Grilled Pina Colada Sundae

Pina coladas are an indulgent tropical vacation in a glass. I’ll make them at home as a treat any time I’m in the mood, but I really love serving them up for a crowd at a party or cookout. These Grilled Pina Colada Sundaes are a twist on this classic drink that is a great way to finish off any summer barbecue. The sundaes are made with fresh grilled pineapple and creamy coconut ice cream,

You’ll want to start with a whole, fresh pineapple – especially if you’re planning to make enough for a crowd. Cut the pineapple into 1/2-inch thick round slices, then place directly on the grill. Cook at low heat for 2-4 minutes per side, until there are nice grill marks and the pineapple appears juicy. The pineapple will be juicy when you start, of course, but the heat of the grill will draw out even more. If your pineapple is not quite ripe yet, then plan for an extra minute or two to allow some of the sugars in the fruit to caramelize.

Once the pineapple is grilled, transfer it to a cutting board and cut off the outer skin. The reason I cut it off after is that it is so much easier to grill the pineapple in big slices than it is to peel the whole pineapple and move more slippery slices around! Then, cut away the fruit of the pineapple, leaving the core behind. If you have a pineapple corer, feel free to core the pineapple in advance.

To assemble the sundaes, pile grilled fruit in dessert bowls and top with a big scoop of coconut ice cream. I actually used homemade coconut frozen yogurt in this sundae, but your favorite coconut ice cream will do nicely. To give this a real pina colada finish – if you’re an adult who is a fan of the cocktails like I am – drizzle 1/2 ounce of rum over the top of each sundae before serving. Dark rum is great, but I really like Plantation Pineapple Rum for even more pineapple flavor. If you’re not drinking, drizzle a bit of caramel onto the ice cream before serving instead.

Grilled Pina Colada Sundaes
1 whole, fresh pineapple
2 pints coconut ice cream
1/2 oz rum per sundae
caramel sauce

Remove the fronds from the pineapple (save for garnish, if desired).
Cut pineapple into 1/3-1/2 inch rounds, discarding the very top and bottom of the pineapple.
Preheat your grill to medium-low heat. Grill pineapple slices for 2-4 minutes per side, until nice grill marks appear and the pineapple is juicy and slightly caramelized.
Transfer pineapple to a cutting board and remove the outer skin of the pineapple. Cut up the grilled fruit into 1/2-1 inch chunks.
Pile fruit into dessert bowls and top each with a large scoop of coconut ice cream. Drizzle with 1/2-oz of rum, if desired, and a little caramel sauce.
Leftover grilled pineapple can be refrigerated for later use.

Makes 8-10 sundaes, depending on the size of the pineapple

A triple berry galette is such a fabulous dessert to make this summer. Strawberries, blueberries and raspberries come together with a creamy cheesecake-like filling to bring a satisfying and soul-warming treat to your season.

It’s been how long and I still haven’t mastered pie crust? Nope.

Enter the galette. Because it’s my savoir every single time.

I’ve made many different fruit galettes over the years. They are one of my favorite things to make, especially in summer, because they are SO MUCH EASIER than pie.

They are practically foolproof.

Come out fabulous every time, even with their rustic crust.

And in my personal opinion, maybe even better than pie because I’m pretty sure you get more crust per filling and that… I love. Oh yes.

I’ve done a ginger peach galette, a sour cherry galette, a blueberry peach galette, a stone fruit galette and even a savory chicken pot pie galette! And those are just the summer varieties. I’ve made many different apple galettes, blue cheese and pear galettes and even a winter vegetable galette.

See? I told you that I was obsessed.

Now it is no secret that I love a warm galette with vanilla ice cream. The melty vanilla rivers… oh my word. The warm and juicy fruit. Buttery crust with a crunch from the coarse sugar – the combo is just so perfect.

But here is what I love about this galette with a cheesecake filling… it doesn’t require ice cream! Nope. I mean, I guess you really COULD add ice cream if you wanted. But the main thing here is that we have our creamy element with the cheesecake filling, so we’re set.

That means this is easier for serving a group, doesn’t have to be served piping hot and is just simpler to manage in general.

This galette is perfect for the 4th of July – if only for obvious reasons. The triple berry combo PLUS the cheesecake filling makes for the perfect red, white and blue dessert. I’m all about the festive treats right now!

For the crust, I use mother lovett’s pie dough which is wonderful. I like to make two crusts worth and stick one in the fridge so I always have one on hand. This crust is made with butter (though my grandma used lard, of course) and is incredibly flakey and delicious. 

The filling is made with cream cheese, sugar and vanilla, whipped until silky smooth and creamy as can be, then thinly layered on the dough before being topped with all the juicy berries. I could eat the filling with a spoon alone. It’s decadent and rich and dreamy. 

