Try this vibrant radicchio salad, the perfect side dish! Sweet pears, crunchy almonds, tangy goat cheese, and a bright citrus vinaigrette dress up a colorful bed of greens.


Ingredients

For the winter salad

  • 1 head radicchio, washed, dried and torn into bite-sized pieces
  • 1 head butter lettuce, washed, dried and torn into bite-sized pieces or 2 cups baby arugula or baby mizuna
  • 1 ripe pear, thinly sliced
  • 1 shallot, thinly sliced
  • 2 tablespoons toasted almonds (or pine nuts)
  • ¼ cup goat cheese crumbles (or feta or gorgonzola), optional
  • 1 handful fresh mint leaves

For the citrus vinaigrette

  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon orange zest
  • 2 tablespoons honey or maple syrup
  • ¼ teaspoon kosher salt
  • ½ cup olive oil

Instructions

  1. Make the dressing: In a medium bowl, whisk together the white wine vinegar, Dijon mustard, orange zest, honey, and kosher salt. Gradually whisk in the olive oil 1 tablespoon at a time until a creamy dressing forms. Store refrigerated; the dressing will solidify when cooled so bring to room temperature before serving.
  2. Toast the nuts
  3. Prepare the radicchio, butter lettuce (if using), pear, shallot as noted above.
  4. On a large platter or on salad plates, place the radicchio pieces and butter lettuce or baby arugula or mizuna. Add the pear slices, then sprinkle over the sliced shallot, toasted nuts, goat cheese crumbles, and mint leaves. Drizzle with the orange dressing and serve.

It’s often used in Japanese-style recipes like miso salmon and miso ramen, but you can think outside the box too. There’s almost nothing that miso doesn’t make a little better.

Types of miso

Miso is a Japanese fermented soybean paste that’s full of nutrients and savory flavor. You can find miso in the international foods aisle near the Japanese ingredients. There are many different types of miso, and they all taste different. In most of our recipes, we specify to use white or yellow miso: sometimes they’re labeled as “light miso.” Here are the major types of miso:

  • White miso (Shiro miso): This variety has a mild, more delicate flavor and less salt than darker miso.
  • Yellow miso: This type is fermented a little longer than white miso and has a mild, lightly sweet flavor.
  • Red or dark miso: This variety is fermented longer than white or yellow miso. It has a very strong flavor and can overwhelm the flavors in a dish, so we don’t recommend using it here.

Description

Prepare to be amazed by this miso salmon! The savory glaze is the perfect accent for this broiled fish and makes an easy dinner. 


Ingredients

  • 1 to 1 1/2 pounds high quality skin-on salmon fillets, wild caught if possible
  • Freshly ground black pepper
  • 2 tablespoons light or yellow miso
  • 2 tablespoons soy sauce (or tamari or coconut aminos)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar (or maple syrup)
  • ¼ teaspoon Sriracha hot sauce
  • ¼ teaspoon kosher salt
  • Optional garnish: Sliced green onions, sesame seeds

Instructions

  1. Let salmon rest at room temperature for 20 minutes.
  2. Meanwhile, make the miso glaze: Whisk the miso, soy sauce, rice vinegar, sugar, Sriracha and kosher salt together in a small bowl until smooth (the miso may have a few lumps depending on its texture, which is okay). 
  3. Preheat the broiler to high. Place a large sheet of aluminum foil on a baking sheet and brush it with olive oil. Pat each piece of salmon dry and place it on the foil skin side down. Brush salmon liberally with the glaze (1 to 2 tablespoons).
  4. Broil about 4 to 5 minutes for very thin salmon or 7 to 10 minutes for 1-inch thick salmon, until just tender and pink at the center (the internal temperature should be between 125 to 130F in the center). Brush with more of the glaze and serve.

This cottage cheese pancakes recipe is the best genius trick! It makes a protein packed pancake that tastes like French toast.


