This puff pastry is covered with the best pesto ever, ripe, juicy tomatoes, fresh mozzarella cheese, balsamic glaze and a sprinkling of parmesan. It tastes like summer and is so delicious that I can hardly stand it.

It’s no secret that I freak out over everything puff pastry. Make it into a pizza, a tart, a hand pie, soup topping, dessert and more – I absolutely love it. It’s such a great kitchen hack, pretty accessible, easy to use and not to mention, incredibly buttery, flaky and delicious. I can never pass it up!

I’ve made so many different versions of a puff pastry pizza over the years. Our favorite is probably my weeknight white pizza – it’s a hit with just about everyone. This one is similar but with tons of pesto and basil and balsamic.

I start the puff pastry with my favorite pesto! Of course. I make my pesto at least once a week. You could also use a store-bought version. It’s a staple that I must have in my fridge at all times in the summer months because I use it so frequently. In this case, I spread it on the puff pastry as the first layer, or our sauce. It adds a perfect depth of flavor and goes great with tomatoes and mozzarella. 

When it comes to the tomatoes, I like to use ripe tomatoes and salt them a bit before placing them on the puff pastry. Then I pat them dry with a paper towel once they have released some of their juices.

This helps to keep the puff pastry from becoming watery. It’s key!

Another key here is to tear your fresh mozzarella into small pieces. The fresh mozzarella slices are a bit too thick and heavy for the thin puff pastry. By tearing the cheese into pieces, not only do we cover more surface area with the cheese, we avoid weighing down parts of the pastry. It also helps prevent the cheese from becoming watery too.

Oh and a second option is to use grated mozzarella or an italian blend cheese. My favorite brand is tillamook and I find it at Target.

Puff pastry only cooks for about 25 minutes. It’s super flaky and the perfect thin crust. I drizzle everything with syrupy balsamic glaze when it comes out of the oven. Lots of parmesan, another drizzle of pesto and some fresh basil are the finishing touches on this baby! It’s such a great easy weeknight meal or even a wonderful appetizer.

And while I tend to prefer puff pastry meals shortly after they are cooked, reheating this for lunch the next day is pretty good too. You lose a little of the structured flakiness, but the flavor is still incredible and it’s so satisfying.

Yes, I’m sharing yet another pasta salad!! But trust me, you do not want to pass this one up. 

Tender pasta tossed in a delicious balsamic dressing with ripe cherry tomatoes, fresh basil and a bit of shaved parmesan cheese?

This is the ultimate summer meal, in pasta salad form. 

And that is not a joke. There are many days in summer where I create full meals out of basil and tomatoes (and, of course, cheese) and seriously, this pasta salad is out of this world. 

It may not look like much. Just some tomatoes and basil – but the balsamic dressing is what takes it over the top. And it gets better as it sits, making it perfect for parties or even for prepping lunch the next day.

Now, I know that technically bruschetta means “bread” and well, we’re not making bread pasta salad. But what we are doing is taking all of the fabulous bruschetta ingredients (tomatoes! garlic! basil!) and mixing them into a pasta salad with a dressing that is unreal.

Seriously, this dressing is absolutely wonderful. Just wait!!

Lacy has been making the pasta salad for months now and raving about it. It’s so simple – but the flavors really marry together and create this classic, incredibly flavorful cold pasta salad that goes with just about anything. It’s always a hit. You can make this as a base pasta salad and actually add chicken to it. Or you can serve it on the side of any grilled meal. 

Or take it a party, obviously!

Here’s how it goes down:

You want to use a tiny cut of pasta. This mafaldini from Trader Joe’s is so cute and works perfectly. Or this baby mafalda!

The dressing is perfect. Don’t skip the sugar! And I suggest actually using the sugar and not swapping it for honey or maple syrup. While I use those ingredients in my dressings all the time, the granulated sugar here is mixed with the balsamic vinegar and makes the dressing syrupy. Not in a bad way though. It thickens it which really helps it to coat every bit of the pasta and tomatoes. This is what makes the pasta salad special. 

The rest is simple. Ripe tomatoes, diced onion or shallot, lots of fresh basil. There is a good bit of garlic in the dressing, which is where I prefer it. It marinates in there and takes away a bit of the bite. But if you want even more garlic, feel free to add it in with the tomatoes too!

Toss is all together. Make sure everything is combined and evenly distributed. Then eat!

