Homemade tomato soup in a bowl with cream and cheese on top

If you are like me, there are some nights where you just want to hunker down with a hot bowl of tomato soup. Of course you can always just open a can of soup from the store, but it is so much better for you and tastier as well if you make the soup with fresh ingredients and from scratch.

The delicious recipe I am going to share today may have a lot of ingredients, but it is easy to make and you will love it! It includes fresh herbs, fresh ripe tomatoes, garlic cloves, and other simple ingredients that will give it so much flavor.

Why you will love this homemade tomato soup more than the store-bought version

Tomato soup in a can is a pantry staple that many people have, but once you have tried this homemade version, you will not go back! Instead of having processed ingredients from the version you buy at the store, this recipe has only fresh ingredients and is made from scratch. I know it may seem daunting, but it is really easy to make.

The combination of flavors from the herbs, tomatoes, and other ingredients will have you going back for more. You can serve this as an appetizer or a side dish to go along with a tasty grilled cheese sandwich, or you can serve it as a main dish. No matter how you eat it, you will not be disappointed, and I am sure you will agree this is the best tomato soup recipe you have tried.

What ingredients do you need to make homemade tomato soup?

I mentioned above that this recipe has fresh ingredients. This is important so that you can know what you are putting in your body and so that you get the best flavors possible.

ingredients for this soup on a cutting board

To make this recipe, start by gathering the following ingredients:

  • 2 lbs of ripe, fresh tomatoes (roma tomatoes or other types of tomatoes will work)
  • 1 medium onion (red)
  • 3 garlic cloves
  • 1-2 fresh basil leaves
  • 2 bay leaves
  • 1 tsp of dried oregano
  • 1 tsp of nutmeg
  • 1 tbsp of brown sugar
  • 1 tsp of balsamic vinegar
  • 1/2 cup of white wine
  • 1 tbsp of olive oil
  • 1/4 stick of butter
  • salt and pepper to taste
  • 1/8 cup heavy cream
  • Mozzarella cheese
  • Croutons

How do you make this tomato soup recipe?

Now that you have gathered the ingredients, it is time to make the recipe. It is important to wash all of the vegetables and herbs before cooking, so do that first.

Next, you will chop the tomatoes, onion, and garlic cloves and set them aside separately for a later step.

Heat a large skillet over medium-high heat and add 1/2 tbsp of olive oil and butter until the butter just melts. Then add the chopped garlic and onions and let cook until the onions are transparent.

The next step is to add the tomatoes and to continue cooking for 2-3 minutes before adding the salt, pepper, oregano, nutmeg, bay leaves, and basil. Reduce to medium-low heat and stir well. At this point, add the brown sugar, stir well, and cook for about 2 minutes.

After 2 minutes have passed, add the balsamic vinegar and stir well. You can add additional salt and pepper if it is needed at this point. Add everything from the skillet to a blender and blend until smooth, but thick. You can also use an immersion blender at this stage, but I usually just use a traditional blender.

In the same skillet, add another 1/2 tbsp of olive oil and heat over medium heat before adding the blended mixture back to the skillet.

Add the white wine and let cook for 5 minutes.

At this point, the soup is ready, so you can serve it in a bowl topping with a little bit of heavy cream, the cheese, and the croutons.

How to use this recipe for pizza or pasta sauce.

This recipe is mainly made for soup, however you can make some slight modifications to it so that you can use it for pizza or pasta! The only modification that you need to make for this recipe is to omit the white wine. This will give it a thicker consistency which is perfect for adding to your favorite homemade pizza recipe. You can also use it as an easy sauce for pasta with meat or without meat. You will find that this adds a great flavor to any of your favorite pasta or pizza recipes, so I definitely recommend it.

When I use it for that purpose, sometimes I will add some red pepper flakes to add a bit of heat, but only if I am making it for my husband and me, since some of the kids don’t quite like spicy food yet.

This homemade tomato soup recipe is a hit around our house and is a great way to incorporate healthy ingredients into your diet. The kids love it also, especially when you serve it with tasty cheese sandwiches. I always make a large pot of this when we have it, and there is almost nothing left every time.

It has a mild, but delicious tomato flavor and  is great for any time of year.

Inside: Learn how to make the perfect avocado salsa verde, also known as salsa taquera, which is a great salsa recipe to go with your favorite Mexican tacos.

avocado salsa with chips and peppers

In Mexico, there are an infinite number of salsa recipes. Any home you go to will have their favorite recipeusing basic ingredients and imparting a ton of great flavors. Salsa is a staple in Mexican foods and you will find it at every table and nearly every meal.

