Pork mixiotes with nopales is a popular Mexican dish for the holiday and other celebrations in Mexico.  There are many different ways to make them depending on the specific region in Mexico. You can make them with any kind of meat, including chicken, pork, beef, lamb. There are even some more exotic varieties using meats such as wild hog, rabbit, and even squirrel!  

That, however, is all a question of persoanl taste. I am going to show you the most traditional variety, which are the pork mixiotes. This Mexican recipe will win over anyone who tries it.

What are mixiotes?

Mixiotes is a typical dish that is representative of Mexican cuisine. In consists basically of meat, marinated and cooked in a chile-based sauce, seasoned with cumin, oregano, and avocado leaves, and is cooked by steam (like tamales).

The original preparation method was to wrap the meat in a very thin leaf that came from the maguey plant, which was called a “mixiote.” That is where the name of the recipe came from. 

The word mixiote comes from the Nahualt “metl” (maguey) and “volt.” Over time the preparation method changed, and today you can find it wrapped in plantain leaves, aluminum foil, parchment paper, and even plastic bags. 

You can make it with just meat or you can add vegetables such as nopales or potatoes. 

Mixiotes are considered an exotic, but delicious dish, capable of winning over the palate of anyone who tries it. The flavor is hard to describe, but it is amazing. It has lots of different herbs which give it its great flavor, including bay leaves and avocado leaves. 

Like I said earlier, it is traditionally wrapped in a thin maguey leaf, but there is a problem with that. Maguey is a protected plan and it is no longer legal to sell it since removing the part that you use for this recipe dries up the plant, causing it to die. 

Don’t worry though, like I said, you can also wrap it in plantain leaves, aluminum foil, or parchment paper. So, if you can’t find maguey, there are no excuses and you can still make it using something else.

What can you serve with mixiotes?

You can serve mixiotes with rice, fresh made corn tortillas, y your favorite salsa. Aside from its great flavors, this is a healthy recipe that is low in fat since it is cooked in its own juices and you don’t add any additional oils or fats.

Ingredients

  • 2 pounds pork ribs
  • 3 ancho chiles
  • 8 oz guajillo chiles
  • 1 tsp dried oregano
  • 1 tsp thyme
  • 1 tsp cumin
  • 4 peppercorns
  • 4 cloves
  • 12 bay leaves
  • 12 avocado leaves
  • 5 cloves of garlic
  • 1/2 onion large
  • 1 tbsp white vinegar
  • 12 pieces nopales sliced and cooked
  • 12 maguey leaves or parchment paper this can be replaced with aluminum foil or plantain leaves
  • Sal to taste

Instructions

  • Bring the dry chiles to a boil in water until they are soft, set aside and let cool (don't drain the water)
  • Blend the chiles from the previous step with the herbs and spices, garlic, salt and vinegar, and the water where you boiled the chiles.
  • Put the pork in a large plastic bag or bowl and completely cover with the salsa from the previous step. Let marinate overnight or for at least three hours.
  • Cook the nopales with water, salt, garlic, onions, and 2 bay leaves. When cooked, drain the water and set aside.
  • Put the mixiotes together by placing the leaf (or aluminum foil, parchment paper, etc.) on a large plate. Add the marinated meat with some of the marinade, a bay leaf, and an avocado leave. Add some of the cooked nopales.
    If you use maguey leaf or parchment paper, lift the four corners to form a small pouch and tie with butcher's or kitchen twine, and if you use aluminum with banana leaf, wrap like a tamale.
  • Place the mixiotes in a large pot and steam for 1 1/2 hours until very soft.
  • Serve with rice.

What is aguachile verde?

Aguachile verde is a Mexican dish made with shrimp, serrano peppers, and tomatillos. It is served cold and makes the perfect appetizer or main course. The word aguachile means “chile water” in Spanish, which is a good description of the salsa that you will be making as part of the recipe.

This name comes from how the sauce is prepared before adding it to cooked shrimp – by blending together chile peppers, tomatillos and other ingredients into a smooth mixture. The sauce is then poured over the shrimp to create this delicious dish! The addition of chiles makes this recipe a bit on the spicy side, but you can adjust the heat by increasing or decreasing the amount of serrano peppers.

What ingredients do you need for this recipe?

To make this authentic aguachile recipe, you will need the following ingredients:

  1. Raw shrimp (jumbo or extra large) – in any case, you will want to use larger shrimp for this recipe if possible.
  2. fresh lime juice
  3. crisp cucumber, chopped into smaller pieces
  4. red onion
  5. 1/2 bunch of cilantro
  6. serrano chile
  7. garlic cloves
  8. Salt and pepper

 

How do you make aguachile?