I use a mix of raspberries, strawberries and blueberries because I love them together and they are also pretty. So vibrant and bright. You can use all three, or choose two, or even just use blueberries alone if you wish.  (more…)

This triple berry ice cream cake is the perfect dessert to serve for the fourth of July. It’s red white and blue, chilled and refreshing for the hottest of summer days and uses lots of fresh, vibrant berries. It is a hit every time!

Let’s rewind. Last year Lacy made this ice cream cake for the 4th of July and I posted it on instagram – and you guys went crazy. It is so incredibly easy and delicious, so I made a few versions of the next couple of months and landed on the perfect holiday ice cream cake.

The ice cream cake can’t be beat, because you make the ENTIRE thing ahead of time. The whole thing, aside from maybe a drizzle of chocolate and sprinkle of cookies. It’s very easy and a great thing to bring to a party (as long as there is freezer space!) because it appears fancy, tastes fabulous and serves a crowd.

I have so many flavor combos that I love for this cake (hello, coffee oreo), but I must say that I was very excited to throw together a summer version that takes on some red white and blue vibes. Perfect for a summer BBQ or get together! Memorial day or 4th of July – or just during peak berry season when the fruit is tasting like candy.

To make this triple berry ice cream cake, I slightly complicate things more than I do with the original. Now, you can always buy a strawberry and blueberry ice cream. I searched high and low and could not find a blueberry version that was available to everyone. Strawberry, sure. But not blueberry. So after many tests, I made my own fruit sauces and used vanilla ice cream.

I LOVE this method, because the fruit is so super fresh and sweet.

The blueberry and strawberry sauces elevate the vanilla ice cream so much – they almost makes this cake feel sundae-like. I also like to add the strawberries and blueberries, and then save some of the puree for serving. It’s incredibly berry-forward which is what I LOVE. 

The berries taste lovely against the chocolate from the ice cream sandwiches. YES! The middle of this “cake” is just layered ice cream sandwiches, which is cheating in the best way possible. Because I use vanilla ice cream AND the classic sandwiches (you can always use a fancy flavor if you’d like!), I cut down on the ice cream too. The original recipe uses two half gallons of ice cream. In this recipe, I only use one. We’re adding to each layer with our homemade berry sauce so it’s more than enough ice cream. (more…)

This burrata platter is nothing groundbreaking, with burst tomatoes and garlic and the melty, creamy cheese. Except for… the pickled blueberries!

Say hello to one of your newest obsessions. These are fun, delicious, pretty and absolutely perfect for the summer.

I’ve pickled peaches before so I figured, why not pickle blueberries?! And if it allows me to make some savory red, white and blue treats for the summer, even better.

I’ve seen the mozzarella, tomatoes and blueberry combo before – usually in a version of a caprese salad for a red, white and blue theme. 

Now while I love the savory and sweet combo, I wanted something a leeeettle more savory.

Pickled onions are a MAJOR fave around here. It’s no secret that I love to put them on just about everything. I keep them in my fridge at all times, making a new batch each week. They elevate so many meals and make things extra delicious and special. 

I knew blueberries would be just as delicious, if not more – because of their sweetness! We’re just doing a quick pickle, so these last in the fridge for about a week. I like to heat the pickling liquid in a saucepan then pour it over the blueberries. This helps to pickle them fast – though of course you can make them ahead of time and store in the fridge too!

These blueberries are incredible in salads and any sort of cheese board. We love them! And I’m such a briney, vinegary freak that I can eat them right out of the jar.

I like to burst the tomatoes too – because it adds an extra juicy and almost tomato sauce-like effect. If you don’t want to take that extra step, just slice some cherry tomatoes, maybe marinate in a bit of olive oil and balsamic and toss on top with the blueberries. Nothing fancy here, no specific recipe. Take these ingredients and combine them in the best way you love.

Most importantly, the kids loved this. Emilia loves any and all dips, which burrata can kind of be classified as once sliced open. And the blueberry is the fruit of choice in our house, so while it took a minute to get used to the pickled version, this was all around a huge hit.

I toasted a sliced baguette and slathered the burrata on top with the blueberries and tomatoes.

I know we’re still a week and a half out, but I could NOT be more excited for the kick off to summer this year. MDW is one of my favorite weekends of the entire year and right now I’m feeling so much more hopeful and great about this season to come! Today I have a ton of my favorite recipes for Memorial Day weekend for you – not just burgers and hot dogs, but amazing salads, snacks, appetizers and dips, side dishes, grilled meals, cocktails and treats. It can’t get any better than this!

There’s a farm on Long Island where you can go berry picking, and they make the BEST homemade blueberry ice cream. Since making my chocolate frozen yogurt in my Ninja Creami, I started playing around with other flavors and was dying to try it using fresh blueberries. It turned out even better than I imagined! I also tested it in a standard ice cream maker, and it worked well. Some other frozen desserts that I love are Frozen Banana Pop, Vanilla Bean Frozen Yogurt, and Frozen Fruit Pops.