One of the great things about salsa is that you can adjust the heat levels by adding or taking away different peppers, or by changing what kind of peppers you use. For example, for today’s avocado salsa recipe, I use serrano peppers and habanero peppers, so it has the perfect amount of heat for me. However, if you want to make it less spicy, you can replace the habaneros with jalapenos and omit the serranos.

What is Salsa Taquera?

This avocado salsa recipe is also called salsa taquera. This is because it is the perfect salsa to serve on your favorite Mexican tacos, like barbacoa tacos, tacos al pastor, carnitas tacos, and more! It uses fresh avocados, a combination of spicy peppers, fresh cilantro, and other simple ingredients. It has the best flavor and a slightly chunky texture which I love.

avocado salsa verde with chunks of avocado

Throughout Mexico, you will find “taquerias” or tacos stands, all over the city. You can go right up, tell them what kind of tacos you want and have freshly made tacos on your plate in a matter of seconds. There is no need to wait for taco tuesday in Mexico! Usually they have a variety of salsas that you can choose from, and this avocado salsa is always at the top of the list for me since it is one of my favorite salsa recipes.

There are a few different varieties of avocado salsa. For example, some varieties blend all of the ingredients together to make a creamy avocado salsa, while others (like this recipe) include avocado chunks that are added directly to the sasa verde for a different texture. You can serve it on tacos like I explained above, or you can use it as a yummy dip with fresh tortilla chips.

How do you make Avocado Salsa Verde?

The key to this homemade salsa recipe is to use the freshest ingredients. For this particular recipe, you will need to gather the following avocado salsa ingredients:

  • Fresh Tomatillos
  • Serrano chile
  • Habanero chile
  • Ripe Avocado
  • Onion (red onion or white onion is fine)
  • Garlic cloves
  • Fresh cilantro
  • Salt

The process is very simple. You will start by making a delicious salsa verde, and then you add in the chopped ingredients at the end to give it this salsa’s signature texture.

Of course it is important to start by washing all of the ingredients first. Once you have done that, add some water to a pot and bring to a boil, adding the serrano peppers (don’t add the habanero to the water, it will be used later).

After 5 minutes, add the tomatillos and let it continue cooking for a few minutes until they start to change color slightly. Remove the peppers and tomatillos from the water and let them cool down.

Once they have cooled, add them to a blender with a little bit of water, the garlic, 1/4 of the onion, a few small pieces of the cilantro, and salt to taste and blend well. Then pour the salsa into a medium bowl and set aside for a moment.

Next, chop the rest of the cilantro and onion and cut the avocado into small chunks. Add the chopped ingredients to the bowl with the salsa and add additonal salt to taste if needed.

This easy dish starts is usually made with beef strips, but you can also make it with pork meat if you prefer. This is definitely one of my favorite recipes. When you make it, there is always a delicious aroma in the kitchen that brings me back to my childhood growing up in Mexico.

How do you make Mexican style steak?

You will need the following ingredients to make this recipe:

  • 1 pound of steak (top sirloin works great) cut into strips
  • 6 large red tomatoes
  • 1 large onion
  • 3 serrano chiles or jalapenos
  • 3 cloves of garlic (dientes de ajo)
  • black pepper (to taste)
  • 3 medium potatoes
  • cilantro
  • 1 cup of water
  • salt to taste
  • olive oil (aceite de oliva)

To make this recipe you will start by cutting the beef into thin strips and seasoning with salt and pepper. After that, peel the potatoes, wash them, and cut them into small cubes or a half moon shapes and set aside.

The next step is to cook 2 of the tomatoes and onions in a cup of water over medium heat. Once they are cooked, let them cool and blend them in a blender with 1/4 of the onion, one clove of garlic, and a tablespoon of salt. Then set the resulting salsa aside for later.

Next, chop the remaining tomatoes in a half moon shape, slice the serrano or jalapeno peppers and the rest of the onion. Set this aside as well.

In a large skillet, add the olive oil and heat it up on the stove over medium heat. When it is hot enough, add the steak strips, the two remaining cloves of garlic, and the sliced onion and let cook for about 5 minutes.

Once the beef is cooked through, add the potatoes and lower the heat to medium-low. When the potatoes start to brown slightly, add the rest of vegetables and chiles and mix well, cooking for another 5 minutes.

Finally, add the salsa that you prepared earlier and the cilantro and bring it to a boil for another 5 minutes. Add salt to taste and serve with rice, refried beans, and warm corn tortillas.