Making aguachile super easy! You are definitely going to need a blender or food processor for making the green aguachile salsa that is typical of this recipe.

First, you will want to make sure the fresh shrimp is de-veined and rinsed (drying off the excess water). Once the shrimp is clean, you will add it to a mixing bowl with the lime juice (make sure it is freshly squeezed), a little salt to taste, and the onion slices. Make sure everything is mixed together well and then cover it and put it in the refrigerator for 20-30 minutes.

After that time has passed remove the bowl from the refrigerator and strain the lime juice from the shrimp and set aside in a separate bowl.

At this point, you will make the green chile sauce by adding half of the strain lime juice, the garlic cloves, pepper, salt, serrano pepper, cilantro, a few pieces of the onion that were with the shrimp in the refrigerator, and 2 tablespoons of the chopped cucumber in a blender and blend well.

You will then pour the resulting salsa verde in the bowl with the shrimp from earlier and mix well. Now, you can add more of the excess lime juice that you strained and adjust the flavor by adding more salt or pepper as needed.

Finally, add the remaining cucumbers and avocado if desired and it is ready to serve!

What are the health benefits of aguachile verde?

Aguachile verde has many health benefits including being a high protein and low fat dish which makes it perfect for those who want to lose weight but still enjoy delicious food.

It also contains vitamins A & C as well as iron and calcium making this dish not only healthy but nutritious as well. Aguachile verde is a great way to get your daily dose of vegetables and shrimp is a good source of omega-three fatty acids, which are beneficial for maintaining heart health and preventing chronic diseases.

How do you serve aguachile?

Aguachiles are almost always served cold as a delicious appetizer or as a main dish. You can serve them by themselves, or with rice, tortillas, or tortilla chips. My preferred way to enjoy them is with tortilla chips, but it really depends on your personal preferences.

Authentic Mexican Aguachile Verde Recipe

Ingredients

  • 1 lb Jumbo Shrimp deveined, rinsed, and cleaned

Instructions

  • Make sure the shrimp has been adequately cleaned, deveined, and patted dry. Set aside in a large bowl.
  • Add the lime juice, a pinch of salt, and the onion slices. Cover and put in the refrigerator for 20-30 minutes.
  • Remove from the refrigerator and strain the lime juice from the shrimp and onions, and set aside.
  • Add half of the lime juice that you strained in the previous step to a blender with the garlic, pepper, salt, serrano pepper, cilantro, a few pieces of the onion that marinated with the shrimp, and 2 tablespoons of the chopped cucumber. Blend well.
  • Add the mixture made in the previous step to the bowl with the shrimp. Mix well and add additional lime juice and salt to taste.
  • Add the remaining cucumbers and avocado slices (if desired) and serve cold with tortilla chips.

There are so many chili recipes on the web, it can be difficult to know which one is the best. Some people prefer a traditional red chili recipes with beef, and others prefer white chili recipes. In my case, I love both and you can find my original recipe for chili con carne here.

Today, however, I want to share this tasty white chili recipe that uses boneless skinless chicken breasts, cream cheese, chicken stock (or chicken broth), great northern beans and more. It is creamy, has just the right amount of spice, and is definitely a favorite recipe around here.

We probably make this once a week and all of my kids (and my husband) love it. Sometimes we finish it all in one day, but when we don’t, it is even better the next day!

How to Make this Easy White Chicken Chili

One reason that I love making this recipe is because it is so easy.

You start by blending the tomatillos, onions, and garlic together and then adding it to a large pot with the rest of the ingredients. Then, you let it boil for about 20-25 minutes and it is ready! I love adding the diced poblano peppers to give it a little kick, but it isn’t so spicy that your kids won’t enjoy it. If you think poblanos are too spicy though, you can always replace them with mild green chiles.

I personally use the great northern, beans, but you can replace those with a can of pinto beans, white kidney beans, cannellini beans, or another type of white beans. For the chicken, I boil a couple of chicken breasts and shred them up, but you can also use rotisserie chicken or any other leftover chicken if you have it on hand.

Some white chili recipes use sour cream, but this one does not. Instead, it gets its creamy flavors from the cream cheese that I add. If you like a thicker chili, you can add some corn starch to thicken it.

What are some toppings to serve with this recipe?

