
  • Medium Well: 150-155°F (66-68°C)
  • Well Done: 160°F (71°C) or higher

What to Serve with Grilled Steak 

Grilled steak pairs wonderfully with a variety of side dishes to create a well-rounded and satisfying meal. Grilled carrots or asparagus are a favorite of mine. Creamy mash with tons of garlic butter and cream also never disappoints. In summer, corn on the cob grilled with some spices is always a good idea. And, don’t forget the crusty French bread to mop up all your tasty steak juices.

Leftovers & Reheating

Steak is easy to store and reheat later on for more satisfying meals. Place any leftover steak tightly wrapped in aluminum foil inside an airtight container for 3-5 days.

To reheat grilled steak, keep it in the aluminum foil and take it back to your grill. Feel free to add some butter, seasonings, and some beef broth or beer for moisture while it heats up again.

There is nothing quite like the taste of a perfectly marinated, juicy grilled steak. In Mexico, we love to marinate our meat with delicious ingredients before grilling it to make sure it is tender and flavorful. There are so many different types of steak, but the cut of steak that I like the most for the recipe I am sharing today is a thin ribeye steak. It has the perfect amount of meat and fat which makes it so juicy.

This recipe can be made on a gas grill, a charcoal grill, or you can cook it inside on a large skillet if that is your only option. You can also use different cuts of meat, such as flank steak, skirt steak, or any other thin cut. For me, the taste of a steak, recently grilled on a hot charcoal grill, served with freshly made tortilla, grilled onions, and a homemade salsa can’t be beat.

What is in the marinade for this Mexican style grilled steak?

The secret to a juicy steak is to have the right marinade. The steak marinade I am using today is similar to what we use for traditional carne asada, but with some differences. It consists of orange juice, lime juice, beer, soy sauce, garlic, black pepper, and allspice. This combination will make for tender steaks every time.

To make the marinade, all you have to do is combine all of those ingredients in a blender, and blend them until somewhat smooth, and then use it to marinate the meat. Marinating the steak for a few hours or longer will give you the best results, but as long as you marinate it for at least one hour you are setting yourself up to make a perfectly grilled steak.

What is the best way to cook this steak?

Like I mentioned above, I prefer to use a charcoal or wood grill to get a nice smoky flavor on my steak, but you can also use whatever method you have. For example, some people may not have any grill at all, but most people have a stove that they can use to cook the steak on a hot skillet. A gas grill is also a good option and will give you that nice grilled steak flavor.

To grill the steak on any type of outdoor grill, make sure you heat it up sufficiently. Next, remove the steak from the marinade and put it on the hot grill. Since this is a thin cut of steak, you do not need to cook it long. Depending on the level of doneness that you prefer, you will need to grill the steak for around 2-5 minutes per side. If you are using a thick cut steak, which you can definitely do, you will need to cook it longer. Using a meat thermometer is recommended if you have one to make sure you have an accurate internal temperature of your steak. For a medium-rare steak, grill the steak to about 130-140 degrees f.

If you don’t have a grill, heat up a large skillet over medium heat on your stove and add a little bit of olive oil. Once it is hot, add the steaks and cook until they reach your preferred temperature. Again, an instant read thermometer will give you the best results, which will result in the best grilled steak.

What can you serve with grilled steak?

In Mexico, this type of steak is most commonly served with freshly made tortillas which you can also quickly add to the grill for a charred flavor. You can also grill pearl onions and nopales and serve it with Mexican rice, homemade salsa, and refried beans.

Ingredients

  • 2 lbs Ribeye thin cut. You can replace with flank steak or another thin cut of meat

Instructions

  • Remove from the heat and serve with tortillas, grilled pearl onions, grilled nopales, Mexican rice and refried beans.