The best part about this is that you can serve it immediately, or you can let it sit for a while. If you’re taking it to a party, I’d make the day of and serve, only because the basil will wilt. But if you’re just making it for yourself, it’s a great dish to prep ahead! It gets better in the fridge and goes with absolutely anything for dinner.

Hello and welcome to one of the best things I have ever made. This meal is so darn good, tastes so darn fancy and well, can be finished super quickly. It’s amazing. Flavor + ease is the best combo!

I was hesitant to share this recipe because I don’t like to jump on the viral food trend at all. In fact, I try to steer clear of them. But oh my gosh – this one is going to be in our rotation for years and years. I can’t even explain how delicious it is!

If you’re not aware, earlier this year a viral smash burger taco erupted (mostly on tiktok, then instagram) and was everywhere. Essentially, a smash burger pressed into a tortilla and cooked on a hot griddle, loaded with toppings. I made a version like this using my own house sauce and we liked them a lot. Which got my wheels turning, so then the next time I made them, I used ground turkey.

And then, I did a spin on my Mediterranean turkey burgers, but smashed into tortillas. And WOW.

So here we are! A garlicky, dill seasoned turkey burger, smashed into a flour tortilla, smashed onto a pan and seared in butter, then topped with alllll the best toppings. Crumbled feta, roasted red peppers, pickled onions, tomatoes.

Oh and a quick and easy yogurt feta sauce because we can never have enough feta!

Eddie just about lost it over how delicious these are. They don’t look super special, because frankly, smashed turkey on a tortilla just isn’t a beautifully vibrant dish. But the flavor is top notch and whatever you choose to put on the burger? Well that elevates it like whoa.

This is how they come together:

I like to get all my toppings and the yogurt feta sauce prepared first. When the burgers are done, they are done and ready! So having everything ready to go makes it that much quicker. I chop the lettuce, tomatoes and red peppers. I make the pickled onions if needed and make the yogurt feta sauce too. 

The pound of ground turkey gets divided into six equal portions. Easy! I season it with salt, pepper, dill and garlic powder, then take each portion and press it into one side of the tortilla. Yes! This seems crazy (at first I was like hmmm… ), but the burger ends up super thin (my favorite kind) and cooks very quickly. The tortilla also helps to flip the burger. 

The turkey size gets smashed down into a hot pan sizzling with butter. I press it down and smash a few times while it cooks too. This only takes a few minutes!

Then it’s time to flip. This is so easy, because the burger is pressed against the tortilla. Flip and cook the other side until browned and crispy. Add some feta right on the burger too so it warms. 

Toppings time! Add whatever you love – shredded lettuce and roasted red peppers are a must for us. You could also add cucumbers and hummus. A drizzle of the yogurt feta sauce is everything. Finish with pickled onions, for sure.

This toasty grilled cauliflower salad is served over spicy arugula, filled with grilled corn and my favorite feta dressing ever. It’s crunchy and creamy and absolutely wonderful!

I love grilling cauliflower. Much like roasting it, grilling the cauliflower makes it golden and toasty and really imparts it with so much smoky flavor. I’ve always said that roasted cauliflower almost tastes like popcorn, in a way – and this version is even better. Every bit can become charred and toasty.

You will love it too!

This is how it all comes together:

I grill the cauliflower first. It takes longer than, say, peppers and onions since it’s a fibrous veggie. I use my favorite grill pan (it’s truly the best) and let it go for 5 to 10 minutes at a time, then toss it well. After about 15 to 20 minutes, it will be done. 

While the cauliflower is on the grill, I also add a few ears of corn! This can be one ear or four ears, depending on how corn-heavy you want the salad to be. I lay my corn directly on the grill and let it char for a few minutes.

Then the rest of the bowl is super simple. I season arugula with lots of salt and pepper. I slice the corn from the cob and throw that and the cauliflower in with the arugula.

Then comes the dressing. Drizzle it all over because it’s the KEY for this salad. It’s what makes this, well, a SALAD. Best dressing ever. 

After that, a nice little shower of chopped pistachios for extra crunch. I can never have enough crunch, we know this. 

The combo is a bowl of peppery arugula with sweet (corn!) and savory (cauli! dressing!) flavors and the perfect bite. Cannot get enough of this.

The smashed feta vinaigrette is nothing new. But it’s FABULOUS!!

I first shared this recipe with my grilled vegetable orzo salad. Another big favorite around here.

