And, I mean, can you blame us?

These lemon butter pork chops are inspired by my lemon butter chicken in Everyday Dinners – probably the most made recipe in the entire book! I make the lemon butter chicken multiple times a month. Eddie adores it, the kids love it – it’s a very tender, juicy chicken recipe with, well… lemon. And butter!

And herbs.

It’s simple and wonderful and everything you want dinner to be.

A favorite!

And served with vegetables and rice or potatoes, it is incredibly delicious! Because the buttery lemony sauce makes its way on to every bit of your plate, coating the veggies and whatever else you choose to pair it with.

Let’s talk about how this is also incredibly simple. Like crazy simple!

The pork chops get a good dredge of flour after a shower of salt and pepper. That’s it. No egg or breadcrumbs – just a coating of flour. 

Then they get browned and sizzled in the pan until golden. We’re going to pop them in the oven so it’s not imperative that they cook fully here.

Once the pork chops are properly seared, I remove them from the pan and throw in some butter and lemon slices. The butter browns a bit, all the flavor bits in the pan released and the lemons get a little caramely! YES.

Next, the pork chops go back in the skillet. Or the entire thing (pork chops + lemon butter sauce) can be put in a different baking dish. I bake for 10 to 15 minutes, just to finish them off. I like my pork chops to be 155 to 160 degrees F. Taking the internal temp is important so they don’t dry out!

Luckily we have this incredible sauce to help things along. I also suggest grabbing some bread so you can drag it through the remains of the lemon butter sauce and go.to.town.  (more…)

This crispy honey lemon salmon is served on a bed of greens with sweet peppers, tomatoes, cucumbers, pickled onions, kalamata olives and feta cheese. It’s drizzled with a perfect lemon dressing and is so crispy, crunchy and satisfying that sometimes I think I could eat this everyday.

My family cannot get enough of this salmon. I use the recipe for my sticky honey garlic salmon, but add in a ton of fresh lemon zest. This brightens the flavor so much. I love cutting the salmon into chunks. It cooks quickly and perfectly, plus all the edges get super crispy. Adding the honey into the skillet creates a sticky sauce and the whole thing is just FUN to eat. 

I end up making salmon like this all the time for the kids – they are more inclined to eat it this way. 

And of course, it works in a salad so well. Little chunks all through the salad and so much flavor.

As for the rest of the salad, this is what I love to add:

Butter lettuce or romaine hearts, seasoned with lots of salt and pepper

Sweet peppers, thinly sliced

Cherry tomatoes, cut in half

Cucumbers, peeled and chopped

Kalamata olives, or any olives

My pickled onions, because they are incredible in a salad! 

Crumbled feta cheese, which finds its way all throughout the greens

Sometimes I keep this a traditional salad. Other times I chop everything into same-sized bits for a chopped salad. There is so much incredible crunch here. It’s easy to make it your own!

This dressing is one of my all time favorites. Shocking, I know. 

It’s a honey lemon vinaigrette with an emphasis on dill – very simple and classic, but one that tastes delicious on just about anything. Especially crisp greens! This dressing is so good that I will often eat it on greens alone, maybe with some parmesan cheese. I love how tart and briney it is, with the perfect hint of sweetness. And of course, that dilly flavor that I crave in pickles and more.  (more…)

To the other half, you are my people. And that is why we are making a cheaters pickle pizza today!!!!

Really though, if you hate pickles? I get it. They can be polarizing. Eddie doesn’t like pickles at all, so this pizza is his nightmare. Actually, sometimes I just text him pictures of this pizza to mess with him. It’s funny.

I, on the other hand, LOVE pickles. I live for pickles. It’s been that way since I was a kid and I don’t see it changing anytime soon. The tart, briney pickles call my name daily. And now, I even love sweet pickles. Give me dill or give me bread and butter, even spicy – I will take any kind of pickles.

Now this is my absolute favorite version of a pickle pizza. 

I like to make my own faux ranch spread – I use plain greek yogurt or sour cream and I mix it with some ranch seasoning. I really like the ranch seasoning from Trader Joes! This spread goes right on the puff pastry. Basically, it’s the “sauce.” 

Next, the cheese! I like to use sharp white cheddar with the pickles. There aren’t many better combos out there. Sometimes I’ll have a few pieces of sharp cheddar with pickles (and olives!) as a snack. It’s divine. 

Then, the pickles. For this recipe, I usually like dill pickle chips. I find that they are bite size and the perfect shape to have a few pickles per slice of pizza.

So, I am no stranger to puff pastry pizza. I have multiple recipes for them in Everyday Dinners – they are one of my weeknight meal lifelines. Lots here on the blog too. And I love how quickly and easily they come together. The crust is so flakey and delicate, so it’s imperative that you don’t overload any section of the puff pastry. You want the pickles and cheese evenly distributed. And then you bake it! 