One thing that we love about chili (white chili or regular chili) at our house is adding our favorite toppings. For example, this goes great with tortilla chips, sour cream, cheddar cheese, and even lime wedges. Of course, this all depends on your personal preference, so if there is anything else you like to add feel free! Sometimes I will add fresh jalapenos too to give it even more spice.

I don’t know if I have ever seen a time where it was more important than now to strengthen our immune systems. While there are a lot of vitamins and supplements available to do that, my favorite way is by eating healthy food that can naturally provide the nutrients that our bodies need. 

Growing up in Mexico, my mom used to make us lots of soups. Some had seafood, some had vegetables, and some had other types of meat. One of my favorite types of soup, however, are creamy soups that are made with a base of tasty vegetables. Today, I am going to share a recipe for creamy ginger and carrot soup, which not only is good for you, but it also tastes great!

How Do You Make Creamy Ginger and Carrot Soup?

The first step to make this recipe is gather all of the ingredients that you will need. Specifically, you will need the following (see recipe for quantities):

  • Ginger Root
  • Carrots
  • Sweet Potato
  • Garlic Cloves
  • Celery
  • Red Onion
  • Chicken Bone Broth
  • Smoked Paprika
  • Ground Cumin
  • Oregano
  • Lemon pepper
  • Salt
  • Olive oil

You will start by sauteeing the ginger, onion, and garlic in olive oil for a couple of minutes. For this recipe, I used my new T-fal Platinum Collection cookware. I sauteed the vegetables and actually made the entire soup in one of the large pots and it worked really well. This particular collection also has metal-utensil safe non-stick coating, stainless steel handles and it is dishwasher safe! I also love the Thermo-Spot technology which indicates when the pan is perfectly preheated. This set has 14 pieces, so it is very complete and I use it when making so many of my recipes.

After you sautee the first three ingredients for a couple of minutes, you will add all of the remaining ingredients except for the chicken bone broth and sautee them for about 5-7 minutes. 

Next, blend all of the sauteed ingredients together in a blender and empty it back into the pot where you sauteed everything. At this point you will add the chicken bone broth to the pot and bring it to a boil for 5 minutes. Depending on the desired consistency, you can add more chicken bone broth.

At this point, add salt to taste and it is ready to serve!

What are some health benefits of this soup?

I mentioned above that this soup is healthy and can help strengthen your immune system, so you may be wondering how.

This soup includes ginger, which has lots of health benefits, including the fact that it can help lower the risk of infections because of the amount of gingerol that it contains. 

In addition, this soup includes chicken bone broth. Chicken bone broth is associated with collagen and has many benefits such as being good for bone and joint health and possibly supporting immune function! I have replaced regular chicken and beef broth with bone broth and I have noticed a big difference.

Ingredients

  • 2 Tbsps Ginger Root Diced
  • 1/2 Cup Carrots Diced
  • 1/2 Cup Sweet Potato Diced
  • 3 Cloves Garlic
  • 3 Celery Stalks Diced
  • 1 1/2 Cup Chicken Bone Broth
  • 1/2 Tbsp Smoked Paprika
  • 1/4 Tbsp Ground Cumin
  • 1/2 Cup Dried Oregano
  • 1/4 Cup Lemon Pepper
  • 2 Tbsp Olive Oil
  • Salt To Taste

Instructions

  • Start by sauteeing the ginger, onion, and garlic for three minutes in the olive oil.
  • Add the rest of the ingredients, except the chicken bone broth and sautee for about 5-7 minutes
  • Blend the sauteed ingredients in a blender until smooth and return to the pot
  • Add the chicken bone broth and bring to a boil.
  • Simmer for about 5 minutes. Add additional broth to thin out if necessary.
  • Add salt to taste.

What is Pico de Gallo?

Pico de gallo literally means “rooster beak”, which may not sound appetizing, but I promise it is delicious! It is made of diced tomatoes, onions, and cilantro, mixed together with salt and lime juice.

It is a simple recipe, but it adds so much to other meals, including flautas, eggs, tamales and more! It is perfect if you want to add a touch of freshness to any dish and it is healthy and delicious as well.  

The traditional version also has diced jalapenos, which I love. However, if you aren’t a fan of spicy food, you can omit it. 

Some people like to add it to their guacamole as well, which gives it an extra flavor that is hard to beat. 

How do you make Pico de Gallo?

Pico de gallo is one of the most simple recipes that you can make. To start, you will want to dice the tomatoes, onions, cilantro, and jalapenos if you are using them. Next, combine those ingredients in a bowl and mix well.

The next step is to squeeze the juice from one lime into the bowl and mix together. Finally, add salt to taste before serving alongside your favorite Mexican dishes. 