This dressing is something else. It’s a vinaigrette, but since we shake and whisk the feta into it, it gets a slightly creamy consistency as the cheese breaks down. The whole mixture also marinates the feta, making it even more delicious. There is lemon, lots of fresh herbs, that tangy, creamy cheese – ah! Really couldn’t ask for anything more in a delicious vinaigrette.

I love this dressing because it also acts as the cheese in the salad. It’s just EASY. And it will last in the fridge for a few days too, getting even better as it sits. This is not one that you want to pass up!

So this whole bowl/salad situation is one of the best weeknight meals you can make for yourself. There is so much texture and crunch and it’s very satisfying. Plus – making it on the grill equals minimal clean up!

I’ve got the best summer weeknight meals for you!

These are our favorite summer meals – the ones I find myself making constantly over the season. We all love these dishes and they are mostly easy to throw together. Plus, they utilize the best of the summer produce.

I also take into account some of my favorite sauces and dressings – vinaigrettes, pesto and chimichurri – things that I can prepare ahead of time and use in other meals too. I find that condiments like that are a staple in my fridge over the summer and help to elevate any meal, even breakfast.

I have a few methods for our summer dinner routine. One is to make something on the grill – a meat or fish, and serve it with a grain salad of sorts. Another is to make a big clean-out-the-fridge pasta with lots of fresh ingredients. You’ll see these methods used in the dishes below and I find that it’s so helpful to have an idea of what to make.

P.S. I love alliteration almost as much as I love this recipe. Crispy chicken caprese?! I mean, it doesn’t get any better than this.

These are our favorite crispy chicken cutlets that I make on the regular. My family would be thrilled if I made them once a week. I usually make them every other week or so – and they are devoured. I swear that my extended family can sense when I’m making them because they happen to show up on that day too. Crispy chicken pieces for everyone!

This is the kind of chicken that I used to swipe from the pan when my mom was in the middle of cooking dinner. It made the house smell so incredible that I just couldn’t even wait to have a piece. And now, I know exactly what that’s like. But I don’t blame anyone because… I steal a few pieces too. It’s inevitable. These crispy little parm covered bites are so perfect, crunchy and savory. I could eat them on anything.

The key is slicing the chicken into paper thin chicken cutlets. I slice a boneless, skinless chicken breast into three or four cutlets – as thin as I can make them. This means that once they are breaded, you can slice everything else to be the same thickness. Which is perfect. It all comes together wonderfully, sort of like a chopped salad. You get a bite of everything at once!

So, yes, this is one of my embarrassingly easy go-to summer meals. You can use grilled chicken instead of crispy, of course. There is no true “recipe” here – it’s more of the method of layering tomatoes and fresh mozzarella and basil. And to that, I say you do you! Layer as many slices of tomato and cheese and basil together that you want. Serve with the crispy chicken and a glass of ice cold sauvignon blanc.

And the balsamic glaze! These days I just buy it in the grocery store but I used to make my own. If I wasn’t using chicken here, I’d also do a drizzle of high-quality olive oil. You can do that to the tomatoes before layering if you wish. (more…)

We’ve got some grilled lemon shrimp served with pesto couscous, for a fancy looking but simple meal that comes together in no time at all!

Seriously, you won’t believe how quickly this dish can be made. It’s a great weeknight meal because it’s so satisfying. It feels so… special. It will take around 30 to 40 minutes to fully come together, but it tastes like it took much longer. And the couscous and pesto take the longest to make, which is only about 15 minutes!

This is the kind of meal that we love to have for weeknight dinners. It makes you feel like you’re having an extraordinary meal – almost like it’s a dish that should be served in a restaurant. The leftovers are also so, so delicious. Which means that lunch the next day is solved. And maybe even a leftover dinner too!

Let’s get to it! 

The shrimp gets a quick marinade of olive oil, salt, pepper, crushed red pepper, garlic and lots of fresh lemon zest. I basically coat the shrimp in this mixture and let it hang out for a few minutes, then I skewer it and grill. I never let this marinate for more than 30 minutes. 

The actual skewers are just used for ease in this case. It’s much simpler to grill a few shrimp on a skewer like this so it can be turned once. As opposed to picking up every piece of shrimp with tongs and turning it. You can leave them on the skewer for serving or you can easily pop them off and serve on top of or mixed in with the couscous. Either way, they look so pretty!