P.S. my favorite puff pastry brand is one that does not have perforations in it. I love the wewalka brand and jus roll too. 

This pizza takes 20 to 25 minutes and if you love pickles… oh my gosh. You will LOVE it. I finish it off with some fresh chives and of course, a big drizzle of hot honey. The spicy sweetness pairs super well with the dilly pickles. It’s like a huge flavor explosion that you can’t pass up.

I love this for a quick and easy weeknight meal, or even a party snack or appetizer. It’s sharp and tart and sweet and hot and just filled with such an incredible pop of flavor – with minimal ingredients.

Okay I think I got the point across.

This meal is our current obsession. These meatball wraps are decadent, super satisfying and a huge win for everyone eating them. 

And they are SIMPLE!

Now, I take a bit of the “simple” out of them because I make my own meatballs and pesto. I use my ricotta meatball recipe which is incredible. It’s very easy and straightforward, resulting in super tender and juicy meatballs. 

I also make my basil pesto. I can’t even tell you how many batches of this I’ve made in the last few weeks. Maybe five or six? I make a batch at least once a week and throw most of it in the freezer so we can enjoy it all winter long. It’s the best pesto ever.

So here’s how I make the meatball wrap:

The key is using a fairly large tortilla. Like a burrito-size flour tortilla or even one of the large siete tortillas (I like the chickpea ones!). 

Spread some pesto in the center of the tortilla. 

Add a sprinkling of cheese. Mozzarella, provolone – you know I love the Tillamook italian blend! 

Add one to three meatballs. Whichever fits best. Don’t add too many or it won’t seal easily.

Fold up the wrap, then toast it in a skillet. Yes! Until golden and crunchy. 

Serve that baby right up.

Oh wow, wow, wow. This wrap is so dreamy. Incredibly filling. So tasty! You can customize it, based on your meatballs and your pesto. And even your cheese.

Not only is this so incredibly delicious (like ridiculously crowd pleasing), it’s also super easy to throw together with leftovers. In fact, I like to make this recipe using only leftovers! So if I have meatballs from a meal earlier in the week, I plan on this a few days later. 

It works so well and not just because everyone loves it. But it works because it’s different from the other traditional ways you may have served the meatballs, so it adds variety and excitement to your weekly dinners.  (more…)

Okay, so the way I marinate this chicken is incredibly easy. Are you ready for it? 

I marinate it in… 

BLUE CHEESE DRESSING!!! 

Yes, blue cheese dressing. You can make your own (I like to make some with greek yogurt!) or buy your favorite store-bought version. Which is also easy and delicious.

And yes, this is the summer of chicken + gorgonzola for me. Remember my grilled chicken and gorgonzola pasta salad from earlier this summer?

I marinate the chicken in the dressing for at least 30 minutes, but I’ve also marinated it for an entire day. It just depends on how much time I have! 

The blue cheese dressing helps to tenderize the chicken but also adds an incredible layer of flavor. I usually use chicken thighs for this recipe because they are Eddie’s favorite. 

Then I throw them on the grill – and they take just a few minutes. You won’t believe how incredible they taste… just from the marinade.

I love the tomato mixture on top of the chicken. This is inspired by my mom’s simple tomato salad from Everyday Dinners – an easy tomato salad with blue cheese that my mom would make all the time when I was a kid. 

She actually just told me she had it a few weeks ago too! 

There is something about the tangy, crumbly blue cheese against juicy, sweet tomatoes. It’s a huge flavor explosion. The dish really pops, compared to a more simple caprese with mild mozzarella cheese. While I love both, the crumbled gorgonzola is such a delicious way to switch things up. And of course, it’s still delicious with fresh basil and balsamic!

So, I mix up ripe cherry tomatoes with some good olive oil, lots of fresh basil, a splash of balsamic vinegar and a shower of crumbled blue cheese. Any variety of blue cheese – as long as you love it! – works for this. 

As soon as the chicken comes off the grill, I pile the tomato salad on top. The chicken warms the tomatoes a bit, melts the gorgonzola a little (look at the melty bits!) and tastes incredible when served in the same forkful.

This has been my go-to chicken to prep every weekend! I make the chicken and store the tomato salad separately. I use the chicken and salad for lunches, with rice or couscous, both on salad or even in wraps. It’s so simple, flavorful and really packs a punch.

Charred, smoky zucchini on the grill is a summer pleasure. I love how crispy the edges get, how the smoky flavor infuses the squash and just overall how delicious it is. Then we go and add risotto. And not just any risotto! But a buttery, parmesan-y risotto filled with fresh basil and sweet corn.

Most delicious meal on earth! You will love it. It tastes elegant and elevated. It’s very filling and satisfying. Plus, it’s kind of a showstopper on your dinner table.