This is one of my favorite recipes, simply because it is so easy and yet adds so much flavor. I love other salsas as well, but a lot of them can take longer to make, so pico de gallo is a great alternative.

Ingredients

  • 1/2 Onion
  • 2 Roma Tomatoes
  • 1/2 Bunch of Cilantro
  • 1/2 Jalapeno
  • 1 Lime
  • Salt to taste

Instructions

  • Dice the tomatoes, onion, cilantro, and jalapeno and place in a medium sized bowl
  • Add the juice from one lime and mix together
  • Add salt to taste a little bit at a time.

If you have followed me for a while, you know that I am a fan of pozole. In fact, I already have two different varieties on this website, including Pozole Rojo and Pozole Verde. I love these recipes because they remind me of Mexico and because they are so delicious! They are especially perfect for cold winter days here in Colorado when I need something to warm me up. I also choose pozole when I am entertaining for small groups here at home, since it is easy to make and serves many. 

Today, I am going to share a third variety of pozole, called Pozole Blanco. The main difference between this version of Pozole is that it does not have red or green chiles to give it the color that the other ones do. That said, it is usually served with a spicy salsa on the side, so you can still get that flavor if you want it. 

How Do You Make Pozole Blanco?

Some of the ingredients you need for Pozole Blanco are:

  • Chicken
  • Hominy
  • Chicken Broth

This recipe is actually pretty easy to make. You will always start by adding the chicken, fresh herbs, garlic, and onion together in a large pot and letting them cook together. You will add the hominy next after removing the large herbs, garlic and onion from the broth.  After the pozole is done cooking, you can add some garnishments, such as raddish, lettuce, onion, tortilla chips, cilantro and lime.

Traditionally, pozole blanco is served also with a very spicy chile de arbol salsa. Warning – this is very spicy, so you can omit it if you prefer or use a more mild salsa. For those of you brave enough to try it, the recipe is below. 

When I made it this week, I used a couple of favorite new kitchen items – one of the pots and one of the frying pans from my T-Fal Easy Care Cookware Set. I usually handwash my cookware because I prefer to, but these are dishwasher safe so when you are in a hurry to clean up you don’t have to worry about that!

Spice Bag Trick

As you can see above, this recipe includes a lot of fresh herbs, spices, and other ingredients that are better off removed at the end of the cooking process. In order to avoid picking each piece out, I like to use a spice bag.

The concept is simple, you add the larger spices and ingredients that don’t typically dissolve (i.e. bay leaves, onions, oregano, etc.) and just drop it in during the cooking process. Then, prior to serving you remove the bag. This helps to maintain the delicious flavor, but also makes sure your guests aren’t accidentally getting big bits of herbs and onions!

This worked really well for this recipe, so I definitely recommend it to save time and effort.

Ingredients

For the Pozole

  • 6 cups Water
  • 2 Chicken Breasts
  • 1 can Hominy 25 oz
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Oregano
  • 1 tbsp Fresh Thyme
  • 1 tbsp Fresh Marjoram
  • 2 Bay Leaves
  • 3 Cloves of Garlic, peeled
  • 1/2 onion
  • 2 tsp salt more or less to taste

For the Chile de Arbol Salsa

  • 4 chile de arbol
  • 1 Chile ancho
  • 1 Chile guajillo
  • 3 garlic
  • salt
  • 1/4 onion
  • 1/2 cup avocado oil or other oil

Accompaniments

  • chopped radish
  • limes
  • Tortillas Strips
  • Chopped Cilantro
  • Chopped Onions
  • Avocado

Instructions

For the Pozole

  • Bring the water to a boil in a large pot and add the salt.
  • Add the following ingredients either to a spice bag or directly to the water: rosemary, oregano, marjoram, thyme, bay leaves, garlic, and onion. If using the spice bag, close it and add to the water.
  • Immediately add the chicken breasts and cook over medium high heat until the chicken breasts are cooked through. Remove the spice bag if using. If not using, remove the onion, garlic, bay leaves, and other herbs and dispose of them.
  • Remove the chicken, shred, and then add it back to the broth.
  • Add the hominy and bring to a boil for 15 minutes.
  • Serve hot with the the chile de arbol salsa (if desired) and the other accompaniments.

Chile de Arbol Salsa (Very spicy!)

  • Remove the stems from the chiles, and then saute all of the ingredients in a frying pan with the oil for 1-2 minutes.
  • Add all ingredients (including remaining oil) to a blender and blend well. You can add a small amount of water or broth for a thinner consistency.
