Pollo Sabroso means delicious chicken in Spanish so I thought the name would be perfectly fitting for this flavorful chicken that everyone loves in my house. I especially love it topped with a little Peruvian Green Sauce! If you don’t like bone-in meat, you can make this with chicken breast, or try my Cilantro Lime Grilled Chicken Breast, or Peruvian-Inspired Grilled Chicken Skewers. I’m not sure what it is about spring – maybe the thought of having to get into a bathing suit in just a few months, or perhaps it’s just the sunshine that switches my brain from wanting fewer soups and stews and more large entree salads. This Coconut Chicken Salad has plenty of protein to keep me satisfied, and the warmth of the chicken doesn’t leave me feeling like I’m missing something. It’s perfect for lunch or dinner. A few weeks ago, I headed out to the east end of Long Island in the Peconic area and stopped to eat at a small bistro on the way home. As we sat outside in the perfect weather, I overheard the waitress raving about this fried Chicken Milanese topped with a Mediterranean Salad. So, of course, I ordered it! When the temperature starts to drop, I love to warm up with a comforting bowl of stew. Therefore, this Beef Stew with Pumpkin hits the spot! It’s made with chunks of beef brown with onions and garlic and then cook on low in a mixture of broth and red wine until tender. The stew is flavored with oregano, thyme, and bay leaf, and fresh pumpkin or winter squash is added halfway through. It’s probably pretty obvious by the many fried rice recipes on my blog that I LOVE fried rice! While I enjoy ordering takeout from a restaurant, I always try to find ways to recreate fried rice at home. That way, I can control what goes in it and keep it a bit lighter. I have multiple fried rice recipes, like House Special Fried Rice, Pineapple Shrimp Fried Rice, and Spicy Shrimp Fried Rice , but since I am the only salmon lover in my house, I usually whip this dish up for one, it’s my favorite! Also great with leftover salmon. You can double or triple as needed.