Of course, risotto can be a bit high maintenance. There’s the whole standing-over-the-stove and stirring thing. So I like to grill the zucchini while that happens. That way, everything is warm and comes together at the same time. 

Once I get the risotto started, I prep the zucchini and toss it on the grill. I grill it on both sides while the risotto is cooking (and I’m stirring!), only running out to flip it or remove it from the grill.

This risotto has lots of garlic, shallots, white wine, parmesan and sweet corn. I cut it right off the cob and toss it right in. The flavor is incredible – and then I stir in a lot of fresh basil too.

The key is making sure the zucchini is ready to be stuffed when the risotto is done. You want the risotto plump and hydrated, not dried out like rice. Sure, it will stiffen a bit as it sits and you eat it, but ideally you want to cut into that zucchini and have a creamy, soft risotto coming out.

Pile the risotto right into the charred zucchini. Dreamy!!

Street corn pizza is topped with chili lime spiced chicken, jalapeño peppers, crumbled cotija cheese and lots of fresh lime. It’s crisp and crunchy, cheesy and melty, making it the perfect dinner when you’re craving something delicious!

This pizza has so much flavor. From the grilled corn to the chili lime chicken to the spicy jalapeños… it only gets better with a big drizzle of lime crema!

I love everything about corn. EVERYTHING. And it’s super delicious for only a few months out of the year here in Pennsylvania. Luckily we are in that time, right this very moment, so we are enjoying all the corn on the cob that we can.

My inspiration for this pizza came from a classic Mexican street corn. I adore street corn with its crisp, creamy and crunchy textures. It’s sweet and savory flavor. I will never pass it up and it’s also one of Eddie’s favorite things too. So taking those flavors and putting them on pizza, along with some chicken? 

Love it. 

I’ve even made street corn inspired nachos and grilled cheese before, so pizza was the next logical answer.

However! I didn’t want to just throw some mayo and corn and cotija and chili powder on a pizza dough. It felt like it called for a little more. So, chicken to the rescue!

Anytime I use chicken on a pizza, I’m using either a rotisserie chicken from the grocery store or leftover chicken from the fridge. I very rarely will cook chicken just FOR the pizza. Because I want to make my own dough, and then the whole thing just gets too complicated for my life right now. Lesson learned: always have a rotisserie chicken on hand.

The way we’re making it special though, is by tossing it with lots of chili lime seasoning. I love using tajin for just about anything, including rimming margaritas. The lime flavor is so wonderfully pronounced. The chili flavor is not overly spicy. It just makes everything taste better!

A few other things that are necessary for the pizza to come together? I like to do jalapeno pepper slices. Lots of cotija cheese which is crumbly and salty and similar to a parmesan. Tons of fresh cilantro too. And a big old spritz of fresh lime!

We love a savory dutch baby in the summer! Full of herbs, this is baked until golden and puffed, then topped with slow roasted tomatoes and crumbled gorgonzola cheese. Lots of fresh herbs finish it off!

I don’t know if I’d consider a savory dutch baby a true breakfast – maybe more like a brunch entree. But either way, it’s absolutely delicious and incredibly satisfying. A big savory puffed pancake filled with herbs, then topped with slow roasted tomatoes, gorgonzola and fresh basil.

Incredible! I could eat this every summer day.

My first foray into the savory dutch baby was when I shared a chipotle bacon blue cheese version in Everyday Dinners. I’ve been making a savory one for a few years now, but it wasn’t until I landed on that combo that I was completely sold. 

Puffed, savory, sweet, salty – everything you want a meal to be. 

And this one is no different!

Now here’s the thing. We have to start with the slow roasted tomatoes. They are one of my favorite things to make with cherry tomatoes. I love using slow roasted tomatoes in my summer farro bowl, basil pasta and hot honey crostini. But they are a little high maintenance because they take two-ish hours. 

However! They are totally worth it.

The two hour roast time isn’t hands-on either. So you could slow roast the tomatoes first thing in the morning, at night when you’re making dinner and cleaning the kitchen, or even while you’re getting things done around the house. And you can always make them ahead of time and stash them in the fridge.

While I do like them freshly roasted, it’s just not always feasible to have two-plus hours of time to roast these. So I’ll store mine in a sealed container and they are still super good.

Now for the actual dutch baby! I love this so much. It is so easy and even has a relatively high amount of protein. The recipe is really a mix of eggs, milk and flour, along with salt and pepper and a bunch of herbs. For this, I like to use ranch season and dried chives.

The combo is so incredibly flavorful, you won’t even believe it.

Trader Joe’s has a ranch seasoning shaker, and that is what I will use for ranch seasoning. I also make my own sometimes with garlic powder, onion powder, dried chives and dill. It’s just a matter of getting some powerful flavor into the puffed pancake. 

