The flavor of these drunken noodles is perfectly balanced – spicy, savory, and slightly sweet – and the lime juice rounds the whole dish out. This Thai noodle recipe is also filling, loaded with protein from the shrimp and eggs and naturally gluten-free if using gluten-free soy sauce. A few weeks ago, I headed out to the east end of Long Island in the Peconic area and stopped to eat at a small bistro on the way home. As we sat outside in the perfect weather, I overheard the waitress raving about this fried Chicken Milanese topped with a Mediterranean Salad. So, of course, I ordered it! The air fryer is perfect for making crispy breaded chicken, like this Air Fryer Chicken Tenders recipe and this Air Fryer Chicken Milanese with Arugula. When the temperature starts to drop, I love to warm up with a comforting bowl of stew. Therefore, this Beef Stew with Pumpkin hits the spot! It’s made with chunks of beef brown with onions and garlic and then cook on low in a mixture of broth and red wine until tender. The stew is flavored with oregano, thyme, and bay leaf, and fresh pumpkin or winter squash is added halfway through. It’s probably pretty obvious by the many fried rice recipes on my blog that I LOVE fried rice! While I enjoy ordering takeout from a restaurant, I always try to find ways to recreate fried rice at home. That way, I can control what goes in it and keep it a bit lighter. I have multiple fried rice recipes, like House Special Fried Rice, Pineapple Shrimp Fried Rice, and Spicy Shrimp Fried Rice , but since I am the only salmon lover in my house, I usually whip this dish up for one, it’s my favorite! Also great with leftover salmon. You can double or triple as needed.

I’m obsessed with these grain free, gluten free hearts of palm noodles that I used in place of pasta in this stir fry. They’re so healthy – you’re pretty much eating a big bowl of veggies! So much better than zoodles because they’re not watery and have a similar texture to noodles. I whipped up this vegetarian dish for lunch a few times already! Made with a spicy, gingery soy peanut sauce and added an egg for protein. With the egg, peanut butter and spinach the whole dish has about 17 grams of protein and comes together in under 15 minutes. Fried rice is one of my favorite guilty pleasures! I love it so much and crave it frequently. If we order it at a Chinese restaurant, we usually get the house special fried rice made with beef, shrimp, pork and chicken. There’s never enough
protein and vegetables in the dish we order to make it a main dish, so I set out to make it myself with a healthier twist. This has 35 grams of protein per serving, plus the cauliflower adds a healthy dose of veggies.