Ingredients

  • 4 eggs
  • 1 ½ cups small curd* cottage cheese
  • 3 tablespoons pure maple syrup, plus more for serving
  • 1 teaspoon vanilla extract
  • ¾ cup all purpose flour
  • ½ tablespoon baking powder
  • ¼ teaspoon kosher salt

Instructions

  1. In a medium bowl, whisk the eggs, cottage cheese, maple syrup and vanilla (if you see very large clumps of cottage cheese, try to break them up or smash them with a fork).
  2. In another bowl, whisk the flour, baking powder and salt. Add it to the bowl with the wet ingredients and mix until a smooth batter forms.
  3. Heat a non-stick skillet or griddle over medium heat, then add a bit of butter to coat. Scoop out ¼ cup portions of batter and cook the pancakes until golden brown on one side, adjusting the heat so it doesn’t brown too fast. Flip and cook until cooked through and no longer gooey at the edges (the batter will ooze out a bit at the sides; just keep cooking until it is fully cooked, adjusting the heat as necessary so it doesn’t brown too fast). Place the pancakes in a stack under an overturned bowl, and cook the second batch of pancakes. 
  4. Serve immediately, topped with pure maple syrup.

Notes

*Small curd cottage cheese is important for getting the right texture where the cheese melts into the pancake. Some brands labeled as “small curd” have fairly large curds, so the size varies based on brand. Experiment and find a brand that works for you! But don’t sweat it too much: you can make this recipe with any size curds, you just may end up with an appearance with some white flecks.

This easy cauliflower stir fry is an ideal healthy and easy dinner idea! It’s full of nutrients and covered in a punchy sauce. 


Ingredients

  • 1 medium head cauliflower (2 pounds)
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 medium white onion
  • 3 green onions
  • 3 tablespoons rice vinegar*
  • ¼ cup soy sauce (or tamari or coconut aminos)
  • 1 tablespoon light miso
  • ½ tablespoon gochujang (optional)
  • 2 tablespoons sugar (or maple syrup)
  • 2 tablespoons sesame oil (regular, not toasted)
  • 1 teaspoon cornstarch (or arrowroot powder)
  • 3 tablespoons neutral oil for stir frying, divided
  • To serve as a main dish: Add ¾ cup cashews with cauliflower**, add 1 cup shelled frozen edamame in the last 2 to 3 minutes, or add Marinated Tofu, Pan Fried Tofu, or Sauteed Shrimp and serve with rice

Instructions

  1. Chop the cauliflower into small florets. Thinly slice the bell peppers. Thinly slice the white onion. Thinly slice the green onion.
  2. In a medium bowl, whisk together rice vinegar, soy sauce, miso, gochujang, sugar, sesame oil, and cornstarch (or make the Go To Stir Fry Sauce). 
  3. In large skillet, heat 2 tablespoons neutral oil over medium high heat. Add the cauliflower and a pinch of salt and cook unstirring, for 3 to 4 minutes until charred. Flip the florets and continue cooking for 2 minutes.
  4. Add the bell peppers, white onion, a pinch of salt and the remaining 1 tablespoon oil and cook 4 to 6 minutes until tender.
  5. Turn off the heat. Pour in the sauce and add the green onions. Stir until the sauce coats everything and thickens. Serve immediately. 

Notes

*Or substitute the Go To Stir Fry Sauce for the sauce ingredients (oil free).

**Adding cashews would serve about 2 to 3 as a vegetarian main; adding tofu can stretch it to 4.

  • 4 ounce soft cheese, such as a blue cheese or goat cheese
  • 4 ounce aged cheese, such as English white cheddar or French blue cheese 
  • 4 ounce mild slicing cheese, such as Manchego
  • 4 ounce wild card cheese (anything that looks interesting!)
  • Bread and crackers: crostini, crackers, focaccia bread slices
  • Spicy mustard
  • Jellies or preserves: fig, blackberry, blueberry, apricot, lingonberry, peach, orange
  • Fruit: seedless grapes, sliced apples, pears, peaches, plums, raspberries, blueberries or black berries, dried or fresh figs 
  • Mixed pickles
  • Olives: ripe green or black olives, Castelvetrano olives, or other varieties
  • Salted nuts: marcona almonds, pecans, walnuts, or pistachios
  • Marinated artichokes
  • Peppadews
  • Cured meats like prosciutto, salami, chorizo, etc
  • Fresh herbs, for garnish (rosemary or thyme sprigs, or other)