I mix everything in the blender until smooth, then pour in a baking dish that is already hot and full of melted butter. Baking time is only about 25 minutes, and then you have the most wonderful puffed pancake that is filled with savory flavor.

The puffed pancake will be SUPER puffy at first. They always fall though, so don’t be alarmed if it loses some of its height a few minutes after coming out of the oven. I like to top it with the gorgonzola and slow roasted tomatoes while it’s still warm, especially because it helps the cheese melt. 

Oh, and extra herbs too.

A sweet dutch baby tends to be drizzled with maple syrup. I don’t drizzle anything on this one (though you could use a balsamic glaze!) because the tomatoes are very juicy and the cheese melty. It all comes together beautifully and doesn’t really need a dressing or condiment to go with it. 

I love how filling this recipe is. And how incredibly packed it is with summer flavor. It’s even good reheated!

This is one of those dishes I’m sharing with you so you have it in your recipe arsenal. Something you can make when you need a side dish for grilled chicken or steak, a big pasta bake to make for a crowd, or even to make the star of the show as the main course with salad.

Now here’s the deal. I use my fresh basil pesto recipe for this, mostly because we love it so much. 

However!

You can really use ANY pesto you’d like here. That’s the beauty in this recipe. In the winter, when a large amount of fresh basil isn’t accessible to me, I may use Rao’s jarred pesto. Or I’ll make a sun dried tomato or even kale pesto. 

That is the best part of this recipe!

You can use a store bought pesto AND you can use any variety of pesto. Because that’s all it is. Pasta, pesto, cheese.

See? Embarrassingly easy!

The other key to making this extra delicious is the combination of cheeses. First, you want to toss the pesto-coated pasta with some grated cheese. I like to use freshly grated provolone but if I’m in a pinch, I’ll use the Tillamook italian blend cheese mix, which is fabulous. Mixing this in makes it cheesy all over, and can anyone say no to that? 

Next, I top it with sliced fresh mozzarella. I love how this melts and creates the perfect topping.

When it comes out of the oven, the whole pasta dish gets sprinkled with parmesan cheese. I also like to do a pinch of red pepper flakes on my own portion.

These grilled fish tacos are such an easy, delicious way to make your weeknight meal shine. The fish is smoky, flaky and buttery. The jalapeno corn slaw is crunchy and refreshing with a bite of heat and citrus. The whole combination is incredible.

While it’s true that I’ll put just about another in a taco, fish tacos are one of our favorites. Especially Eddie’s. He doesn’t love Mexican food as much as I do, but he will gladly take a fish taco any day. 

Beer battered fish tacos are probably my number one choice. But what I love about these grilled fish tacos is that they are so smoky and light. You know how it can be SO HOT in the summer that you barely have an appetite? Like it’s almost too hot to eat?

These are perfect for those hot nights. First, you grill the fish so no need to heat up the house with the oven. And second, they are easy, customizable and such a lovely light meal. No feeling like you downed an entire bowl of queso after finishing these

When it comes to the fish, I like to use a mild white fish for this. Something like cod. I already have a recipe for summer salmon tacos, but salmon works here too. Basically, if you like the fish, you will enjoy it in these tacos.

I use lots of smoky spices. Smoked paprika, cumin, some garlic, a pinch of chipotle chili powder. Layering the flavor is the name of the game here and I want flavor in every single bite of taco!

One way that I make these fish tacos come off the grill so perfectly flaky and buttery is by using a grill pan. This all clad one is my favorite – I have two and use them almost every single day. I spray them with an avocado oil spray or something similar and then place the fish on the grill pan, then the whole thing directly on the grill. 

This also helps to ensure that the fish doesn’t flake off and fall in between the grates when you’re flipping it or trying to remove it from the grill. It’s the easiest way to do it, especially if you’re a beginner.

If I have big pieces of fish, then I feel confident throwing them directly on the grates. But just keep in mind that fish cooks fast on the grill – you don’t want to overcook it!

Now… the slaw.

This slaw may be our favorite summer slaw so far. And you know that we are suckers for a good, crunchy slaw. 

I love the refreshing, crisp bite that the slaw gives to the taco, especially since the fish is so soft and practically melts in your mouth.

This slaw is made with super thinly sliced green cabbage, corn cut straight from the cob, jalapeño peppers from the garden, tons of fresh cilantro, a little lime and lots of salt and pepper. Trust me when I say that you will want to eat this as a salad! In fact, it could be a side salad or side dish for these tacos. If you don’t want to put the slaw directly in the taco, just serve it on the side! 

It is SO crunchy. So crispy. Perfectly sweet and savory with a hint of spice.

The other toppings I love for these tacos? My quick pickled onions. Some crumbly cotija cheese. A few spritzes of fresh lime. And maybe some extra cilantro. 

Those are the basics for me, but of course you can add anything else you love. (more…)