Pesto couscous is my solution to giving couscous an extra boost of flavor – in the easiest way possible. I do this with grains all the time. See my summer flank steak bowls. I use a condiment such as pesto, chumichurri or my cilantro lime vinaigrette and toss the grain with it. Not only does it turn the couscous (or rice, quinoa, etc) a gorgeous shade of green, but it makes every bite taste wonderful. 

It’s an awesome way to elevate your side dish in one simple step. The pesto can be made ahead of time or you can even use store-bought pesto. Toss it into the cooked grains and you’re good to go!

I can’t even tell you how often I make it. I will try to get that posted in the next week for you. In the meantime, it’s linked below!

I like to pop some cherry tomatoes on the skewers with the shrimp. The shrimp is only on the grill for a few minutes, so it’s a great time to use tomatoes. You could use another vegetable too – or even add some chopped tomatoes or spinach to the pesto couscous.

It’s the perfect caesar, with crisp romaine lettuce, my homemade greek yogurt caesar dressing, lots of parmesan, golden sourdough crumbs and a whole bunch of cooked pasta tossed in for the ultimate seasonal side dish. You have got to make this!

Yes, it’s true. I share a LOT of caesar salad meal ideas, from kale salad, to slaw, to chicken wraps, to broccoli and brussels, to pizza, to asparagus and sandwiches and so much more. It’s one of my family’s favorite flavor combinations and I’ve found that in general, it’s pretty loved by everyone else too! It’s universal over here in my tiny food universe.

And it’s also ridiculously easy. There isn’t a salad much simpler – this only requires a chop of romaine, a grate of parmesan, maybe some toasting of breadcrumbs and a whirl of dressing in a mini blender or bowl. Caesar salad is very kid-friendly in our house, probably because there are no other crunchy vegetables or new ingredients. Nothing that stands out and screams “I’m new here and you have to try me!” for those little hands and eyes and mouths. 

Except the pasta. Which is anything but new, because my kids would live on only pasta if they could.

Let’s also talk about what a fantastic base this is. Whether you’re making it for dinner, as a salad for a dinner party or as a potluck dish to take to a summer BBQ, you can easily make it your own. I can’t tell you how many times I have added grilled chicken or salmon to this. Add in some steak or shrimp or even tofu and of course, I’ve thrown in chickpeas too!

It’s a great salad for those who don’t like to eat all their food combined in one big bowl. If you find yourself in that routine at dinnertime, where your kids don’t want their foods to touch on their plates, this is another amazing option. The pasta and salad can be served separately and if you’re add in the protein, so can that. It’s perfect!

And yes, I know, I talk about this dressing ALL THE TIME. I make it so often that it’s such a staple in my fridge. We use it for nightly salads, dipping sauces, even wraps. And it’s one of the only creamy dressings that I really love on salad, so that is saying something. It’s very flavorful with lots of lemon, parmesan and even a touch of anchovy paste, which I encourage you to keep in the recipe because it adds an incredible savoriness. And you squeeze it out of a tube, which means you don’t even have to touch it!

This is one of those recipes that is really quite simple. It doesn’t require a recipe at all, aside from the dressing. Basically, figure out how many people you need to feed and determine your ingredient amounts from there. You can make it more pasta heavy, more lettuce heavy, serve it as a side dish or a main dish. 

But it’s also one of those recipes that I can’t live without. We make this ALL the time. I can’t stress that enough. It’s in the permanent rotation, for both our weeknight meals and our parties. These hot dogs are wrapped in flakey puff pastry, sprinkled with sesame seeds and baked until golden, puffed, warm and buttery. They only get better when you dip them in a hot honey mustard sprinkled with chives, and let’s just say this may be my new favorite snacky dinner.

Because I’m not sure what I love more here: the puff pastry blanketed hot dogs or the spicy honey mustard. Both are ridiculously delicious! Embarrassingly easy, but absolutely wonderful.

Every summer when my family went to the Jersey shore, my uncle would make us crescent roll wrapped hot dogs. We devoured them like they were the best thing we had ever eaten – and it was the only time we ever got such a treat. Sometimes he would layer in cheese too. 

Either way, they tasted like the epitome of summer to me.

Over the years, I’ve thought about introducing those crescent wrapped dogs to my kids. The thing is that I never have crescent roll dough on hand. But! I always always always have puff pastry. Always!