Instructions

  1. Start by placing the 4 types of cheese onto the board. Slice cheese that slices easily, and add a knife for more crumbly cheese. Place the cheese at angles that look pleasing on the board. (If you have them, cheese markers are nice to label the cheeses.)
  2. Place the ingredients that need bowls into small bowls on the board, like the mustard, olives, and jam or preserves. Make sure the bowls aren’t too large so they don’t crowd the board.
  3. Fill in the remainder of the space on the board with piles of fruit, crackers, breads and other items. Arrange the ingredients with variation in color and shape in mind. Apple slices look nice placed in a fan, and other fruits can be casually dropped in groups. Stems of grapes always make a nice statement. Start with the largest ingredients and gradually fill in the smaller items.
  4. Once the board is mostly complete, tuck in a few sprigs of fresh herbs to complete the tray (like rosemary or thyme sprigs).
  5. Serve immediately, with small plates, forks and toothpicks if desired. The cheese board can sit out for up to 2 hours at room temperature. Make the board up to 24 hours in advance, wrap in plastic wrap, and refrigerate: allow to come to room temperature 30 minutes before serving.

This Brussels sprout casserole is pure bliss! Bake tender sprouts with a white cheddar cheese sauce and top with crunchy breadcrumbs.


Ingredients

  • 2 tablespoons olive oil
  • 2 pounds Brussels sprouts, off the stem
  • 2 large shallots
  • 4 garlic cloves
  • 1 ⅛ teaspoons kosher salt, divided
  • Fresh ground black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ¼ cups whole or 2% milk
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 cup (about 4 ounces) grated sharp white cheddar cheese
  • ½ cup Pecorino Romano cheese (or Parmesan cheese, with an extra pinch salt)
  • ½ cup plain panko (or breadcrumbs)
  • Paprika, optional

Instructions

  1. Preheat: Preheat the oven to 375 degrees Fahrenheit.
  2. Chop: Slice off the tough ends of the Brussels sprouts and cut them into quarters, discarding any discolored outer leaves (cut any very large sprouts into sixths). Thinly slice the shallot. Mince the garlic.
  3. Sauté: Heat the olive oil in oven-proof skillet or cast iron pan over medium heat. Add the shallots and garlic and sauté for 3 to 4 minutes, stirring occasionally, until tender and fragrant. Add the Brussels sprouts, 1 teaspoon kosher salt, and fresh ground black pepper and sauté on medium high heat for 3 minutes. Add ¼ cup water and continue cooking until tender and starting to brown, another 6 to 7 minutes. Remove from the heat.
  4. Meanwhile, make the cheese sauce: Grate the white cheddar cheese (if necessary). Measure out the butter, flour, milk, ⅛ teaspoon salt, onion powder, and garlic powder. In a saucepan, heat the butter over medium heat; when it melts, stir in the flour. Heat the mixture for about 2 minutes, stirring constantly. When the color starts to turn light brown, immediately reduce the heat to low. Add the milk very slowly: whisking constantly until the mixture is completely smooth before adding more. Then add the salt, onion powder, and garlic powder and continue cooking on low heat for about 2 minutes, whisking frequently. Gradually add the sharp cheddar cheese and Pecorino Romano cheese, and keep stirring until it is fully melted and the sauce is smooth.
  5. Bake: Stir the cheese sauce into the cooked Brussels sprouts. Sprinkle with panko and bake 20 minutes until golden brown. If desired, dust with a pinch of paprika. Serve warm.

To make this super-versatile condiment, Paul boils equal parts white vinegar and water, adds a big pinch of salt, then pours the brine over sliced jalapeños and some smashed garlic cloves. Once the whole thing cools to room temp, just store it in the fridge. Don’t forget about the brine: It’s a great marinade for chicken thighs and other proteins.

7 Classic New Orleans Cocktails: Sazerac & More!

Description

Here’s how to make a Sazerac, the official cocktail of New Orleans! Cognac, whiskey and absinthe make up this famous drink that tastes like no other.


Ingredients

  • 34 dashes Peychaud’s bitters
  • 1 sugar cube
  • 1 teaspoon absinthe
  • 1 ½ ounces (3 tablespoons) Cognac
  • 1 ounce (2 tablespoons) rye whiskey
  • Lemon twist

Instructions

  1. In a mixing glass, add the sugar cube and coat it with the bitters. Muddle the sugar cube with a cocktail muddler or wooden spoon until mostly dissolved. Add the Cognac, rye whiskey and absinthe and fill the mixing glass with a handful of ice.
  2. Stir until cold. Strain the drink into a chilled low ball glass.
  3. Use a knife to remove a 1″ wide strip of the lemon peel. Squeeze the lemon peel into the drink to release the oils. Gently run the peel around the edge of the glass, then place it in the glass and serve.