If you haven’t noticed, it’s one of my favorite (if not theeee favorite) ingredients to use in the kitchen for cheater’s pizzas and tarts. The options are endless. And it’s so light, flakey, airy and buttery, almost like eating a croissant.

So one day I sliced my puff pastry into squares and rolled up some hot dogs. A brush of egg wash, a sprinkle of sesame seeds and nice 20 minute nap in a 425 degree oven? These were born.

Oh my GOSH. 

We adore my puff pastry cheeseburger pockets and I figured that these had to be a giant hit.

Normally I’d look at something like this and think of it almost as kid food, or maybe even carnival food. But these are so, so delightful, I would even make these over a classic grilled hot dog most days. 

They are super filling. Extremely savory. And ideal for dipping!

Yes, this hot honey mustard sauce has quickly risen to the top of our list when it comes to condiments. Hot honey, dijon mustard and a dollop of mayo are whisked together to create a smooth, silky honey mustard sauce with a touch of heat.

This dip goes with just about anything. I love it! 

P.S. my favorite puff pastry is the wewalka brand or jus roll. I prefer these to a frozen perforated puff pastry so much better. (more…)

Putting bread in salad was one of the first things that ever got me interested in salad, and let’s be real. Are we even surprised?!

Not at all!!

These toasty sourdough cubes tossed with soft charred grilled vegetables make for the most delicious bowl ever, especially as the weather warms up and we’re all craving wonderful grilled dishes. We can’t get enough of this!

This is a salad that everyone will love.

The grilled vegetables are tender and loaded with so much flavor. The grilled bread is ridiculously crunchy, and while it softens a bit from the dressing, it still adds the most fabulous texture to this salad. 

The best thing is how satisfying this is! It can easily be a main dish. I love it for a weekend lunch or dinner, sitting outside and enjoying the sun. It’s light but still filling, which makes all the difference when it’s hot outside and you’re not in the mood to eat something heavy.

For the dressing, I love to use my classic basil vinaigrette for this recipe. It’s such an easy vinaigrette to make – I do so right in my nutri bullet! And it lasts in the fridge for a few days. It’s delicious on just about anything – chicken, steak, all vegetables and bread – and makes everything taste fresh and bright. 

It’s the perfect complement to this salad.

Of course, you can use any vegetables you love here. Ones that can be easily grilled are the best. My easy picks are usually peppers, onions, mushrooms, zucchini and even broccoli or potatoes. We prefer veggies that will soften quickly and turn a bit sweeter when grilled, so I can’t recommend these ones enough.

You can also add in some fresh tomatoes too! I don’t suggest grilling them for this particular salad as they will mostly turn to mush. My classic panzanella (it’s the ultimate summer dish) uses the tomatoes and their juice to make an incredible dressing, and that’s an option too.

I like to toss the vegetables with lots of salt and pepper, a touch of olive oil and balsamic vinegar. This elevates the flavor and really takes the whole salad up a notch. 

And this dish is one that is excellent served warm right off the grill or even at room temperature after it sits a bit. It doesn’t have to be the main meal. Perfect to serve with grilled steak or chicken – even salmon.

Ingredients

  • 4 thick slices sourdough bread,
  • 2 zucchini, chopped
  • 2 bell peppers, chopped
  • 1 red onion, chopped
  • 1 pound asparagus spears, cut into thirds
  • 12 ounces cremini mushrooms, quartered
  • kosher salt and pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • cup crumbled feta cheese

  • 1 cup tightly packed basil leaves
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • ½ tablespoon red wine vinegar
  • big pinch of kosher salt and pepper
  • cup olive oil

Instructions

  • Preheat the grill to the highest setting.
  • Brush or spray the sourdough with olive oil and sprinkle with a pinch of salt.
  • Toss the vegetables together with a big pinch of salt and pepper, the garlic powder, olive oil and vinegar. Spread them on a grill pan.
  • Grill the bread for 1 to 2 minutes per side, until toasty and grill marks appear. Grill the vegetables for 10 to 12 minutes, tossing every 3 to 4 minutes. There is no right or wrong here, just grill them to your liking!
  • Cut the grilled bread into cubes. In a large bowl, toss the grilled bread cubs and vegetables together. Drizzle on the basil vinaigrette and toss.
  • Sprinkle with the feta cheese. Serve with extra dressing!

  • Add all the ingredients to a blender or food processor and blend until smooth. Store any extras in a sealed container in the fridge for 3 to 4 days.
